in the kitchen This year before you freeze your strawberry bounty from the Florida Strawberry Festival, why not try this delightful dessert. This delicious and easy treat did not take long at all for the kids to make and it took even less time for the family to devour it.
Strawberry Cupcakes • 1 package white cake mix • 1 small package strawberry gelatin • 4 egg whites
• ⅓ cup vegetable or canola oil • 1 cup fresh or frozen strawberries • ½ cup water
• ⅓ cup butter • 2 ½ cups powdered sugar • Additional fresh strawberries for garnish
1. Combine cake mix, gelatin, egg whites, and oil in a large mixing bowl. Beat until well blended. 2. Mash strawberries in their juice. Set aside ¼ cup for icing, and add remaining berries and water to cake batter. Mix well. 3. Pour batter into 24 lined or greased cupcake pans. Bake at 350 degrees for 15 to 18 minutes. Cool completely. 4. Combine butter and reserved strawberries in a small mixing bowl. Gradually beat in powdered sugar until spreading consistency. 5. Frost cupcakes and garnish with fresh strawberry halves, if desired.
