7 oz. chicken breast, cubbed

1 oz. pistachio nuts, finely chopped

1 clove of garlic

Salt and pepper to taste

1 large egg white

4 Tbsp. sesame seeds

1 inch piece of root ginger, peeled and grated

1 tsp. corn flour DIRECTIONS

Put the chicken, garlic, egg white, grated ginger and corn flour in a food processor and blend to a smooth paste. Stir in the pistachio nuts and season with salt and pepper. Roll into balls and coat with sesame seeds. Heat the wok over medium heat and add the Toasted Sesame Oil. Stir-fry chicken balls until golden, about 10 minutes. Serve with salad. Serves 3. Let’s Keep Grilling Summer grilling is a way of life here in Texas and Fiesta can help you be the hero from start to finish on your grilling day. Check out the best ice cream sandwich recipe on the right side column. You and your kids will be licking your fingers once you finish one of these treats.

Chocolate Cookie Ice Cream Sandwiches with Toffee

Fiesta’s Meat Department Are you grilling outside with your friends or tailgating at your favorite soccer game? Well then, bring on the chicken because it’s National Chicken Month! How about a few beer can chickens or some barbecued chicken or even wings. Heck, our free range chickens are so good you can make them every way you want. Just season it with some love and baste it with some care and your chicken will be the talk of the town. Or what about a Texas size feast with short ribs, spare ribs and baby back ribs? Fiesta’s Meat Department has everything you need for your backyard BBQ.

Cookies: Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Sift flour, cocoa, baking soda and salt into a bowl. Combine butter and sugar in a large mixing bowl; cream together with an electric mixer until fluffy. Add egg, milk and vanilla, and beat until smooth. Add flour mixture and mix until combined. Stir in chocolate chips. Scoop a heaping tablespoonfuls of dough and roll into 1½ inch balls. Place balls on baking sheets 3 inches apart (you’ll have about 8 balls per sheet). Bake until dry on top, 13 to 15 minutes. Let cool on wire racks. Sandwiches: Soften ice cream to room temperature for 5 minutes. Place a scoop of ice cream between 2 cookies. Squeeze until ice cream reaches the sides. Roll sides into toffee and chocolate chips. Place sandwiches on a baking sheet, cover with plastic and freeze until firm, at least 1 hour. Makes 8 sandwiches.

6 Tbsp. unsweetened cocoa powder 1 Tbsp. whole milk ½ tsp. baking soda

1 tsp. vanilla extract

½ tsp. salt

1 cup semisweet chocolate chips

1¼ sticks unsalted butter, softened

2 pints ice cream (any flavor)

1 cup sugar

1 cup semisweet chocolate chips for sides

DIRECTIONS

1 cup toffee chuncks for sides

Fiesta’s Produce Department From Apples to Zucchini, Fiesta understands the importance of your family eating well whatever the season. We offer high quality, seasonally rotated fresh fruits and vegetables in Fiesta’s Produce Department with special emphasis on Locally Grown Texas products. Now is the time to enjoy this bounty with in-season eggplant, grapes, green beans, okra, pears, and sweet peppers and chiles. Celebrate the Hatch Chile this August and September while at its peak. Fiesta provides you with an international variety of fresh produce choices for your table.

How To Roast Chiles You can roast chiles under medium-high heat in the broiler, on a very hot grill, over open fire, on the stove top or in the oven. For the stove top method it is helpful to use a metal chile roasting rack placed over the open flame or electric element. Place the chiles onto the rack and keep the flame or electric element on medium. Prepare chiles – Wash chiles with cold water and dry thoroughly. Prepare heat – Get the heat source ready. Pre-heat oven to 450°F, broiler or grill, get fire ready or place the metal steamer over the open flame of a stove top. Char chiles – Place cleaned chiles under or over the heat and turn every few minutes or so until the skin is blackened. The entire chile will not be completely black, but it should be charred about 60%. It should take about 10 minutes on a grill or under the broiler or about 30-45 minutes in a 450°F oven . Remove from heat – Carefully remove the charred chilies from the heat source. Tongs are helpful for this. Sweating and cooling the chiles – Place the roasted chiles into a large stainless steel or glass mixing bowl and cover tightly with plastic wrap – or – place roasted chiles into large zip-lock bags and seal tightly. Place them into the refrigerator until they are cooled. Peeling and removing seeds – Peel all of the skin off of the roasted chiles with your fingers and discard. Next, pull the stem of the with your hands…the seed pod will come out quite easily. Split the roasted chiles with a sharp knife or with your hands. Remove all seeds and discard. Preparing roasted chiles for cooking – Chop or dice the roasted chiles and they are ready to cook with. Storing roasted chiles – At this point you can store the roasted chiles, whole or chopped, in two zip-lock bags. Fill the zip-lock bags, press lightly to remove ALL the air, seal completely and place into a second zip-lock bag, pressing ALL the air out. Store in the freezer for up to one year.
