INGREDIENTS

21/2 cups flour
1 cup soft butter
2 avocados
4 tsp. lemon juice
1 cup sugar
2 egg yolks
16 oz. sour cream
2 – 3 drops hot sauce
1 packet vanilla sugar
2 teaspoons water
2 tomatoes, chopped
1 tsp. sea salt
1 pinch salt
1 jar Bonne Maman Apricot Preserves
4 green onions, chopped
1 tsp. freshly ground pepper
DIRECTIONS
DIRECTIONS
Mix first 4 ingredients in a bowl. Stir in butter; mix well. Combine egg yolks and water; add to flour mixture. Knead into a smooth dough, wrap in plastic and rest in a cool place for 30 minutes. Butter a 9-inch baking dish and preheat oven to 350°F. Roll out dough until slightly bigger than dish. Lay dough on top of dish and press down gently to form to surface. Spread Bonne Maman Apricot Preserves over the bottom. Bake for 30 minutes. Let cool and serve as desired. Serves 6.
In food processor, combine all ingredients. Process until smooth. Cover and refrigerate for 1 hour. Serve with Boulder Canyon Potato Chips. Serves 6.

Preheat oven to 450°F. Bake garlic and eggplant until soft, about 45 minutes. Remove garlic from oven. Increase heat and broil eggplants until skins are charred, about 3 minutes. Remove and let cool. Heat oil in a skillet and add onion slices. Cook, stirring occasionally, about 8 minutes. Set aside. Whisk together chopped onion, yogurt and lemon juice in a large bowl. Squeeze roasted garlic pulp into yogurt mixture and stir well. Cut each eggplant in half. Scrape flesh into a large fine sieve set over a large bowl; let drain 15 minutes. Discard liquid. Stir eggplant and salt into yogurt mixture; season with pepper. Top with cooked onion slices. Serves 6.

2 cups cooked rice
1 cup garbanzo beans, drained

Cook pasta according to package dirctions. Set aside. Combine all dressing ingredients in a bowl and mix well. In a separate bowl, toss pasta with olives, artichokes, beans, cucumber, onion, peppers and tomatoes. Stir until well blended. Top with crumbled feta cheese. Drizzle with dressing, and season to taste with salt and pepper. Serves 6.
Combine all Salsa de Mango ingredients in a bowl and stir well. Cover with plastic wrap and refrigerate. Cut a lengthwise slit in chiles and remove seeds. Place chiles in a shallow pan with enough water to cover and simmer for 15 minutes. Drain and set aside. Combine remaining ingredients and carefully fill chiles with mixture. Place stuffed chiles in a greased baking dish. Add enough water to cover the bottom of the dish and bake at 350°F for 30 minutes. Carefully remove from oven and top chiles with Salsa de Mango. Serves 6.
