In a saucepan, heat oil over medium heat for about 30 seconds. Sauté leek until softened, about 2 minutes. Add garlic and sauté. Add mushrooms and sauté, stirring frequently. Add vinegar, stir well, and season with salt to taste. Prepare pasta as directed and serve with sautéed vegetables.

Preheat oven to 350°F. Heat 1 Tbsp. butter in saucepan until bubbling. Add onion and sauté until translucent. Add the water or broth; boil. Stir in rice, cover and reduce heat. Cook about 40 minutes or until tender. Combine cornmeal and salt in a bowl. Stirring constantly, gradually add the boiling water, then the melted butter. In a separate bowl, beat eggs until thickened, add milk and beat to combine. Add baking powder, then combine with the cornmeal and beat or whisk to blend. Fold in the cooked rice, reserving a few tablespoons for garnish. Grease and fill an 8-inch square glass baking dish. Bake for 35 minutes, top with reserved rice, continue baking for 15 minutes or until center is firm and top is browned. Reese Reese Wild Rice offers the best of both worlds.
