a fresh start Ramadan has come and gone and now I am left with an important decision. Do I fall back into my old habits or do I move into a brighter future and maintain my Ramadan habits. What I decided to do this year is to look at the days and months after Ramadan as a brand new start; an opportunity for me to start afresh and change my bad habits. During Ramadan I spoke to you all about making a conscious decision to pray on time, read the Quâ&#x20AC;&#x2122;ran more and live my life more in according to Islam. Although I was fasting, my days remained the same in terms of activities. I did reduce the number of times I went out and limited my visits to friends, but nevertheless, I came to realize that I did not lose anything from doing so. Instead I gained more time to focus on myself and my faith. With this in mind, continuing my daily routines the same way I did during Ramadan would not be so difficult. All I need is Allahâ&#x20AC;&#x2122;s guidance and determination. This month, I want you to do the same. Analyse the changes you made to your life during Ramadan and find a realistic median between your regular life and Ramadan. Pray for guidance and go forth with the positive changes in your life.

ictoria Falls present a spectacular sight of awe-inspiring beauty and grandeur on the Zambezi River, forming the border between Zambia and Zimbabwe. It was described by the Kololo tribe living in the area in the 1800’s as ‘Mosi-oa-Tunya’ – ‘The Smoke that Thunders’. In more modern terms Victoria Falls is known as the greatest curtain of falling water in the world. Columns of spray can be seen from miles away as, at the height of the rainy season, more than five hundred million cubic meters of water per minute plummet over the edge, over a width of nearly two kilometers, into a gorge over one hundred meters below. The wide, basalt cliff over which the falls thunder, transforms the Zambezi from a placid river into a ferocious torrent cutting through a series of dramatic gorges. Facing the Falls is another sheer wall of basalt, rising to the same height, and capped by mist-soaked rain forest. A path along the edge of the forest provides the visitor prepared to brave the tremendous spray, with an unparalleled series of views of the Falls. One special vantage point is across the Knife-edge Bridge, where visitors can have the finest view of the Eastern Cataract and the Main Falls as well as the Boiling Pot, where the river turns and heads down the Batoka Gorge. Other vantage points include the Falls Bridge and the Lookout Tree, both of which command panoramic views across the Main Falls. HAYATIONLINE.COM

GRAND CANAL

he Canal Grande snakes through the city of Venice in a large S shape, traveling from the Saint Mark Basin on one end to a lagoon near the Santa Lucia rail station on the other. This ancient waterway measures 3,800 meters (2.36 miles) long and ranges from 30 to 90 meters (about 100-300 feet) wide. In most places, the canal is approximately 5 meters (16 feet) deep. The canal is an ancient waterway, lined with buildings - about 170 in all - that were mostly built from the 13th to the 18th centuries. Most were constructed by wealthy Venetian families. The majority of the city’s traffic cruises up and down the canal, be it private boats, vaporetti (water buses), water taxis or the famous gondolas. Foot traffic gathers around three famous bridges that cross the canal: the Rialto Bridge, the Ponte Degli Scalzi, and the Ponte dell’Accademia. A fourth, modern (and controversial) bridge was recently added not far from the Scalzi bridge: the Calatrava Bridge.

he Great Barrier Reef has long been known to and used by the Aboriginal Australian and Torres Strait Islander peoples, and is an important part of local groups’ cultures and spirituality. The reef is a very popular destination for tourists, especially in the Whitsunday Islands and Cairns regions. Tourism is an important economic activity for the region, generating over $3 billion per year.

SUEZ CANAL

he Suez Canal ( In Arabic: Qanat as-Suways), is an artificial sea-level waterway running north to south across the Isthmus of Suez in Egypt to connect the Mediterranean Sea and the Red Sea. The canal separates the African continent from Asia, and it provides the shortest maritime route between Europe and the lands lying around the Indian and western Pacific oceans. It is one of the world’s most heavily used shipping lanes. The Suez Canal is one of the most important waterways in the world. The canal is extensively used by modern ships , as it is the fastest crossing from the Atlantic Ocean to the Indian Ocean . Tolls paid by the vessels represent an important source of income for the Egyptian government.

ake Como, Lago di Como in Italian, is Italy’s most popular lake and also its deepest. Lake Como is shaped like an inverted Y giving it a long perimeter. The lake is surrounded by mountains and hills and dotted with beautiful villas and resort villages. There are good hiking paths, boat trips and water activities. Popular since Roman times, Lake Como is a top romantic travel destination and a great spot for photography.

o large that it is often mistaken for a sea, Russia’s Lake Baikal is the deepest and oldest lake in the world, and the largest freshwater lake by volume. Famous for its crystal clear waters and unique wildlife, the lake is under threat by pollution, poaching and development. Located in south-central Siberia, not far from the Mongolian border and surrounded by mountains, forests and wild rivers, Baikal is an immense and breathtaking area of natural beauty. Although it’s not the biggest lake in the world in size - that distinction goes to the salty Caspian Sea - it is the largest by volume. Nicknamed the Pearl of Siberia, Lake Baikal holds about 20% of the world’s fresh surface water - more water than all of the North American Great Lakes combined.

Say, ‘In God’s grace and mercy let them rejoice.’ That is better than all they accumulate. (Qur’an, 10:58)

oday is one of the happiest days for millions of Muslims all over the world. While we’re sad to see the blessed month of Ramadan go, we’re so grateful for having completed a month of intense fasting and detoxification; a month meant to cleanse our hearts, minds and bodies so we can be closer to God with our souls and spirits. We experienced a special sweetness of faith during this past month, and now we celebrate with family and friends, fun festivities, delicious food and sweets of all kinds. As we rejoice and celebrate, we can also remember that we have another happy camper celebrating too. He was locked up during Ramadan, and he just gained his freedom. For the last month, he’s been watching millions of Muslims fill up the masajid, pray intensely during the night, supplicate fervently to Allah, give abundantly in charity, and feel more motivated to do good than ever before. He saw Muslims who would drink often now stopped drinking; people who didn’t feel like praying before want to pray regularly; believers who never opened the Qur’an throughout the year choose to read it and contemplate its meanings. He saw Muslims who envied and hated one another stand side by side in prayer and become the closest of brethren. Before, they were held back by his whispers and their sins, distractions, temptations. Now that weight is lifted, so they picked up speed and worship became easier and more enjoyable. So, he was chained and they were freed. He was restrained so we could be liberated. 22

Have you seen people who live for a cause? They eat, sleep, breathe and die for their work. Imagine if these people were prevented from living their passion; and not only that, but imagine that they watched all their life’s efforts being destroyed right before their eyes. They have no control and can’t change what happened. It would probably make them sad, frustrated and angry. If they were given the power and freedom again, they could at least rebuild what was destroyed and fix what was broken. Of all non-human creation, Satan is probably the most passionately committed to his cause. Yet, his mission in life is not to build, but to destroy. His sole purpose is to mislead and deviate and burn, as is his nature. Speaking to God, he said, “I swear by Your might! I will tempt all of them, except Your sincere servants,” (Qur’an, 38:82-3). So now that he’s liberated, he’s not just walking towards us casually; he’s coming back with a vengeance. Fasting is designed by God to increase our taqwa. While taqwa is often translated as God-consciousness, its linguistic root connotes protection from harm. Fasting is a shield that protects us from harming ourselves and others, that protects us from the harmful effects of our sins. It’s a shield that protects us from getting burned by Satan’s tricks, and ultimately, from getting burned by the Fire. One of Satan’s tactics is to make us indulge in our physical pleasures, cravings, and desires in the most unbridled way. He wants to ignite the animalistic tendencies within us and make

us pursue these pleasures as ends in and of themselves, not as means for livelihood and lawful well-being.

choose and continue till your last breath.”1

So, before we get caught up in our busy lives and demands of family, work, or school again, now is the time to inculcate the good practices and habits we gained from Ramadan—no matter how small. Perhaps you didn’t used to pray sunan and voluntary prayers, and now you do. Maybe you would pray late often, and you found yourself praying more on time. Perhaps you would flirt a little much with the ladies, and during Ramadan you had some selfcontrol. Maybe you were used to hearing or seeing shameful things, and you found it improper to do so during Ramadan. Perhaps you tried performing night prayers for the first time, and you absolutely loved it. Or maybe you didn’t feel the need to make du`a’ (supplication) before, but you poured your heart out to Him one night and felt an amazing, healing effect. Or maybe, like many people, you would think about food most of the day and God says in the Qur’an, “O Believers, do not follow fasting made you focus on more important matters in Satan’s footsteps—if you do so, he will urge you to like nourishing your soul. indecency and evil; and if it were not for God’s grace and mercy towards you, not one of you would ever What else? If we choose to broaden those pathways and re-indulge in our desires again, we invite him back into the very veins that run through our bodies; but if we feed these instinctual appetites in moderation and through the proper channels, we loosen Satan’s grip and become freed to nurture a deeper spiritual relationship with God throughout the year.

Filled with beautiful, funny and witty posts with “Just Muslim Things”, this account never has a dull moment. The idea to start this account came as the result of a Christian post. Just Muslim Things thought that having such posts for Muslims would be great. Not only would they be funny but they would also help many people learn a thing or two about Islam At first it was hard for Just Muslim Things to get noticed but eventually people stared reposting and sharing the posts with their friends and family and the rest is history. Eventually they started doing fun contests and giveaways to connect with their followers and make them feel as comfortable as possible. All the post are created by the Just Muslim Things

account, but sometimes they take suggestions and ideas from their followers because after all, the page is for them Just Muslim Things didn’t expect their account to become big so quickly. They were impressed with how many followers they could gain just by posting a humorous Muslim post. In our interview they specifically let us know that they by far have the most amazing followers ever. They always leave such amazing and sweet comments that inspire them to keep going and they want their followers to be as comfortable as possible. Just Muslim Things really hopes to inspire people and themself to be better Muslims. am sure that you have heard stories about fashion magazine editors being all pointy elbows, high heels at dawn and preposterous. However I’m sure that in real life, you know that Fatima Togbe probably doesn’t fall under the popular ice queen editor legends. After taking a virtual tour of her office, I was very surprised to find that the office of Fatima Togbe, the respected and influential editor-in-chief of Hayati Magazine, is kind of a mess.

A former model, she speaks English, French and a smattering of Portuguese and still has an extensive portfolio and memories to look back on.

She sits down to chat with me via Skype and slides a cup of tea closer towards herself before leisurely taking a sip… Wow! Her mother encouraged her to go to university where she studied business administration and graduated. Fatima then surprised everyone by starting a pastry business with her best friend immediately after graduating. The business lasted just a little over a year. While she was soul searching and dedicating herself more to Islam, she began to look for Muslimah magazines which could rival Vogue and Harper’s Bazaar. When she found none, she started a blog and did not think much of it, until it turned into Hayati; a full blown magazine. Fatima worked all day and night making her dream of owning a magazine a reality. It took time for her parents to approve, but eventually they became her greatest supporters. To end our interview, I asked Fatima what Hayati Magazine’s mission is, she energetically replied: “Hayati is a Muslimah lifestyle magazine. Our mission is to influence Muslim women’s whole lives, helping them to be fashion-forward, smart and modern within the limits of Islam. With intelligent, in-depth writing and a current array of fashion that is both aspirational and accessible, Hayati inspires its readers to build not just personal style but personal power.

WHY IS PARADISE UNDER HER FEET? By: Parisa S. Popalzai, PhD

ne day I was speaking with a mother of five children about her life and aspirations. After giving her a brief summary of my education and work experience, she slightly sighed when she said that she had to stop pursuing her college education to raise her children. She described her role as just a plain housewife and mother as if it was something ordinary and unexciting. Knowing how well-behaved and sweet all her children were, I was surprised that she was so quick to dismiss her great contributions to society. Sadly I have met many mothers who have expressed such tones about their role as mothers and wives, wishing they had done something more interesting with their lives. Moreover I have met other mothers who decided to put their careers on hold to raise their children and as a result felt a little disappointed that they were not able to pursue the career they spent years studying for. In each case, the mothers felt that while motherhood was an important role, they could be contributing much more to society if they were not hemmed in by the responsibilities of changing diapers, washing bottles and chauffeuring children from one activity to another. However, most mothers underestimate the actual impact they have to social change and that what they do today with their children will affect the course of the future. Unfortunately with our communities giving mixed messages to women about their role in society, it is not surprising to see such attitudes coming from the new generation of mothers. Western societies tell us that freedom and honor for women are attained when she becomes an independent career woman, not shackled by the responsibilities of motherhood or even a stable marriage. On the other extreme, our eastern cultures tell us that a woman’s honor and value are derived the more subservient and quite she is, accepting her role as the servant of the home—cooking, cleaning and ensuring the home and family are well taken care of above her own needs, education, and development.

And yet some societies go to the extreme to call women a temptation and shame that need to be hidden in the dark corners of the home in order to prevent the spread of evil in society. In between these two extreme philosophical view points, the Muslim woman knows that Islam elevates and values her unique role and contributions while respecting and safeguarding her specific needs and nature. In all spiritual aspects, she is seen as equal in the sight of Allah subhanahu wa ta’ala (exalted is He) as indicated in the following verses: “For Muslim men and women, for believing men and women, for devout men and women, for true men and women, for men and women who are patient and constant, for men and women who humble themselves, for men and women who give in charity, for men and women who fast, for men and women who guard their chastity, and for men and women who engage much in Allah’s praise, for them has Allah prepared forgiveness and great reward.” (Qur’an 33:35) Yet regrettably in many societies including our own Muslim countries, women are still fighting for their human rights. This mixed attitude regarding women has existed since the creation of the first woman. In the Qur’an, Allah (swt) has shown us that societies’ views about women are often wrong and contradictory. Speaking in regards to the Arab’s contradictory views on women—making her a Goddess on one hand and a source of shame and disgrace on the other—Allah revealed the following verses: “So have you considered al-Lat and al-`Uzza? And Manat, the third—the other one? Is the male for you and for Him the female? That, then, is an unjust division. They are not but [mere] names you have named them—you and your forefathers—for which Allah has sent down no authority. They follow not except assumption and what [their] souls desire and there has already come to them from their Lord

Allah clarifies that what cultures attribute to women are usually man-made and incorrect. Women are neither angels nor devils, but a creation of Allah (swt) from the same nature and source as man, with every ability for good and evil as he has. Yet being the only one of the two who is able to conceive and give birth, the woman has a unique role and contribution to society that cannot be fulfilled by any man.

When Allah (swt) created Hawa (Eve, the first woman), He told Adam `alayhi salatu wassalam (may Allah send his peace and blessings on him) that Allah created his wife (zawja which literally means his pair or other half) with whom he was to live in peace and tranquility. Thus she is referred to as a source of peace and tranquility for the family and it was only after her creation that the first family could be started. As such, her name rightfully alludes to her role as a “container of life”, for mankind could not reproduce without her. Allah (swt) created the relationship of husband and wife to be interdependent and complimentary, with each partner being a garment for the other. Unfortunately with the passage of time, falsehood and injustice prevailed in the world. Alas women’s gifts to society were slowly disregarded and ignored and she was not valued for what she brought to the world.

Scholars have shortened the meaning of the full hadith and reworded the last part to the phrase “paradise lies at the feet of the mother”. Through this hadith, it is commonly understood that by behaving kindly and taking care of one’s aging parents, particularly for one’s mother, a person will attain paradise. Like many verses of the Qur’an and hadith, however, there is deeper and additional layer of meaning associated with this hadith. It not only highlights the importance of taking care of one’s mother and meeting her needs, but it is also acknowledges her strong influence on her children as she can be the source to guide them to paradise. Furthermore, when Allah’s Messenger was asked who deserves a person’s greatest respect outside of Allah and His Prophet, the reply was one’s mother three times before one’s father. Through these examples and illustrations, a connection can be drawn between motherhood and prophethood. These are the only two professions that are described in the Qur’an as difficult and requiring an enormous amount of patience, endurance, and unselfish love. While a Prophet has the role to educate and guide the contemporary society to the truth, the mother has the role of ensuring that her own children are rightly guided and educated. Given the heavy responsibility of bringing life to the world and raising her children for the sake of Allah, Allah (swt) did not burden women further with the role of prophethood, military expeditions, or financial responsibility. Yet the Prophet ‫ ﷺ‬indicated that by caring for her husband and their children, the mother is equal to the role and rewards of a ruler guarding the country’s interests or a husband providing and guarding his family’s interests since without the mother’s care, the latter two would probably not have achieved their own positions:

Another famous story is that of the grandmother of Caliph Umar bin Abdul Aziz, who became a wise and righteous Caliph after the four rightly guided Caliphs. His grandmother was a milkmaid’s daughter who refused to adulterate the milk with water in the absence of the Caliph’s presence, saying if the Caliph is absent to witness it, Allah is not. Upon learning of her high moral character and faith, Umar ibn alKhattab married her to his third son Asim, saying about her “such a girl would become a great mother. Her integrity is not to be weighed with few coins; it is to be measured in the scale of national values. Furthermore, in my personal experiences working with parents and children, I see that children’s behavior resembles much more their mother’s behaviors than their father’s. I also personally know of people who had embraced Islam, but later turned away from Islam fearing what their mother would say if she found out. Her influence and the fear of her disappointment were so great that they gave up Islam for her sake. Thus, we see the strong influence that mothers have in their societies. Recent studies have also shown that there is a direct link between a mother’s well-being and education to a child’s well-being and education. Thus if a mother has a good upbringing and is well-educated, she will raise a child who is also well-mannered and educated. Thus the Prophet ‫ ﷺ‬has said that one who raises their daughters well and educates them will enter Paradise, as she will grow up and become a mother who will continue that barakah (blessing) in the form of raising her own children with the proper education and iman. Adab, which is the etiquette and manners of goodness, respect, honesty, and integrity, is first and foremost taught by the mother. Consequently, a child who sits at the mother’s feet—as young children often do—will also follow in her footsteps. Thus, she can be a source of guidance or a source of misguidance depending on her own nature. For this reason, the Prophet ‫ ﷺ‬advised that when a Muslim man is seeking a wife, he should marry one who has sound aqeedah (creed) more than fixating on her beauty, status, or wealth as she will be the mother of his children and the future generation of believers. Even with a non-Muslim mother, a Muslim needs to show respect and love since she has taught him something of value that has allowed the person to recognize and embrace the truth of Islam. Like the archers in the battle of Uhud, mothers have a crucial yet sometimes unexciting job of protecting the Ummah from the stealth enemies. If a mother leaves her station unprotected, chasing after the booty of this life, her children can fall prey to the media propaganda, peer pressure and other worldly distractions. Mothers have always been the backbone of societies and their disintegration means the disintegration of the future Ummah. While the term “mothers of the believers” refers to the Prophet’s wives, in general all women have the potential of fulfilling the role as a mother of a believer. If a Muslim leads even one person to the path 60

of Islam, his/her place is in Jannah (Paradise). Imagine the countless Muslim mothers bearing the good fruits of tomorrow. Thus, it is because of her suffering and sacrifices that she is forgiven every sin when she brings a child into the world, or earns her martyrdom if she were to die in childbirth or nursing. In conclusion, while men and fathers strive to lead the current generation, mothers serve as leaders of the future generation. Consequently, if we want to foresee what the future ummah will look like, we must observe the state of today’s Muslim mothers. If our ummah is serious about ensuring a better and more hopeful future, we need to first ensure that our current Muslim mothers are receiving proper support, security, education, and respect to do their jobs well. When educated Muslim mothers, grandmothers, sisters, aunts and friends help in raising believing and practicing children, it is then that insha‘Allah (God willing) the next generation will be blessed with leaders and scholars such as Imam Bukhari and Aisha bint Abu Bakr (ra). So when any woman discounts her role as a mother, I would like to reminder her that she is the leader of the future of Islam and that she is responsible for laying the road towards Paradise for the children at her feet.

She considers herself an activist and speaks out at various conferences and events about the lack of recognition that Muslim voices deserve in the mainstream music industry. It is this cause which motivates her to organize incredibly successful and exclusive events such as the Sound of Souls and the upcoming MOMO Awards. Hayati has had the chance to sit down with this Muslim role model for an exclusive and here it goes:

rom a very young age, Esharat had a passion for Islam, her religion. Coming from a humble and modest family, she was very fortunate to have parents who provided her with a strong and solid foundation in Islam, which eventually became the start of an exciting and creative journey for her.

I can't seem to explain the feeling that went through me at the time, but I realised my interest in Na’at had grown and I started to sing more and more. I enjoyed it. Actually, I have to admit that I loved it and still do. It wasn't about the attention; it was about me being able to do something I loved. This also enabled me to express my love for Islam and I felt a real connection with the Almighty and as a result. I felt at peace”.

Esharat was born and raised in the UK, but moved to Pakistan in 1995 to pursue studies in Islamic knowledge & the History of Islam. She remained there for eight years during which she studied the A’alima course at the DMG Bhera Sharif (A well-known Islamic Institute In Pakistan) founded by Justice Zia-ulummat Shaykh Mohammed Karam Shah Al-Azhari. If I had to pick a specific genre of music I have to admit I absolutely love listening to Sufi music and my favourite at the moment is ‘Yaar ko hum ne ja baja dekha ‘by Abida Parveen”. Sufi music talks about the true love of the creator, Allah swt. This is why Esharat feels so connected to the music in a way in which she says she can switch off from the world. Sufi music to her is a form of meditation. She feels refreshed and not only does it clear her mind but it also empowers her. “It's so difficult for me to explain my love and passion for Allah”, Esharat tells us. “It's an internal feeling of liberation”.

In terms of inspiration however, Esharat says that her two children are the prevalent inspiration towards working for the cause of Allah. Esharat believes that the mainstream music industry has developed into a very unconstructive industry, one that she would not allow her children to be exposed to; hence she felt it is imperative to provide an alternative music platform, which would underline the true exquisiteness of music. Music will always play a huge part in our lives, so she would rather her children grow up listening to positive music and she feels this can only come about if an alternative is provided. Esharat recalls a point in her life after having her two children where she gave up. It was Nasar, her husband, who was very optimistic about her vision and wanted her to continue with the GNAAcademy as he saw the potential his wife had in creating a unique and exceptional event.

NEW YORK STYLE CHEESECAKE Graham Cracker-Crumb Crust: •1 1/4cup(s) graham cracker crumbs, from 11 rectangular graham crackers •4 tablespoon(s) butter or margarine, melted •1 tablespoon(s) sugar Cheesecake: •3 package(s) (8 ounces each) cream cheese, softened •3/4 cup(s) sugar •1 tablespoon(s) all-purpose flour •1 1/2teaspoon(s) vanilla extract •3 large eggs •1 large egg yolk •1/4 cup(s) milk •Fresh berries, for garnish METHOD •Preheat oven to 375 degrees F. Prepare Crumb Crust: In 8 1/2- to 9-inch springform pan, with fork, mix crumbs, melted

butter, and sugar until crumbs are evenly moistened. With hand, press crumb mixture firmly onto bottom and up side of pan. Bake 10 minutes; cool crust in pan on wire rack. Turn oven control to 300 degrees F. •Prepare Cheesecake: In large bowl, with mixer at medium speed, beat cream cheese and sugar until smooth and fluffy. Beat in flour and vanilla until well combined. Reduce speed to low and beat in eggs and egg yolk, one at a time, beating well after each addition. Beat in milk just until blended. •Pour batter into prepared crust. Bake 55 to 60 minutes, until set but still slightly jiggly and moist in center, and pale gold near edge. •Cool completely in pan on wire rack. Refrigerate overnight before serving. To serve, remove side of pan. Place cake on plate; garnish with fresh fruits.

FRUIT GALETTE Crust: •1 3/4cup(s) all-purpose flour •2 tablespoon(s) sugar •1/4 teaspoon(s) baking powder •1/2 cup(s) (1 stick) cold butter or margarine, cut into pieces •1/3 cup(s) sour cream •1 large egg yolk •2 tablespoon(s) water Fruit Topping: •1/2 cup(s) sugar •2 tablespoon(s) all-purpose flour •1/2 teaspoon(s) grated fresh lemon peel •1 pinch(s) ground nutmeg •1 1/2pound(s) mixed fruit, such as nectarines, plums, peaches (peeled), apricots (all pitted and thinly sliced); raspberries, blackberries, blueberries, grapes, and/or cherries (stems removed; pitted and cut in half) •2 tablespoon(s) butter or margarine, cut into small pieces METHOD •Prepare Crust: In large bowl, with wire whisk, mix flour, sugar, and baking powder. With pastry blender or two knives used scissors-fashion, cut in butter until mixture resembles coarse crumbs. In small bowl, with fork, beat sour cream, egg yolk, and water until blended. Drizzle sour-cream mixture over flour mixture and stir with fork until dough begins to hold together. Gather dough into ball; divide in half and shape each half into 82

Wrap each rectangle separately in plastic wrap and refrigerate 30 minutes or freeze 15 minutes, until firm enough to roll. •On floured surface, with floured rolling pin, roll 1 rectangle into 19-inch by 6 1/2inch strip. Using bowl or plate as guide, cut out three 6-in. rounds; reserve trimmings. With wide spatula, transfer rounds to large cookie sheet, leaving room for fourth round; refrigerate. Repeat with remaining dough and another cookie sheet. Gather trimmings; wrap in plastic wrap and freeze 10 minutes. Reroll trimmings into a 12-inch by 6 1/2-inch strip; cut out 2 more rounds; place 1 round on each cookie sheet and refrigerate while preparing Fruit Topping. (Discard remaining trimmings.) •Preheat oven to 400 degrees F. Prepare Fruit Topping: In small bowl, with fork, mix 1/4 cup sugar, flour, lemon peel, and nutmeg. Sprinkle about 2 teaspoons of mixture on each dough round, leaving 3/4-inch border. Arrange prepared fruit on top of sugar mixture. Fold uncovered border of dough over fruit, pleating edges and pressing them together to keep fruit in place. Sprinkle remaining 1/4 cup sugar over fruit and dot with butter. cookie sheets on two oven racks and bake until crust is well browned and fruit is tender, 25 to 30 minutes, rotating cookie sheets between upper and lower oven racks halfway through baking to ensure even browning. With wide spatula, transfer galettes to wire rack to cool.

MERINGUE INGREDIENTS 4 large egg whites 1/4 teaspoon(s) cream of tartar 1 cup(s) confectionersâ&#x20AC;&#x2122; sugar 1/4 teaspoon(s) peppermint extract (see note below) Red and green food coloring METHOD Preheat oven to 225 degrees F. Line 2 large cookie sheets with foil. In small bowl, with mixer at high speed, beat egg whites and cream of tartar until soft peaks form, gradually sprinkle in sugar, beating until whites stand in stiff, glossy peaks. Beat in peppermint extract. Transfer half of meringue mixture to another bowl. Add enough red food coloring to meringue in 1 bowl to tint it a pale red. Add enough green food coloring to remaining meringue to tint it a pale green. Spoon red meringue into large self-sealing plastic bag, cut 1/4-inch opening at corner. Repeat with green meringue in separate bag. Fit large decorating bag (we used a 14-inch bag) with basketweave or large round tip (1/2-inch or 3/4-inch diameter opening). Place decorating bag in 2-cup glass measuring cup to stabilize bag, fold top third of bag over top of cup to keep top of bag clean. Simultaneously, squeeze meringues from both plastic bags into decorating bag, filling decorating bag no more than two-thirds full. Pipe meringue onto cookie sheets, leaving 1 inch between each meringue. If using basketweave tip, pipe meringue into 3- to 4-inch-long pleated ribbons, if using round tip, pipe meringue into 2-inch rounds. Bake meringues 2 hours. Turn oven off. Leave meringues in oven at least 30 minutes or overnight to dry. Let meringues cool completely before removing from foil with wide metal spatula. Store meringues in tightly covered containers up to 3 weeks.
