Generally considered as a national treasure in the Netherlands: Audrey Hepburn, the ‘très, très petite’ actress. She is now also viewed as a fashion icon with her famous ‘garçonne’ look created by couturier Hubert de Givenchy. Many exhibitions have already been dedicated to her that emphasize her stylish, impeccable taste.

Get into the ‘Grid’ A tribute to Wim Crouwel (1928-2019) which features a selection of his typographic oeuvre. This iconic Dutch designer was the co-founder of the first multidisciplinary design agency in the Netherlands: Total Design in 1963. At an international level, he is renowned for creating projects for numerous organizations and institutes (including the Van Abbemuseum and the Stedelijk Museum), designing fonts (such as the 1967 New Alphabet) and company logos. Throughout his career, Crouwel was an advocate of the rational & minimalist grid system, something which he considered to be one of the most important ones in the designer’s toolbox. His preoccupation with this ‘grid,’ which cemented his worldwide reputation, is now presented in this exhibition.

Coinciding with her 90th birthday anniversary, the exhibition Intimate Audrey - curated by her son Sean Hepburn Ferrer - focuses more on the woman ‘behind’ the icon. The exhibition displays photos, dresses, accessories and memorabilia, including ‘humanitarian’ writings by her hand. It further features a series of poignant videos which convincingly present why Hepburn is still so beloved. The proceeds of Intimate Audrey go to Eurordis - the European Organization for Rare Diseases.

A colorful, cultural tapestry The fascinating story of Surinam and all its people from very different backgrounds that came to this South American country: together they’ve created a rich and colorful, cultural tapestry now to be seen at the Nieuwe Kerk. From the earliest native settlements to the colonial period, from the slave trade to the independent republic of today, no detail was overlooked for this first comprehensive exhibition of the former Dutch colony. Almost around the same time, Museum van Loon will shed a light on the connections between the Van Loon family and the former colony. The informative result is a shared history told through eight historical figures and their descendants: from enslaved workers in the colony to wealthy consumers in Amsterdam.

Diaristic photographic installation Eric Gyamfi (1990, Ghana) is the winner of the 13th Paul Huf Award, which is awarded annually by an international jury to photographers under the age of 35. With a wide array of visual techniques - collages, texts, audio, photographs, cyanotype, silk screen printing - Gyamfi creates narratives that hover between autobiography and fiction. Although his portraits and diaristic photographic installations are very personal, they transcend the artist’s individual experience.

An Inspirational force
Designer Sanne van de Goor created the series The Hotel Chronicles (2019) on the state of hotel beds after guests had checked out. Did they leave the bed untouched after getting up, or was the duvet straightened? Using her photographs as a starting point, Van de Goor created five colourful carpets digitally woven in cotton yarn with the jacquard technique which can be seen in the restaurant of the Lloyd hotel. At display as well: Folding Thoughts (2018) inspired by Japanese folding culture (origami) created together with residents of Itoshima.
‘An intellectual catalyst and inspirational force among a younger generation of Sudanese artists’: Kamala Ibrahim Ishag (Sudan 1939). She is one the first women to graduate from the College of Fine and Applied Art in Khartoum and is considered as a pioneer in African visual art since the 1960s. She forged an artistic identity for the newly independent nation, drawing on its Arab and African roots. As Ishag progressed in her career, she rejected more and more the emphasis on ‘heritage’ and its male-dominated world view. Now her work focusses on the intangible aspects of women’s lives in Africa and the Arabic world that led to her field research and large-scale paintings of Zār (a traditional Sudanese women’s ceremony).

The Factory A room-filling mobile of copper drum basins, neon drawings of a man with a head in his hand and thousands of black moths that swarm across the museum: the Mexican Carlos Amorales, educated in the Netherlands, cannot be missed. Bullets, Betrayal and Letters The exhibition Bullets, Betrayal and Letters: Chronicle of a Jewish Family traces a confrontational family history that extends from Poland and Ukraine to the Netherlands. It is the first exhibition in the Netherlands to highlight the mass murder of more than 1.5 million Eastern European Jews. The exhibition recounts the extraordinary story of the family of Amsterdamborn filmmaker Willy Lindwer (1946), who has gained recognition for his films about the Holocaust, Israel and the Middle East. He decided to document his family history after uncovering letters from his grandfather, Wolf, and shocking discoveries at the site in Ukraine where his grandmother, Ryfka, was murdered.

A selection from the Menko ten Cate collection is exposed at the Museum of Bags with emphasis on trunks, including vintage Louis Vuittons, Goyards and Moynats. Houses that many now know as fashion brands, but once started as makers of suitcases and travel necessaries. Every case has its own dents, scratches and even sound, and gets its own pedestal. By tracing the origins, imaginary owners and history, they come to life as it were.

y taking his bike between the highly respected RIJKS® Restaurant and his latest addition restaurant Wils, renowned chef Joris Bijdendijk keeps the fire going by sharing his passion for good and honest food served at special places. Named after architect Jan Wils of the 1928 Olympic Stadium and other neighborhood buildings, restaurant Wils is located in the former Citroën dealership, which has an amazing view on this still very active Olympic location. Bijdendijk explains to us the thought behind the creation of Wils. “My youth was divided between this neighborhood and

our family farm in the mountains of the Belgium Ardennes region. The hardworking self-sufficient farm life taught me the value of the basics of all food provenance. By working with open wood fire, I want to bring back the essence of cooking. Local produce and especially vegetables are my passion and, together with my team, we always look for new taste sensations to uplift the humble product. I believe in daring my profession and working with wood to keep that fire burning. It’s a daily challenge for the whole team. Next to the open fire cooking, there is also a traditional bread bakery and to recreate this wonderful taste of my youth. I recreated the wood burning stove
from our farm in a larger version. The bread will not only be served at the restaurant, but will also be available for the consumer and other restauration locations.”

he 10,000-plus international reviews The Seafood Bar received since its opening in 2012 are absolutely raving. Not that surprising, because the initiator Fons de Visscher - what’s in a name knows the tricks of the trade like no other.
When the kids moved out, he and his wife decided to move to Amsterdam. Their he continued his culinary route first as a traiteur with a small dining section, later as a restaurant. The rapid success didn’t surprise him: “I have a lot of experience, and I knew that there were enough people in Oud Zuid who would appreciate good quality.”

Incredible how much you can do with fish

Another reason, according to De Visscher, is that fish is considered as healthy food and is listed on the menu of celeb chefs. “I’m not a master chef, but I do like good food. So, fish must be prepared in a simple way; a good chunk or a whole piece. And add just some citrus, this way I like it the best.”
De Visscher: “When visiting one of our three restaurants, you must try the Zeeland oysters and of course the deep-fried codfish: the ‘Lekkerbek’ that represents our philosophy. A simple product on the outside, but so many things fuse together: quality fish, a good batter, the right oil, temperature and cooking time."

He was brought up with fish. He likes every aspect. The harbors, the boats, the romance, the difference between saltwater and freshwater fish. And being raised as a Catholic, it was often on the menu as he grew up. Every Friday, every Good Friday and every Ash Wednesday. What’s more, his mother owned a fish shop. While helping her during weekends, the idea matured to start one himself. In 1983, it happened in Helmond (in the southern province of Brabant) and lasted 27 years. De Visscher: “The longer I worked with fish, the more inspired

MORE THAN 100 KILOMETERS OF CANALS
Canal Belt Beauty Amsterdam has a nickname of which it can be proud: Venice of the North. It owes this honorable mention to the more than 100 kilometers of canals with countless merchant houses and city palaces. It is a further reminder of the resourceful entrepreneurship of its inhabitants who ensured that a 16th century small port became in the 17th century the leading capital of the world. This rich testament of this Dutch Golden Age can still be enjoyed, because the structure of ‘de grachtengordel’ has largely remained intact.

lmost every Dutch person starts singing along spontaneously, or will hum, when he or she hears the first stanza of one of the most beloved songs about the capital of the Netherlands: Aan de Amsterdamse grachten. As is the case with You’ll Never Walk Alone in Liverpool, it has become Amsterdam’s anthem which is sung with full passion by the audience during the finale of one of the of the summer season’s highlights: the Prinsengracht Concert. This annually free classical music happening, also very popular among tourists,
was close to never having been organized. During the reconstruction of the Netherlands after the Second World War, politicians and city planners proposed every few years that the historic canals of the old city center should give way to the automobile. The protest among the population was massive every time such proposals hit the news. The general tenor: how dare a sensible person propose the closing of canals after all the unfortunate examples from the past, with the disappearance of the Vijzelgracht and the Rozengracht recognized as the alltime low. After the opening of the Stopera in 1986, the town hall and the opera were put under one roof. Some parts of the historic center had been sacrificed - naturally under loud protest – but the disputes ceased. From then on, modern urban planning and contemporary architecture were integrated
into the unique structure of the historic Amsterdam canals. And with a grand scale renovation project set up by the municipality, monuments and landmarks have been restored over the years, giving many canals back their former luster.
WORLD HERITAGE LIST This didn’t escape UNESCO’s attention: in 2010, it placed the Amsterdam Canal Belt on the World Heritage List. This distinctive crescent shaped belt contains the main canals that encircle central Amsterdam, namely, Herengracht, Prinsengracht and Keizersgracht. They are in fact an extension of the canal system of medieval Amsterdam, once bordered by the Singel. The reason for this long-term urban planning is due to its growing economic influence with the result that many Europeans immigrated to Amsterdam. In order HELLOAMS.COM

to create more space and to facilitate the growing transportation of goods, the local authorities decided to broaden the canal system. Given the fact that this new canal ring was mainly used by traders, many of them decided to settle on its banks and build warehouses, mansions and even city palaces. Most of them were members of the in 1602 established VOC (United East India Company). Considered as world’s first multinational share-holding company which had a monopoly on the ‘most desired’ goods like pepper, nutmeg, clove, silk, sugar, precious stones and metals. Money came in abundance and the ‘first generation of Dutch nouveaux riches’ were proud to show it off. For the first time in Dutch history, people saw an unprecedented demonstration of wealth and opulence which attracted visitors from abroad to see for real what a republic (instead of an ab46

solute monarchy!) could achieve when different bourgeois forces combine. And while strolling through Amsterdam these early tourists didn’t want to miss out the by Jacobus van Campen newly constructed town hall on the Dam Square (now the Royal Palace), which was at the time considered as ‘the eighth world wonder,’ representing the city’s prosperity and status as the world center for trade.
ENTERPRISING CREATIVES What did it look like? Visit the Rijksmuseum, where you see paintings commissioned by these rich merchants who asked painters like Rembrandt, Frans Hals, Jan Steen, Gerard Dou, Pieter de Hoogh to immortalize their ‘well-deserved’ status. You can still enjoy today this rich history on a full scale, 24/7/365, in other words every
day of the year. However, you don’t have the feeling that you are visiting an archaeological open-air museum. The inner city has always been like a magnet for young, enterprising creatives who, in addition to the ‘classical offering,’ have realized more contemporary, challenging and inspiring initiatives. Like making the quaysides more greener with floating gardens. Some of these Amsterdam ambassadors have even a bolder idea in mind. Wouldn’t it be good idea to give streets, like Rozengracht and Vijzelgracht, the original meaning of their name back? And turn them into canals again? A positive thing is that these ambassadors are more and more supported by a growing majority of Amsterdammers. As more old canals are being restored in their old glory, the more you can enjoy the rich history of city.

That is the reason why Bijdendijk founded the Low Food Movement together with partners in crime Samuel Levie and Joris Lohman. An organization that strives for a whole new direction of Dutch cuisine.

msterdam must become a culinary hotspot where gourmets are attracted worldwide. A Burgundian attraction comparable to cities such as Paris, Milan or Brussels, but one where Dutch cuisine stands central. At least, that is what Joris Bijdendijk, chef of RIJKS Restaurant and Wils, aims for. That might be difficult, I hear you think. Why is someone going to travel for several hours for a ‘meat and two vegs,’ the traditional staple fare of Dutch culinary culture? But Bijdendijk is not interested in traditions, instead he prefers to look ahead. He wants to change the Dutch food landscape and in order to realize that, he started the Low Food Movement in 2018 together with Samuel Levie (from sausage maker Brandt & Levie) and Joris Lohman (Food Hub for food education). Bijdendijk: “We have a huge food issue in the Netherlands. We produce much more than we need: twothirds of our output goes abroad or is being wasted. Furthermore, we import far too much food practically from everywhere in the world, because ‘everything from far is good.’ However, this doesn’t mean that we also have terribly good foodstuffs just around the corner. Unfortunately, people realize that too little.” By way of illustration, he mentions the oysters from Zeeland, the fresh fish from the North Sea, Dutch cheeses that are produced here in abundance using traditional methods. But also, locally produced vegetables, poultry, fruit and meat.
SYMPOSIA AND LABS Bijdendijk argues for a smaller food chain, including a shift from an agricultural country to a food country. 50

“Enough is enough. We should not produce more, but rather produce better. Sustainable, green, local ánd tasty, these are the themes we work with.” The Low Foodies take this even further, as they ‘want to make the Dutch food culture a trend-setter when it comes to these themes.’ Or as the Low Food website more specifically states: “The Low Food Movement will (therefore) act as a network agent and platform where new ideas are created and implemented.” Sounds good, but how are you going to give shape to this all? Bijdendijk: “Since last year, we have been organizing meetings with Low Food at intermittent times. Symposia and Low Food Labs where chefs, farmers, producers and policy makers from all over the country come together to talk about changes within the food chains. They share knowledge and experience and inspire attendees to take new steps. That these meetings do not go unnoticed is evident from the enormous interest from international and other prestigious circles. During the last session at the end of November, Diego Prado Vásquez (coordinator BCulinaryLAB) and Benedict Reade (former head of the Nordic Food Lab) were guests. And at the second to last meeting, Claus Meyer from the Nordic Cuisine and restaurant Noma was part of the panel.
CULINARY HERITAGE Bijdendijk is certainly no stranger to the culinary sector. He has been committed to Dutch cuisine for years. Since the opening of RIJKS Restaurant his dedication has only increased. “Whereas a museum guards the cultural heritage, I cherish the culinary

heritage,” he explains. On the menu of both RIJKS and its brand-new hotspot Wils (see page xx), typical Dutch ingredients such as potatoes, leeks, turnips, radishes, asparagus, beets and celeriac are listed. As the preparation is so revolutionary, you wouldn’t associate it with heritage. “I roast celeriac on a spit for three to four hours so that the sugars caramelize on the outside and a soft, concentrated celeriac cream is created inside.” Bijdendijk's ‘find’ is the (goat) buck. A food ingredient that he is now advocating like an ambassador: “Every year, a hundred thousand goats are born and because they provide milk for cheese only the females are useful to the farmer. Most bucks are being killed. While they have wonderfully lean meat. I use it for sausage (with Brandt & Levie) and I use it to make Indonesian rendang curry.” Indeed, Indonesian and Surinamese dishes are also part of the Dutch culinary landscape. Bijdendijk has been cooking the ‘stars from heaven’ at RIJKS for five years now. He received a Michelin star as a recognition for his culinary experiments. “There is nothing more logical than cooking with the stuff you find around you. And that is not a trick or idea. It’s a realization that is deeply rooted in me. And I don't rest until many people feel the same like me.”

Are you curious where Rembrandt van Rijn painted his famous works of art? If you are, you must take the opportunity to visit the Rembrandt House Museum at the Jodenbreestraat. From 1639 to 1658 the greatest artist of Dutch history lived and worked in this impressive building in the heart of Amsterdam. When Rembrandt’s success as an artist enabled him to buy the impressive merchant’s house, this neighborhood was the home to the A-list of the Amsterdam art world, including Rembrandt’s teacher, Pieter Lastman. Rembrandt thrived during his time here. Behind the oak door and the red shutters, he celebrated his glory years while in his thirties. Initially as a successful portrait and tronies painter, but when he started to create his subdued, more heavily plagued, work his success diminished and bankruptcy forced him to give the house up.

BLACK IN REMBRANDT'S TIME
When curator Stephanie Archangel worked at the Rembrandt House Museum, she noticed that Rembrandt painted many black people. But she also realized that little attention had been paid to that fact. It was the main reason for her to assemble an exhibition together with art historian Elmer Kolfin. “One that will be an eye-opener for many,” she says. Hello Amsterdam asked her why ... Why your interest in black people? Though my Afro-Curaçao background, I am always looking for images of black people in paintings. And the more I looked, the more I noticed that over the centuries the black body was always portrayed as a servant, enslaved or caricature. I questioned the fact whether that actual depiction is representative.
Rembrandt Laboratory
REMBRANDT’S TECHNIQUE UNRAVELED
How did Rembrandt make his paintings, etchings and drawings? And how do we investigate that today? Until February 16, the Rembrandt House Museum will be creating a laboratory setting that will reveal new insights about various paintings, discoveries from his cesspit, and his prints and drawings. In this laboratory visitors can step into the scientist’s shoes. Think about the dilemmas faced by researchers and restorers in the atelier and residence where Rembrandt made his works of art almost four hundred years ago. This interactive exhibition brings the scientific analysis of materials and techniques to life for adults and children from the age of 6.
And did you find an answer in Rembrandt's work? Certainly! Rembrandt was one of the first artists to give true-tolife representations of black people. This is in itself not completely surprising, because the neighborhood around Jodenbreestraat was a free community at the time. Africans were his neighbors. He was one of the artists who also reflected that in his paintings, without resorting to clichés. What are you aiming for with this exhibition? It is an exhibition that focuses on the dignified and non-stereotypical image of black people in the Dutch 17th century. That is special in itself. But the Rembrandt House Museum wants to be a place where everyone feels welcome and it also wants to recognize itself in the stories it communicates. The Rembrandt House Museum gives visitors a complete Rembrandt experience. With a 17th century inventory as a guide, the house has been meticulously refurbished with furniture, art and objects from that time. The Rembrandt House Museum is also a venue for exhibitions of work by contemporary artists who have been inspired by the work of Rembrandt.

Amsterdam Light Festival
A very disruptive event Seven thousand snow-white bird feathers shine on a bomb - a nuclear bomb. The contrast cannot be greater between a soft feathery outside and the devastating power of a bomb. The artwork is called Big Bang and is one of the twenty light installations made by artists from 16 countries that can be seen during the Amsterdam Light Festival. The theme of this year’s edition is Disrupt! In other words: confusion, alienation, disruption. For eight years now, the Amsterdam Light Festival (ALF) illuminates the city with a huge number of colorful artworks in the cold and darkest period of the year. During more than 50 days, the historic parts of Amsterdam act as the atmospheric backdrop of this international light art festival. As in previous years, a whole host of Dutch and international artists will contribute to the festival, creating spectacular light sculptures. But instead of the canals and the city center, most pieces for the winter of 2019/2020 are displayed in the eastern part of town. Twenty established and up-and-coming artists from 16 countries have been selected to shake-up Amsterdam with the theme Disrupt! They interpreted this theme in 66

many different ways, from creating new structures to transforming existing architecture, inviting viewers to see the city in a new light. But as we all know a sudden disruption can either signify chaos or can empower change. So beware for some action when you stroll the streets or float around on a boat. ROUTE For the first time in the history of the festival, a new route will illuminate the eastern part of the city center this winter, with stops along Oosterdok, Oudeschans, Amstel, Nieuwe Keizersgracht, Plantage Muidergracht and Entrepotdok. All accessible by boat, on foot or by bike.

Sunday Royale tournament Enjoy a special ambiance and take part in a Poker, Black Jack or American Roulette tournament. Play in a leisurely atmosphere where it is all about the fun of playing. The tournament runs from 4.30 PM to 5.30 PM. There are places for 10 participants. You can sign up in the casino on the day itself. If you take part you’ll receive a free drink from our specially selected range.

TapZuid At TapZuid in the lively Maasstraat a local craft beer scene is alive and kicking. This Brooklyn style bar and restaurant serves beers from all of Amsterdam’s 35 craft breweries.
