LET’S DISCOVER FLORENCE WITH LORENZO COLELLA
As a Chiavi d’Oro Concierge of Villa Cora, here are a few tips to those visiting the city to help them get the most out of their stay
30
After graduating from Aurelio Saffi Hotel School in 1995, and doing military service the following year, my journey in the hospitality industry began in 1999 at Hotel Corona, where I undertook various responsibilities, improving my skills and gaining in-depth knowledge about the industry. But most of all finding myself cultivating an immense enthusiasm for customer service! In 2010, I embarked on a new adventure at Villa Cora, one of the most prestigious hotels in the area. Here, thanks to my hard work and com-
mitment, I rose through the ranks to become Head Concierge. This role is not just a job for me, but a true calling. Since 2019, I have also been part of the esteemed Golden Keys association, which I consider is nothing less than a real family. My passion for hospitality motivates me in every interaction as I constantly aim to offer guests not only an unforgettable experience but a person and a professional they can always rely on when it comes to going the extra mile. Vive les clefs d’or!

BISTECCA ALLA FIORENTINA AT PARIONE All the secrets of the enduring cult dish TEXT Martina Olivieri
I
t’s impossible to visit Florence without trying a mouthwatering Bistecca alla Fiorentina. A very specific cut from the sirloin, corresponding to the lumbar vertebrae and split into two sections, of an adult steer that used to be called a vitellone, aged between 12 and 24 months. Ristorante Il Parione uses carefully selected meat from expert butchers to create an unforgettable culinary experience. Best of all is the meat from a heifer aged 12-24 months, pink in colour and hung for
anything between 23 and 30 days. This particular cut is valued partly because the meat is always tender and cooks quickly. At Parione it’s a must, and it’s always on the menu, a dish much in demand and loved by visitors and locals alike who want to sample the aromas and flavours of tradition. The skilled chefs at Parione are ready to make your meal a very special experience, combining tradition and innovation in their preparation of Florence’s cult dish.

trolling along Via de’ Tornabuoni, one would find it difficult to believe that this elegant street for fashion and shopping was once located outside Florence’s city walls, and that today is one of the most famous luxury streets in the world, which was once the river bed of the Arno up to the 12th Century – the river which today is known as the River Mugnone and that after many bends flows into the Arno at the Indiano bridge. Our itinerary to discover interesting facts and anecdotes about this famous street begins in Piazza Santa Trinita, where there is a Vallombrosian basilica erected by Cosimo I de’ Medici in 1563. In front of it, you will see the majestic Palazzo Spini Feroni: a 13th-century palace with crenellated towers that was renovated and altered several times over the centuries until it took

FROM THE TORNABUONIS TO THE STROZZIS: LIFE AND SECRETS OF THE MOST POWERFUL FLORENTINE FAMILIES 1938, it was purchased by Salvatore Ferragamo who used it as a workshop where he produced his legendary shoes. Today, it is still owned by his family who turned it into the headquarters of the fash-
ion house and also the location of the boutique and the Salvatore Ferragamo Museum. Piazza Santa Trinita also overlooks Palazzo Bartolini-Salimbeni. It was designed by Florentine sculptor and architect Baccio d’Agnolo and is the first example of Roman Renaissance architecture. Two inscriptions can be read on its façade. The fist, Carpere promptius quam imitari (criticising is easier than imitating), is located above the entrance door and was added by the architect himself in response to the criticism he had received for the singular appearance of the building. The other inscription, Per non dormire (not to sleep), is located above the windows of the second and third floors, and probably refers to an anecdote about the original owner of the building, the silk merchant Bartolini. Centuries later, the 53

same inscription would be copied and re-used by the poet and writer Gabriele d’Annunzio. Today, Palazzo Bartolini-Salimbeni is still owned by the Colonna family and houses one of the largest private collections of modern and contemporary art open to the public: the Casamonti Collection. At no. 2 in the square, you will find the 13th-century Palazzo Buondelmonti whose façade was redesigned around 1530 also by Baccio d’Agnolo. It is here that Ludovico Ariosto stayed during one of his trips to Florence at
the beginning of the 16th century. Three centuries later, it became the seat of

W
hat could be more pleasant on a cold autumn or winter day than taking refuge in an elegant café and warming your hands and heart with a tea or hot chocolate? We take you to the best cafés in Florence where you can indulge in this flavourful and relaxing break, amidst period lounges and renowned personalities. CAFFÉ GILLI This is the oldest café in the city, Florence’s ‘living room’ since 1733. Originally in Via dei Calzaiuoli, it was in 1917 that Gilli moved between Via Roma and Piazza della Repubblica. The only Florentine Art Nouveau café, amidst Murano crystals, precious marbles and frescoes, where artists and personalities such as Ardengo Soffici and Marinetti used to meet. Gilli’s coffee is a real speciality, as is their cioccolata in
tazza (chocolate in a cup), to be accompanied by their mouth-watering mignon or a single serving of one of their spectacular miniature cakes (Via Roma, 1r). CAFFÉ PASZKOWSKI The other favourite haunt of early and mid-20th century intellectuals, the aforementioned Soffici, as well as Gabriele D’Annunzio, Eugenio Montale and many others. At the time the ‘Caffè Concerto’ was a literary salon and brewery, and in 1991 it was declared a National Monument. First-class coffee, pastries, teas and infusions. Pan brioche for real connoisseurs, as well as delicious savoury offerings (Piazza della Repubblica, 35r). GIACOSA A historic establishment, reopened this summer, and known to all as the bar where, in 1919, the Negroni cocktail was born, a revised and corrected version of the Americano based on
the idea of Count Cammillo Luigi Manfredo Maria Negroni. Today, the iconic cocktail is also interpreted in pastry dishes, such as the mouth-watering mignons, part of an assortment that ranges from sought-after single-servings to biscuits and traditional desserts, such as schiacciata alla fiorentina, available all year round, torta della nonna and the unmissable rice pudding (Via della Spada, 15r). RIVOIRE An institution in the world of chocolate making for 150 years. It was Enrico Rivoire, chocolatier to the royal family of Savoy, when Florence was the capital of Italy in 1872, who opened a steam-powered chocolate factory in Piazza della Signoria to create and offer customers excellent chocolate made according to an ancient and secret recipe. From the silkiness of their chocolate in a cup to the 63

For tea, Giardino 25 relies on the expertise of La Via del Tè, the hot chocolate is milk or dark, and as for the coffee, special blends are used, to be enjoyed in one of the small lounges of the café, alongside sweet and savoury proposals (Piazza della Signoria, 37r).

In fact, ToscaNino’s concept is simple and straightforward: use only products of Tuscan excellence. This not only applies to the teas and herbal infusions, but also the coffee, organic juices and chocolate, as well as the flour used for the pastries and baked goods made in-house (Rinascente - Piazza della Repubblica). CAFFÉ LIETTA Opened by sisters Francesca and Lucilla Tacconi, the elegant café under the
loggia in Piazza della Libertà is named after their mother Lietta Cavalli, who was the sister of fashion designer Roberto Cavalli and a fashion personality in her own right. The interior is reminiscent of a greenhouse, with lights wrapped in green shoots and an entire wall dedicated to vintage objects and small bouquets. The highlight of the menu is their famous ‘pirulo’, a filled shortcrust pastry pudding, to be enjoyed in its classic version, ricotta and cream, or in one of its infinite variations (Piazza della Libertà, 6/7/8r).

T
he Fiorentina steak is a premium cut of meat including the bone, as thick as a finger or a finger and a half, and cut from the back of the veal’, wrote the famous food connoisseur Pellegrino Artusi. Today, its size has changed and a proper Fiorentina steak’s thickness cannot be less than 4-5 fingers, but still needs its typical T-shape obtained from the bone and the specific cut of the sirloin. You cannot just use any meat but it is necessary to use a heifer of the Chianina breed which has tender and tasty meat and must be cooked 74

This restaurant is located in a former antique bookshop and it is one of the most fascinating restaurants opened in recent years. Here they mostly use the Marchigiana or Chianina breed for their steaks, cooked over charcoal in front of the guests. They also heat the bone to keep it warm. It is served on beautiful chopping boards with Scarperia artisan knives (Via Ricasoli, 14r).
ALL’ANTICO RISTORO DI CAMBI
At the counter of the Cambi, you will always find traditional steaks on display with a foreign stamp on the rind. Those who love Fiorentina steak will have the opportunity to taste delicious meat here. Tender, cooked on the grill and four-finger thick as it is customary today (Via Sant’Onofrio, 1r).

One of the smallest buchette in the city, operative since 1945. Here you can try all the local traditional dishes and savour a Fiorentina cooked in a Josper, the most popular oven among chefs in recent years.
