Mediterranean Pasta with Mussels

Chicken Tikka Masala

INGREDIENTS

MARINADE

1 cup plain yogurt, whisked until smooth

1 lb. boneless, skinless chicken thighs, cut into large bite-sized chunks

3 Tbsp. Patak’s Tandoori Paste

1 jar Patak’s Tikka Masala Curry Simmer Sauce

2 cups dry white wine

2 Tbsp. extra virgin olive oil

4 bay leaves

4 garlic cloves, minced

1 tsp. Italian seasoning

½ tsp. crushed red pepper

4 lbs. small mussels, scrubbed and debearded

1 Tbsp. fresh lemon juice

3 Tbsp. butter, melted

1 lb. Colavita Fettucine

1 tsp. kosher salt ½ tsp. ground black pepper

Salt and pepper to taste

Canola oil, for grilling Fresh cilantro, minced Cooked rice

DIRECTIONS

In a large pot, combine wine, bay leaves and Italian seasoning and bring to a boil. Add the mussels, cover and cook over high heat until mussels open. Drain mussels over a medium bowl. Reserve the broth and discard any unopened mussels. Pour the melted butter over the mussels and toss to coat. Set aside. Heat the extra-virgin olive oil in a large skillet. Add garlic and red pepper and cook over low heat for 3 minutes. Pour in the reserved mussel broth. Add lemon juice and simmer until sauce is reduced, about 8 minutes. Cook fetuccine according to package directions. Drain the pasta well. Add buttered mussels and sauce and toss over low heat until pasta is coated. Season with salt and pepper. Serves 4.

In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes or up to 24 hours. Warm the Tikka Masala Curry in a large skillet over medium heat. Heat grill and lightly brush grates with oil. Place chicken on grill, shaking off excess marinade. Cook until it’s charred, about 2 minutes on each side (chicken will finish cooking in the sauce). Add grilled chicken to curry and cook about 10 minutes. Garnish with cilantro and serve over rice. Serves 4.

Cover bottom of large frying pan or sauce pan with the olive oil. Brown the chili pepper, anchovies and garlic. Add tomatoes; stir well. Add tuna and cook over medium heat for 30 minutes. Prepare pasta according to package directions. Cover pasta with sauce and mix until completely coated. Serve immediately. Serves 8. 2 slices dark rye bread 2 Tbsp. butter 2 slices Swiss cheese

DIRECTIONS

Heat a frying pan to medium-high heat. Butter one side of each of the slices of bread and place butter side down on the hot pan. Add a layer of cheese to one of the slices. As the bread begins to toast and the cheese begins to soften, spread the sauerkraut over the slice of bread with cheese and sprinkle with red pepper flakes. Using a spatula, flip the cheese-less bread slice over on top of the slice with cheese and sauerkraut. After 30 seconds, check to see if the cheese is beginning to melt. If it is, flip the whole sandwich over onto the other side. Toast a minute more until the cheese has melted, but isn’t runny. Remove the sandwich from the pan, slice in half and serve. Serves 1.
