Preheat oven to 350°F. Prepare rice according to package directions. Add taco sauce to rice and mix. Brown and drain ground beef. Fill taco shells with 2 tablespoons each of the rice mixture and the ground beef and bake for 6 – 8 minutes. Top each taco with lettuce, tomatoes, cheese, and olives. Makes 24 tacos. Heat the cooking oil in a medium skillet. Dip tortillas in oil one at a time for a few seconds until soft. Keep warm. In same skillet, heat 1 Tbsp. oil and cook the onion until tender. Stir in the salsa, garlic salt and green chili peppers. Simmer uncovered for 10 minutes. Break the eggs into mixture, without breaking the yolks. Season to taste. Cover skillet and simmer for five minutes (or until done to preference). Place an egg with some tomato mixture on each tortilla. Top each with shredded cheese. Serves 6. Arriba! Combine first seven ingredients to make a rub; press evenly onto beef steaks. Place steaks on grill over medium coals. Grill, uncovered, 14 – 16 minutes for medium rare, turning occasionally. Season with salt as desired. Serves 4.

Light Summer Fare Gnocchi Alla Rosa INGREDIENTS

2 Tbsp. Italian olive oil 1 tsp. minced garlic

1 tsp. basil or 3 fresh basil leaves

1 can (28 oz.) Cento Plum Peeled Tomatoes, chopped, reserve liquid

Salt and pepper to taste 4 oz. light cream

1 can (6 oz.) tomato paste

2 lb. gnocchi

DIRECTIONS

Sauté garlic in oil until soft. Add tomatoes, paste, basil, salt and pepper. Simmer about 30 minutes. Use reserved liquid from tomatoes if sauce thickens too much. Add cream and simmer about 10 minutes. Cook the gnocchi according to package directions. Drain and toss in sauce. Serves 8.
