Because we all love to sin. We enjoy these vices and many times we fall into them. We love to get angry once in a while and take it out on someone else, eat until we say “no more”, spend entire days doing nothing productive, see someone else’s things and wish they were ours, enjoy our sexuality without limits, see ourselves in the mirror and feel like we’re perfect, and want to lead a life of luxury and excess.

Porque a todos nos gusta pecar. Disfrutamos estos vicios y en muchos momentos caemos en ellos. Nos encanta enojarnos de vez en cuando y descargar nuestra ira con alguien más, comer hasta decir “no más”, pasar días en los que no hacemos algo productivo, ver las cosas de los demás y desear que fueran nuestras, disfrutar de nuestra sexualidad sin límites, vernos al espejo y sentir que somos perfectos y querer llevar una vida de lujos y excesos.

Many people criticize the all-inclusive hotels and tour packages by saying they are a way to take the adventure out of traveling. But if you're heading to a place you donâ&#x20AC;&#x2122;t know or returning to a destination with an environment different to the one you live in, you're already starting an adventure. Besides, an adventure is what you make of it and we must not generalize and think that the world population has a similar concept of this word. For many, an adventure is to start a family, while for others it is to travel the world from an exotic place to the next. For many an adventure is to marry the person they love in a beautiful destination, while for others it is going to a big rave in a desert, forest or beach.

The truth is that we can define adventure in so many ways and still be right. The advantage of "all inclusive" tourism is that it is the ideal way to travel for people looking to relax without having to worry about the stress of paying on the spot for everything you consume or new activity you want to try. In the way that you have your itinerary ready before your trip and the only thing you need to worry about is to be on time at each new experience.

Hay muchas personas que critican los hoteles todo incluido y paquetes turísticos ya que dicen que es una forma de quitarle la aventura a viajar. Pero si de por sí ya te estás dirigiendo a un lugar que no conoces o regresando a un destino con un ambiente diferente al que vives, ya estás empezando una aventura. Aparte, la aventura es lo que tú creas y no debemos de generalizar y pensar que toda la población mundial tiene un concepto similar de esta palabra. Para muchos la aventura es empezar una familia, mientras que para otros es viajar por el mundo a lugares exóticos. Para muchos una aventura es casarte con la persona que amas en un destino paradisiaco, mientras que para otros es ir a un festival de música electrónica en un desierto, bosque o playa. La verdad es que podemos definir aventura de tantas formas y aun así estaríamos en lo correcto. La ventaja del turismo “todo incluido” es que es la forma ideal de viajar para las personas que buscan relajarse sin tener que preocuparse por el estrés de pagar en el momento por cada cosa que consumes o nueva actividad que quieras probar. De tal forma que desde antes tienes tu itinerario organizado y por lo único que te debes de preocupar es por llegar a tiempo a cada nueva experiencia.

Spotlight on #HaciendaElMortero In Cancun people eat well, either at the hotel or one of the many restaurants that exist in this wonderful destination. And, being in Mexico, the best we can recommend is an authentic Mexican restaurant, so we had an interview with the executive chef of Krystal Cancun, Ivan Loera, to discuss Hacienda el Mortero.

En Cancún la gente come bien, ya sea en el hotel o uno de los muchos restaurantes que existen en este maravilloso destino. Y, por estar en México, lo mejor que podemos recomendar es un auténtico restaurante de comida mexicana, por lo que tuvimos una entrevista con el chef ejecutivo de Krystal Cancún, Iván Loera, para hablar de Hacienda el Mortero.

What makes Hacienda el Mortero so popular? What makes this restaurant successful is that we respect the classic Mexican food. Each hotel and restaurant has its time and place but in the end we must be consistent. Hacienda el Mortero traditionally has been modeled after the typical hacienda in Durango and, therefore, has to offer the typical food of Mexico.

¿Qué hace tan popular a Hacienda el Mortero? Lo que hace exitoso a este restaurante es que respetamos la comida clásica mexicana. Cada hotel y restaurante tiene su tiempo y espacio pero al final hay que ser coherentes. Hacienda el Mortero, por tradición sabes que es la hacienda típica de Durango y por lo mismo hay que vender la comida típica de México.

Anything new you can tell us about the restaurant? We are about to change the menu, we will renew it completely and we’re looking for dishes from all around the country. In the new menu we see lots of color and flavor combinations, especially in sauces. How is Mexico celebrated in Hacienda el Mortero? Something that goes hand in hand with Mexican cuisine is our traditions, and unfortunately they have been losing their impact overtime, but not here. Hacienda el Mortero had for the first time a “dance of catrinas” for Día de Muertos (or Day of the Dead). Also on September 15 we have a big Mexican fiesta to celebrate our independence day.

¿Alguna novedad que nos puedas decir del restaurante? Estamos a punto de cambiar el menú, lo vamos a renovar completamente y estamos buscando comida de todo el país. En la nueva carta vemos mucho colorido y combinación de sabores, en salsas sobretodo. ¿Cómo se celebra México en Hacienda el Mortero? Algo que va de la mano con la cocina mexicana son todas las tradiciones que tenemos y lamentablemente se han ido perdiendo poco a poco, pero aquí no. En Hacienda el Mortero tuvimos por primer año un baile de catrinas para el día de muertos. También el 15 de septiembre hacemos una fiesta mexicana para dar el grito.

How to manage our time accordingly Cómo organizar bien nuestro tiempo Dra. Laura álvarez One of the keys to personal and professional success has to do with the ability to organize and manage your time well, and although it seems as a simple task, it is not. Many times we leave everything for the last minute, causing ourselves great stress and anxiety. In many cases, the problems we have when organizing our time are a result of an excess in responsibility or the need to perform the tasks perfectly. In these cases, it’s necessary to know how to say no and delegate those tasks that others can perform. It is therefore very important to know how to organize and invest our time accordingly. Guidelines to organize your time well: Establish priorities Make a list of all the things to do during the day or the week and divide them according to their level of importance. Be proactive Make plans ahead of time to make a good use of your time. Postpone or cancel irrelevant things that only consume time and resources, such as mobile games, unnecessary texting or social networking. Simplify Learn to say no to things of little importance and multitasking, it just brings stress and many things can go wrong.

Look for help Sharing responsibilities takes a load off; we must realize that we can’t do everything in life. Look for support and trust people who offer their help. Rest well It is very important to sleep at least 8 hours a day, so that you will recover physically, emotionally and mentally. Sleep is an excellent investment of time, it improves concentration and memory and promotes learning. However, lack of sleep increases errors, accidents and irritability Always have in mind that good planning and organization of time facilitate the feeling of control. Thus, the associated anxiety and stress decrease considerably. Invest some of your time in being happy. Without guilt and expectations. You will feel the strength of that happiness in each moment of your life. You will think more clearly, be more motivated and feel better and healthier when you can give your all, regularly, to something that makes you happy. It is a truly rewarding way to spend your time.

Una de las claves del éxito personal y profesional tiene que ver con la capacidad de organizar o gestionar bien tú tiempo y aunque parece una tarea sencilla, no lo es. Muchas veces dejamos todo de última hora, causándonos un gran estrés y ansiedad. En muchas ocasiones, los problemas para organizar el tiempo son consecuencia del exceso de responsabilidad o del afán por realizar las tareas de manera perfecta. En estos casos, es necesario aprender a decir que no, así como a delegar aquellas tareas que pueden realizar otras personas. Por eso es muy importante saber organizar e invertir bien el tiempo. Pautas para organizar bien tu tiempo: Establece prioridades Haz una lista de todas las cosas por hacer durante el día o la semana y divídelas de acuerdo a su nivel de importancia. Se previsor Haz planes con anticipación para aprovechar bien el tiempo. Pospón o cancela cosas irrelevantes que solo consumen tiempo y recursos, como por ejemplo los juegos en los celulares, los mensajes de texto innecesarios o las redes sociales. Simplifica Aprende a decir no a cosas de poca importancia y a no hacer varias cosas a la vez, eso solo te trae estrés y las cosas pueden salir mal.

Busca ayuda Compartir responsabilidades te quita un peso de encima, hay que reconocer que no se puede hacer todo en la vida. Busca apoyo y confía en las personas que te ofrecen su ayuda. Descansa bien Es muy importante que duermas por lo menos 8 horas diarias, así te recuperarás física, emocional y mentalmente. Dormir es una excelente inversión de tiempo, pues mejora la concentración y la memoria, además fomenta el aprendizaje. En cambio, la falta de sueño aumenta los errores, accidentes e irritabilidad Ten siempre presente que una buena planificación y organización del tiempo facilita la sensación de control. De esta manera, la ansiedad y el estrés asociados disminuyen considerablemente. Invierte algo de tu tiempo en ser feliz. Sin culpas y sin expectativas. Sentirás la fuerza de esa felicidad en cada fragmento de tu vida. Pensarás más claramente, estarás más motivado, te sentirás mejor y más sano cuando puedas entregarte, periódicamente, a algo que te haga feliz. Es una manera verdaderamente enriquecedora de invertir tu tiempo.

Those are the kind of pictures that your friends will always look at and you’ll know that, at the moment, they hate you a little bit. You definitely have to travel to Riviera Maya and visit its white sand beaches and crystalline waters, where you can spend a vacation that will make everyone else green with envy.

La Riviera Maya es un corredor turístico que recorre algunas de las playas más emblemáticas de México, que cuentan con hoteles majestuosos, la vida nocturna más vibrante y parques naturales que ofrecen aventura para todos. Visitar la Riviera Maya es todo un privilegio para los sentidos y es algo que muchos quieren hacer por lo menos una vez en la vida. Salvador Nuñez Perhaps this is one of the 7 deadly sins few confess, many aren’t even aware that they practice it daily. Unlike other "little sins", this is one that is never enjoyed. Gluttony, lust, sloth, they bring us momentary pleasure. But envy doesn’t. Envy eats us inside, envy makes us live frustrated and angry with life and ourselves. To start with, I don’t like the term "sin" at all, I prefer to call it "lack of knowledge" "ignorance" but the truth is that "sin" itself sounds rich. So at least in this publication, let’s continue to talk about sin. "The forbidden always draws attention, even though its appeal ends up always turning into a pumpkin." It’s curious to realize why we envy other people, their circumstances, their condition, their appearance. We do it because in many cases, our perception of life, of things, is as small and limited as our eyes. We envy those who have more money, more power, more beauty, more sex, but don’t even know if they are happy, if they can enjoy what they have, what they do and if they live in peace. People say that there is good envy and bad envy. But I don’t think there is good or bad frustration. Envy doesn’t feel good, period. We live imitating instead of watching. We prefer the noise that stuns the silence that clarifies our mind.

We live so fast that we have forgotten who we really are and what makes us happy. I envy, you envy, he envies, she envies, we envy, they envy and we all end up screwed. I insist, we need to stop for a while to reflect, to remember our passions, our dreams, our hobbies, to recover our identity. "Whoever stays true to himself, knows he can’t find happiness in the life of others or under circumstances beyond his own." "There is no human being exactly like the next one and yet, we can all be happy. This means there’s as much different types of happiness as there are different people." The next time you feel envy for something or someone, better remember what you have and enjoy it twice as much. Oh, and remember that only whoever doesn’t sin of "envy" enjoys the success and happiness of others. So don’t think that most people buy into all the likes you give their photos and stories on social network. Hahaha.

31 Quizás este sea uno de los 7 pecados capitales que pocos confiesan, incluso muchos ni siquiera están conscientes de que lo practican a diario. A diferencia de otros “pecaditos”, éste es uno de los que jamás se disfrutan. La gula, la lujuria, la pereza, llevan placer momentáneo. Pero la envidia no. La envidia carcome por dentro, la envidia nos hace vivir frustrados y enojados con la vida y con nosotros mismos. De entrada, a mí el concepto de “pecado” no me gusta nada, preferiría llamarlo “desconocimiento”, “ignorancia” pero la verdad es que “pecar” sí suena rico. Así que por lo menos en esta publicación, sigamos hablando del pecado. “Lo prohibido siempre llama la atención, aunque invariablemente eso tan atractivo termine convirtiéndose en calabaza”. Es muy curioso darnos cuenta por qué envidiamos a la gente, sus circunstancias, su condición, su apariencia. Lo hacemos porque en muchas ocasiones, nuestra percepción de la vida, de las cosas, es tan pequeña y limitada como nuestros ojos. Envidiamos a quienes tienen más dinero, más poder, más belleza, más sexo, pero ni siquiera sabemos si esas personas son felices, si pueden disfrutar lo que tienen, lo que hacen y si viven en paz. Dicen por ahí que hay envidia de la buena y envidia de la mala. Yo no creo que exista frustración de la buena y de la mala. La envidia no se siente rico y punto.

Vivimos tan rápido que se nos ha olvidado quien en realidad somos y lo que nos hace felices. Vivimos imitando en lugar de observándonos. Preferimos el ruido que ataranta al silencio que aclara nuestra mente. Yo envidio, tú envidias, él envidia, ella envidia, nosotros envidiamos, ustedes envidian y todos estamos jodidos. Insisto, hace falta detenernos un poco a reflexionar, a recordar nuestras pasiones, nuestras ilusiones, nuestros hobbies, a recuperar nuestra identidad. “Quien se mantiene fiel a sí mismo, sabe que no puede encontrar su felicidad en la vida de otro ni bajo circunstancias ajenas." “No hay un ser humano igual a otro y sin embargo, todos somos capaces de ser felices. Esto significa que hay tantas felicidades distintas como personas diferentes." La próxima vez que sientas envidia por algo o por alguien, mejor recuerda lo que tienes y disfrútalo el doble. Ah, y recuerda que sólo quien no peca de “envidioso” disfruta del éxito y la dicha de los demás. Así que no creas que la mayoría de la gente se compra todos los likes que le das a sus fotos e historias en las redes sociales. Ja, ja, ja.

But the sexually diverse population is getting a reputation of being particularly demanding tourists. Could it be that this community is greedy? Most couples in this community are known for having no kids, therefore, there’s a higher income, which may be spent on a first class ticket or a lush hotel, not in diapers, tuition and pediatricians. For this reason, you can avoid restaurants with playgrounds, and choose one with Michelin stars; or get two tickets for the opera and not four to the dolphin show. "Mexico currently occupies the eighth place worldwide for incoming foreign tourism and the twelfth in currency income earnings. Currently, 20 million tourists visit the country every year, and the jobs created in this sector of the economy add up to 1.8 million and soon the annual revenues will reach 10 billion dollars" PWC, 2015. There's something about some Mexican traditions that immediately make us think of ferocity, intensity and rage. And, if we analyze it, there are many aspects of the history of our country that, just like others, trace a timeline of violent acts and events that have led us to get by and become the society that we are today. From sacrifice and rituals in pre-Columbian times to the complete conquest of the Spaniards; from independence and revolution of a new nation to the economic and social development we have achieved in the last years. Without a doubt it’s something that couldn’t have done without passion and fight. But delving into the subject of Mexico's violent history is something that would take us years to analyze, so this time we would like to focus on some of the popular sports in this country that are rooted in violence. If we talk about Mexican activities that are known worldwide we would have to talk about lucha libre (wrestling), which mixes sports with theater to entertain the viewer through staged fights, colorful characters and displays of manhood. Some of us know the level of theatricality that it involves, but many people still idolize “luchadores” (wrestlers) and see them as a source of pride, to the point that, even if it’s for

just a couple of hours, it unites a group of people interested in the same goal, to have fun and cheer for their favorite fighter. Besides, who hasn’t traveled to Mexico and taken back a wrestler mask as a souvenir? Nowadays many people prefer boxing, and watching the fights has turned into a major event and pride for all Mexicans, regardless of whether you’re male or female, how much money you have, what deity you pray to, which state you come from or who you like. And Mexico has given us great fighters, including Saul "el Canelo" Alvarez, Julio Cesar Chavez and Juan Manuel Marquez. Whether is a staged sport or a real fight, we definitely like to project anger and rage through many of the actions we adopt as part of our culture. However, when we see the sport as just a sport, it doesn’t hurt to enjoy these moments of unrelated anger and have a good time with friends.

Hay algo sobre algunas tradiciones mexicanas que inmediatamente nos hacen pensar en ferocidad, intensidad e ira. Y es que, si nos ponemos a analizarlo, hay muchos aspectos de la historia de nuestro país, que similar a la de otros, traza una línea de tiempo de actos y eventos violentos que nos han llevado a salir adelante y ser la sociedad que somos hoy en día. Desde los rituales y sacrificios en épocas precolombinas a la completa conquista por los españoles. Desde la independencia y revolución de una nueva nación al desarrollo económico y social que hemos logrado en los últimos años. Sin duda es algo que no se habría logrado sin pasión y pelea. Pero ahondar en el tema de la historia violenta de México es algo que nos llevaría años analizar, por lo que en esta ocasión nos gustaría enfocarnos en algunos de los deportes populares en este país que tienen sus raíces en actos de furia. Si hablamos de las actividades mexicanas que más se conocen en el mundo tendríamos que hablar de las luchas, que mezclan el deporte con el teatro para divertir al espectador a través de peleas montadas, personajes coloridos y muestras de hombría.

Algunos sabemos del nivel de teatralidad que conllevan pero mucha gente todavía ve a los luchadores como sus ídolos y fuente de orgullo, al punto que aunque sea por un par de horas une a un grupo de personas interesadas en un mismo objetivo, pasarla bien y animar a su luchador favorito. Aparte, ¿quién no ha viajado a México y se ha llevado una máscara de luchador como recuerdo? Hoy en día muchas personas han optado por preferir el boxeo y ver las peleas se ha vuelto en todo un acontecimiento y orgullo para los mexicanos, sin importar si eres hombre o mujer, cuánto dinero tienes, a qué entidad le rezas, de qué estado eres o quién te gusta. Y México nos ha dado grandes boxeadores, incluyendo Saul “el Canelo” Álvarez, Julio Cesar Chávez y Juan Manuel Márquez. No importa si es un deporte actuado o una pelea real, sin duda nos gusta proyectar nuestra ira y furia en muchos de los actos que adoptamos como parte de nuestra cultura. "Sure Roxana, you're an expert on that." I want to keep my dignity and my exes’ intact with you readers, so I gave myself the task of collecting truthful anecdotes of my friends with a list we call "the Never-Ever." Too bad we don’t have some tequila to drink as we read point by point. • Call their mother to ask her to intervene.

• Make up a street attack to call them asking for help.

• Continue to attend your EX’s family gatherings.

• Send them a naked selfie with the message: "Look what you're missing."

• Use climate, an earthquake or a political event as a pretext to resume your phone calls in a "casual" manner.

• Go to a medium and ask to have the spirits from beyond intervene in your relationship

• Get completely hammered in front of them.

• Keep going to their birthday parties.

• Text them saying something like: "Oops sorry, wrong number." • Go to their workplace with your "supposed new fling." • Pawn a gold chain to buy them a gift that will make them take you back. • Give back the gifts they gave you. Especially if it’s just to release your anger against them. If you don’t want them, donate, sell or give them away. • Convince them to go together to the All-inclusive trip you already paid for.

Spotlight on #CharlyDiaz We recently had the pleasure to interview the Mexican porn star Charly Diaz and, as we are featuring the concept of seven deadly sins, what better way to fall in lust with him than to talk a little about his work, what he likes and the porn industry in Mexico. How did you decide to become a porn star? In 2008 I got an invitation by email from TitanMen.com and about a week and a half later I received a ticket to fly to San Francisco to film my first scene. Which was your first scene? How did you feel? My first scene was Flux. At the moment you feel weird, but more than anything is the excitement and curiosity of being the first time. What makes you feel the proudest about your work? That I can do what many people don’t dare to do and I enjoy it to the fullest. What would you consider is the general view of Mexican society regarding pornography? There’s still a lot of hypocrisy and double standards. 80% of adults consume pornography, if not more. But it’s always frowned upon, as if it’s a sin.

How would you describe the evolution of this industry in Mexico? It’s moving forward but slowly, we really need to look at sex as such. No es posible que veamos más natural un asesinato que el porno. ¿Quién consideras que ha jugado un papel importante para lograr que el porno mexicano se dé a conocer a nivel mundial? The work of the "NiĂąo Terrible" is characterized by producing portraits of adults with childlike touches, big eyes that question, doubt and connect in an irreverent and invasive eye contact with the viewer as a provocation. Rivera transforms masculinity into a mocking, natural and fragile look, challenging the concept of strength and virility, transforms sexual poses into funny guys showing their body as a desire to provoke and have fun with subtle strokes, even teasing androgyny. "+CULINO" is a series of 35 pencil drawings and 25 watercolors which is also a point of reflection to work with childhood from a different perspective, playing with the adult person in the imaginary of auto-perceptive memory and projective ideal, however this magic comes from the idea that the main source of the work is the most problematic, interpretive and censored: the body, the "+CULINOS" do not seek for it to be totally theirs, it seems that they shed their clothes with unparalleled speed, showing at the slightest provocation their seductive nature.

"+CULINO" is a series of 35 pencil drawings and 25 watercolors which is also a point of reflection to work with childhood from a different perspective. These "naked men" displayed, tease lust of the photographs that were re-taken: porn actors from Mecos Film productions, transgender men, strippers, escorts and models are mixed in the irreverent act of showing their bodies and proud manhood putting innocence and mischief before prejudice and eroticism. An ironic vision of masculinity itself.

La obra del “Niño Terrible” se caracteriza por producir retratos de adultos con toques aniñados, de grandes ojos que interrogan, dudan y conectan en un irreverente e invasivo contacto visual con el espectador a modo de provocación. Rivera transforma la masculinidad hacia una mirada burlona, natural y frágil, retando el concepto mismo de fuerza y virilidad, transforma las poses sexuales en divertidos chicos enseñando su cuerpo como un afán de provocar y divertirse con trazos sutiles, incluso guiñando lo andrógino. “+CULINO” es una serie de 35 dibujos a lápiz y 25 acuarelas que también es un punto de reflexión para trabajar la infancia desde otra óptica, jugando con la persona adulta dentro del imaginario del recuerdo autoperceptivo y el ideal proyectivo, sin embargo, esta magia proviene de que la fuente principal de la obra es lo más problemático, interpretativo y censurado: el cuerpo, los “+CULINOS” no buscan que sea totalmente de ellos, pareciera que se deshacen de su ropa con una rapidez incomparable, mostrando a la menor provocación su naturaleza seductora.

Spotlight on #SethFornea Seth Fornea is a dreamy eyed country boy from a farm in Louisiana and that now lives, works, and socializes in his new home city of New York, and basically all over the world. Seth is a Gogo dancer on the gay circuit from huge parties to small bars. He is a model for editorials, clothing companies and sexual lubricants, and has appeared as an actor on several TV commercials for Nasty Pig, a clothing brand. He brings life and energy to a party wherever he goes and never leaves his smile at home. Seth is also an activist and serves on the board of directors for Campus Pride, a national non-profit working in the USA to combat bullying of LGBT students at schools and create student leaders in communities lacking LGBT guidance. Seth first visited Mexico in May of 2000 on a high school senior class trip to Cancun. It was a first of many for Seth, first time in a Spanish-speaking country, first time in a clear blue ocean, and the first of many Long Island Iced Teas! Many years went by and Seth once again visited Mexico, but this time to Puerto Vallarta for vacation as a birthday gift to his boyfriend of 4 years in November of 2015. In his 30's, Seth really appreciated the beauty, scenery, and the culture of Puerto Vallarta. He and his boyfriend spent 5 days exploring the city and the surrounding landscapes, from beaches to nightlife to zip lining, and made some amazing friends along the way that he still keeps in touch with.

Seth could be described as a little goofy, a little clumsy, a lot of handsome, and a whole lot of fun, sometimes referred to as #HotMessSeth. Shortly after returning home to NYC Seth had the opportunity of coming back to Mexico to work the White Party 2015 in Mexico City on December 5th. It is a party to celebrate life and to remember the struggle with HIV continues. While in Mexico City, Seth got the chance to explore the architecture, taste the local cuisine and experience some local hospitality from friends he made before in Mexico and others he met in this occasion. Mexico has left and amazing impression on Seth and he is eager to travel to more destinations in this beautiful country, learn more Spanish and experience more of its culture.

Spotlight on #MexicanFood Mexican gastronomy is, without a doubt, one of the most varied and popular worldwide. That’s why we made the best of our interview with Chef Ivan Loera and talked to him about the essence of our cuisine and why it is so loved by foodies everywhere. Why do you think that Mexican cuisine is so well known and loved around the world? Because of the diversity we have in flavors, textures and colors. How did your love of cooking come to be? We all have an inner chef. Who didn’t at least once cook with his grandmother or mom? From that moment your instinct and love of cooking start, also the interest and curiosity to know more. In fact, I studied architecture and changed course completely, and it's because you end up becoming critical and demanding in the kitchen and it starts to grow on you.

In your opinion, what are the three essential ingredients in Mexican cooking? Spices, such as cinnamon and pepper. Something essential in Mexican food, which is very much against the healthy wave, is fat or lard. And the other would be the spicy flavors from hot peppers. What are the five most representative dishes of Mexico? It will sound crazy but chilaquiles. Also the poblano mole, tamales, pozole and tortilla soup. And the most beloved dessert by Mexicans? Churros and Mexican candies. There is also a myriad of desserts, like the “jericalla”, “natillas” (or custard), “camotes” (or sweet potatoes) and baked plantains with condensed milk. Do you think that there is any cuisine in another country that resembles ours in flavor? The current Mexican cuisine, from after the conquest, is heavily influenced by European cuisine. So in terms of seasoning would be the Spanish. And in terms of popularity and variety? Italian and Asian which, for my taste, are with Mexico the three strongest there are.

La gastronomía mexicana es indudablemente una de las más variadas y populares a nivel mundial, por lo que en aprovechamos nuestra entrevista al chef Iván Loera para que nos hablara un poco de la esencia de nuestra cocina y por qué es tan amada por los amantes de la comida. ¿Porque cree que la cocina mexicana es tan conocida y amada en todo el mundo? Por la diversidad que tiene en sabores, texturas y colores. ¿Cómo nació tu amor por la cocina? Todos tenemos un chef por dentro. ¿A quién no le tocó cocinar con la abuelita o la mamá? Desde ahí nace tu instinto y amor por la cocina, el interés y curiosidad de saber más. De hecho, yo estudié arquitectura y cambié completamente de rumbo, y es porque te al final te vuelves exigente y crítico y te gana la cocina.

En su opinión, ¿cuáles son los tres ingredientes esenciales en la cocina mexicana? Las especias, como canela y pimienta. Algo esencial en la comida mexicana, que va muy en contra de la onda sana, es la grasa o manteca de puerco. Y el otro sería los picantes, los chiles. ¿Cuáles son los cinco platillos más representativos de México? Va a sonar medio loco pero los chilaquiles. También el mole poblano, los tamales, el pozole y la sopa de tortilla. ¿Y el postre más querido por los mexicanos? Los churros y los dulces mexicanos. Que también hay una infinidad de postres, está la jericalla, las natillas, los camotes y el plátano horneado con leche condensada. ¿Considera que existe alguna gastronomía en otro país que se asemeje a la mexicana en sabor? La cocina mexicana actual, o después de la conquista, tiene mucha influencia de la cocina europea. Entonces, en cuanto a condimentos vendría siendo la española. ¿Y en cuanto a popularidad y variedad? La italiana y asiática, que para mi gusto, con la mexicana, son las tres más fuertes que hay.
