Preheat oven to 350°F. Trim the eggplants and cut into ½-inch cubes. Grease the bottom of a baking dish with olive oil and add eggplant. 1½ cups heavy cream
1 cup white mushrooms, coarsely chopped

1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate
8 strips of bacon, cooked and crumbled DIRECTIONS
Preheat oven to 375°F. Combine the eggs, cream, salt and pepper in a food processor or blender. Layer the spinach, bacon, ham, mushrooms and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Every year, when producing Campo Viejo, the winemaker tries to transmit the distinctive Rioja character. Toss chicken with juice of 2 lemons in large bowl. Add cucumbers, onions, cilantro, tomatoes, almonds, olive oil, salt and pepper. Cover and refrigerate at least 30 minutes. When ready to assemble, cut the avocados in half and discard seed. Generously drizzle with juice of remaining lemon to prevent browning and to enhance flavor. Place avocado half-shells on a plate.
