Meat free Hema sausage

One of Amsterdam’s most favorite warehouses - de Hema (1920) - is beloved for its value for money. In the food department, it serves a fast food classic that overcomes the instant hunger pang: the Hema sausage. But it’s not to everybody’s liking anymore. Responding to its growing number of vegan ‘Amsterdammers’, the Hema invited master chef Moshik Roth (from Michelin-star restaurant &Moshik) to create a meat free version accompanied with a vegan sandwich and sauce. Roth explains: ‘We want people to inspire to eat more vegetables. The objective was not to imitate the meat variant, but to develop a tasty veggie alternative.’ Does this sound this mouthwatering? You may not be familiar with Dutch celebrities - except for Johan Cruijff perhaps - from the 60s and 70s. But the recently disclosed archive of slide colors - found in the stable of an old Brabant farm - puts you unmistakably on the trail of nostalgia. The pictures were shot by the Amsterdam photographer Louis van Paridon (1922–2016) and only now collected in a book - Dutch heroes in the 60s - by Rianne van Dijck. It sketches a forlorn world of the ‘make love, not war’ days framed by the chic and stately artist who preferred to remain unknown.

While discovering the Nieuwmarkt of Amsterdam, you might happen to pass this regal neo-classic edifice located at the Kloveniersburgwal: Het Trippenhuis. It was erected in 1660 by the brothers Louys and Hendrick Tripp who made their fortune in the arms trade in Sweden. Since long it harbors The Dutch Royal Institute of Sciences. If you’re passing by on the 14th and 15th of September you can watch for free how the ‘gloomy and dormant’ interior has recently undergone a total makeover, having been upgraded to presentday comfort and esthetics. But don’t forget to also admire the exterior with its mortar shaped chimney on the roof.

Dog lovers: move on! Cat believers: stop at once at the ‘Cat Cabinet’! This formerly private museum, but now open to the public, was founded by Bob Meijer. It pays tribute to our beloved pet. The museum opened in commemoration of the ginger cat, John Pierpont Morgan (19661983), the stubborn and headstrong companion of the founder. Situated in a stately building on the Herengracht, you can see how cats inspired artists. The fun part: while admiring ‘cat-chy’ works of art by Picasso and Rembrandt, current cat residents - Oskar, Billy, Willy and Siri might caress your legs and start spinning while you admire some of the original costumes from the musical Cats. That you’re in good company demonstrates the temporary exhibition ‘Cats and Artists in Photography,’ with photos of Karl Lagerfeld and Ernest Hemmingway portrayed with their favorite pet.

A Rembrandt dress. A Rembrandt scarf. A Rembrandt bag. A Rembrandt T-shirt. What’s missing? Hmm, every ‘dedicated follower of fashion’ knows that the perfect look starts with – indeed - the shoes. For that reason, the Rijksmuseum collaborated with Japanese sports brand Mizuno to design a running shoe based upon the Night Watch. In case you haven't noticed: Amsterdam commemorates that Rembrandt van Rijn died 350 years ago. While on the outside it looks like just any ordinary running shoe, the insole is imprinted with fragments of the iconic painting. The shoe is named ‘Wave Ultima 11’ and is the ‘official’ footwear of the upcoming TSC Amsterdam Marathon 2019.

TALES OF THE CANALS The canals embody the soul of Amsterdam. Many stories are hidden behind these unique waterworks and the houses that stand beside them. The Museums of the Canals shares these remarkable tales with its audience. The museum is located on the poshest of all canals, the Herengracht. Paris: city of lights, city of arts At the beginning of the last century, Marc Chagall, Pablo Picasso, Piet Mondrian and other acclaimed artists moved to Paris, then the art capital of the world. They had to survive in a society that became increasingly polarized, nationalistic, xenophobic and anti-Semitic. Migrant Artists tells the story of artists in a foreign country who had the courage to take art to new heights. In spite of their success and achievements, they all had to face the same insurmountable obstacle: they were not French. Spanish-born Picasso arrived penniless but remained loyal to his roots. As a Jewish-Russian in exile, Chagall encountered exclusion and outright anti-Semitism. And Kees van Dongen who became one of Paris’ celebrated society painters, complained in 1906 that the newspapers portrayed him as ‘the dirty foreigner.’

City of Diamonds To mark the 125th anniversary of the founding of the General Diamond Workers' Union of the Netherlands (ANDB), the Jewish Historical Museum presents Amsterdam, City of Diamonds. The exhibition recounts how from the early seventeenth century Amsterdam grew to become the international centre of the diamond industry, largely thanks to the city’s Jewish population. Alongside the focus on the diamond workers the

exhibition also explores the growth of the diamond trade in the city from the nineteenth century. Many of the world’s most famous diamonds were cut in Amsterdam, such as Cullinan 1 also known as the Great Star of Africa, which is now part of the British crown jewels.

Rineke Dijkstra watches Night Watch watchers A new film installation (a triptych) by Dutch photographer Rineke Dijkstra shows 14 groups of people looking at Rembrandt’s Night Watch and responding to it in their own way. Dijkstra shot Night Watching over the course of six evenings, her subjects positioned directly in front of The Night Watch to offer them the most powerful possible experience of the painting. Minor detail: the painting itself never appears.

“ADE is the world's most important dance event" Mariana Sanchotene, director of ADE With more than 1000 events, 2500 artists, 200 venues and 400,000 visitors, the Amsterdam Dance Event (ADE) is without a doubt the largest electronic music festival in the world. From 16 to 20 October, Amsterdam will be shaking again.

An impressive line-up with not only the best known, but also most of the emerging names from the electronic music scene: that’s ADE. But the program also includes lectures, workshops, film screenings, writers’ seminars, demo pitches, dance performances and exhibitions. ‘ADE is a festival, but also a music conference,’ explains Mariana Sanchotene. ‘An event where everyone should feel at home, even those who love classical music.’ Sanchotene took over as director last year. Hello Amsterdam speaks with her about her first ADE year. The 24th ADE is the first edition with you at the helm. Can we expect something new? For me, it was important to maintain the high quality of the programming this year. I continued in the footsteps of former director Richard Zijlma last year. This year we are going to special locations such as the Noorderkerk, the Concertgebouw,

Amsterdam Central Station, and a few that I cannot yet announce (so keep an eye on our social media/ website). A few super cool crossovers have emerged between new genres, such as electronic music and harp. So, nothing has changed in the DNA of ADE. Didn’t you want to leave your own mark? Perhaps. This year we celebrate 100 years of electronic musical instruments with an exhibition, a mix of legendary gear and a look into the future. What's new? We will create a space for sonic healing, meditation and art at the Waalse Kerk. ADE is extremely versatile, but what is the main purpose of the event? I see ADE as a gigantic gathering where everything related to electronic music comes together. Music of course, but also art, technology, PR, marketing, creation, and design. fields come to ADE to discover trends, scout new talent, exchange information, close deals or just network. The ADE organization provides the platform where all those parties can meet. Isn't that a bit too little honor? Didn't you also take care of part of the programming? We indeed determine the theme of the event with which we manage the conferences and workshops, we curate the arts program and we select the clubs and events that participate in ADE’s festival program. We facilitate contact between artists or concepts. And we scout unique locations that are not part of the ‘normal offerings,’ such as Central Station or the Hermitage. But Amsterdam has one of the best club scenes worldwide, with bookers who understand their profession extremely well. That is partly why ADE is so special; every club and promoter wants to show themselves at their best during ADE. It is their most important show-case moment of the year. ADE is known as the largest dance event in the world. How big is that? Everyone who matters in the world of electronic music wants to be here. Those who don’t come actually don’t count (anymore). We receive 400,000 visitors, 650 speakers and 2,500 artists. Plus, a large number of annual festival and club bookings within the electronic music scene are done here. 40

How is it possible that it has become so large here? The Netherlands has the largest music industry in the field of electronic music. That helps. But diversity is also important to us. Anyone who has anything to do with this musical form should feel welcome. We do this by allowing many genres and subgenres, but also by organizing many crossovers with other art forms. Think of electronic music as a documentary, or the live ‘scoring’ of the music with a silent film, or music for a ballet. Or of artists who play live, often in combination with other performers. Furthermore, we offer endless information at the conferences. Such as ADE Green, which is about the role that the music industry can play in sustainability ... Amsterdam still plays a role in all this success. I think so. Amsterdam is loved because of its transparency and its great clubs. We are lucky with a municipality that is open to our ideas and, where possible, thinks along with us and works with us. But other parties also do their utmost every year to make this event as successful as possible. Partly because of this, ADE can set up such a huge event with a relatively few resources and also deliver the quality that it does. How does it feel to be part of that? Fantastic!

Juulry While running a successful fashion store in Amsterdam with her husband, Alain Appelboom, Juul Evers decided to add a new line of accessories designed by … herself. The name for her own jewelry brand wasn’t that difficult to find: jewelry can also be written as … Juulry. What make her pieces so desired?

You’re not the only one that designs this kind of jewelry. What sets you apart? Explain the magic. “First and foremost: work hard. I mean: real hard. You need to be visible and therefore you must get out of our own shop. We work at many different sales channels other than our own store. For example, during the first few years I sold my designs often at De Hallen, which is also frequently visited by tourists.” And you’re are part of ‘Collection by Swan’? "Yes, we still are. It proved to be very important especially in the beginning. It used to be a market that has grown into a kind of chic alternative shop-in-shop chain at A1 locations in twelve large cities. Here, the affiliated 'indie' brands have their own space or ‘niche’ that they style and decorate according to their own artistic ideas. It is not like ‘I own a shop, I sell something and post from time to time, if I feel like it.’ Believe me: you wouldn’t survive. Being online is really a serious thing. You are working 24/7. That is why we are so fanatical on Instagram and Instagram Stories.” I see no jewelry for men! “No, no, no, I'm never going to do that. I can’t relate to that.” Do you consider yourself a designer? “I always think that is such a big, if not quite a solemn, word. My designs are geometric and ‘tribal’. You can no longer speak of trends nowadays. A lot of styles are just there, coming and going in waves ... I know how to put existing things together, to style them and make them attractive. It’s bit like Yves Saint Laurent: he did not see himself as the great designer, but purely as a stylist - a very, very gifted one indeed.”

LaDress Twelve years ago, Simone van Trojen was looking for a dress in which she could work, party and take care of the children. When she couldn't find that dress, she decided to make one herself. It turned out to be an inspired decision, because it soon became evident that she wasn’t the only woman who wanted a ‘perfect dress for every occasion.’ A lot has happened in 12 years. It didn’t stop with that one multi-purpose dress ... [Laughing] No, it hasn’t. Other designs were soon added to the Diane button-down dress. Indeed, hundreds of dresses and related items of clothing have further grown into a large business with more than 60 employees and more than 50 points of sale, both in the Netherlands and abroad. There are also six LaDress stores across the Netherlands and Belgium. Last but not least: a very successful website. You started online. Why then still have stores? We’re a very suitable brand for online sales, because we’re very dedicated in offering timeless designs with endless variations. This means that customers can order it online immediately when they know their La Dress size. A physical store complements that convenience with our goals. In our stores, we can tell our story in another approach and create the LaDress atmosphere. They are ‘experience stores’ rather than that you will find the entire collection.

Has your role changed within the company? Certainly! Initially, I was involved with all facets of the company. In the beginning I even brought orders with a cargo bike to Post NL. We have now an effective team which divides tasks. Personally, I am now mainly concerned with branding: photography, image, concept monitoring and so on ... Can you explain what makes a LaDress dress so successful? First: its broad versatility. Our styles are timeless and not confined to age. You can combine them with high heels, but also with sneakers. In other words, a Ladress can be dressed up and dressed down. Moreover, the dresses are made of high-quality fabrics and truly flatter any body size. On top of that, they do not wrinkle and you throw them in the washing machine. Nice and easy! Do you have a favorite dress yourself? Well, at the moment I’m wearing my Carey pantsuit. No dress, but just as timeless, stylish and practical. I even throw the jacket in the washing machine ...

What was ‘the accident’? “It struck me that while driving my children around in Amsterdam, I couldn’t buy a healthy and nutritional snack anywhere if they wanted something tasty. Not at your corner store, not at the gas station, not at cafes. Out of sheer amazement and frustration I started experimenting at home.” What was the result? “I knew immediately that I only wanted to work with organic fruit. I made all sorts of fruit smoothies and put those in the freezer. Slowly I discovered how it worked, and slowly my popsicles originated.” How did you make NICE into a brand? "When the packaging and styling were at the stage I wanted it, I started to promote my popsicles at festivals and markets visited by people who love sustainable food and down-to-earth products. How do you explain its rapid success? “I think it’s the honest appearance. You don't have to make it more

beautiful than it is. Nice is real. What you see is what you taste. Just like you would make them at home. It is pure and it is healthy... And off course it’s very tasty." How organic is Nice? "A full 100%. The organic apples, pears, raspberries and blueberries we mostly source from Dutch farmers. We get the watermelons from Spain and the strawberries from Poland. We only use ripe fruits, because they have the most taste. And to preserve the fibers and the vitamins, we only use whole fruits and cold pressed juice. The additional tea and mint leaves we chop by hand.” What is your favorite NICE popsicle? Where are you going? I am heading for my yoga class at Squash City. Is Amsterdam a good place for yoga lovers? It is one of the top contenders. There are many many schools, all with their own style. What you like about Amsterdam? It is a cycling city. I can get anywhere I want very easily. And it is also incredibly photogenic. Our sunsets are one of a kind. What museum you recommend? The Tropen Museum. Although I have not been there myself yet. But I am sure I will like it. Best souvenir? A herring at Stubbe’s herring truck at Haarlemmersluis. PARADISO LIKE AN OPEN-AIR MUSEUM Between the Rijksmuseum and the Herengracht you enter the charming historical Spiegelkwartier (which literally translates as ‘Mirror Quarter’); the heart of Dutch antiques and art trade centre. Just try to resist the shop window displays of some of the 70 antiques dealers and art galleries that offer their collections of fine historical objects and contemporary arts. We bet you can’t!

Paradiso, on the Weteringschans near the Leidseplein is the music venue generally known as the pop music temple of Amsterdam. The building is a converted former church building from the 19th century which was in use until 1965. Subsequently, it was squatted by hippies who wanted an entertainment and leisure venue. It was one of the first locations in which the use and sale of soft drugs was tolerated. Over the years, its concert program has included a wide variety of big artists.

CAFÉ HEUVEL On the corner of the Prinsengracht and the Spiegelgracht, one of the oldest cafés in town is located. You’ve to enter inside to experience the genuine local feel. With no regard for status or rank, you find everyone - from street sweeper to lawyer - together at the bar. There is a story about David Bowie who, in 1977, ended up on his knees scrubbing the floor after he lost a bet with the owner of the bar.

food court with local caterers hidden in a shopping mall with international allure: that’s The Food Department in a nutshell. A food concept on the Nieuwezijds Voorburgwal which presents locals and visitors with a new and exciting place to meet, eat and have a drink. It has also given one of the most iconic buildings in Amsterdam a fresh lease of life. On the second floor of the Magna Plaza, situated right behind the Palace on Dam Square is where it all happens: three bars and 14 food stands, some of which are renowned names in the food business while others represent brand-new local concepts. The Food Department is as diverse as the city itself. Have a grilled chicken from Van ‘t Spit (a local favorite!) or Dutch oysters from Brut de Mer. Indonesian Ta Toru offers Maluku dishes and at Toni Loco you can have pizza straight from the oven. Furthermore, there is pokébowl from Sushito, The Butcher’s hamburgers, noodle soup from China Supreme, and so on. Something for everyone’s taste and appetite!

The original idea for this food court came from Rent24, a firm that runs from a space in the building’s attic. Entrepreneurs Laurens van Rooijen and Edwin Spier developed the concept and provided founder Robert Bukvic (from Rent24) with the expertise to build the most delicious business of their home town. Together they made The Food Department a beacon of good food and drinks. But there’s more to the business model: The Food Department offers opportunities for culinary start-ups and entrepreneurs.

THE OLD POST OFFICE Inspired by the original building – completed in 1895 for the Dutch Royal Mail - classic features are reflected in the modern re-design. Seating is scattered throughout the space, not assigned to a specific stand or bar. Yet, some food stands also have places at the kitchen, as kitchens are known for being the best place to hang out. We all agree on that one… When visiting, don’t forget to have a look at the enormous Main Bar surrounded by high windows which provide a panoramic view over the bustling streets of Amsterdam’s city center.

ith the Vondelpark as a much beloved backyard to many citizens and occasional visitors, Proeflokaal ‘t Blauwe Theehuis has been an important place of gathering since its construction in 1937. When the sun comes out, all Amsterdam citizens know that the Vondelpark is one of the best central park spots to relax or meet with friends for drinks and bites. Since a few months, ‘t Blauwe Theehuis has added Proeflokaal to its name. Apart from your favorite cup of coffee or tea, you can now drink a wide range of beers here. ‘With the restoration this unique national monument is ready for a new future,’ say the brand-new owners of the place, Brouwerij ‘t

IJ. “We brought back original features and made some logistic changes to make it easier for staff and guests to enjoy a good beer, bites and the best pizza on the gigantic terrace.” With this restauration, Amsterdam owes the Brouwerij a big thank-you as the Vondelpark needs to continue as a fabulous place where everybody is welcome. Many weddings, festivals and other special occasions have been celebrated here at this unusual and unique circular construction, also known as ‘the blue flying saucer.’ Like the Windmill tap room in the east of the city, the famous and passionate Amsterdam brewery, Brouwerij ‘t IJ has reinvented this location to taste and enjoy its variety of beers, with a slice of pizza and other bites

for ordering at the bar. On the first floor you will find a seating area where antipasti, pizzas and salads are served. But the main feature remains the terrace and being outside. You can play jeu de boules, table tennis or just relax and watch kids and dogs play, or just enjoy a morning coffee or tea throughout the seasons.

DUTCH MODERNISTS With the Vondelpark being an important garden to the city, ‘t Blauwe Theehuis became famous from the start thanks to its unique architecture, inspired by the New Pragmatism (de Nieuwe Zakelijkheid), a Dutch modernist period that started in the 1920s and continued into the 1930s with many beloved Bauhaus features.

It is hard to think of a cuisine that is further apart from traditional Dutch food than Indonesian. While a lot of the traditional Dutch gastronomy features a rather bland combination of mashed potatoes with hard vegetables - think hutspot - the Indonesian 'combined menu' rijsttafel shows off a great variety of tastes, textures and colors. Quite funny when you realize that this phenomenon was a Dutch invention …

ossibly, the rijsttafel (literally: rice table) is the tastiest thing the Dutch brought back home in 350+ years of colonial rule. The former colonial rulers on the vast islands of Java and Sumatra demanded to be served all the dishes from the regions in one great Far East Asian ‘smorgasbord’. It not only presented them with an opportunity to show off to their superiors what the great colony of the Dutch Indies had on offer, but also to enjoy the dishes themselves.

WHAT’S ON THE TABLE With a rice table, the whole dinner table is covered with small containers filled with delicacies, usually organized by the degree of

spiciness. It almost certainly includes rendang (tender cooked beef curry), chicken, boiled egg, loempia (spring rolls), tahoe (tofu), tempeh (fermented soybeans), paksoi (bok choi) and pickled vegetables. Naturally, a bowl of rice – white, saffron-yellow or fried (nasi goreng) would be served on the side. Parts of the rijsttafel became so popular, like chicken satay (grilled chicken breast on a stick smothered with a hot peanut sauce), loempia (spring rolls), kroepoek (shrimp crackers), kecap (a sweetsour soy sauce) and kerrie (curry), that you can buy them now on almost every Dutch street corner.
