Simple but snazzy spritz recipes for summer soirées Sam Wylie-Harris delves into spritz lovers’ new favourite cocktail book to stir up aperitivo hour. There’s something stylish about a spritz. Even the name sounds a bit glitzy – and fizzing with summer vibes. But what lies at the heart of this Italian drink? “There are countless ways to make a fizzy cocktail, but they can’t all be called a spritz,” Danielle Centoni writes in her new book, Just a Spritz: 57 Simple Sparkling Sips with Low to No Alcohol. “A spritz can be made with almost any bubbly and any spirit, but to keep it true to form a spritz must be: Low in alcohol, bubbly, refreshing, at least a little bit bitter, the opposite of fussy.” The book promises to help you achieve “spritz perfection” – from how to build a spritz, to easy-tomake tart and sweet syrups and juicy shrubs, to the importance of garnishes and how they “add panache to a spritz”. Here are three favourites from the book to get the aperitivo party started…

Blueberry Lemonade Spritz If you can’t resist the yin and yang of tart lemons and sweet blueberries, you’ll love this adorably pinky purple spritz. The muddled thyme adds an herbal dimension that makes it feel a little more grown-up. INGREDIENTS 35g fresh blueberries, 2 thyme sprigs, 30ml fresh lemon juice, 30ml simple syrup, 90ml prosecco, chilled, 30ml elderflower tonic, skewered blueberries, for garnish. METHOD In a sturdy wineglass, muddle the blueberries and 1 of the thyme sprigs. Fill the glass three-quarters full with ice and stir. Pour the lemon juice, simple syrup, and prosecco over the ice and top with the elderflower tonic. Gently stir to combine and garnish with the remaining thyme sprig and skewer of blueberries.

The Hugo This youngster in the spritz canon is ideal for those who crave the flavour of juicy lime, with mint and elderflower adding sweet and breezy refreshment. A lime-juice-enhanced riff on the original created in 2005 by bartender Roland ‘AK’ Gruber in the South Tyrol region of Italy, it took off like wildfire, and with good reason. INGREDIENTS 60ml St Germain Elderflower Liqueur, 7ml fresh lime juice, 90ml prosecco, chilled, 30ml elderflower tonic water, 2 mint sprigs, 2 lime wheels for garnish. METHOD Muddle the leaves from 1 mint sprig in a sturdy wineglass. Fill the glass three-quarters full with ice and pour the St Germain, lime juice, and prosecco over the ice. Top with the elderflower tonic. Gently stir to combine. Garnish with the remaining mint sprig and tuck the lime wheels between the ice and the side of the glass.

PREPARATION “To ensure a professional finish, you must prep your walls, so they’re smooth and clean for your wallpaper,” he advises. “To achieve this, use some filler to fill in any holes in the wall, then sand to smooth down. Once any filler is dry, clean the wall with sugar soap.” 2. STARTING OUT “The first drop of wallpaper is the most important, as everything will align to this point. To ensure you get it right, make sure the wall is plumb [perfectly vertical] – using either a plumb bob or spirit level to create a plumb line. “Start 50 centimetres in from the first corner, or if you have a focal point on your wall – such as a fireplace – start here to ensure the design is centered.”

In our final guide to designing your own outdoor space, we move to the ‘soft’ landscaping elements of garden design: planting, as we have considered ‘hard’ landscaping (e.g. patio, decking, pergola, fencing, paths), in previous issues.

Plant selection all starts with assessing your garden for

the growing conditions you have. A carefully planned

planting scheme saves you money in the long term,

as a plant in the wrong position and soil will not thrive.

Assess the sun position, how much light each area gets

and the type of soil you have. It is best to always select

plants suitable for the soil type you have whether clay,

sand, loam or chalk and its ph (acidic / neutral / alkaline).

Using a soil testing kit is helpful to assess the PH.

Consider a colour palette and planting to match the

style of your conceptual garden design and level of

maintenance requirements (low/high). Then choose a

combination of planting to fit your palette and style. Start

with trees and shrubs to provide screening, structure and

height. Use evergreens to provide all year round colour,

through their foliage. Look at grasses, climbers, perennials,

bulbs and annuals for seasonal colour. Think about

foliage, texture and some focal plants, to draw the eye.

Chetna Makan on how baking is much easier than we all think The GBBO star talks to Imy Brighty-Potts about her big baking comeback – and the importance of having a last minute dessert up your sleeve.

Despite placing fourth on the Great British Bake Off in 2014, Chetna Makan says she had never made bread before entering the tent. Of course, she knows her way around a loaf now, and after writing a few cookbooks focusing on Indian cuisine, she’s going back to her baking roots. Her new book, Easy Baking, is for people who are put off by complicated recipes – exactly how she used to feel about the prospect of homemade bread. The book is all about simple baking that young kids and older people alike can make quite easily, she says. “I want people to not worry about the technicalities of the bake, and just enjoy the end product and the experience. I have tried to keep it very simple and approachable, to get the fear out of baking.” As someone who has experienced the steely glare of Paul Hollywood in the tent, she knows the baking fear is real – but this push towards more accessible baking is a breath of fresh air, at a time when it feels like all we see are complicated cakes on social media.

“I think the key is to go for straightforward, simple recipes, not stuffed breads or sourdough with many kinds of proving involved. Just go for simple breads, like focaccia, for example.” And kids can get involved too. “My daughter absolutely loves baking. She doesn’t need me anymore,” says the mum-of-two. “She’s 14 and she’ll say, ‘I want to make brownies today’ – so she just makes them. She likes baking cakes and cookies, and if I have to make a cake and I’m running out of time, she can just pick up the recipe and start making it. It’s great, because she will also wash up after. “The banana cake really is the family favourite. I can put it down and they will just demolish it.
