So what else makes it so special? It might sound a bit technical, but having 27 outlets pumping water into the lagoon is a game-changer, allowing water to flow evenly, so there are no annoying cold patches to surprise you. A choice of two swim-up bars avoids long queues. Plus it’s open until midnight – later than any other purposebuilt lagoon in Iceland – meaning you can stay out later to watch the midnight sun or catch a glimpse of the northern lights, depending on the time of year. How’s it different to the Blue Lagoon? Although built by the same design team, BASALT Architects, the main difference is… it isn’t blue. While water flowing from lava fields into Keflavik’s world-famous attraction is rich in silica (giving it a distinctive milky blue colour), at Forest Lagoon it’s simply a mountain spring heated by energy from the Earth’s core. The source was discovered during digging for a new toll tunnel in 2015, now part of Iceland Ring Road Route 1. General manager Tinna Jóhannsdóttir claims the water still contains beauty-boosting minerals collected on its journey through millennia-old basalt rocks. But the main wellbeing benefit is simply the relaxing sensation of bathing in a hot spring.

Ways to weave white decor into your home
Whether warm or wowing, a splash of white makes for an easy makeover, says Sam Wylie-Harris. It’s a timeless summer staple, which can brighten up the blandest of spaces – no wonder our love affair with white furnishings shows no sign of waning. “The perfect simplicity of white is not to be underestimated, its versatility can warm a cold space, brighten a dull one, or turn a lifeless interior into an enticing personal home,” says Chrissie Rucker OBE, founder of The White Company. “A white scheme is brilliant for bringing a sense lightness and serenity to a space.” When decorating with white, Rucker’s advice is to pile on the texture and to use natural elements, which connect us back to nature. “A super-soft rug underfoot, or a diaphanous drape at a window can truly transform a room,” she says. “Add in weathered wood, slubby linen or marbled slate to add interest.”

Rum has got to be one of the most laid-back libations, perfect for when you want to channel those chilled out holiday vibes. “With its roots in the Caribbean, for many it embodies the idea of sunshine and long sandy beaches – which is enough to make anyone smile,” says Dawn Davies, buying director at The Whisky Exchange (thewhiskyexchange.com). Davies notes there are now “some incredible rums coming from all over the world – Glasgow to Australia, and everywhere in between”. Separate the egg whites and yolks into two large mixing bowls.

2. Add half the sugar to the egg yolks and whisk until smooth and a little paler in colour. Add
450g mascarpone cheese

4. Pour the warm coffee into a shallow dish along with the dessert wine and the remaining

Cod and chorizo stew INGREDIENTS
SERVES 4
1. Heat the olive oil in a large pan over a medium heat and chuck in the chorizo. Fry for a

Pop the stock cube into a measuring jug and pour over the measured boiling water, then

6. Fluff the couscous with a fork. When the fish is lovely and flaky, serve the stew with a sprinkle of parsley leaves, with lemon wedges and some fluffy couscous on the side.
