Remove giblets and rinse turkey cavity with warm water. Determine how much oil you’ll need by placing the turkey in the cold fryer and filling with water until the turkey is submerged by 2 – 3 inches. Remove the turkey and make note of the water line by measuring with a ruler or piece of string to the top of the pot. Drain cavity well and pat dry with paper towels. Inject turkey breasts, thighs and legs with Tony Chachere’s Injectable Marinade as indicated on package. Generously sprinkle inside and outside of turkey with Tony Chachere’s Original Creole Seasoning. Using a deep fry thermometer, heat oil to 325°F using an oil with a high smoke point such as peanut, corn or canola. Carefully submerge turkey into hot oil with the hanger or basket using an oven mitt and fry for 3 1/2 minutes per pound. Remove turkey and check the temperature with a meat thermometer. The breast should be 170°F, thighs 180°F. Note: Place fryer outside on level dirt ground or grass to avoid oil stains, and keep a fire extinguisher nearby. Smaller birds work best for frying, preferably under 15 pounds. Be sure to drain all water from the turkey cavity before frying to prevent oil splatter and follow instructions provided with your turkey frying kit. Children’s Art Project T

his year, young patients participating in art classes provided by the Children’s Art Project at M. D. Anderson Cancer Center built a holiday gingerbread house that is a recipe for inspiration. Photos taken of this unique creation helped turn it into a cookie jar and a greeting card. Proceeds from the sale of these products and many others like them fund programs such as summer camps, college scholarships, ski trips, in-hospital classrooms, child life workers and other exciting activities for young cancer patients. Since 1973, the project has contributed more than $26 million dollars to special programs that make life better for children with cancer. While these young patients may have cancer, they never put their lives on hold.
