Apple Brie Bites
Servings: 24 1 sheet puff pastry, thawed 5 ounces Brie cheese 1/2 cup Musselman’s Apple Butter 1/4 cup pecans, chopped Heat oven to 400 F. Grease mini muffin pan. Press seams of puff pastry sheet together. Cut sheet into quarters then each quarter into six pieces. Use rolling pin to flatten each piece of pastry into square shape. Place one square into each muffin cup. Put 1/2 teaspoon brie, 1 teaspoon apple butter and 1/2 teaspoon chopped pecans into each muffin cup. Bake 13-15 minutes until golden brown. Serve warm. Strings in Harmony: Ken Luk’s Journey through Music and Education BY SUZIE WELLS
K
en Luk, a prominent figure in the Rochester area music scene, wears many hats, both in his professional career and as a musician. Ken is a lecturer of guitar at SUNY Geneseo and Alfred University, an instructor of gamelan at the Eastman School of Music, and an instructor of guitar, mandolin, and gamelan at the Eastman Community Music School. He is also a co-founder of Rochester Classical Guitar, and the Rochester Mandolin Orchestra. Ken’s journey with different instruments began early in his life. Ken says that while he has no memory of it, his mom says he asked for piano lessons at age 5. By the time Ken was 7, when his younger brother started violin lessons, Ken would pick up the instrument and play all the tunes his brother had learned. The brothers ended up taking violin lessons until Ken was 19 and left for college in the US. As a teenager in Hong Kong, Ken and his friends listened to a lot of Japanese rock and with inspiration to start a J-rock cover band, Ken bought a bass and his friend bought a guitar. Though his friend soon lost interest in playing, Ken borrowed his guitar and learned those parts as well. When he came to the US, circumstances inspired Ken to pursue classical guitar studies at the Eastman School of Music in Rochester. While the classical guitar remains his primary instrument, since graduating in 2018, Ken has delved into mandolin (Brazilian choro and classical) and fingerstyle ukulele. Inspired by Annibal Augusto Sardinha (better known as Garoto), the Brazilian virtuoso on multiple plucked string instruments, Ken occasionally explores the sounds of a tenor guitar and a lap steel guitar. Ken says he appreciates learning about the culture behind the music he plays. He acknowledges the spiritual connection he feels with certain styles he pursues. He loves collaborative music-making, emphasizing the joy of learning complex pieces with fellow musicians and the shared experience of a live performance. One of Ken’s most notable moments as an educator occurred last Spring at SUNY Geneseo. He organized a concert for his guitar students, playing solo or in small groups. The concert culminated with an arrangement of Herbie Hancock’s “Watermelon Man,” where all 20 of his students performed as a guitar orchestra. With his musical versatility and adaptability, Ken is deeply engaged in various musical projects, showcasing his diverse talents across the area. He is part of Mosaic Foundation, Janus Guitar Duo, Trio Ghidorah, Rosa Boemia, fivebyfive, Scatter the Mud, Rochester Mandolin Orchestra, Eastman Gamelan Ensemble, and more. Ken has played in a variety of venues, but especially appreciates the intimate setting of the Little Theatre Café, as well as their support of a wide array of musical acts and styles. Additionally, he enjoys playing at outdoor, family-friendly events like the Lilac Festival and Fairport Canal Days, relishing the joy of people having a good time while appreciating music.
Boemia. These mark his first serious foray into music composition, and Ken is eager to see how they resonate with audiences. Additionally, Ken is finalizing the details of the Rochester Guitar Festival, an annual classical guitar festival in April that brings international touring guitarists to perform in Rochester. Ken Luk’s journey as a musician and educator is a testament to his passion, versatility, and dedication. From teaching at multiple institutions to performing with various Rosa Boemia - from left to right: Bernardo groups, Ken continues Marcondes, Darien Lamen, and Ken Luk to push boundaries and explore the rich tapestry of music, creating a lasting impact on the local music scene and beyond. The future holds exciting possibilities for this multifaceted musician. The Rochester Mandolin Orchestra will host the Classical Mandolin Society of America convention in October 2024. Attracting world class musicians to Rochester, the RMO will also present a concert, and convention participants will all present a mandolin orchestra concert (in the past convention, the orchestra has had 120+ musicians, so imagine that!). “It’s going to be a really unique event!” Ken says. “I look forward to hosting my mandolin friends from all over the country in my hometown and presenting the classical mandolin to the Rochester general public.”

In the heat of the New Year’s Eve countdown, fueled by enthusiasm and possibly a few glasses of champagne, resolutions may roll off of the tongue. But come the morning of January 1, such resolutions may not hold the same appeal. Between 40 and 45 percent of the American population will make a New Year’s Resolution, according to polling by researchers at the University of Scranton. Research suggests that only about 8 percent of people stick with those resolutions and achieve their goals. The outlook is similar for Canadians, 31 percent of whom set New Year’s resolutions. Among those that do, three-quarters will break them, according to a poll from Ipsos. A survey of online shoppers who visited the website FreeDeliveryLand.co.uk revealed that the average length of time a person can expect to pursue their New Year’s resolution is around three and a half weeks, or 24 days. Maintaining resolutions can be a resolution in and of itself. Resolutions are made and broken every year. Make this the year you realize your resolution.

What Expecting Parents Can Do To Make Their Homes Safer • Conceal cables and cords. Cable and cord concealers are inexpensive and easily installed. Often used to cover cords hanging down from mounted televisions, concealers also can be used to hide cords coming from computers, lamps and other items that can pose a threat to young children. • Avoid hand-me-down kids’ furniture. The older a piece of furniture is, the less likely it is that the item will meet current safety guidelines. Some parents may be tempted to let their children sleep in the same crib they slept in as kids decades ago, but it’s safer to eschew nostalgia in favor of products that meet the latest safety standards. • Get rid of potential choking hazards. Prior to bringing their babies home, expecting parents can remove all small trinkets and other items that curious children may want to put in their mouths. When buying toys for kids, read the packaging to make sure each item is safe for babies and avoid buying or accepting any gifts with small pieces.

disease. I have heard that it is rare, but two colleagues have recently been diagnosed. We all work in a very high-stress field. -- J.H. ANSWER: Hashimoto’s thyroiditis is not at all a rare disease. It occurs in up to 10% of the population and much more frequently in women than men. Although people can be diagnosed at a young age, it is more common at older ages. It is caused by an autoimmune reaction to different parts of the thyroid, with thyroglobulin and thyroid peroxidase antibodies commonly found. TSH receptor antibodies are found on occasion. Hashimoto’s thyroiditis most commonly causes low thyroid levels, although there may be a period of time early in the disease where thyroid levels are high. Not everybody with antibodies will develop low thyroid levels. The thyroid is sometimes enlarged, but a careful exam will usually show that the gland is firm, showing that immune cells have infiltrated the gland. Treatment of Hashimoto’s thyroiditis involves replacing the thyroid hormone that the gland can no longer make. The dose depends on body size to a certain extent, but needs to be adjusted based on lab results. Most people are treated with levothyroxine, also called T4, which is the primary hormone made by the thyroid. T4 is converted to T3 (also called triiodothyronine, the active form of the hormone) in various tissues outside the thyroid. T3 only stays in the body for a short while before it is destroyed, so a once-daily treatment with T4, which lasts longer, allows the body to convert T4 to T3. Most people do very well with T4 treatment. A minority of people cannot efficiently make the active T3 form, in which case-combination treatment can be considered. Unfortunately, T3 must be dosed twice daily. It is thought that stress hormones play a role, since stress does seem to increase the risk of developing an autoimmune thyroid disease like Hashimoto’s. Dr. Roach regrets that he is unable to answer individual questions, but will incorporate them in the column whenever possible. SNOW REMOVAL AND YOUR MAILBOX During significant snowstorms, the Village of Geneseo Department of Public Works, in the course of plowing, may cause occasional damage to mailboxes, either from snowplows directly or from the force of snow being thrown by the plows. If such damage is indeed caused by snow removal, it is not done intentionally, but is an unfortunate consequence of snow removal. As far as the particular agencies replacing damaged mailboxes, it must be pointed out that there is NO statutory or legal authority, which grants a property owner/resident/business owner along a public highway any right to place a mailbox in a highway right-of-way. If a mailbox is within a village, town, county, or state right-of-way it is a courtesy to the postal service. From past experience, we have found that plastic mailboxes and/or posts do not withstand the abuse of snow from the plows hitting them; therefore they are not recommended. DEAR PAW’S CORNER: I left my dog Shep in the care of a pet sitter for a week while I was away on business. The sitter texted me that Shep cut his paw during a walk in the nearby woods, and they took him to my veterinarian for care. Shep is doing fine now. I have pet insurance, but I don’t think it’s my responsibility to pay for this. The injury occurred while the sitter was walking him. The sitter says that injury and illness are my responsibility to cover. Who should pay? -- Bill in Chicago

The American Kennel Club says that most puppies will need to poop shortly after a meal, anywhere from 15 minutes to a few hours. Puppies typically can hold urine a little longer overnight, but probably won’t be able to go the entire night without a potty break. Many pups can last around six hours from the last time they’ve gone out. An early-morning bathroom break will be needed, or consider penning the dog with puppy pads to catch the mess until the dog gains greater control over its bladder.

DEAR BILL: Did the sitter give any details of how Shep was injured? The circumstances are important. For example, if Shep was on-leash and stepped on an unexpected piece of debris in the path, that’s different than if Shep was let off-leash and was running free in the woods. But, if you normally let him off-leash in the woods and instructed the sitter that it was OK to do that, then that’s another consideration. Talk more with the sitter to get more details. In the meantime, pay the vet and submit the reimbursement claim to the pet insurance company. Professional sitters routinely include a statement in their contract with clients that any illness or injury is the responsibility of the client. This protects them from financial loss if something does happen. However, if they are accused of deliberately neglecting or abusing a pet in their care, that statement won’t protect them. On this note, I’ll add that sitters should purchase liability insurance that specifically covers them and their business in case a claim is made against them -- or worse, if they’re injured while caring for someone else’s pet.

So while humans may see crates as cruel, dogs very likely view their crates as secure places where they can go if they get scared or feel skittish. Seasonal [Local Bridge] is BS Why is the [local bridge] closed in the Summer? It makes it pretty tough to ride a bike between [local town] and [local town]! Also, why didn’t they make the thing 20 feet higher than it is? Seems like they could have done a lot better job with that bridge than they did! Would it really be so tough to change the schedule to let people get across in September, October, and April? We need authority to step up I work at a store in my local town and in my dept. we had a bullying situation. This person tried to ignore the individuals who would harass them, made rude comments or just blatantly gave dirty looks just to get them going. It was horrible to see them stressed or in tears because of this unnecessary drama. This person went to the two different managers to tell them what was going on. Their response was “Just ignore it” or “I’m not a HS Principal, just figure out a way to deal with it.” ARE YOU KIDDING ME? When we first start we have to watch videos on harassment and bullying and afterwards we need to sign a paper stating that we watched it. The video clearly states that if you are experiencing uncomfortable situations like this, the person to go to was your manager. And they have the audacity to tell them to just ignore it? Do your job as a manager and help protect the employees you’re supposed to oversee and help keep protected from situations like this!

SHADE-TOLERANT PLANTS COMPLETE LANDSCAPES Plants need sunlight to thrive and grow, but some need less sunlight than others. People who find their landscapes are less supportive to sun-loving plants can choose from a variety of shade-tolerant plants, shrubs and trees. Shade tolerance refers to a plant’s ability to withstand low levels of light. Certain plants have adapted this feature to survive in the wild. Plants that grow at the base of forest floors, for example, will get less sunlight than others outside of the tree canopy. Such adaptations enable a wide variety of foliage to grow even though they are not exposed to much sunlight. While sun-loving plants often have broad leaves and expend significant energy to capture sunlight for photosynthesis, shade-tolerant plants expend less energy and tend to be more efficient consumers of soil nutrients and sunlight. Penn State Extension’s Plant and Pests division says the amount of shade a plant is growing under will directly affect the density of the foliage and the plant’s flowering and fruiting characteristics. Blending shade-tolerant plants into the landscape can be an effective use of space. Before choosing plants for an existing landscape, it’s important to assess the level of shade or sun the plants will receive. Once homeowners understand which type of shade they are dealing with, they can then visit plant nurseries and select their plants. Most greenery comes with care instructions that include recommendations regarding the amount of shade/sunlight the plant will need to do well. If further assistance is needed, a knowledgeable employee can make suggestions based on landscape needs. MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL) Serves 4 1 pound morcilla blood sausage 1 pound mushrooms, sliced 2 tablespoons olive oil 4 cloves garlic, slivered Salt and pepper to taste 2 tablespoons white wine 1 cup shelled spring peas 1 tablespoon chopped fresh mint 2 tablespoons mint oil Mint Oil 1/2 cup extra-virgin olive oil 1/2 cup chopped mint Pinch of salt

Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas. In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve.
