To prepare sauce: Add oil to a medium sauce pan over medium-high heat. When warm add onion, garlic and mushrooms and sauté for 3 minutes. Add the tomatoes, carrot, wine, lemon zest, oregano, pepper flakes and salt and pepper. Bring to a boil, reduce heat and simmer uncovered for 30 minutes, stirring occasionally. While the sauce simmers, cook pasta as per package directions and drain. Add the mussels, clams, scallops and shrimp to the sauce, cover and cook until mussels and clams open, about 5 to 7 minutes, stirring occasionally. Add the pasta to the seafood sauce and mix gently. Sprinkle with cheese and parsley to garnish. Serves 6.

DIRECTIONS

Place chicken and salt in a food processor and pulse to ½ inch piece size. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, simmer sauce and tomato paste stirring to combine. Heat oil in large stockpot over medium heat until hot. Brown beef short ribs evenly. Remove from stockpot and season with salt and black pepper. Add onion, bell pepper and celery to stockpot and cook 3 to 5 minutes or until tender, stirring occasionally. Add tomatoes, chipotle peppers and poblano peppers to stockpot. Return beef to pan; bring to a boil. Reduce heat, cover tightly and simmer 1½ to 2½ hours or until beef is fork-tender. Remove beef and keep warm. Skim fat from cooking liquid. Spoon cooking liquid over beef. Sprinkle with chopped onion and cilantro, as desired. Garnish with lime wedges. Serves 4.
