Time for Cozy Food Oven Baked Potatoes INGREDIENTS

4 medium potatoes

1 Tbsp. onion powder

¼ cup Antonio Celentano Extra Virgin Olive Oil

1 Tbsp. paprika

1 Tbsp. garlic powder

Salt and pepper to taste

DIRECTIONS

Pre-heat oven to 350° F. Slice each potato in 4 pieces, put in a bowl and mix in olive oil, garlic power, onion powder, paprika, salt and pepper until well coated. Place on a baking sheet and bake for 45 minutes or until tender on the inside and golden brown on the outside. Serves 4.

Butternut Squash Soup INGREDIENTS

1 Tbsp. olive oil

1 tsp. Italian seasoning

1 onion, diced

1 tsp. paprika

2 yellow peppers, diced

2 cloves garlic, chopped

2 stalks of celery, diced

¼ cup chicken soup base

2 carrots, diced

Salt and pepper to taste

1 butternut squash, peeled and cubed

½ cup MimicCreme, unsweetened

5 cups water

2 Tbsp. margarine

DIRECTIONS

In a pan, place oil and sauté onion, peppers, celery, carrots and squash until softened. Add water, Italian seasoning, paprika, garlic, soup base, salt and pepper. Cook until vegetables are done. Remove from heat.

Carefully transfer to a blender and blend until smooth. Add MimicCreme and margarine and blend. Serves 4.

Preheat oven to 400°F. Chop thin crisps into bite-size pieces and spread onto an oven sheet lined with baking parchment. Place oil in a frying pan and lightly sauté onion until translucent. Add meat, mix well and heat until meat is cooked. Add salt, pepper and garlic. Prepare cheese dip according to package directions. Cover thin crisp pieces with meat mixture, then pour on cheese sauce and finally the salsa. Bake for approximately 5 minutes. Serves 3.

Preheat oven to 500º F. Coat each tortilla with oil using your hands or a brush. Spread the tortillas on a cookie sheet and bake about 4 minutes.

Remove and cool until tortillas are warm to the touch. Lower oven heat to 400º F. Pour just enough sauce in the bottom of a 9x13” glass baking dish to cover. Pour the rest in a large bowl. Dip the tortillas, one at a time in the bowl and coat with sauce. Lay the tortilla in baking dish and fill with 2 tablespoons of meat. Place the cheese on top of the meat. Fold edges of tortilla over the cheese and roll in baking dish. Lay folded side down.

Repeat for each tortilla. Sprinkle any leftover sauce and cheese on top of the enchiladas. Place in oven for 15 minutes or until cheese is melted. Serves 4.

Shrimp Marinara INGREDIENTS

1 lb. capellini pasta (angel hair), cooked to package directions

½ cup water

3 cups Patsy’s Marinara Sauce

1½ lb. large or extra-large shrimp, peeled and deveined

¼ cup dry white wine

DIRECTIONS

In a large saucepan, bring Patsy’s Marinara Sauce to a boil. Add wine, water and shrimp. Reduce heat, cover, and simmer for 7 minutes. Salt and pepper, to taste. Serve over pasta. Serves 4.

Remove giblets and rinse turkey cavity with warm water. Determine how much oil you’ll need by placing the turkey in the cold fryer and filling with water until the turkey is submerged by 2 – 3 inches. Remove the turkey and make note of the water line by measuring with a ruler or piece of string to the top of the pot. Drain cavity well and pat dry with paper towels. Inject turkey breasts, thighs and legs with Tony Chachere’s Injectable Marinade as indicated on package. Generously sprinkle inside and outside of turkey with Tony Chachere’s Original Creole Seasoning.

Using a deep fry thermometer, heat oil to 325°F using an oil with a high smoke point such as peanut, corn or canola. Carefully submerge turkey into hot oil with the hanger or basket using an oven mitt and fry for 3 1/2 minutes per pound. Remove turkey and check the temperature with a meat thermometer. The breast should be 170°F, thighs 180°F. Drain on paper towels. Serves 6.

Note: Place fryer outside on level dirt ground or grass to avoid oil stains and keep a fire extinguisher nearby. Smaller birds work best for frying, preferably under 15 pounds. Be sure to drain all water from the turkey cavity before frying to prevent oil splatter and follow instructions provided with your turkey frying kit.
