Place the fillets in a glass dish in one layer. Pour milk and Cholula Hot Sauce over fish and let rest for 15 minutes. Mound flour seasoned with salt on a piece of wax paper or a flat dish. When ready to sauté, remove fillets from milk (don’t drain) and coat with flour on both sides. Sauté in butter and oil over medium heat, about 2 or 3 minutes per side depending on thickness. 4 pounds pork spareribs Salt and pepper
DIR E CTIONS
In food processor, pulse first eight ingredients until finely chopped, about 15 seconds. Place ribs in a 9x13-inch glass baking dish. Add marinade, coating ribs evenly. Season with salt and pepper to taste. Cover with plastic wrap and refrigerate for at least six hours. Preheat oven to 400°F. Remove ribs from marinade. In saucepan, bring remaining marinade to boil. Reduce heat and simmer for 10 minutes; set aside. Bake ribs for 11/2 hours or until meat pulls away easily from the bone. Baste every 15 minutes with remaining marinade. Serves 4-6.
