New homes collection inspired by English nature Sam Wylie-Harris chats designer, Matthew Williamson, about his favourite pieces and why creativity is his happy place. Famous for his flamboyant fashions on the catwalk, bold designs and feather peacock prints, interior designer Matthew Williamson says his latest collection for John Lewis feels like a lovely tick. “If you were to say, ‘What would be your dream job?’ One would be the John Lewis collaboration because I think it really sort of cements what I’ve been trying to do for a few years. It’s a solid proposition with a very respected, known brand,” says the Manchester-born designer. It’s been two years in the making, “So a reasonably long, very enjoyable, creative process for me,” notes Williamson. And it’s the largest designer homeware collaboration of its kind for the department store, with 90 artfully curated pieces spanning a variety of homewares, from cushions to bedding to mirrors and lighting – decorative, eclectic and joyful. “The brief was really open to be honest,” reflects Williamson. “Obviously, I’ve been in design my whole adult life, and fashion into interiors more recently.” He closed the chapter on his 20 year plus fashion career about seven years ago when he decided to take the leap and fully immerse himself in the world of interior design.

“There are two mirrors I love in particular, ” says Williamson. “One’s like a gilded peacock mirror. It’s sort of a gold frame. It’s pretty large scale and it has two ornately carved peacocks. So that’s a real statement piece that would elevate any space. It’s kind of grand, it’s a talking point. It’s a little bit whimsical – it’s definitely got a real character.” He says he also loves another mirror made out of a cast iron frame and finished in a glossy pillar box red. “It’s made up of a sort of arrangement of twigs, metal twigs, and it’s such a cool, contemporary, modern piece. So those two mirrors are definitely on my list of things I want to have myself.” “I’d probably say the lights as well. They’re these gorgeous dome, sort of spheres that you’d see in bars all around the world, quite classic glass domes. I reworked those into a mint green colouration and they’re also a favourite.”

And as he points out, then there’s the bedding within the collection, as well as lots of cushions and quilts and so on. “I definitely would have one of those printed bed sets to enliven a bedroom.” Today, Williamson is slowly but surely building his portfolio and spends 50% of his time on interior design projects, commercial and domestic, and the other half designing homeware goods. “Whether that be wallpapers with Osborne & Little or various other licenced partners I have across the homeware ranges,” he explains. The designer has also recently returned as a guest judge on Interior Design Masters, and a recent addition to the brand is his beautiful artwork on his website and online boutique, Matthew Williamson Design, where he sells some of his paintings which he describes as, “Actually putting my paintbrush out as it were”. Like most creatives, he finds it difficult to switch off when it’s time to relax. “The switch off button is not an easy button for me to find.” admits Williamson. “Not good at

How to do zero waste vegetable gardening Think about using veg trimmings, sharing plants and investing in compostable sundries, an expert advises. Zero waste – it’s a hard target to reach for the millions of vegetable growers in this country. Many end up with gluts of produce every year, and find disposing of plastic compost bags and plant pots tricky. However, urban gardener and seasoned veg grower Cinead McTernan has found some ways to at least encourage zero waste. “Zero waste falls in two areas. You can think about what you’re buying, such as pots, how you are buying compost and that sort of thing; then you can think about what you are growing that will give you no waste because you can eat the whole thing, including the roots and the tips.”

Use veg ends you might otherwise bin “There are some really good crops you can grow where you can eat everything. Carrots are great. You can grow them, eat the root and the leafy tops, making a pesto with it. And once you’ve taken the leafy top off and eaten the root, the bit that is left on the plate can be regrown to give you more leafy top. “It won’t feed a family for a week but it will give you a bit of extra taste for your salad, but you can also show the kids that it’s great to keep re-using things. We’ve got to be thrifty and that message is going to become more important. “Radish is another great veg, with its root and peppery leaves. If you don’t pick them, you get rat’s tail radishes which are delicious little pods, which are really tasty. That way, you have used the complete vegetable. “Coriander is another good one. We are used to using the leaves but use the stems, too. Also, the roots – which have a milder taste – can also be used once the plant has gone over.”

Refill your plant food “You can now buy plant food in the way you would buy cereals and nuts. You just take your refill. Keep an eye out in your local garden centre for this. Big suppliers are looking to move towards this, so in the next year or two you will be getting dispensable units in garden centres where you just push like you would milk, getting your plant food in a litre carton and paying for it accordingly.” Research sundries “You can buy really good compostable bin bags for collecting garden waste (ecoliving.co.uk), reusable bags for compost, mulch and soil conditioners and paper pots instead of plastic ones (edibleculture.co.uk). Put spare produce on your front garden wall “Pop spare crops on your front doorstep or take them to a school fair and swap them there. And if you have in-date sealed packets of seeds, take them to your local school or leave them on your wall for someone to take.” Don’t ditch crops which you think have failed “Often, people think if their potatoes have started to sprout, they should throw them away. That is not the case. Just cut out the eyes. And don’t chuck green tomatoes. In our climate, it’s hard to get bigger ones to ripen at the end of the season. Make chutney out of them. Just understand seasonality and the need to be frugal. Crop all those courgettes and make chutney with them. I grate courgettes, to give them a creamy texture to things without overpowering the taste. Make ratatouille and freeze it. Do a bit of research on your crops and you will find most things can be eaten.” Share seeds “To avoid gluts of lettuces, green beans and carrots which you’re never going to be able to get through, share packets of seeds with gardening neighbours and friends. Alternatively, use plug plants if you are really short of space, and just have one or two of what you want. “Also, plan ahead. Successional sowing is great because if you sow, for instance, lettuces every couple of weeks, they will mature at slightly staggered times.” McTernan understands you may not be able to adopt zero waste strategies all in one go. “Remember, all of this takes time, space and money, so do what you can – and if you can’t do everything, don’t feel like you’re failing.” City Veg by Cinead McTernan is published by Bloomsbury, priced £20. Described as a hybrid of tennis, badminton and pingpong, it can be played in singles or doubles, as players hit a perforated ball over a net. Chris Baber on learning to cook from the TV, and why food from the northeast is the best The popular Instagram cook tells Prudence Wade about his debut book, Easy.

Growing up in the northeast of England, Chris Baber was always obsessed with food – but he never thought he’d actually be able to make it into a career. “I’m not from a massive foodie family,” he admits. “We had good, home-cooked food, but by no means was it MasterChef – it was spag bol, cottage pie, roast dinners – the classics.” Baber

particularly going to his granddad’s house on the weekends. He recalls being in the kitchen with him – “and I guarantee there’d be music, he’d be having a good time cooking, dancing, enjoying it. I could see he enjoyed the process, and I loved being part of that. I could see how much satisfaction he got from serving us as a family,” Baber adds. But his food education didn’t come from his family. As Baber explains: “I was selftaught, through what I was gathering on TV – I’d come in from school and watch stuff like Ready Steady Cook, I was obsessed with cookery shows. I’d see things and after watching, go in the kitchen and experiment” – and this “naturally evolved” into Baber learning how to cook. A long-time fan of cooking shows, Baber soon found himself on one – BBC One’s Yes Chef, which he won in 2016. He calls it a “surreal” experience – and one that was very far from his life back in Hexham, Northumberland – but adds that “once I got started, it was like I finally found what it is I love to do”.

But I was so wrong – I just grew to love it even more as I began to work in it.” And whether it’s cooking a roast for his family or taking the time to make porridge for himself in the morning: “I just love food,” says Baber. “It’s one of the greatest joys in life.”

Five-spice hoisin duck and rice bowls SERVES 2

INGREDIENTS

2tbsp dark soy sauce

1. Preheat the oven to 200°C/180°C fan. In a small bowl, mix together the soy sauce and honey to make a glaze. Set aside.

2tbsp honey 2 duck breasts 2tsp Chinese five-spice

2. Use a sharp knife to score the skin of the duck in a chequerboard pattern. Be careful not to score into the flesh.

250g jasmine rice ½ cucumber, diced 4 spring onions, finely chopped

3. Pat the duck dry with kitchen paper. Season with salt and evenly coat in the Chinese five-spice.

2tsp toasted sesame oil 2tbsp hoisin sauce

4. Cook the rice according to the packet instructions. 5. Put the duck into a cold pan, skin-side down. Turn the heat to medium and cook for three to five minutes until the skin is golden and crispy. Turn the duck over. Pour over the glaze to evenly coat the duck. 6. If your pan is ovenproof, transfer it straight into the oven. If it’s not, put the duck on a preheated baking tray. Cook for eight to 10 minutes for blushing pink meat or slightly longer for well done. 7. Remove from the oven. Leave to rest for five minutes, then cut into thin slices. 8. Serve on top of the rice with the cucumber and spring onions. Drizzle with the sesame

1. Heat the oil in a small frying pan over a medium–high heat.

1tbsp extra virgin olive oil, plus extra to serve 1 garlic clove, sliced

2. Fry the garlic for 30 seconds, then stir in the tomatoes and two tablespoons of the pesto and season with salt and pepper.

400g can cherry tomatoes 3tbsp basil pesto 2 eggs

3. Bring to the boil, then reduce the heat to medium, cover loosely and simmer for eight to 10 minutes until you have a fairly thick sauce.

4. Use a spoon to make two wells in the tomatoes. Crack an egg into each well, cover and cook for about five minutes or until the whites are set and the yolks are still soft. 5. Take off the heat, spoon over the remaining pesto and drizzle with a little more oil. Serve with bread to dip in the egg yolk and sauce.
