White Bean and Red Onion Salad

INGREDIENTS

1 lb. green beans

2 (16 oz.) cans white kidney beans

½ tsp. kosher salt

2 Tbsp. Chef LaLa Homemade Chipotle Flavored oil

¼ cup extra virgin olive oil

½ tsp. freshly ground black pepper

Kosher salt to taste

2 Tbsp. Colavita Red Wine Vinegar

1 small red onion, thinly sliced

Rinse and trim the green beans. In a hot pan, add the Chipotle Flavored Oil. Then tossed the green beans for 3 – 5 minutes. Season with kosher salt. Serves 4.

Drain the beans in a sieve and rinse thoroughly under cold running water. Drain well. In a large bowl, combine the olive oil, vinegar, salt and pepper. Whisk until well blended. Add the drained beans and onions. Toss until well combined. Let stand or chill briefly; toss again before serving. Serves 6.

Cuban Style Red Snapper INGREDIENTS

4 Tbsp. olive oil

8 oz. boneless red snapper filet

6 Tbsp. white wine

3 tomato slices

1 pinch sea salt

½ of a small white onion, sliced

12 cilantro leaves

DIRECTIONS

Add olive oil to a sautée pan and heat on high. Add white wine, a pinch of sea salt and the Soul de Cuba Marinade. Let simmer for 1 minutes. Lower heat to medium and add the red snapper filet, tomato and onion. Cover and cook for 4 – 6 minutes until tender and cooked through. Add cilantro and serve on a bed of rice. Serves 1. DIRECTIONS

Fill a cocktail shaker half way with ice. Mix in all the ingredients (except lime slice and salt) and shake vigorously. Wet the rim of a margarita glass with the lime slice and dip in salt. DIRECTIONS

Brush mushrooms with olive oil on both sides and place on a plate. Set aside. Melt butter in a saucepan over medium heat. Reduce heat to medium-low and stir in both cheeses until melted. Mix in sour cream and garlic powder and heat through. Do not allow to boil. Place desired amount of cheese filling in each mushroom but don’t over fill. Top with fresh thyme and jalapeño slices to taste. Drizzle with kosher salt and pepper to taste. Place mushrooms on hot grill for about 10 – 12 minutes. Serves 8.
