8 oz. Italian sausage

4 oz. part-skim ricotta cheese

1 cup chopped green pepper

1 tsp. garlic powder

1 tsp. fennel seed

1 small tomato, thinly sliced

8 Huevos De Calidad eggs

1 oz. shredded part-skim mozzarella cheese

DIR E CTIONS

In an omelet pan, cook sausage, pepper and fennel seed over medium heat. Break apart sausage and stir until browned, about 3 – 5 minutes. Drain well. Return to pan. In medium bowl, beat together eggs, ricotta cheese and garlic powder. Pour over sausage mixture. Cover. Cook over medium heat until eggs are almost set, about 8 – 10 minutes. Top with tomato slices and cheese. Broil about 6 inches from heat until cheese is melted. Cut into wedges and serve. Serves 6 – 8. Recipe courtesy American Egg Board

Broiled Fish with Garlic Anchovy Butter INGR E DI E NTS

4 white fish fillets

Anchovy Butter:

2 Tbsp. olive oil

1

Zest from 1 lime Salt and pepper to taste DIR E CTIONS

/2 tube Crown Prince Natural Anchovy Paste

1 head garlic, roasted and peeled* 1 stick unsalted butter, softened 2 Tbsp. Italian seasoning

Marinate fish in oil, lime zest, salt and pepper for at least 1 hour. While fish is marinating, combine the Anchovy Butter ingredients in a food processor and pulse until smooth. Broil fish on low heat for 15 minutes. Remove and coat with Anchovy Butter. Broil for another 5 – 10 minutes. Serves 4. *To roast garlic, preheat oven to 300°F. Wrap an unpeeled head of garlic in foil. Bake for 30 minutes, or until soft.

2 chicken breasts, skinned, boned

2 bay leaves

Flour to coat

6 oz. white wine

2 Tbsp. Mantova Extra Virgin Olive Oil

Salt & pepper to taste

2 garlic cloves

32 green olives, pitted

Cut chicken breasts into 8 pieces. Coat with flour and brown in a pan with Mantova Extra Virgin Olive Oil. Add the garlic, bay leaves, and the white wine. When the wine has evaporated, season with salt and pepper and add chicken stock; cook for 15 minutes uncovered. Add olives, cover and simmer until cooked. Serves 4.

4 (1 – 11/4 lb.) bone-in rib eye steaks, 1 – 11/4 inches thick Rodeo Rub:

/4 cup ground dried medium-hot red chiles, such as a mixture of guajillo, passilla and chipotle

At least 4 hours and up to 12 hours before grilling, combine rub ingredients in small bowl. Coat steaks thickly with mixture. Wrap tightly in plastic wrap and refrigerate. After at least 4 hours, remove steaks from refrigerator and let sit at room temperature about 20 minutes. On high heat, sear steaks, uncovered, 2 – 3 minutes per side. Reduce heat to medium and turn steaks again. Continue grilling 2 – 3 minutes per side for medium-rare doneness. Steaks should be turned at least three times, more often if juice begins to form on surface. Finish cooking with cover on, over medium heat, 5 – 6 minutes, turning steaks once midway. Serves 4.
