Ali Waheed This time around, Hotel Insider speaks with the minister of tourism Ali Waheed. Ali Waheed is arguably the youngest person to have made a successful career in politics though it is not a topic we touch upon in this interview. We talk instead of tapping into new markets, airport development and its impact on the industry, particularly occupancy, integrated tourism development projects, and the possibility of re-introducing helicopters, among others. Hotel Insider: There's a trend of declining occupancy among resorts but we're seeing their numbers increase. What do you make of this? Ali Waheed: Since our government took over last year, we’ve been concerned mainly with the drop in Chinese guests. In my view, a key issue was putting islands out there [to be developed as resorts] without a masterplan. The government’s plan now is to increase bed capacity but in a way that ties in with President Ibrahim Mohamed Solih’s pledges. There were several islands and lagoons that were earmarked for development in the government gazette when we took over but we removed them [from the gazette]. When we mark islands for development, we will do so after a thorough review process and we’ll ensure that it’s done in alignment with our manifesto, our five-year plan. Our development policy revolves around both economic and environmental sustainability. If you take Maafushi for an example, guesthouses there have to look at Vaavu Atoll for excursions because all the nearby islands and lagoons are under development. We don’t want that to be the case. Hotel Insider: You mentioned that you’re concerned about the drop in the Chinese market. Could you tell us your plans to address that? Ali Waheed: While we’re on the subject, let me also add India to this. It’s a huge market as well, even a fraction of travellers 10

in a country with over a billion people is still very significant. And we’re right next door to each other. I don’t believe we’ve tapped into the potential of that market over the years. I’ll be visiting India and China as well, and we’re looking to work with the Chinese authorities and with the Maldives Association for Tourism Industry (MATI) and see how we can transform our marketing efforts Hotel Insider: How much of an impact do you think the [Velana International] airport development project will have on tourism? There are some who believe this will give great relief to occupancy issues in resorts. Ali Waheed: It will take two to three years to complete the airport project. We need some temporary measures, though, to address congestion and we’ll work on having those in place in time for the high season this year. Once developed, the airport will be notable for its uniqueness and we aim to endow it with a distinctively Maldivian character. The main gateway to the country needs to emphasise its uniqueness and beauty because a tourist’s experience begins and ends there. I think, moreover, that other international and domestic airports need further development, including those in Addu and Fuvahmulah. Addu airport needs to be able to cater to the influx of travellers now that it has two carriers coming in. We also want those airports to highlight the specific beauty of the region, like the wetlands and tiger sharks in Fuvahmulah

if you’re arriving there. Domestic travels should also be a more pleasant experience. Hotel Insider: But do you think the [Velana] airport project will address occupancy issues? Ali Waheed: Yes I believe it will. And to address occupancy, I think there are markets nearby that are worth exploiting. One of them, as I’ve said is India, with more than 80,000 visitors in 2017. And I don’t think that’s close to what we could potentially get from the country. Hotel Insider: We’re in a very good position to market ourselves because we’ve got more beds than ever. You’ve mentioned India, where else should we be looking at? Ali Waheed: My thinking is that we’ll work closely with the ministry of foreign affairs to ensure that all our ambassadors are also ambassadors for tourism. They will actively promote the country abroad. We also need to go beyond the European paradigm, think the Americas. We’re seeing increases in the number of visitors from those two continents. In addition to that, I feel we need to explore opportunities in regions that are much closer to us in comparison, like South East Asia. We haven’t really touched the Malaysian and Thai markets for instance. Hotel Insider: I also wanted to ask you about the integrated tourism projects in Addu and Laamu Atolls. Are those still ongoing? Ali Waheed: We’re actually thinking of developing five zones in the Maldives and that’s the ministry of planning’s vision as well. So, tourism development will follow that course. When I think of Addu and the southern atolls, I realise that there have to be special incentives. Expectations are very high down south. President Solih wants the atolls to be empowered and developed and to reap the benefits of tourism as he has pledged. A small thing we did recently was reducing domestic air fare, one of our pledges. They want tourists to be able to visit their atolls at a reasonable fare. We need to think from an

entirely different perspective about southern atolls like Addu. And on the matter of integrated tourism development projects, we need to urgently consider them (MITDC) on the policy level. If those models are to continue, we need to amend certain laws. And we will do this soon and see how we can manage such projects in those atolls. Hotel Insider: There are a couple of flights coming in to Addu right now, thrice a week from Colombo and once a week from Johannesburg. These are good signs. The previous government talked of increasing bed supply down there by some 3000 beds as I recall. That will help lure flights and hopefully set up a domino effect. Ali Waheed: I was fortunate to have met with South African Airlines representatives, and they envisage connecting Gan to Hong Kong, Perth and London. And there are other airlines that want to come in. So, yes, we need to increase bed capacity in Addu but at the same time, improve the connectivity between Addu, Fuvahmulah and Huvadhoo atolls. We’ll consider air connectivity, there is an air taxi base already. And why not explore helicopter options? Hotel Insider: Because we haven’t had the best experience with them. Ali Waheed: That was before. All in the past. Things are always improving. We need means to connect the islands, and we’re not a small nation. We are dispersed and this is a challenge. People in the atolls are very hopeful, they want to live in their home islands and be able to find work nearby, instead of having to come to the capital. My deepest wish is for tourism to be so pervasive that people really feel no need to come to Male for employment. Hotel Insider: Thank you, Minister. It’s been a pleasure.

Game of Thrones Star, Nikolaj inspires Maldivians to ‘Unite for Climate Action’ In October 2017, Maldives welcomed a special guest; Nikolaj Coster-Waldau, best known for his role as Ser Jaime Lannister in the popular HBO series Game of Thrones. He arrived in the island nation to kick off his climate action journey as UNDP Goodwill Ambassador. At the end of his trip, Nikolaj and Shoko Noda, UNDP Resident Representative to the Maldives, talked about the trip they took together and his reflections. Shoko Noda: We’re so excited to have you here with us in the Maldives. What touched you most during our visit to the islands? Nikolaj Coster-Waldau: What struck me most about this country was the Maldivian people – so welcoming and generous. Because of the nature of these islands, almost every challenge Maldivians face is linked to climate change. I saw just how vulnerable the country is to beach erosion and sea swells* – you can see it in all the islands we went to. This is a huge challenge and it’s only going to get worse. We’ve to help them find ways to cope. Shoko Noda: What do you think is the most serious climate change issue for Maldives? Nikolaj Coster-Waldau: It would have to be water- access to water. I met this incredible woman, Muna, a teacher from Laamu Atoll. She and her husband had a chili farm. Just a week before harvest, the whole island got flooded because of sea swells*. She took me to the site of the once blooming farm. It was devastating to see all the crops completely damaged. If she had access to fresh water, she could’ve easily saved at least some of the crops, but she lost everything.

Shoko Noda: We went snorkelling as well. How was your underwater experience? Nikolaj Coster-Waldau: Seeing the different types of fish and all sorts of beautiful marine life in the ocean was absolutely breath-taking! At the same, the amount of coral bleaching that has taken over the reefs is alarming. This really goes to show just how fragile these reefs are and how important they are to the ecosystem. We need to stop polluting our planet, our home. It’s not going to be easy, but small actions we take can go a long way towards making a meaningful impact. Shoko Noda: Did you see any action being taken by the community to tackle these problems? Nikolaj Coster-Waldau: I went to this school where every day some of the kids had to go home because of the heat. So, the students actually made a huge ‘green hall’ over the school compound using cucumber and passion fruit vines. I also met a group of very passionate young people running an NGO, called Save the Beach. They saw rubbish being thrown all over the beach and plastic going into the ocean. They, too, saw a problem and took action. Now, what they are doing has spread across many of the islands. Shoko Noda: Do you think there’s hope for the future? Nikolaj Coster-Waldau: Of course, I believe we can and will work through these challenges. It’s going to take all of us, but the benefits are enormous. Everyone wants a healthy planet. It’s like that famous saying,

“We act as if we live on nine planets when we only have this one,” and we’ve to take care of it. Shoko Noda: What’s your message? Nikolaj Coster-Waldau: We haven’t done so well for the past 150 years. At least now we understand that our actions aren’t sustainable. If we want to survive as a species, we’ve to do things differently. So, get engaged and get others engaged. Take action, on your own and together. It doesn’t have to be life altering. But if everyone does a little bit, we can collectively make a huge impact. Shoko Noda: What an inspirational message. Thank you Nikolaj for being here with us, and for your commitment to make a difference. Ali Ihusaan This time, Hotel Insider speaks with Ali Ihusaan, CEO of Happy Market, one of the country’s few major F&B specialists. Ihusaan talks about opportunities that cropped up early on and how the company capitalised on them.

He outlines the company’s key areas of focus and specialisation, and gives us a glimpse of what to expect in the near future. Happy Market’s story is intriguing; particularly their knack for reading the market and figuring out how to keep most of their earnings within the company. Their model revolves around integration and keeping high-volume sellers at hand always. Read on. Hotel Insider: Can you tell us what the market was like when you started out? What sort of opportunities did you see? Ali Ihusaan: We began operations some 27 years back and at the time, frozen goods were a luxury. You didn’t have reefer (frozen) containers coming regularly to the Maldives. So that’s where we saw potential. We had shipping companies deliver frozen goods to Sri Lanka and then we’d air freight them here. Or we would have chartered vessels carry frozen items and offload the goods to our distribution ship (Freshmarket) our distribution point to the resorts. Hotel Insider: That’s around the time when tourism was starting to eclipse fisheries as the main industry. Ali Ihusaan: Yes, tourism was picking up and the founders of Happy Market foresaw 16

immense potential in selling in bulk. Later we bought a ship that carried items from Sri Lanka to our delivery ship Freshmarket. Hotel Insider: Yeah, I remember a ship that used to distribute goods here. Ali Ihusaan: Yes, there was one that travelled between Sri Lanka and the Maldives [for goods] and another that was stationed here, doing storage and distribution. So, one ship would bring in the goods from Sri Lanka and the other would handle distribution. But due to unforeseen circumstances, we had to stop operating the two vessels. And our business was forced to change. Hotel Insider: How did you change? Ali Ihusaan: By the time we stopped operating the ships, there were parties that brought in reefer containers to the country and we utilised them. And we had already established a cold storage facility on land. Plus, we had a shop by the seafront, now called Unity 1, which was our distribution point. And rumour has it that we couldn’t even get the goods to the shop before they were sold out. Demand was that high. [laughs]. That’s when we started to become sustainable, bringing in supplies to an existing supply chain. If you consider Happy Market as a group,

by that time we were already operating what’s now Thulhagiri Island Resort. A major expense at any resort is food and drink. So, the owners of Happy Market wanted to funnel all major expenses of a resort through the companies they managed to increase efficiency. That was the business model. That’s where integration began. Hotel Insider: And this sort of integration is what led to your expansion across market segments. Ali Ihusaan: Yes, we started expanding to all available resort segments plus the local market although the latter wasn’t a priority at the time. We were a resort supplier. Hotel Insider: You started with frozen goods but were there other areas of specialisation later on? Ali Ihusaan: Yes, our first specialty was frozen foods. It’s our strength because running a cold storage is tedious. You have to regularly monitor temperature to comply with HACCP standards, for instance. It used to be that these checks had to be done manually but we’ve computerised the process now. And it’s a big barrier to entry. As we expanded, we went into different food segments like dry food and dairy. Our model was to make sure that we had what people

consumed in significant quantities at hand always. During expansion we added quite a few brands. One of our oldest brands is, in fact, San Remo pasta. We’ve been carrying San Remo for 22 years of our 27 years in operation. Our business was built on long term relationships, not only with our customers but also with our suppliers. I’d also like to mention that we place a high premium on our relationship with our staff. The oldest employee has been with us for 28 years – he joined a year before the company started [laughs]. Staff turnover is really low and they are very loyal. We have a number of people who’ve been with us for over 17 years. . Hotel Insider: That’s great. Now, let’s talk about your market share a bit. Ali Ihusaan: In frozen goods, we rank very high. If you consider chicken, I think over 60 per cent of the frozen chicken that’s imported is ours. Add to this, sausages, chicken drumsticks, chicken breasts. We’re able to assess our market share through customs’ statistics. Hotel Insider: All right. Twenty years ago, you trailblazed the frozen goods market and you ventured into tourism too. I’d like to know how the business grew in the 2000s. Ali Ihusaan: Well, in the early 2000s, after acquiring a second resort, company founders discovered that pure drinking water was an issue to be addressed. So, around 2004, the founders came up with “Life” [a brand of bottled drinking water]. “Life” was among the earliest bottlers in the Maldives. Keep in mind that our strategy was to integrate horizontally and vertically. And around 2011, the company realised that fuel consumption had to be addressed as well. So, a company was formed for fuel import and distribution. We had a tanker with a capacity of around four million litres and a distribution vessel. We powered our bottling factory and our other businesses with that fuel so the cost was distributed Hotel Insider: I see. Also, I’ve always wondered what people in your line of business do with products approaching 18

expiry. Ali Ihusaan: Oh, yeah that’s an issue. We had a separate outlet that managed such products, a place called Myshop, right outside our head office. When a lot of products neared expiry, there was a requirement to open an outlet to move those products quickly. However Myshop has since become a regular distribution shop of ours and closeexpiry products were fast moved through promotions and other avenues. Hotel Insider: Is Myshop a wholesale or retail outlet? Ali Ihusaan: Wholesale. About 90 per cent of our sales is wholesale, which is our main focus. Hotel Insider: I see. And how do you manage to keep on top of deliveries, especially to resorts who have strict time constraints?

"We want our customers to understand that at Happy Market, they will always get a great product at the lowest possible price for that quality." Ali Ihusaan: It’s quite challenging to be honest. We only get about eight or nine hours to work because of changes to working hours – it used to be a round the clock service. So now, when we receive orders, we prioritise them and ready our delivery vehicles. And during this process the client will be kept up-to-date on progress until the goods are in their hands. Hotel Insider: I also wanted to ask you if you’ve observed any food trends in the resort community. Ali Ihusaan: Yes, there’s a trend for getting fresh, chilled meat rather than frozen. The meat is air freighted to keep freshness. We haven’t touched that market yet. And in the local market, we’re seeing a lot of meat, like

beef and lamb gaining traction. Hotel Insider: Before we part, can you tell us about your vision? And what are some of the things you’d like to do in the near future? Ali Ihusaan: Our overarching vision is to distribute our frozen goods across the Maldives. And with this in mind, we opened a distribution centre in Addu in 2010. Our MD Mohamed Naeem is from Addu so it seemed a good place to start. One of our greatest challenges is that there’s very little capacity for transporting frozen goods within the existing transportation network. So, we have to take refrigerated containers by boat to Addu on a monthly basis. Also, we want to emphasise quality in terms of service and products. At the same time, we want to focus on cultivating sustainable relationships with our customers. Right now, the market is very volatile; customers work on a weekly basis, finding out who’s the cheapest. There’s a lot of competition. What we want is for our customers to understand that at Happy Market, they will always get a great product at the lowest possible price for that quality. Of course, anybody can sell frozen chicken, but what they can’t do is ensure that it reaches customers while complying with strict HACCP standards at our price. Furthermore, we’re planning to open distribution centres in Gaafu Dhaalu, Laamu and Haa Dhaalu atolls. Also, we’ve got something in the pipeline: having small franchises that sell our brands. There won’t be competing brands in those outlets for the brands we carry, in that sense they’ll be exclusive. But they can sell other noncompeting items. Hotel Insider: Like 7-Eleven eh? Ali Ihusaan: Yes, a bit like that. Hotel Insider: All right. Thanks a lot, Ihusaan.

Meenakshi Sundaram Born in Chennai, India, Meenakshi Sundaram is probably one of the least likely people to have made a career in the hospitality industry.

He has an academic background in zoology, is certified in library and information science, and had other dreams but circumstances led him to a hotel in his home city. It grew on him and now, he’s the general manager at The Residence Maldives in Gaafu Alifu Atoll. We had a chat about his journey, what he thinks of ‘Western’ vs “Asian” hospitality and The Residence Maldives’ big plan for this year. Read on. Hotel Insider: You tried a few different things before settling on tourism. You studied zoology, for instance. How does one go from that to tourism management? Can you describe your journey a bit? Meenakshi Sundaram: The thing is, I really wanted to become a doctor. My family has a lot of doctors and teachers, including my cousins; so naturally, I was trying to become one myself. After completing my degree in zoology, due to circumstances in my family, I had to find work. And those days, there weren’t many jobs available in Chennai. I got a job in the hotel industry, and at that time, it [hospitality] was fairly new, at least in my part of the country. I started as a front office cashier and worked my way up from supervisory positions to management roles to general manager. It’s a long but interesting journey, almost 27 years. I was also very lucky to get this opportunity to be here at The Residence Maldives. I’d like to thank the holding company Bonvests Holdings and 20

its chairman Mr. Henry Ngo and executive director Mr. Gary Xie. I’ve been with the company for over seven years. Hotel Insider: What drew you to the hospitality industry? You started work as a cashier but it became more than a job for you. Meenakshi Sundaram: I got married at 21. So, I had to find work to support my family. During early 90’s, there weren’t many jobs available and I was blessed to get a job in the hotel industry. In fact, I’m the only one from my family and extended family to work in this field. You have to know that during those days in Chennai, this was still quite new. It’s a different situation now. But at that time, people doubted whether I could have a career in this industry. Since then my passion for the hospitality industry led me to pursue masters degrees in tourism management, hotel management and an MBA in hospitality. Hotel Insider: Was your family concerned about your career choice? Meenakshi Sundaram: They were a bit worried about my future, my career goals because as I’ve said, people weren’t very familiar with the kind of opportunities that this industry can provide. Having said that, they fully supported me. I’ve missed important dates, like the birth of my two sons [laughs]. Hotel Insider: [laughs] Really? Meenakshi Sundaram: [laughs] Yes, when my first son was born, I was attending

a training programme somewhere and I got a call. When my youngest was born, I was actually here in the Maldives. But my family has been nothing if not understanding and I’m very blessed that way Hotel Insider: All right, let’s get back to the original question. What was attractive about the industry, what made you embark on a career in hospitality? Meenakshi Sundaram: I think the fact that in the hotel industry you have so many different elements working together is something that greatly interested me. Unlike, say, a specialised industry like IT. In our industry, we cover so many areas from engineering to IT to culinary arts to accounting. This really appealed to me. Initially, when people thought of hotels, it was just about going and spending a few nights at a property and having someone check you in and out. But I saw how many different elements combined to create an experience for the guests. And it has to be specialised as well; an engineer working in construction for a construction company is different from one working in a resort or hotel though their qualifications may be the same. And the fact that you meet different kinds of people on a daily basis, I think, gives you a very good opportunity to learn. And I’ve always had this belief that I can learn something from everyone I meet. Hotel Insider: Were you always a people person? Like when you were younger,

were you very sociable? Meenakshi Sundaram: [laughs] You’ll have to ask my colleagues. But really, I think I am a people person. I do care about people, that’s actually what I’m here for. Our industry is all about people, both guests and staff. Hotel Insider: OK. Right. You’ve also experienced hospitality in Europe, in the UK for instance, where you were the front office manager at the Holiday Inn in Kingston Upon Thames. Have you observed any key differences between Asian and European hospitality? Meenakshi Sundaram: Traditionally, the ‘West’ was the trendsetter in hospitality; well known for their high standards and flair in delivering service. The main difference I think is in the West, the service focus is mainly on discipline, whereas in Asia we tend to take a middle ground between discipline and human relations management. This could be due to Asians being more hospitable generally, by nature. The Maldives is a good example of that, the standards here are pretty high, one of the best in the world and I have travelled quite a bit in Asia and Europe. Hotel Insider: Where have you been in Asia? Meenakshi Sundaram: I’ve travelled in the East to Japan and Korea. They’re very nice, very disciplined and polite but when it comes to heartfelt service, I think you need to come to the Maldives. That’s where I think the Maldives is a trendsetter in the industry. Also, I’d like to add that earlier it was only western hospitality brands that were making headlines like the Intercontinental, Accor, Hilton and so on. But now, you have more Asian brands like Shangri-La, Mandarin Oriental, Dusit Thani and our own brand The Residence by Cenizaro. Today we have a collection of six properties; we’re represented in the Maldives, Mauritius, Zanzibar, Tunis and Bintan. Hotel Insider: It’s a Singaporean company isn’t it? Meenakshi Sundaram: Yes, our holding company Bonvests Holdings Ltd is based in Singapore. Hotel Insider: Do you think there’s space for small brands in today’s world? Especially when big brands are acquiring smaller ones and adding to their portfolio? Meenakshi Sundaram: Yes, definitely. We’re a good example, we’ve been around for 22

more than 22 years. Our first property opened in Tunis, followed by Mauritius, Zanzibar, Maldives and Bintan. We will be opening our second island in the Maldives, The Residence Maldives At Dhigurah and a couple more properties in Tunis. Definitely, the smaller brands also have a big future and that’s something unique in this industry. As long as you provide the service and keep the guest at the centre, you can be successful. There are so many brands that aren’t very big that have been successful, especially in Asia. Hotel Insider: I also wanted to ask you whether pre-opening experience is essential to a person in your role since you’ve been with several pre-opening teams in your career. Meenakshi Sundaram: I don’t know whether it’s a coincidence; all the properties that I’ve worked were pre-opening properties [laughs]. I think they are a very important part of a career in this industry. You learn a lot in terms of planning, you start from scratch. Plus, you learn how to source things from different parts of the world especially in a place like the Maldives. And you have to budget, plan and forecast your revenue and expenditure even before starting operations. Also, it allows you to be more creative during the pre-opening phase as it gives you the freedom to test a few things before you start the actual operations. In the Maldives it’s like running your own little island village because you have your own power generation, desalination and so forth. You can plan for a lot of environmentally friendly measures. Like with us, we’ve put in place a system whereby the heat from outdoor units of ACs are used to heat hot water boilers and the treated water from the sewage treatment plant is used for watering the plants etc. Pre-opening experience, especially in the Maldives, will give you a deeper understanding of how things work in the industry. Hotel Insider: Let’s talk about your property for a bit. What would you say are the draws here? Meenakshi Sundaram: I’d say that our product is a big draw. It’s beautiful, elegant and the villas are very spacious with 137 square metres minimum. The heartfelt service from the team is another, and it’s at the core of our brand. We’ve got excellent cuisine with a lot of variety for guests. And we’re located in the largest and deepest atoll in the Maldives,

Also, we’ve got lots of activities, from the spa to the water sports and dive centre and excursions. Hotel Insider: A lot of draws indeed. And you’re opening up a new property next door. Meenakshi Sundaram: Yes, it’s going to be The Residence Maldives at Dhigurah. It will be our second resort in the Maldives and we plan to open in the second quarter this year. It will have 173 villas, on the beach, lagoon and water, and each villa will have its own pool. Plus, we’ll have three restaurants and three bars. We’ve connected the two islands with a kilometre-long bridge. Hotel Insider: Perhaps the longest bridge in the Maldives. [laughs] Meenakshi Sundaram: Probably the longest connecting two resorts, in any case [laughs]. Also, what’s interesting from a guest point of view is the opportunity to experience two island resorts during a stay, and the chance to visit both islands and use their facilities. The food chain: a brief look into the Maldives’ F&B scene Maldives is not really a place people usually think of when they think of food. And it’s hasn’t been a particularly foodie destination. But recent years have seen a number of restaurants in the country win top accolades.

For example, last year at the World Luxury Restaurant Awards, Conrad Maldives Rangali Island’s Ithaa, the world’s first underwater restaurant, took home the award for Luxury Unique Experience while Jumeirah Vittaveli’s French restaurant Fenesse bagged the title of Most Romantic Atmosphere and Amilla Fushi’s Feeling Koi with its Japanese cuisine and Latin flair grabbed the title of Luxury Waterside Restaurant. Constance Moofushi’s Manta, HIH’s Uduvilaa and Hideaway Beach’s Samsara Asian Fusion Restaurant won big as well with many others being recognised on the continental level. Bring on the big guns A number of celebrity and Michelin starred chefs have been including the Maldives in their rounds too. These include Michelin starred Chef Matteo Vigotti who dropped by Cocoon last year for the resort’s Gourmet Weekend event, Chef Mads Refslund who stopped at W Maldives as part of his Asian tour last December, and Masterchef judge Monica Galetti who hosted a six course dinner at Coco Boduhithi last October, just to name a few. 24

Furthermore, last year, six properties in the UNESCO biosphere reserve of Baa Atoll came together for the Baa Atoll Summer Festival at which all of them showcased their top culinary offerings. This destination dining concept event was the first of its kind in the country and there’s talk of making it an annual event, which could draw crowds to the atoll in summer. “What I’ve observed is that in recent years guests have come to expect a lot from food and beverage. There is a bigger, food focused culture around the world. So, obviously keeping up with these expectations is key to success,” said Marc LeBlanc, resort manager of Kandolhu, when we had a chat with him last year. Sourcing locally & growing your own This growing global food culture has also during the recent years taken a rather environment and health conscious turn too, with more and more people choosing non-GMO products, going meat-free, opting for sustainably cultivated produce and so on. Keeping up with the trends, multiple resorts in the country like Nika and Gili Lankanfushi have built small organic gardens

And there’s also the geographical nature of the Maldives that presents its own set of challenges." on their properties from which they harvest ingredients for their kitchens, and some even have restaurants dedicated to healthy and natural food such as Reethi Rah’s Botanica, where they have a ‘garden-to-fork’ concept. Another notable sustainability initiative is the Kukulhu Village at Six Senses Laamu that houses three dozen fowls and a rooster; they produce fifty to seventy eggs a week and these are used for making farm fresh egg hoppers and other dishes. As for the ingredients that cannot be cultivated on resort premises, F&B departments are increasingly looking for local sources. “Whenever possible, we try to source ingredients from islands close to our resort. We’ve been very successful in finding tasty local melons, few vegetables and Maldivian chilli,” explains Mercure Kooddoo’s F&B manager Mathieu Delin. Staying on top of trends Keeping up with these trends is not just 26

a task for resort F&B departments. As we learn from some major F&B suppliers in the country, they are on it as well. “In general, the people as well as the tourism sector’s requirements are changing to healthier foods and environment friendly products. We have tried introducing such products in the past but that did not materialize to success. However today, the trend has changed across the globe and is changing in the country as well. It is good to see these changes, but we need to do a lot more,” says Ahmed Mausoom, managing director of Aries Enterprises. With resorts popping up in the country every now and then, keeping their F&B departments well supplied and stocked is no small task. There’s the fact that most things in this country are imported. And there’s also the geographical nature of the Maldives that presents its own set of challenges. “It’s quite challenging to be honest. We only get about eight or nine hours to work because of changes to working hours – it used to be a round the clock service. So now, when we

receive orders, we prioritise them and ready our delivery vehicles. And during this process the client will be kept up-to-date on progress until the goods are in their hands,” explains Happy Market’s CEO Ali Ihusaan. Mausoom too acknowledges these challenges, but he says there’s more to it. “More than the logistics of delivering goods from our warehouses to resort boats, a major challenge we face now is getting shipments cleared from MPL/Customs. There are long delays during this process and as a result we sometimes have to delay some deliveries to our clients,” he says. Going back in time These current challenges and changes aside, the country’s F&B supply industry actually goes a long way back, as far as the time when the first few resorts opened in the country; probably out of necessity because resorts without a doubt would need to keep their guests fed.

It’s also a bit hard to imagine a time when frozen goods were a sought after commodity, after all they’re ubiquitous, but that happened fairly recently, too as Ihusaan tells us: “We began operations some 27 years back and at the time, frozen goods were a luxury. You didn’t have reefer (frozen) containers coming in to the Maldives. So that’s where we saw potential. We had shipping companies deliver frozen goods to Sri Lanka and then we’d air freight them here. And we’d run out as soon as we got them here. With resort restaurants winning major awards, key players in step with the global food trends and destination dining events finally taking place in the country, it looks like Maldives’ F&B scene is all set and ready for a wonderful gastronomical future, although the shape and scope of it is something we’ll probably have to wait and see.

Amilla Fushi – Blissing out in Baa It’s a sunny day in Baa Atoll, not entirely unremarkable though it’s July, monsoons sometimes gift periods of splendid sun. Here on the large deck of my ocean reef house in Amilla Fushi, I’m sipping an ice-cold welcome drink.

Before me, the sea is tumultuous, frothy, and wave after wave crash into the pillars supporting my over water villa. Sometimes the spray spills over into the small plunge pool. The setting is a far cry from the generic depiction of our island environs; nevertheless, I’m enjoying it. The wind, though strong, is fresh and cool, the bleached sky sprinkled with milky clouds, and the horizon beyond lies under a veil of haze. Seabirds hover over the water, dive and rise up with fish in their beaks. I can completely bliss out to this. A while ago, I had a dip in the sea. What’s particularly great about the ocean reef houses is that they are perched right by the reef slope. So, you don’t need to arrange a snorkelling tour, you get the gear yourself and dive in straight from your deck. And being in Baa Atoll, the country’s as yet only UNESCO biosphere reserve, you can expect to be thrilled by the underwater vistas. In spite of widespread coral bleaching in recent times, there’s enough life beneath the waves to beguile snorkellers such as I. If not for the sheer ferocity of the waves, that is where I would have spent the entire afternoon. Amilla is four years old now and displays all the signs of having settled down. It still retains most of its old characteristics. The Baazaar, a cluster of restaurants by the beach, is still there. As are the residences; lavish four to eight-bedroom ‘homes’ that took a while to

catch on with travellers. The level of service is excellent, you feel looked after wherever you are, be it at the bar, in the spa, out on one of the many lanes; buggy drivers will pass you and ask you how you are, where you’re going. Jambe, our Katheeb – Amilla hasn’t changed the nomenclature – is more than happy to assist, however minute the task. Though excellent service is Amilla’s strength, what strikes me yet again is its aesthetic. You’ll find no thatched roofs here; Amilla is bold and confident enough to espouse a different design philosophy. It’s minimalist, the rooms’ exterior appears boxy with sharp angles, the over-water accommodation especially. That same minimalist approach is continued in the interior, where nude white walls meet warm wooden floors. The rooms are airy and bright, thanks to a series of French doors. And beautiful cream and teal mosaic tiles adorn the floors of living and bathing areas, the teal a nod to the hues of the lagoon nearby. I especially love the treehouses, perched high above ground, their pillars clad in cadjan. It’s one of those touches that lend the otherwise modern resort a local flavour. On their balconies you’re enveloped by the island’s lush vegetation. These treehouses are focussed on wellness; here, highly trained instructors guide their residents on a healing path.

As I walk along the fern fringed paths, I find it easy to admire this resort. It retains the island’s natural feel; I stroll under dhigga and screw pine while the occasional banyan hulks over me. Old, old trees. Only fitting for a resort in a nature reserve. Lunch time. I enjoy the meal in the company of Finolhu’s resort manager Marc Reader, a Sydney-sider with a passion for the Maldives. He left once, briefly, only to return. “Sydney was turning quite hipster when I left,” I tell him. “Around 2010.” “Yeah,” he says. “That’s when all these holein-the-wall roasters started cropping up. Also, these days, you can’t be a barber in Sydney unless you have a full-on beard.” We share a laugh. I have the salmon, the skin is crispy and the flesh tender, flaking a bit when I prod it with a fork. Drizzled over with a squeeze of lemon, it’s a simple and delicious meal, and the greens on the side round it off with an earthy flavour. I ask Marc where Amilla gets their salmon from. “Australia,” he replies. “I wouldn’t have guessed.” I say. “Do you know, a while back, some scientists introduced salmon to New Zealand. They released all of them into a river believing they’d come back to spawn. But they never did.” “Haha,” laughs Marc. “I reckon they all moved to Aus.” Afterwards, we relax, sipping cool drinks and drinking in the scenery. It’s still blustery, the palms rustle furiously and the sea looks fierce in the distance. I recall how a young Chinese tourist had been sick on the way from the seaplane platform to the resort. The rocky platform must have churned her stomach. On the brief ride to Amilla, the speedboat crew radioed the staff waiting at the jetty and they handled her with kid gloves. The kind of care you’d expect from a place like this. I amble through the property, passing by the Javvu Spa, a chilled-out space that’s completely at home in its surroundings. Among other things, Javvu houses a laidback communal area, a beauty bar, a salon, secluded treatment pods, and of course, yoga and meditation pavilions. Though I’m not having a massage today, there was a time when I did. Three years ago, I opted for a jet lag massage, which was on the house (Amilla’s generous that way), and without my telling him, my masseuse knew I spent most of my time hunched over a computer. That was impressive, but not nearly as remarkable as the skill with which he worked my body. It’s Hotel Insider

saying something that I can recall it years later. That evening, I pay a visit to the resort’s signature restaurant, a striking complex built over water called Feeling Koi. Those who’re familiar with Huvafen Fushi will know the name. It’s a fusion restaurant and here at Amilla, the executive chef Lucas L Varin is preparing a very special meal. It’s one that he has showcased in his native Brazil and also France and Luxembourg to great acclaim.

“Basically, it’s a Maldivian ‘dhon riha’ (yellow curry) paired with valhoamas (smoked tuna) and tuna sashimi,” he explains. “The valhomas really catches people by surprise, especially the Europeans. Their idea of smoked fish is halibut and salmon, smoked tuna is a curiosity.” I have a taste of the finished product, the gravy has seared half the sashimi, and the valhoamas lends it a potent, smoky flavour. Accompanying it is duck kaeshi, the latter being a Japanese sauce sweetened with honey. Lucas decorates it with globs of pumpkin and beetroot puree and something darker: black garlic, another Asian ingredient where whole bulbs of garlic are aged in a temperaturecontrolled environment. He garnishes the dish with carrot leaves and dill, and delicate petals from fresh violets that he’s imported from Europe. The result is stunning, visually and gastronomically. The duck is beautifully cooked, its flesh moist and flaviourful, and the crispness of its skin lends the dish a delightful crunchy dimension. Add to this the subtle sweetness of the kaeshi sauce and you’re in a space much like the one Kantaro visits during his foodgasms on the runaway Netflix hit. “I swear I’m not eating again,” I tell an amused Lucas on my way out. The sun is setting, my visit is drawing to a close. The lights turn on in the distance as I amble down the walkway, the world seems ethereal, the only reality, I feel, is the lingering taste of Lucas’s magnificent creation, slowly becoming a memory.

We have a little tête-à-tête to find out his thoughts on gastronomic matters. Hotel Insider: You’ve got two food outlets on your island plus in-room dining. How do you make sure everything runs smoothly? Mathieu Delin: We ensure that our two food outlets and in-villa dinning are running without a hitch by working, communicating and coordinating closely with the different departments and outlets. Our head chef, myself and the restaurant manager are always meeting our customers to collect feedback to understand what they want in order to anticipate their needs for their next visit in our restaurants. Hotel Insider: We heard that VISTAS is being completely overhauled. What do you have in mind for it now? Mathieu Delin: We aim to create the kind of place that stirs the senses and stimulates the appetite all with a good dose of fun and laughter within a contemporary tropical setting with dazzling views of our lagoon. During the day we serve locally roasted coffee, carefully prepared by our baristas. Fine teas all accompanied with delectable pastries crafted by our pastry team. Mathieu Delin: Whenever possible, we try to source ingredients from islands close to our resort. We’ve been very successful in finding tasty local melons, few vegetables and Maldivian chilli. We can soon supplement these with a large range of vegetables from our garden. Hotel Insider: Free-range meats, plantbased foods, non-GMO products, ethically sourced ingredients, all of these seem to be on-trend these days. Do you see these reflected in guests’ food choices? Mathieu Delin: Yes we do, more guests are asking about the products’ origin. And we’ve already anticipated this with our executive chef Rosan by introducing non-GMO products like dairy products, eggs and so forth. Hotel Insider: Do you see these very health conscious food trends extending into the far future? Mathieu Delin: Absolutely, I can see this being more than a trend and carrying on as customers have become more health conscious, spending more time engaged in sports and fitness in general, eating more balanced diets. Designer Ryuzo Nakata pops up at Huvafen Fushi

Sapporo born fashion designer Ryuzo Nakata turned up at Huvafen Fushi this January for the launch of his pop-up event on the island. At the cocktail reception that evening, Nakata displayed a collection of womenswear that included dresses that favoured sheer cloth and bold floral patterns. Nakata himself was in a black shirt and jeans with flowery couture embellishments.

Denim is a particular favourite of his and makes frequent appearances in the Paris based Nakata’s repertoire. “The whole idea is that it’s couture, but denim is something completely different,” he says. “It’s two extremes that I mix and match. Embroidery isn’t normally associated with denim and that’s my approach.” Nakata studied fashion design

at a French academy in Japan prior to his move to Paris where he has lived and worked since the 80s. He kicked off his career at Claude Montana and then entered the world of couture becoming an assistant to the now retired French master Emmanuel Ungaro. Paris is a constant source of inspiration for Nakata. “The very air itself makes me think, I soak up the atmosphere

of Paris and that’s inspiration enough.” And what did Nakata think of this slice of the Maldives? “J’adore,” he responded.
