起士的由來 起士(cheese)又稱為乳酪、乾酪,是多種乳製乾酪的通稱。據 說起士的種類多達數百種,不同種類的起士,其顏色、風味與脂肪熱量 都不同。起士以奶類為原料,含有豐富的蛋白質、鈣質、不飽和脂肪酸、 礦物質和維生素等成份。 起士起源有多種說法,其中一種說法為約六千年前,阿拉伯人在橫 渡沙漠途中,將牛奶和羊奶放入羊胃製成的皮革器皿中,並將其繫在駱 駝身上,作旅途解渴之用。經過漫長而酷熱的旅程之 後,他們發現袋內的牛奶已經分成了兩層,一層是透 明狀的乳清,而另外一層則是塊狀的凝乳。原來羊胃 皮囊中含有凝乳酵素的成份,加上旅途顛簸搖盪以及 長時間受到太陽高溫照射,牛奶便隨之發酵,形成了 半固體狀態,於是最初的起士就這樣誕生了。
