Key West Bar & Restaurant on Bournemouth Pier will be welcoming a special visitor on Saturday 10th and 17th December, when Father Christmas will be visiting. Families are being urged to come along and to share a festive breakfast with Santa, enjoy the panoramic views and if they’re lucky he might even be spotted flying in across the Dorset coastline!

Marketing Manager Sarah Hunter said, “Visitors to ‘Breakfast with Santa’ will be greeted by Santa’s merry elves and children will be handed some special notepaper which they can use to write a letter to Father Christmas and post it in our magical post box before meeting the big man himself!

“Santa loves a selfie so why not dress up in your Christmas clothing and capture the unforgettable moment. All children will receive a gift so they can take some of the magic home!”

CHARITY CELEBRATES AT THANK YOU

Diverse Abilities has celebrated the return of its annual Thank You Awards at Hoburne Park. The awards celebrate the extraordinary people connected to the Dorset-based charity that supports children and adults living with disabilities in the county.

Categories include Employee Achievement Award, Corporate Support Award, Volunteer/ Volunteer Team of the Year, Outstanding Contribution, Individual Fundraiser of the Year, Individual Supported Who’s Achieved Something Remarkable, and Sta Team Who Have Gone Above and Beyond.

This year’s winners include Volunteer of the Year Pam Harrison for being willing to help all the individuals and employees at The Beehive, and the award for Sta Team Going Above and Beyond went to the Supported Living On Call Team for dealing with any situation at short notice and handling issues well under pressure.

SIMPLIFY CONSULTING HAVE A BALL AT FUNDRAISING EVENT

A recent Summer Ball organised by Southampton-based Simplify Consulting in support of Forest Holme Hospice in Dorset and Solent Mind in Hampshire raised £10,000 to be split equally between the two charities.

Simplify Consulting, a Southampton-based consulting firm o ering practitioner-led consultancy services, welcomed over 100 guests to a Hilton Ageas in early September to enjoy complimentary drinks, a threecourse meal and a range of entertainment, including live music from Hampshire based group, Majestic Groove, a magician and professional Latin dance performances throughout the evening. James Prouton, a former professional dancer now teacher at Dizzy Feet Dancing, hosted the evening’s fundraising activities which included a ra le and auction with an array of fabulous prizes including a private dance lesson with Strictly star Kai Widdrington.

A spokesperson, said, “The first Simplify Consulting charity ball was a brilliant success and we are so glad to have raised a substantial amount of money for two fantastic charities.

Dorset Business Angels (DBA) hosted their quarterly pitch event at the Bournemouth Carlton Hotel. The investor audience first enjoyed 40 mins of networking and conversation amongst themselves, before taking their seats to assess 5 pitching businesses seeking investment, with a hybrid of in-person pitches and an online pitch.

In a ‘Dragons type Den’ initiative each presenting business has a strict ten minutes to make a compelling case for investment, followed by ten minutes of investors posing questions to the presenting entrepreneurs.

Last month saw the return of Lewis-Manning Hospice Care’s annual free community event, ‘Candles on the Lake’, hosted at The Ark in Poole Park. The incredible local community came together to reflect, celebrate and remember the lives of loved ones, by donating for a candle which was floated on the lake.

The team from Rockley Watersports did an incredible job of releasing over 1,000 candles onto the lake, despite the challenging weather conditions, to create a magical display of floating lights. In honour of HRH Queen Elizabeth II, the first candle released was a special purple light dedicated to Her Majesty and shone proudly on the lake.

All candles were floated safely onto the lake, so as not to e ect plants and wildlife in the area. All the flameless candles were collected at the end of the evening by dedicated volunteers to ensure there was no litter and will also be reused for subsequent years.

I’m not buying a dog!

My new life makes me my own perfect customer.

Time seems to have been on fast forward and not only have both my sons graduated they have completely moved out with jobs in other parts of the country.

What has dawned on me is that I am now a member of one of my own most sought after customer groups – sure the families arriving for the school holidays spend the most but the battle for a good year’s rental figures is won and lost in the shoulder periods. Filling up May, June, September and October at the best price is what makes the difference between a mediocre year and a great one and so it’s this market that we really need to concentrate on.

Whilst there are of course parties of ladies who lunch and blokes on kite surfing trips in general this is a couples market and broadly speaking we can divide this group into 3 categories; pre children, babies and toddlers, and kids left home.

The baby and toddler crew are perhaps the most straightforward to think about. Unfortunately some things that they look for you can’t control – lift in the block, walk to beach etc, but you can make them feel as welcome as possible by supplying good quality cot, highchair and stair gates, making gardens safe and by making it clear that they are welcome. It doesn’t hurt to highlight the nearest ice cream shop and family friendly place to eat and a box of toys and plenty of DVD’s will provide lots of fun for very little cost.

With pre children couples you are competing against a hotel room as well as other properties and this can make an apartment look expensive for a weekend.

One of the key reasons a couple may choose self catering is that they have a dog. There are lots of smaller properties that have been renovated to a very high standard but by definition many won’t take a dog. We see really high occupancy in small dog friendly places so do consider this if you have the opportunity – half a dozen extra bookings will pay for a lot of cleaning!

Finally we come to my own cohort of middle aged people with kids grown up, or at least at uni, or can be left behind. We like our space and will often look at larger properties for our own holidays and there’s fewer kids being taken out of school nowadays so we represent a good opportunity to sell some weeks in 3 or 4 bedroom places out of term time. Whilst I don’t have to worry about how good a hairdryer is supplied this group of customers will have a good standard of things in their own home and won’t want to compromise on holiday. Also lots of dog owners in this group as they fill the void left by the departed offspring.

In all of these cases the guest will often have plenty of choice as there will be availability everywhere so as usual you have to think hard about giving a reason to choose you. Price is always the biggest factor but make sure you have the fastest internet you can, get a decent sized TV and chuck out your chintz!

Oh and by the way I am very much enjoying the void in my life, especially now we can travel again so I am not getting a dog!

Trethowans handles £3.85m sale of Grade I-listed property

Trethowans has acted in the £3.85m sale of a historic Grade I-listed property called Holme Hall, which stands in more than four acres of grounds and was used as a filming location in the BBC’s Jane Eyre television series.

Built in the 1600s on the banks of the River Wye near Bakewell in Derbyshire, this beautiful private home was meticulously restored by its former owners, John and Ekaterina Stansfield, who purchased it in 2009.

They decided to move abroad and listed the property with a local estate agent, Cauldwell & Co, which quickly found a buyer and appointed Trethowans to handle the sale.

Halina Mitchell, residential property partner, said: “We have an excellent working relationship with Cauldwell & Co and have worked with them on many other transactions. That said, Holme Hall is a unique, high-end and extremely

luxurious property, so we were delighted to be appointed.

“Grade I-listed homes are very rare, accounting for just 2.5% of the UK’s property market. Buying and selling them involves

satisfying a variety of truly unique and sometimes complicated legal enquiries, which proved challenging at times.

“However, I am pleased to say we built great rapport with Mr and Mrs Stansfield and liaised with the buyer’s solicitors to complete the transaction, which I personally enjoyed working on very much.”

The sale of Holme Hall, which also included a wide range of antique fixtures and fittings and several neighbouring fields, completed on 31 August 2022.

Autumn is here, and with it comes an abundance of worries about how we’re going to afford the mortgage, heating bills and weekly food shop, let alone going out for drinks.

But fear not. Staying in is most definitely the new going out, especially when you’re armed with some easy – and super fast –cocktail recipes.

Joel Harrison and Neil Ridley – authors of new book 60 Second Cocktails – are passionate about mixing up a delicious drink, but maintain they “can be made by anyone, anywhere, and with minimal fuss, knowledge or equipment”. So far, so Friday night.

“If there’s one sage piece of advice we’ve picked up from the professional bartenders we know, it’s about being as best prepared as possible: line up everything you possibly need in advance of making your drinks,” the duo note. “This is especially vital if you’re only giving yourself a short amount of time to make your drink!”

With a little practice and prep, here are four cocktails you can whizz up in the time it takes you to choose and open a bottle of wine…

DOURO SPRITZ

This drink comes from a wonderful trip Harrison and Ridley took to Porto in Northern Portugal, and takes its name from the majestic Douro Valley, the heartland of port production. It plays very much on the aperitivo hour – that superbly chilled time where you take a moment to enliven the senses before dinner, truly waking up the taste buds…

YOU WILL NEED

3 parts fruity ruby port – or for a drier, richer drink, use tawny port

1 dash freshly-squeezed lemon juice

1 dash sparkling water

3 parts sparkling wine, such as Prosecco – or for a low-ABV version, use 1 dash sparkling wine and 3 parts sparkling water instead

A large wine glass

A fresh or dried orange slice to garnish

A jigger measure and bar spoon

Plenty of ice cubes

METHOD

Add the port and lemon juice to the glass, then add the ice and sparkling water. Top up with the sparkling wine. Stir a few times with the bar spoon and garnish with the orange slice.

EASY-PEASY PALOMA

A classic Mexican cocktail with a magical mix of silver (blanco) tequila, citrus notes and effervescent soda. The original calls for grapefruit soda, but you can use a lemonade for a more rounded and sweet citrusy punch. Alternatively, you can use a blood orange soda.

YOU WILL NEED

1 part silver (blanco) tequila

Squeeze of fresh lime juice

5 parts pink grapefruit soda

A highball or other tall glass

A fresh grapefruit slice for the garnish –pink grapefruit looks fabulous!

A jigger measure and bar spoon

A glass of ice cubes

METHOD

Add the ice to the glass, then add the tequila and lime juice and top up with the soda. Give the drink a quick stir with the bar spoon and garnish with the grapefruit slice.

QUICK SLOE GIN AND SODA

Sloe gin is a marvellous concoction – a combination of fresh and fragrant ripe berry aromas with a hint of sharpness and dryness coming from the juniper and other gin botanicals. Simply lengthening it with sparkling water leads to a long, fruity and seriously refreshing drink.

YOU WILL NEED:

2 parts sloe gin, such as Sipsmith or Elephant

5 parts sparkling water

A highball or other tall glass

A fresh orange slice to garnish

A jigger measure and bar spoon

Ice cubes

METHOD

Add the ice to the glass, then add the sloe gin and top up with the sparkling water. Give the drink a quick stir with the bar spoon and garnish with the orange slice.

WICKED WHISKY HIGHBALL

The whisky highball is currently topping the charts around the world as the most fashionable bar call. A refreshing mix of a great blended Scotch – such as Johnnie Walker Black Label – and sparkling water, this is a great way to drink whisky. The addition of cracked black pepper to the top of the drink accentuates the smoky notes.

YOU WILL NEED

2 parts Scotch whisky – blended works perfectly here

5 parts sparkling water

Sprinkling of freshly cracked black pepper (optional)

A tall highball glass

A thin piece of lemon peel to garnish

A jigger measure and bar spoon

A glass of ice cubes

METHOD

Add the ice to the glass and then the whisky, giving a few stirs with the bar spoon to ‘wake up’ the whisky. Add the sparkling water and, if you like, sprinkle the cracked black pepper on top of the drink. Stir again seven to eight times and squeeze the lemon peel over the top of the drink to express the oils before adding to the glass to garnish.

The best bucket list icy holidays inspired by Frozen Planet II

The blockbuster wildlife series will ignite an interest in icebergs, glaciers and polar adventures, says Sarah Marshall.

A decade after they wowed TV audiences with scenes of snowy landscapes and hardy creatures surviving in sub-zero conditions, Sir David Attenborough and the BBC’s Natural History Unit are back with six-part series Frozen Planet II, on BBC One.

Although it took four and a half years to gather shots in some of the world’s most remote locations, it is possible for travellers inspired by the footage to have a polar adventure of their own. As the expedition industry grows and an appetite for bucket list adventures continues, destinations such as Svalbard and South Georgia are becoming more accessible.

While most voyages head west, this expedition explores the east coast, stopping at Thule settlements and exploring the beautiful fjord system of Scoresbysund. For added value, the trip starts in Iceland in the equally offbeat Westfjords, home to Europe’s largest bird cliff at Látrabjarg.

Travelling by dog sled, this three-day trip starts from the Advent Valley outside Longyearbyen, and explores valleys, mountains and glaciers in a land with no roads.

Accommodation is simple trapper-style cabins where everyone gets involved with chopping wood for the oven, melting snow for drinking water and looking after the dogs.

AN ICY WILDLIFE EXTRAVAGANZA

WHERE: South Georgia

Everyone obsesses about Antarctica – with good reason – but true wildlife aficionados head to the sub-antarctic islands. For starters, the penguin species are plentiful: find magnificent kings, entertaining rockhoppers and slightly ridiculous looking macaronis. The birdlife is also excellent. Walk through albatross rookeries and marvel as their enormous wingspans cast jumbo jet shadows, or listen to the birdsong of the South Georgia pipit – a species saved from extinction. Wildlife Worldwide will be hosting a trip at the beginning of the season when it’s possible to see belligerent elephant seals embroiled in bloody jousting brawls. Departing in 2025, there’s plenty of time to save up for a once-in-a-lifetime trip.

HOW: The Travelling Naturalist (naturalist.co.uk) offers a 15-day Festival of Wildlife Falklands and South Georgia trip, from £9,995pp (two sharing) on the Magellan Explorer, excluding international flights. Departs October 11, 2025.

ON THE PATH OF EMPERORS

WHERE: Antarctica

Traditionally, most voyages to Antarctica head along the west coast of the Peninsula. But as temperatures rise and ice shifts, the Weddell Sea is becoming much more accessible. Earlier this year, conditions allowed scientists to uncover explorer Shackleton’s lost ship, The Endurance, and several tourist ships made it as far south as Snow Hill. Quark Expeditions’ Ultramarine vessel aims to visit the remote island, a gateway to one of the few accessible emperor penguin colonies. If conditions allow, a helicopter will transfer guests inland to hike across sea ice and observe the world’s largest penguin and their chicks.

TAKING THE SMALL SHIP POLAR PLUNGE

WHERE: North Spitsbergen, Svalbard, Norway

Expedition sailing is best done on smaller vessels, allowing intimate encounters and the possibility of navigating waters where big ships can’t go. Sailing on a 33-person schooner, this newly-launched voyage aims to combine exploration by land and sea. Along with observing walrus and polar bears from a safe distance, guests can snowshoe on shore and admire the ‘spikey’ landscape that initially earned Spitsbergen its name. Sailing in the summer when the sun never sets, there’s plenty of time to enjoy the scenery and search for whales, whose numbers have been steadily increasing.

From textured surfaces to rippled finishes and fluted designs, here’s what’s trending in the world of tiles…

NATURE INSPIRED

“Nature provides the perfect place to draw interiors inspiration from, thanks to its restorative properties,” says Harriet Goodacre of Topps Tiles.

She says the nature trend is all about finding joy in the natural environment, using its textures and colour palette to connect with the outside world, and enhance your space and wellbeing.

“This means using tiles in muted, soft shades such as ash grey, earthy brown and sage green to ground you and evoke feelings of the world outside,” suggests Goodacre. “Pair with hints of teal or baby pink to enliven the senses, whilst conjuring up images of warm sunsets.

“Textured surfaces, such as natural stone, terrazzo and wood effect tiles are perfect for this.” She continues. “Creating depth and texture in a way that feels authentic to this style.”

COASTAL CONTENTMENT

“You don’t need to be living beside the seaside to benefit from this interiors style,” notes Goodacre. “By using a sophisticated and muted colour palette, a look inspired by the British coastline can be updated with an autumnal feel.”

If you’re not sure where to start, she says to complement cool tones, such as powder blue, with coppery pink, vibrant inky blues and musky olive-green tiles. “Build on the look by choosing textured tiles, and surfaces that are weathered or aged with a natural patina. Locally-sourced rustic or artisan objects will add further personality to your space.”

She continues: “Your choice in the shape of tile can also add a point of interest to your interior. For example, using a scalloped shape tile gives a subtle nod to the sea and creates a focal point, whereas a lightly fluted tile evokes the look of calming rolling waves.”

“Fluted interiors are going to be one of the biggest trends of 2023, and as autumn gets underway, we’re going to start to see more homeowners playing around with this distinctive finish,” says Abbas Youssefi of Porcelain Superstore.

Influenced by the Art Deco movement, Youssefi says fluted tiles will not only add a really interesting texture to walls, but they also play with natural light beautifully –adding a new dimension to interior schemes.

With the cost of living crisis, Youssefi suggests DIY decisions for homeowners are going to be heavily swayed by the price of everything. “Not only will it impact on what jobs are undertaken, it will consider how to make these renovations more cost-effective.”

“I expect to see a huge increase in demand for floor tiles which are compatible with underfloor heating mats,” says Youssefi. “Not only does underfloor heating take the chill away on frosty mornings, in well-insulated properties, it will also help reduce sky-high central heating bills.”

THE GARDEN PUB

A recent addition to the home, and a very popular one, was the client’s rustic ‘pub’ nestled at the end of the garden which was next on the list. Wanting to enclose the wooden structure thanks to the unpredictable British weather, we recommended zip screens from Europe’s leading shading manufacturer, Brustor®.  The B1100 zip screens are highly wind-resistant and the tensioned fabric and unique zip edge channel would prevent the fabric from flapping in high winds.

Also made from an easy-to-clean, UVstabilised textile that cannot fade, rot, or crack, the screens allow a view of the outside while still providing privacy for those within. The client can operate the screens separately or in groups by remote control, or opt to use the sunlight sensor.

BURLEN ACQUIRES AUSTIN TRADEMARK

FOR NEW CLASSIC PEDAL CARS

Burlen, owners of the J40 Motor Company, has acquired the Austin trademark which allows them to manufacture new pedal cars, parts, and accessories under the Austin name.

A new company launches, with immediate effect, called Austin Pedal Cars and the renowned J40 Motor Company will become a sub-division of Austin Pedal Cars as a J40-specific parts, accessories, events, and experiences brand. A new Austin Pedal Cars website will launch later in 2022.

The first public appearance of the Austin Pedal Cars name was at the 2022 Goodwood Revival event where the brand launched an all-new J40 prototype continuation pedal car. In addition, Austin Pedal Cars plans to launch a series of new Austin pedal car models over the coming years.

Mark Burnett, Burlen’s Managing Director, said “Austin, as a brand, will live on in our hands, keeping the name alive and educating future generations in the importance of automotive history and giving them the first steps into car ownership. ROAD TEST: BMW 2-SERIES ACTIVE TOURERIT’S A BMW BUT NOT AS WE KNOW IT!

It’s a BMW but not as we know it! The premium German car maker is known for its sporting saloons and tourers, sleek sports cars and muscular SUVs. Which makes the 2-Series Active Tourer seem a little out of place within the range. However, it’s aimed at buyers who would perhaps not normally consider BMW. It is a cross between a compact MPV (there’s a term you don’t hear nowadays) and spacious hatchback.

Offered in petrol, diesel or plug-in and mild hybrid form, prices start from £31,285 and encompass three trim levels. The lead-in model comes with LED lights, automatic tailgate, navigation, automatic air conditioning, cruise control and parking assistant. Power comes from a choice of 1.5 and 2.0-litre petrol engines and a 2.0-litre diesel.

To be honest the exterior of the 2-Series Active Tourer looks fairly ordinary, take a seat inside though and things take a surprising turn. It is very similar to the interior of the new iX all-electric and looks very smart and very premium. It’s spacious and practical thanks to excellent seat adjustment, sliding rear seats and a layout that just feels very airy.

Although the inevitable march of cockpit digitisation has removed most buttons and switches BMW’s system is one of the more

intuitive, and easy to use with clear graphics and what buttons and switches remain operate with a crisp positivity lacking in cheaper cars.

On the road my Luxury trim 220i weighed in at £39,479 but to be fair that included the test car’s £7k of options Upgrades ranged from a HarmanKardon surround sound system to a panoramic opening glass roof. Standard fare is far from minimal with heated sports seats, wireless charging, climate, smart phone integration, head-up display, auto lights and dimming mirrors.

The 1.5-litre, turbocharged, 3-cylinder petrol engine is mated to a 7-speed automatic and benefits from mild-hybrid technology. It’s an incredibly smooth drive and unlike so many 3-cylinder units there’s none of the usual thrum from this type of engine unless you really push the revs. With 156 hp the benchmark 62 mph is reach in 8.1 seconds, so while not the fastest machine it’s more than capable of picking up its feet when required.

It provides a genuinely practical family vehicle that carries the famous BMW roundel, and although it may not be the most affordable choice it feels and drives very premium. It may be an old adage but you get what you pay for in all things, and cars are no exception.

ROAD TEST: ISUZU D-MAX

If you have noticed a fair number of rather smart pick-up trucks on the road, that don’t look like they’ve spent much time in the local building supplies yard, you would probably be right. Manufacturers have realised that a pick-up with good levels of standard equipment and a variety of optional hard tops and accessories can appeal to a whole new range of potential buyers. Add in the possibility of all-wheeldrive and the chance to carry 5 people, as well as a decent load bay and towing ability, and the appeal is obvious.

Isuzu have long been a ‘go to’ manufacturer for those wanting a comfortable and hardworking pick-up. Good standard equipment with excellent accessory packs and options means the Isuzu D-Max range can cover every scenario from building site to trendy wine bar. The range is essentially split into two halves, the business line-up and the V-Cross and Artic models and there are single, extended and double cab options. Prices start at £21,999 and peak at £47,999.

ROAD TEST: MG HS PHEV – A DISCREET APPEARANCE THAT DOESN’T SHOUT LOOK AT ME

At a time when many car manufacturers are cutting costs, and quality, it’s nice to report on one car maker where the quality keeps improving to an increasingly high level. MG might be an iconic British badge but is now Chinese owned and SAIC, MG’s owners, have come a long way since their launch model, the MG6, arrived back in 2012.

Examine the seating, the solidity of the clunk as you close the door and the general ambience of the interior and you can see it’s well bolted together. Externally, apart from a large grille - which actually sits well - it’s a discreet appearance that doesn’t shout look at me. The proportions are right without being excessive, there’s an absence of fussiness and unlike so many competitors it lacks Tonka Toy simplicity for a more subtle and classier look.

On the road is where the MG arguably lacks some on-road handling finesse of European competitors. Although unless you’re particularly tuned in to ride and

handling I doubt you would even notice. The MG handles perfectly well and the suspension copes with rougher roads, and drives enthusiastic bends, commendably given the raised ride height.

If you want a grown-up SUV with the feel of a more premium brand, and at an affordable price, then the HS is well worth considering. I think you’ll be impressed.

If you’re looking for something a bit different on the rugged transport front then the D-Max can be a surprisingly sensible choice.

IN HOW TO PRODUCE A CAR FOR ALL SEASONS

It was one of the most eagerly anticipated launches in recent years, it follows on from a truly iconic predecessor that had a world-wide following and its history back in the immediate post war years. The new Defender had a lot to live up to, and there can be few who envied their task, when it was launched last year. It’s worth saying that this new Defender is nothing like its predecessor, it’s a whole world apart and better described as a modern interpretation of the iconic original.

Since new Defender launched it has met with almost universal praise and a short spell behind the wheel provides the explanation. Immediately visible in new Defender are the heritage cues from the previous model. With short and long wheelbase models, known as 90 and 110 respectively, diesel and petrol engines with all bar one having mild hybrid assistance, a 5.0-litre V8 petrol and a plug-in hybrid power unit, there is plenty of choice. Prices start from £45,690 for the commercial Defender 90 Hard Top.

The first thing you notice climbing into any new Defender – and you do climb in – is visibility. It’s excellent! Looking forward you can see the front corners and it essentially ends at the back window. To help matters you have a 3D surround camera and 360-degree parking aid.

Moving to the standard range prices start at £57,695 for the 90 models and £58,700 for the 110, with a plethora of optional extras. The standard specification across the range is good and the interior looks and feels special. There’s lots of space, an open dash incorporating a central touchscreen

and storage, and also buttons. Hallelujah! The touchscreen provides near perfect clarity and is intuitive in its operation, not something one can say about many such systems fitted in cars.

The Defender is big! However its large size, especially in 110 form as tested, means it’s a surprise to find out just how easy it is pilot it through any situation whether on or offroad. Part of that ease is undoubtedly the excellent visibility and on-board assistance tech, however it’s also down to the steering and confidence inspiring ride.

My 110 SE test model at £56,355, and its 3.0-litre diesel engine and smooth changing 8-speed automatic transmission proved immensely capable. Point the Defender in any direction, quite literally as roads not necessarily required, and it’s an impressive and comfortable cruiser, offroader and load carrier. It should be given the pricing, but the Defender is an object lesson in how to produce a car for all seasons and all occasions.

Food writer Rukmini Iyer: I didn’t know what not having time was until I had a baby

The cook and author of the Roasting Tin series is back. She chats to Lauren Taylor about Indian train journeys and cooking as a new mum.

When Rukmini Iyer wrote the hugely successful Roasting Tin series, she never imagined just how crucial her simple, onetray recipes would actually be – until she became a mum.

“What I said about the Roasting Tin books, ‘Oh, it’s great if you don’t have much time’ – I didn’t know what not having much time was until I had a baby!” she says, laughing. “I really appreciate having written books where I can just put things in a tray.

Her daughter Alba is seven months old and at the “hilarious” weaning stage. “It’s mad when your life’s completely turned around,” says the 37-year-old, “So I’m very, very glad to be able to do minimal prep, hands-free cooking.”

Recipes in her seventh book, Indian Express, have been a lifesaver too, with ‘one pan’ and ‘one tin’ chapters. “Those are the ones I’m relying on right now – and the more adventurous ones when I hand [Alba] over to her dad!”

Her latest offering focuses not just on Indian flavours, but specifically the food of a 1,000-mile train route from Tamil Nadu, South India (where her dad is from) to Kolkata, Bengal (where her mum is from) –and all the regions in between.

It’s a route her father would travel back and forth when he studied at the University of Kolkata Medical School, where he later met

her mum – a journey that took 36 hours at the time. Four years ago, Iyer took the same journey with both of her parents to really discover the food of those regions – and everywhere in between.

She writes that her father’s face still lights up when he talks about the journey he first took with her mother, “Because, by then a new service had started, the Coromandel Express, a brand new train taking just 24

hours. It was also a rather unusual trip, given that it was unconventional for a couple in India to travel together unmarried in the 1970s.”

Iyer says she finds the story “romantic”, and when she recreated the journey, “We took the overnight train journey with a train picnic, listening to my parents’ stories about all the amazing food.”

So what characterises Bengali cuisine compared to South Indian?

“My mother had a really hilarious phrase, which is – ‘Tomatoes and potatoes, Bengalis put them in everything’. And they really like seafood because it’s a coastal area, you get really amazing prawns. I was in a hotel [there] with my mum and we ordered some delicious breaded prawns and what turned up was literally the size of a small lobster –so tasty and ginormous,” she says.

“Whereas in South India, where my family is vegetarian, the food is really light and healthy. [They] cook with mustard seeds, desiccated coconut, cook things in coconut milk –it’s about fresh, quick and easy stir-fries, whereas Bengal is a bit more fish-based. But both regions are really spectacular, [and] they are both rice-eating regions.”

Iyer wanted to showcase these distinct regions, while staying true to the ethos of all of her cookbooks. “What I wanted to do

was think about what makes the Roasting Tin accessible and popular, and then bring a spin on it – which was the food that I grew up with, Indian-inspired foods, [and] still have something you could make on Wednesday night,” she says.

So you’ll find simple, one-tin dishes like crisp-topped marinated sea bass with green chilli, lime and coriander, from Bengal, and South Indian-inspired beetroot, curry leaf and ginger buns. The recipes are largely vegan and vegetarian, because that’s how most people of the regions eat, with some pescatarian meals thrown in – because seafood is a “state-wide obsession” in Bengal.

Crucially, what really makes a long journey in India is elaborate train snacks. “The really cool thing is you have snack vendors on the train,

it’s much more exciting than a snack trolley [here]! You’re in your own compartment, like the old fashion train carriages, and you’ve got vendors going up and down the train,” Iyer says. “There’s hot samosas, potato cakes, hot chai… But as the regions change, you get local things. When you get to Bengal, you get offered something called mishti doi, a delicious, sweetened yoghurt served in little earthenware pots. In the south you get offered idlis, steamed fluffy rice cakes, which are really tasty. So it’s nice the food on the train reflects where you’re going through.”

Cooking and packing your own train snacks is very traditional too, and her recipes honour that – from sticky spiced popcorn with dates, caramel and sea salt, to cauliflower, onion and bread pakoras.

Iyer’s dad would always be well-equipped for his long train journeys, sent off with an array of snacks cooked by his mum. “The train snacks my grandma would have

packed for my dad were really hardcore – she probably would have spent at least a day cooking,” Iyer says. Thankfully, her own recipes are generally much less timeintensive.

It wouldn’t have been unusual for her grandmother, who she called Thathi, to spend the majority of her day in the kitchen. “Culturally, it’s really different. If you were a stay-at-home mum back then and you’re raising a family, your job was basically cooking,” she explains.

“Now you want things that are obviously tasty, but unless I’ve made a conscious decision that today I feel like spending the afternoon cooking, I don’t want to be tied to the stove.

“So a lot of the book is how can I bring some of these lovely flavours into the food without making someone have to stay in the kitchen? Can they pack it in in 30 minutes? And the answer is yes, a lot of it you can.” Much like her other books, you won’t find spices you can’t easily pick up in a supermarket on your way home from work.

And we can’t talk about these regions of India without mentioning rice – which in true Iyer style is quick and easy. It may sound like sacrilege, but her family secret to cooking the perfect rice? “The microwave! Because it’s impossible to get it wrong” –all you need is 200 grams of good quality basmati rice in a heatproof bowl, cover with three-quarters of a pint of boiling water, put a plate on top, “Put it in the microwave on a medium setting, cook for 11 minutes and let it stand for 10.

“Then your rice is absolutely perfect.”

INGREDIENTS

4tbsp desiccated coconut

1 fresh red chilli

Handful mint leaves, plus extra to serve

2 cloves garlic

Juice of 2 limes

1 red onion, thinly sliced

250g vine cherry tomatoes, halved

2 sustainable salmon fillets

2tbsp neutral or olive oil

1tsp sea salt flakes

INGREDIENTS

15 fresh curry leaves

325g strong white bread flour

4g fast-action dried yeast

150g raw beetroot, grated

1tbsp lemon juice

1 inch ginger, grated

100ml water

Beaten egg, for brushing

70ml neutral or olive oil

1tbsp mustard seeds

1tsp sugar

1tsp sea salt flakes

Chilli, coconut and lime salmon

SERVES 2

1. Preheat the oven to 180°C fan/200°C/gas 6.

2. Tip the coconut, chilli, mint leaves, garlic, lime juice, one tablespoon of the oil and the sea salt into a spice grinder or high-speed blender/Nutribullet and blitz roughly until the chilli looks evenly incorporated through the coconut (you’ll have a reddish, greenish rubble).

3. Mix the sliced onion and cherry tomatoes in a medium roasting tin along with the remaining oil. Make space for the two salmon fillets, place them in the tin, skin side down, then pat a tablespoon of the coconut-chilli mixture evenly over each fillet. Scatter the remaining mixture over the onions and tomatoes.

4. Transfer to the oven to roast for 20–25 minutes until the salmon is cooked through. Scatter with mint leaves and serve hot, with rice alongside if you wish.

You can substitute the salmon for cod, haddock or another firm-fleshed white fish – it’ll take about the same time to cook. TIP

Beetroot, curry leaf and ginger brunch buns

MAKES 8 BUNS

1. Heat 30ml (two tablespoons) of the oil in a small frying pan over a medium heat; when hot, add the mustard seeds and curry leaves. Let them snap, crackle and pop for 30 seconds to a minute until aromatic, then turn off the heat and set aside.

2. Mix the flour, yeast, sugar, salt, grated beetroot, lemon juice and ginger together, then add all the remaining oil and the 100ml of water. Pour in the infused mustard seed and curry leaf oil, then stir together. Knead the dough by hand or in a stand mixer for 10 minutes, adding a tablespoon more water if the dough is looking dry.

3. Let the dough rise, covered, for one-and-a-half hours, or until doubled in size. Punch down the dough, divide into eight and then roll each portion into a ball, twisting the dough underneath so you have a smooth top. Place on a baking tray lined with baking paper, twisted side down, and leave to rise for 20 minutes.

4. Meanwhile, preheat the oven to 180°C fan/200°C/gas 6. Brush the buns with the beaten egg, then transfer to the oven to bake for 25 minutes until well risen. Let them cool slightly on a wire rack before serving with plenty of salted butter.

Preheat the oven to 150°C fan/170°C/gas 3. Heat the milk in a small saucepan and add the saffron. Turn off the heat and let it infuse. 2. Meanwhile, whisk the egg yolks with the caster sugar, single cream and ground cardamom seeds. Arrange the sliced brioche and blackberries in a buttered roasting tin or flan dish and pour over the eggy custard. 3. Use the back of a teaspoon to mash the saffron into the milk (this will release more colour), and then carefully drizzle this all over the pudding. Scatter with the pistachios and then transfer to the oven to bake for 25–30 minutes until golden brown and crisp on top. Serve immediately with clotted cream.

I like the idea of this Flexitarian creature, a casual vegetarian who looks for the benefits of a sustainable yet well rounded diet where nothing it off limits but everything is viewed in moderation. It feels inclusive and surely a win win for all those involved?

Why not look to become inclusive all year round, and this Flexitarian ethos is what we’re going to focus on in 2022. Living life in balance sounds like a mantra that we could happily stick to.

FUC Clothing; look great, feel great, donate!

There is a lot going on down at FUC Head Quarters – if you hadn’t heard already they are having a huge stock clearance! Everything is up to 70% off, from leggings, t-shirts, vests, hoodies to water bottles and mugs.

As always profits will be going towards an amazing cancer charity. This time they have chosen the Teenage Cancer Trust to take home the win. It is such a great cause, they provide help, support and information for all young people facing cancer.

FUC founder Lottie, was diagnosed with breast cancer back in July 2017 and again with a different type in the December of the same year. Since then she’s faced a roller coaster ride of chemotherapy, radiotherapy, nine surgeries including a double mastectomy and a full reconstruction with the last surgery to date being another reconstruction (after the previous went wrong) making boobs from her legs. She has also had two strokes and been put in a chemical menopause – so her right to have any more children has been taken away and left with a memory that’s not great.

However, it’s not all bad, in 2018 FUC Clothing was born out of a desire to help and support those diagnosed with cancer and those around them. Since then thousands of pounds have been donated to charities such as the Wessex Cancer Trust and Shine. There have been auctions, fundraisers and even a calendar to raise funds. Lottie knows first hand the pain and

devastation cancer can cause to not just those diagnosed but to their families and friends – so she made it her mission to do something to help.

At the moment they are very lucky that their wonderful friends at Ink From Within, based on Boscombe high street, are selling a wide range of their stock – so you can pop in and have a look. While you’re there you can look at the amazing artwork they sell (also available for commissions).
