DORSET’S DISABILITY CHARITY NEEDS YOU!
Dorset’s disability charity, Diverse Abilities, is looking for volunteers to help with ongoing projects and community events throughout the year. The charity is looking for volunteers to help promote the charity at community events including Harry Paye Day on Poole Quay, Poole Harbour Festival at Baiter Park and Grooves on the Green at Ashley Cross.
As well as needing help at local events, Diverse Abilities are also recruiting Volunteer Community Ambassadors to represent the charity in their local area. The role is a flexible one, and allows the individual to volunteer their time whenever is convenient for them. They can also use their own creativity and ideas to liaise with local businesses to encourage fundraising events or displaying charity pots, leaflets or posters. Whether that is arranging a collection at a local garden centre or holding a pub quiz. The charity is also on the lookout for people who can volunteer from home and help engage with the local community on social media.

BRIDGMAN DONATES OVER £10,800 TO GREENFINGERS CHARITY DURING RHS CHELSEA FLOWER SHOW
Breaking their 30 year tradition, British furniture-makers Bridgman decided to forgo this year’s RHS Chelsea Flower Show, instead choosing to give back to the wider community by partnering with Greenfingers Charity.

A1 SPORTING SPEAKERS BRING YOU AN EVENING WITH...
This months magazine has a four page spread for local shows promoted by Terry and Freda Baker of A1 Sporting Speakers.
Locally you can see, and sometimes meet, music legend Iain Matthews and football legends Harry Redknapp and Sir Geoff Hurst. Then in December, as close as the Portsmouth Guildhall, sees the first ever stage appearance of Wayne Rooney –Manchester United and, until recently, England’s all-time record goalscorer.
Terry and Freda are agents for Sir Geoff Hurst as they were for all of the 1966 World Cup winning team when they were alive, except for Bobby Moore who passed away prior to the resurgent interest in all things sporting retro and the end of the last century. They are also English representatives of the late great footballing superstar that was Pele and Terry was agent to another all-time great in Jimmy Greaves for 25 years until his death in 2021.
They have had an interesting life working with all of the sporting greats including Muhammad Ali, Sir Henry Cooper, Ricky, Hatton, Frank Bruno and many of the worlds greatest ever footballers. As a local company, it’s unusual to have met so many stars and the shows that they are currently promoting will all be great events.
For details see the four page spread of their advertising on pages 156 - 159.
PARTNER PROMOTIONS AND APPOINTMENTS AT TRETHOWANS SOLICITORS
There have been three new Partner appointments at Trethowans Solicitors, including two internal promotions.
Melia Hirst, based in the firm’s Bournemouth office, has joined Trethowans from another leading Dorset law firm. Melia advises on insolvency and restructuring matters. She acts for insolvency practitioners, banks and financiers, as well as directors of insolvent companies. She also handles solvent liquidations and group reorganisations. Additionally, Melia has significant experience in sales and purchases of distressed businesses. She also advises landlords, suppliers and others contracting with an entity that becomes insolvent.
Mariana Crawford and Louise Thompson have also been promoted from Senior Associates to Partners, and will be based in Trethowans’ Salisbury and Southampton offices respectively.
All three new Partners will service work across the business’ five offices in the region, including Hampshire, Dorset and Wiltshire and bring a wealth of knowledge and experience to the sectors that they work in.
Mariana joined the firm back in 2019 and created the New Build Team as part of the Residential Property Team. She works closely with local and national developers often as a recommended solicitor due to her ability to provide excellent client experience and deliver results while negotiating the demands and processes often involved within a new build purchase.
Louise, a long-standing member of the firm, joined Trethowans upon qualifying back in 2008. She is a commercial contracts lawyer with many years of experience in supporting clients from a wide range of industries in relation to their commercial contracts from large listed groups to start ups and SMEs. She is also an expert on data protection law.
Trethowans Managing Partner Mike Watson advised, “We are delighted to be announcing our new Partners. We are pleased to recognise the talent that we have within the business by promoting Mariana and Louise and welcoming Melia who will boost our restructuring and insolvency offering. The appointments will support our ongoing growth in the region as our reputation continues to grow.”

BLESBOK BLESSINGS!
Guests witnessed a very special moment at Marwell on May Day as one of the zoo’s blesbok delivered her calf in full view.
Within minutes it was finding its feet and making its first wobbly steps witnessed by guests and a number of fortunate photographers.
The young calf can be seen with its parents, mother Vanessa and father Blas, in the blesbok paddock, next to our clouded leopard enclosure.
In the wild, blesbok are native to southern Africa where they graze in herds on open grassland. They travel in single file lines to watering points creating paths as they go. Calves are able to follow their mothers within 30 minutes of being born and wean around four months of age.
Both male and female blesbok have ringed horns with distinctive white faces and brown bodies. In the wild, males use their
horns to “clash-fight” to establish their dominance. These animals feed mostly in the morning and afternoon resting in shady spots during the mid-day sun. They need regular access to water.
Historically blesbok would have been hunted by lions, leopards, spotted hyenas, African wild dogs and cheetahs. They were also hunted by European settlers and numbers dwindled to around 2,000 by the late 19th century but they have made an impressive recovery since becoming a protected species.
It is thought there are now as many as 55,000 living in protected areas and wildlife ranches and the population continues to increase.
Conservation charity Marwell Wildlife owns and operates the zoo, which gives guests the chance to see giraffes, Rhinoceros, zebra and tigers amongst many rare and endangered species.
FINANCE OPTIONS
Kitchen House are now offering their clients finance options to assist with the purchase of new kitchens and even with other kitchen accessories like their new collection of kitchen bar stools.
Since their founding in 1987, Kitchen House has provided new kitchens ranging from fixed budget kitchens to much larger and more complex designer kitchens.
As a local business rather than a national chain, they’ve always relied on a good reputation within the area to sustain them. They always take the time to make sure that you’re completely happy with what they have installed. A high portion of their work has come from prior recommendation.

HARRY'S HOUSE Poole
NOWOPEN
Everyone is welcome at Harry’s House but here are some examples that we had in mind when conceiving the project.
HOSPITAL DISCHARGES
There’s a lot of pressure to clear beds nowadays so many patients are deemed fit to go home but may feel daunted by suddenly coping on their own. A week with us will just provide a bridge to gather some strength and organise support for a return to home.
LONG HOSPITAL VISITS
If your child or loved one is going to be in Hospital for a week or more and you aren’t local the last thing you want to do is sit in a soulless hotel room and eat by yourself in a restaurant where everyone else is celebrating.
HOSPICE VISITORS
Nobody needs looking after more than those spending the last days with a loved one. It’s tempting to stay by the bed 24/7 but the feedback from staff is that you should eat properly and get some rest. We will provide a comforting place to help you through these most difficult of times.
TRIALS & INQUESTS
Attending court every day is exhausting and proceedings are often suspended or delayed. Having a base to come back to will help get you through the experience.
WHEN LIFE GIVES YOU LEMONS
There are times when you just feel like staying with your mum or your best friend and not worry about anything. We have a quiet lounge if you just want to sit and read or maybe socialising around the dinner table will help you feel better.
Each evening there is family dinner so our guests become a community of people sharing their challenges whilst sharing their food.
An Oasis of calm in central Poole close to the hospital, hospices and Poole Park. www.harry-houses.co.uk
At Harry’s House we welcome guests who just need a bit of looking after at a difficult time. Crisp linen, fluffy towels and the sort of individual service you would normally only get in a high end hotel.

Everything you need to know if considering a loft conversion
A homeowner’s guide, according to an expert.
By Sam Wylie-Harris.
If you’re thinking about extending your living space, chances are your eyes are looking to the skies – and weighing up the benefits of converting your loft.
As well as creating an additional bedroom or home office, a loft conversion can also increase the value of your home – but where to begin?
“As the under-utilised roof space is already in place, it’s simply a case of structurally-enhancing the existing floor and roof with new steelwork [beams], and introducing a large dormer extension to the rear roof,” says Gareth Gazey, director at Gazey Architects and architect for the Homebuilding & Renovating Show.

Suitability of your existing roof
To ascertain the suitability of your existing roof for conversion, there are two main aspects…
“The maximum height of the roof space [measured from the existing floor joists to the underside of the existing timber ridge] needs to be a minimum of 23002400mm,” says Gazey.
“The form and shape of your roof is also crucial,” he stresses.
“Mid-terraced properties, with their two [front-to-back] roofs are ideal for loft conversions, as they use the maximum amount of roof space, unlike the hipped roofs seen on semi-detached properties.”
Alternative options
Should the maximum headroom within your existing roof space be insufficient, then Gazey says the solution is to lower the level of the ceilings on the floor below.
To ascertain whether this is possible, he says you will need to review the relationship between the ceilings of the space below and the top of the lower floor windows.
“The greater this dimension the better, as this will provide you the maximum you can lower the existing ceilings,” says Gazey.
He continues: “As you obviously cannot lower your ceilings lower than the existing window head level.”
If the form of your existing roof space includes a hipped roof (three way), then Gazey suggests introducing a hip-to-gable roof extension, which will allow you to increase the floor area/rear-aspect dormer size to make it worthwhile to convert.

New access stair
Typically, you position your new loft access stair directly above the existing staircase, says Gazey.
“The reasons for this are two-fold: Firstly, to minimise the overall lost space [beneath/above], as the two stairs will share this lost floor area.
“Secondly, the stairs should be stacked to provide a centralised means of escape in the event of a fire – a building regulation requirement for loft conversions.”
As Gazey points out, the new loft access stair provides the opportunity to introduce a rooflight, and flood the stairwell with natural light.
Efficient use of space
“I have witnessed a trend to locate an en-suite within the newly created rear-dormer extension,” notes Gazey.
“In my view, this makes no sense,” says Gazey. “Using this maximum headroom area for a service-type space, such as en-suite, which you spend little time in, is a waste.”
Gazey says a more spatially-effective solution is to utilise the front aspect roof space for en-suites and walk-in closets.
“By adopting this arrangement, you’re then able to locate the bed against the stud partition, separating these service spaces from the bedroom,” suggests Gazey.
“Crucially, this scenario then provides you with the maximum amount of usable floor area for your master bedroom suite,” he adds.

Rear dormer opening options
Typically, there are two options for the new opening within your rear dormer extension…
“A large picture-framed window (fixed or openable glazing); or two large full-height openable glazed doors (fitted with restrictors or a new balustrade).”
Heating and ventilation services
Due to their location, at the top of the property, heating a loft conversion is rarely a main concern, says Gazey. They can be fitted with strategically-located vertical radiators or under-floor heating.
“Ventilation is typically the overlooked requirement within converted lofts,” he observes. “This can be achieved naturally, with openable front-aspect rooflights and rearaspect glazing (creating the required cross-ventilation), or mechanically with the use of air conditioning.”
Summary
Providing your existing roof shape and internal maximum height permits, Gazey says converting your loft is the most cost-effective way of incorporating additional bedroom space to your property. “Unlike with a ground floor extension, no expensive excavations or concrete foundations are required.”

The National Trust property is home to the National Collection of pre-1900 old-fashioned roses, which reach their peak in early summer. Unlike modern species, old-fashioned roses tend to flower just once a year, so their blooming season is an extraordinary annual sight, attracting thousands of visitors.
Mottisfont is offering extended opening hours on some evenings during June, giving you more opportunities to enjoy these spectacular flowers. On Thursdays, Fridays and Saturdays 1 - 30 June the gardens will be open until 8pm (last entry into property 7pm, house closes at normal time of 5pm), with live jazz from the FB Pocket Orchestra on some evenings.
“As Mottisfont’s new Head Gardener, I’m really excited to experience rose season for the first time,” says Tina Chillingworth. “I’m waiting in anticipation for the rose gardens to reveal their array of bright colours and bouquets. The team have meticulously pruned and tied in five hundred roses and nurtured their progress through a year of challenging weather conditions. We look forward to welcoming all visitors in sharing our enjoyment of the sensory rose garden experience.

“Personally, I feel the early mornings and evenings offer the most captivating moments, so I encourage visitors to take advantage of our late opening times. Exciting times!”
Over 500 varieties of rose bloom in Mottisfont’s walled gardens, including Rosa ‘Souvenir de la Malmaison’ –a sumptuous pale pink bourbon rose inspired by the Empress Josephine’s famous garden – and delicate China and tea roses in shades of cream, pink and red.
Ancient varieties include Rosa ‘Gallica Officinalis’, a light crimson and deeply scented shrub brought to England from Persia by the Crusaders, and the highly scented ‘Quatre Saisons’, an autumn damask which was grown by the Romans.
The rose gardens were created by Graham Stuart Thomas - one of the most important figures in 20thcentury British horticulture - in the 1970s. Mottisfont’s walled gardens were chosen to house many varieties of rose that may otherwise have been lost.
With an artist’s eye and consummate knowledge, Graham Stuart Thomas designed a garden that would combine roses with a mix of perennials to give a seasonlong display.
Visitors enter through Mottisfont’s recently revived Kitchen Garden, where two beds of eleven different types of rose provide a modern introduction to the hundreds found beyond. Walkway arbours are decorated with four varieties of climbing rose, based on Graham Stuart Thomas’s choice of companion roses. Hedging of Rosa rugosa ‘Rubra’ leads you into these arbours, mirroring the entrance to the central garden.
Within the central garden, deep box-lined borders are full of rambling roses, while climbing varieties are trained on the high brick wall behind. The main paths crossing the site converge on a central round pond and fountain, surrounded by eight clipped Irish yews.

Either side of the historic central pathway are two deep herbaceous flower beds, brimming with plants chosen to complement and underplant the roses. Agapanthus, geraniums and peonies mingle with pinks, lilies, phlox and nepeta. The centres of the borders are a mass of soft blues, pinks and whites, whilst stronger yellows, oranges and dark pinks draw the eye along the length of the border.
These borders also extend the flowering season, providing colour, shape and scent before the roses bloom and after their petals fall.
The northern section of the walled garden, with its wide paths, is deliberately planted with a ‘cool’ colour palette to provide a counterpoint to the central rose garden.
From 14-18 June this year an added attraction will be rose displays and special guest speakers as part of
the National Trust’s second plant ‘Monograph’, where horticulturists will gather to study and discuss the genus Rosa. A marquee near the walled gardens will display stands from various rose breeders and information from the historic rose society.
Mottisfont’s gardeners take great pride in looking after this world-class rose garden. To prepare for the summer show, over 40 tonnes of Mottisfont’s homemade compost is spread throughout the walled garden, feeding the soil below.
The gardeners don’t tend to dead-head these unique roses, which is a surprise to some visitors. Most of the old-fashioned types only flower once a year, and afterwards produce ornamental fruit or ‘hips’, which, as well as brightening the garden in autumn, provide local birds with an important source of winter food.

The team remove the spent blooms of the repeat flowering roses by cutting the stem back to a healthy new bud which will encourage them to keep flowering.
Many of the roses which bloom within the gardens can be found for sale within Mottisfont’s plant centre, and visitors can try rose-flavoured ice cream inspired by Mottisfont, created by Hampshire-based ice cream makers Jude’s.
National Trust members, Art Fund members and under 5s get free entry to Mottisfont, otherwise peak admission prices apply from 10am-3pm from 29 May –2 July. Standard admission applies from 3pm onwards, including the evening openings.

Could this be the New York hotel opening of the year?
Start spreading the word – there’s a new kid on the block in New York. Sarah Marshall checks in.
Standing tall and proud on Broadway, just a short stroll from the lights and razzmatazz of Times Square, is the Big Apple’s most anticipated hotel opening of the year.
So new the scarlet red paint is barely dry, Virgin Hotels has landed on West 30th Street with a level of fanfare and exuberance to be expected from Sir Richard Branson.
TRAVEL | NEW YORK

JUNE 23 64
During the opening ceremony, there’s a streetside sing-song from a Broadway star, performances by unspeakably bendy contortionists and a party for 1,000 people. Yet despite the stiff competition, there was only ever going to be one star of the show. The world’s most famous billionaire is on-hand to cut the ribbon and officially launch the latest jewel in his empire, and the seventh property in his fast-expanding collection of city hotels that already includes Miami, Nashville, Chicago, Edinburgh and Glasgow.
But this, in many ways, is the big one. New York is not a place that does things by halves – and nor does its hotels. With expectations high, the pressure was on to deliver a property that’s every bit as modern, quirky, surprising and slick as the city it calls home, while maintaining the playful charm and cheekiness Virgin has long been known for.
Of course, this isn’t Branson’s first bite of the Big Apple. Back in 1984 and the proud custodian of a leased 747 jumbo jet, he launched Virgin Atlantic, with the very first flight taking off bound for New York.
Fast forward several years and the eccentric entrepreneur was back, this time driving a tank into a wall of Coca-Cola cans in the middle of Times Square to mark the launch of Virgin Cola. Despite the bold and headline-grabbing publicity stunt, the drink failed to fizz, but his love affair with New York has stood the test of time.
So, has the new Virgin New York been worth the wait?
Branson’s homage to New York
Dominating the minimalist lobby is the ‘Where’s Richard?’ mural by Californian artist Nigel Sussman, with the big boss hidden somewhere within a busy Where’s Wally-esque scene that depicts the Virgin story. Even the toppled cola cans feature.
The hotel’s 460 rooms – or ‘chambers’ – are spread across 39 floors of a gleaming, purpose-built tower located in the up-and-coming NoMad neighbourhood (named so because it’s north of Madison Square Park). Those feeling plush can book the penthouse suite, dubbed Richard’s Flat, which spans the 35th and 36th floors, but guests are well-catered for whatever their room category.
NEW YORK | TRAVEL
HOUSE-MAG.CO.UK 65
‘Chambers’ are generously sized – by New York standards at least – and feature custom-made beds with a padded seat built-in to the bottom left-hand corner. This is, apparently, so business meetings can take place more efficiently – but there’s little time to ponder what HR would say about that because the city views pressing against the floor-to-ceiling windows are more than a little distracting.
Across the room and on the other side of a sliding door (complete with peep hole) is a bathroom of white marble, back-lit mirrors and a walk-in shower.
There are flashes of Virgin-red everywhere, from the shower head to the miniature Smeg fridge that stands in as the mini bar. The scarlet theme continues throughout the hotel, from the striking spiral staircase on the third floor to the centrepiece grand piano that acts as a backdrop for live DJs and nightly jazz.

More than simply a place to sleep
Keen to become a destination for hedonistic New Yorkers as well as out-of-towners, the hotel will soon open an as-yet-unnamed fine dining Italian-meets-Latin restaurant, headed by celebrated chef Freddy Vargas. Until then, its vibey Everdene space fills the void nicely.
There are cosy corners for hushed brunches, floral armchairs for coffees and chats, a decadent crimsoncoloured cocktail lounge for a pre-dinner espresso martini and a striking dining space from which to enjoy dishes such as Nantucket Bay scallops and flat iron steak with black garlic jus.
Fancy something sweet for afters? Head out to the wraparound terrace and savour the sight of the Empire State Building, almost close enough to touch, dazzling in all its art deco splendour. It simply doesn’t get much better than that.

The Man Behind the Mic
Get to know Hot Radio’s new mornings presenter Jason Dean!
What is your favourite sandwich filling?
It’s a bit of a combo, tuna mayo, cheese, coleslaw with a touch of red onion, it’s just the best!!
If you could have any super power, what would it be and why?
I would love to be invisible, which I kind of am to my listeners already.
Tune in to Hot Radio for your top-quality music, local traffic & t ravel, and entertainment.
24/7 broadcasting across the BCP Conurbation on 102.8fm, Dorset on DAB, Online everywhere & on your Smart Speakers!
If you could go anywhere in the world, where would it be and why?
I worked as cruise staff & cruise director on various ships so have been fortunate enough to of travelled the world throughout. Places that I haven’t been are Memphis & New Orleans. I would love to visit to do all the music stuff etc. I’d also like to visit the Seychelles which I most certainly will one day.
What is your favourite music genre?
This is a really tricky question as I like everything. I love Big Band & Swing from the 1940’s as it’s just feel good. I really love 70’s disco and a bit of dance.
Dog or cat person?
I used to be a cat person but we now have a beautiful miniature Shih Tzu who is my world. Her name is Ruby and she is star of stage and screen and been featured on ‘In For A Penny’ with Steven Mulhurn. So yes, I’ve been converted to a dog person.
What are some of your hobbies outside of radio?
I certainly don’t run as it’s so overrated and why would I need to, I have a car….so much quicker!!! I just LOVE anything showbiz… music, shows, tribute night etc. I love spending time with my wife Sophie, going out for meals etc and having great holidays.
If someone wrote a biography about you, what would it be called and why?
My wife answered this question... It would probably be called, NICE ONE, NICE ONE, as apparently I’m always saying this and it’s become a bit of a catchphrase. On the back cover it would say, “Goodnight, God bless & have a safe journey home” as I always sign off from a gig with this… even if it’s the morning apparently!!!
If you won the lottery what would be the first thing you buy and why?
I would book a long cruise to get away from the press but to mainly plan what we wanted to do. I’d help people that I know who are struggling to make their life better, buy a bigger property with a lot of luxury items and if it was a ridiculous amount I’d give a chunk to Poole Cancer Centre who have looked after me over the last couple of years – they are all just amazing people!
What is your go to favourite food?
I’m a bit of a caveman and really love meat!!! You can’t beat a hog roast with a lot of cracklin’ but I love Thai & Tapas.
What’s your favourite sport and what team do you support?
I used to be so rubbish at any sport as a kid but as I’ve grown older, I’m really good at Catchphrase, does that count? I follow AFC Bournemouth through the good and bad times and always will!

Can a luxury rainforest resort ever be truly eco?
Malaysia’s Datai Langkawi has its work cut out, but it’s doing its best to nurture its little slice of paradise, says Josie Clarke.
It’s 6am and I’m cocooned in absolute luxury amid the trees in a 10-million-year-old rainforest. Quietly sipping a coffee high on the balcony of my villa, all I can see is every shade of green, shot through with the occasional riot of feathered colour swooping past.
I can hear the dawn chorus, gently backed by the sound of a stream at the bottom of the valley below. Relaxation drifts down like a soft blanket.
Playful dusky langur monkeys lark about high overhead. Less than 50 metres away, an oriental pied hornbill flies to and from its nesting partner and chick, supplying figs plucked from a tree near the hotel’s main pool. There’s a suspicious rustle in the leaves below but I keep my eyes up.
Nestled under the forest’s ancient canopy and edged by white sands, the Datai Langkawi resort is a haven for nature lovers, just an hour’s flight from the concrete metropolis of Kuala Lumpur. And while the Datai prides itself on its “unparalleled luxury”, it unapologetically places the wellbeing of the jungle and the creatures that live in it first and foremost.
Even before they enter through the sleek gates, guests are politely warned that they will be sharing the space with a wide array of enigmatic animals and are advised to keep the doors and windows of their rooms locked at all times or risk a cheeky monkey helping itself to the mini bar.

The lily and frog-filled pool in the lobby – that bursts into a noisy cacophony when night falls – is the first indication that this is to be no ordinary hotel stay. From there, the main pool and its fig tree bustling – particularly at dusk – with birds and monkeys lead on towards the beach, via the resort’s open air “grand staircase” – a title that somewhat underplays an experience that surrounds you with the smells and sounds of the jungle.
One guest, a woman from England who tells me she has visited the Datai 12 times over the years with her extended family (she is one of many repeat visitors I meet during my stay), reveals: “Whenever I’m facing any troubles in my life, I think of walking down the grand staircase. It’s my therapy.”
Further down, the path leads through the Butterfly Walk, bordered with specially-chosen nectar plants to attract more than 530 species of butterflies on the island down from the jungle canopy.
The resort’s purpose-built nature centre houses a team of naturalists and marine biologists where resident –and renowned – naturalist Irshad Mobarak developed the resort’s responsibility for protecting its environment into “The Datai Pledge”.

The programme of practical initiatives aims to create a sustainable future for the resort, while offering guests a variety of experiences, in order to better understand their fascinating but fragile surroundings.
The resort has partnered with local NGOs and social enterprises, including marine mammal conservationists MareCet, whose scientists take us out for a morning on the waters around Langkawi, to observe their research work into the Indo-Pacific humpback dolphins and finless porpoises.
MareCet guide Sherlynn Ng describes the Datai’s efforts as “really impressive”.
“Nine in 10 Malaysians probably wouldn’t even know we have dolphins out here, but the Datai is giving its guests the opportunity to find out about them and spread the word that they’re here and they need protecting.”
The resort is also working to regenerate the bay’s reef with five large artificial steel frames “planted” with rehabilitated corals from the resort’s nursery within the nature centre, where they are cared for until they are healthy enough to be returned to the sea.

It is working with Malaysia’s Department of Fisheries to reach local people and encourage them to fish sustainably, with the hotel operating a buy-back scheme for their catch.
Back on land, we join an evening walk guided by nature centre manager Dev Dass, serenaded by cicadas so loud that guests have mistaken them for car alarms. Dev halts a few meters in and says: “Hear that! That’s the sound of a healthy forest.” A great hornbill calls out above us.
Another 100 meters in, though, and he stops again. He points out an aquilaria tree, highly prized for its use in perfumes, although most of its resinous agarwood has been scraped away by poachers. “We’re not going to be able to save this one,” he says, crestfallen.
The Datai now employs 35 rangers to secure the perimeter of the resort’s 1,800 acres from poachers. It has also heavily invested in cutting the resort’s waste, with its own glass water bottling system. Single-use plastic is practically outlawed, and even the boutique’s assistant apologetically refuses to let me keep the manufacturer’s plastic wrapping on a shirt that I’m by now ashamed to say would have been quite handy for the flight home.
Nothing leaves the resort bound for landfill. Food waste is sorted, drained of liquid and donated to local chicken farmers and dog homes. Crushing machines turn glass into fragments to be mixed in to concrete and polystyrene into filling for bean bags, while the team’s pride and joy is “the Asher”, an incinerator producing only steam and neutral ashes, which can be used to improve the forest floor.

HOUSE-MAG.CO.UK 93
Guests can tour the permaculture kitchen garden and pick herbs and vegetables to use in a cooking class, or participate in craft sessions using leftover coffee grounds from the kitchen and burned-down candles from the rooms, to create their own unique memento.
The focus on a gentle, relaxing stay at one with the environment extends to the evening, when you might catch the sound of the piano floating from the bar. This is no party resort, and the lights are kept as low as possible overnight, because the forest’s nocturnal creatures need it to be dark.
Our farewell experience is “Mandi Embun”, an early morning leisurely walk into the forest, culminating with immersing ourselves under the waterfall of a pristine stream. It’s a ritual long practised by the Malay people to achieve wellness and longevity.
Irshad, who is guiding us, speaks of his pride at the Datai’s efforts to turn a guest’s stay into a lasting appreciation of the glories of nature.
“When you’re breaking new ground, you can see other hotels tucking their shirts in, pulling their socks up.
“May this be the start of something bigger.”

of state for levelling up, is looking to bring to parliament the Renters Reform Act after the Kings coronation, well, it happened!
FLEXITARIAN; OR JUST A NORMAL DIET?
• The end of Section 21 will be abolished!
MORE CHANGES AHEAD FOR LANDLORDS!
I reported last month that Michael Gove, the secretary of state for levelling up, is looking to bring to parliament the Renters Reform Act after the Kings coronation, well, it happened!
• The end of Section 21 will be abolished!
• Tenancies could potentially be set at periodic from day one – ending fixed terms!
• Rent increases limited to one per annum
Flexitarian is a word which has only recently appeared in our day-to-day vocabulary but one which seems to be trending in the ever-developing world of people’s dietary needs…
• All Landlords to sign up to an Ombudsman Portal (mandatory)
• Tenancies could potentially be set at periodic from day one – ending fixed terms!
• Rent increases limited to one per annum
• All Landlords to sign up to an Ombudsman Portal (mandatory)
But what does it really mean?
• Landlords to register to a property portal and all properties they own
• Landlords to register to a property portal and all properties they own
• Landlords must consider all permissions to pet requests
• Decent Homes Standard to be adhered to
The Oxford dictionary definition is “A person who has a primarily vegetarian diet but occasionally eats meat and fish”. I don’t know about you but this to me appears to be describing what we would call a good old fashioned “balanced diet”, but we have somehow warranted the need to coin a title for it. Why so?
The detail is of course is all in the paper! Although this sounds as if it is gearing more towards the tenant, in my 30 plus years of experience, a section 21 is used for rent arrears, the landlord wanting to move back in or the landlord wanting to sell, all these will be provided in a new updated Section 8 notice.

But, of course, this doesn’t help the landlords feeling more persecuted with the present mortgage rate rises and rental income being practically taxed on turnover and not net profit if the properties are not held in a limited company.
In a market where the extreme is becoming more popular, and restaurants are becoming more and more niche in their menus, it’s hard to keep up with what, how much and how far operators should be going to cater for all everyone’s requirements. It’s a veritable minefield of can and can’t eat, and the worry is that too little or too much might alienate or offend certain foodie types. Which of course no restauranteur wants to do.
But, of course, this doesn’t help the landlords feeling more persecuted with the present mortgage rate rises and rental income being practically taxed on turnover and not net profit if the properties are not held in a limited company.
I like the idea of this Flexitarian creature, a casual vegetarian who looks for the benefits of a sustainable yet well rounded diet where nothing it off limits but everything is viewed in moderation. It feels inclusive and surely a win win for all those involved?
Before deciding anything drastic, please ring me and have a chat and I am always happy to discuss the options out there for you.

‘you don’t know, what you don’t know’
Why not look to become inclusive all year round, and this Flexitarian ethos is what we’re going to focus on in 2022. Living life in balance sounds like a mantra that we could happily stick to.

Clever ways to make small rooms look bigger
Want to make a small home feel bigger? Lisa Salmon seeks some tricks of the trade.
Many people live in compact or ‘bijou’ homes and would love a bit more space. If moving or extending simply aren’t an option, however, could you at least make your home look and feel bigger?
“There are a multitude of clever tricks to create the illusion of space in a smaller room, and they don’t have to break the bank,” says Sarah Lloyd, interiors and paint expert for Valspar.
Here, Lloyd and fellow interior designers outline cheap and easy ways to make rooms look bigger…
Use light paint colours
“Lighter shades of paint will help reflect light around your home and make it feel larger,” says Ryan McDonough, interior designer at Myjobquote.co.uk. “Whites, creams, and pale greys work well for this. Sticking to just one shade in each room will also help to enhance the space.”
Darker paint can highlight outlines and shadows, drawing the eye into the corners of a room and giving the impression of a smaller space, explains Lloyd. “Brighter walls are reflective and create an airy, open vibe,” she adds. “Soft whites and creamy colours are the perfect paint palette to maximise your space, and going lighter on wall trims and mouldings make walls appear further away.”

Paint skirting boards white
This can help create a clever optical illusion, explains Lloyd: “It makes the walls look further away, and takes very little time or cost to do.”
Include pops of colour
You don’t necessarily have to shy away from colour altogether, however. “Pops of colour against a lighter, neutral base can create a more aesthetically pleasing room, without making the space look overcrowded. So look for cupboards, countertops, seating, and other pieces of furniture or décor in your favourite shades,” says Chris Dance, director and head of design at InHouse Inspired Room Design.
“To keep your interiors feeling calm and sophisticated, choose just one aspect to add colour to and look for slightly more muted
tones, like cherry reds, forest greens and navy blues, instead of bright primary colours.”
Go for feature stripes
Painting stripes on a feature wall is an interesting way to change the perception of a space – and allows for some individuality, says Lloyd. “Pairing colours effectively is important here,” she adds. “Vertical stripes in soft colours make ceilings look higher, and horizontal stripes make rooms appear wider, so they’re great for compact spaces.”
Scale back furniture
Although it’s tempting to push furniture against walls to give yourself as much room as possible, nothing makes a room seem smaller than having all your furniture against the walls, Lloyd warns: “Leaving space either side of sofas and cabinets creates a lovely sense of roominess.”

And if you’re buying any new furniture items, look for slimmer, less chunky designs, she advises. “Opting for thinner legs and less-bulky pieces lets light flow through the gaps and gives the impression that the furniture takes up less room.”
Fix the TV to the wall
Lloyd suggests: “Installing a television on the wall looks modern and prevents taking up any precious floor space.”
Use the same flooring throughout McDonough says you can create flow by using the same flooring throughout your home. “This will make a big difference in how large your home feels,” he promises. “Laying flooring boards is a great idea, and adding rugs can help create a more cosy feel, without having an effect on the visual spacious look.”
Ditch the drapes
Curtains block views of the outside and can make rooms seem more insular –even if they only cover part of the window, says Lloyd. “Installing blinds or shutters
guarantees privacy without seeming too imposing, and if curtains are a must, choose a pole that extends far beyond the edges of the window so the view isn’t blocked,” she advises.
In addition, try using sheer fabrics where possible. “Lighter colours such as ivory and cream will seem almost translucent in a sheer material, and accentuate the room without overpowering it,” says Lloyd.
Maximise light
Dance says one of the main criticisms of small rooms is they can appear dark and stuffy. Where possible, ensure there’s enough light and ventilation.

“This will help create a brighter, fresher space that’s more pleasant to be in,” he says. “Once you’ve let in all the natural light you can, identify any remaining dark corners and add lamps or LED strips to brighten them up.”
Clear clutter
A small kitchen, for example, will benefit from clear countertops and surfaces. Dance suggests: “Then add a few carefully chosen ornaments or pieces of artwork to draw the eye towards these clear surfaces. Adding more décor may seem counter-intuitive, but it works because the space won’t be too overloaded with visual stimuli if everything else is neatly tidied away.”
Keep the floor clear
One of the best things you can do in a small home is to keep the floor as clear as possible, says McDonough. Try adding floating furniture, such as nightstands and shelves, to keep the ground clear, he suggests.
Use vertical storage
Dance says vertical storage techniques – including wall-mounted cupboards, floating shelving, ceiling racks, and other units that don’t rely on floor space – will maximise dead space on the walls. “By choosing vertical storage solutions over freestanding storage, you’ll have more room at ground level and the area won’t feel as cramped,” he says.

Use mirrors
McDonough says mirrors help reflect sunlight around the room. “A couple of large leaning mirrors against a wall can make a big difference in how big the room seems,” McDonough explains. “If you want to enhance the view and ensure as much light as possible is reflected, artfully place your mirrors so they reflect a window and the outdoor view.”
Dance suggests hanging a large feature mirror above a fireplace, or on a wall that’s perpendicular to a light source: “This not only gives the illusion of more space, but also helps reflect the natural light coming in from one angle, helping it shine into other parts of the room.”
Add reflective materials
Glossy tiles and other high-shine materials can help maximise the effect of a mirroredstyle wall, says McDonough. “This will bounce light around the room and make the space seem much larger, more open, and airier,” he says.
Dance adds: “The mirroring method also extends to other furniture items — pieces made from polished wood and shiny metals can help bounce light around and make your small room appear larger.”

Changing with the times
Partners in Design are often approached by homeowners looking to downsize. One of the first questions is whether their current furniture would be suitable for their new home both in terms of proportion and style. Furniture which looks fabulous in a London townhouse or Georgian rectory may be out of place in a country cottage or new build apartment. It can also be daunting, having lived somewhere for a long time, to face a
blank canvas in terms of colour, lighting, out of date bathrooms and kitchens etc.
Partners in Design work with clients moving to Dorset from the very beginning of the process. They show on scaled floor plans where larger furniture could be accommodated in the new home, leading to a smoother moving in day and streamlining decisions as to what should be sold or given
away before the move. They can give a new lease of life to upholstered furniture and window dressings and design new furniture, soft furnishings and lighting to complement what is being kept. They design, make and fit built-in furniture and kitchens as well as updating tired bathrooms.
If a house would benefit from remodelling - for example to create more open plan living- they use 3D Cad design to show what can be achieved.
If clients are unfamiliar with the area they will not know trustworthy trades or suppliers on whom they can call. Partners in Design have a wonderful in-house team of trades and craftsmen with whom they have worked for many years and whose workmanship they guarantee.
Moving can be a stressful process but Partners in Design minimise that by working hand in hand with clients through every step of the move; from initial consultation to final accessories

How to encourage green-fingered kids into the garden
Get your children into gardening with these easy-to-grow veg and salad options.
Sunnier weather beckons and with that, the urge to get your children into the garden, or at least let off steam in the open space.
If you’re short of ideas be reassured that the kids can still sow vegetables and other seeds into the middle of June, which should germinate quickly to produce tasty and colourful salad leaves, edible flowers and healthy veg.
Almost one in three amateur gardeners has gained inspiration for gardening from their parents, according to YouGov research from Readly magazine app – so there’s no better time to start.
Welsh specialist kitchen gardener, best-selling author and YouTuber Huw Richards, who has 730k followers on his channel, selects the following choices which can still be sown and are also suitable for containers:
NASTURTIUMS
“Children could plant a hanging basket or container with nasturtium seeds, which will produce bright flowers which they can later put into salads, for a peppery flavour.
“The big seeds look like little brains and can be popped into the ground 2cm deep, or in a hanging basket. They grow really fast and trail or spread, creating a profusion of flowers usually in orange, reds and yellows. There will always be a bee on the plant when it’s in flower.”
GROWING TIP: Sow them up to mid-June and just a few seeds will create an array of colour. Just make sure the seedlings don’t dry out in the first few weeks.
GARDENING | CHILDREN

PEAS
“Peas are my favourite. When you eat fresh peas straight from the pod they are so sweet and are like little snacks. Children can eat the pea shoots as well, two or three weeks after sowing, which means they don’t have to wait too long, so it feels like a fast turnaround.
“I’d recommend a mangetout or a sugar snap if they want to eat the whole pod. ‘Oregon Sugar Pod’ sugar snap is a great variety, while the ‘Ambassador’ pea is widely available. The seeds are dried peas, so easy for little hands to manage.”
GROWING TIP: Start them off in pots or plant directly into the soil, 2cm deep, in a sunny situation. You can sow peas until mid-June, he says.
PUMPKINS
Any children who love Halloween may enjoy growing their own pumpkins, Richards suggests. “These are quite a bit of fun and surprisingly simple to grow but need a bit more space.” As well as carving faces in the pumpkin come autumn, you can also tip the seeds out, coat them with cinnamon and roast them, to give the children a healthy snack, he suggests.
“If you are looking for something to fill up an empty corner, a single pumpkin plant will do that for you. It grows fast and every day the children check the plants and the pumpkins. Maybe they can take a ruler out to check how long the plant is or how wide the pumpkin is.”
GROWING TIP: Sow seeds until the end of May. They prefer a sunny site and need a lot of compost to get started. Seedlings should pop up within a week. Good varieties include ‘Jack O’Lantern’.
RADISHES
Sean Lade, director of Easy Garden Irrigation, adds that radishes are another must-have because they are ready for lifting just three to four weeks after sowing.
“This short growing cycle is perfect for kids, who may not have the patience to wait for a longer-growing vegetable, and they come in a variety of colours and flavours, making them exciting for kids to experiment with and try new things,” he says.
GROWING TIP: Grow them in a sunny spot in well-drained soil with added compost about 1-2 cm deep and 2-3 cm apart, after removing stones, weeds and other debris.
CHILDREN | INTERIORS
HOUSE-MAG.CO.UK 125
PA Photo
To make it easier for children to sow the seeds, make a furrow with a stick and sprinkle the seeds along the furrow, covering them with soil and gently patting them down before watering. Thin seedlings as they grow, then lift radishes when the tops push out of the soil.
RUNNER BEANS
“These have a bigger seed size than peas, so are very easy to handle. They can grow to about 2m and children can enjoy the beautiful red flowers and the bumble bees that visit them.
“The beans that you sow are pretty, pink with black dots, so are very visual. Easily assessable varieties include ‘Scarlet Emperor’.”
Growing tip: Grow them on a south-facing boundary or wall and stake them with canes, or make a wigwam to grow them up.
SWISS CHARD ‘BRIGHT LIGHTS’
“This variety produces a rainbow of coloured stems in shades including white, pink, yellow, green, orange and red – and they look so cool. They are often planted in ornamental borders because of how beautiful they are,” he says.
Swiss chard ‘Bright Lights’ is ideally grown in a bed or a large container. Sow seeds 1-2cm deep with 2cm between each seed and grow them as a ‘cut and come again’ crop which can add a burst of colour to any salad.
Growing tip: Keep the crop well watered and the seedlings will quickly appear and start turning different colours. They can be grown in sun or partial shade.

HAGERTY CHARTS THE CHANGES IN THE CLASSIC CAR MARKET
The latest update of the UK Hagerty Price Guide shows that the world’s most valuable cars continue to become more valuable, and that the young drivers of the ‘80s and ‘90s are reliving their youth and snapping up hot hatchbacks.
Launched in 2012 it tracks the values of cars from £multi-million exotics to humble hatchbacks, collating the results of auction sales, dealer sales and in some cases private sales, to help build a true picture of the financial value of a car.
Each quarter, the latest valuation data is applied to the guide, freely available through Hagerty’s online valuation tool, with 15,000 makes, models and year of vehicles now listed.
Hagerty has formed seven bespoke indices within the guide, the first of which is the representative Classic Index, a group of 50
cars selected by to best reflect the average UK classic car market, including cars as diverse as the Ford Capri, Datsun 240Z and the Daimler 250 Dart.
Hagerty has highlighted some of the key takeaways from the 31st update of their guide and hot hatchbacks were the top gainers throughout 2021, and still retain second place. Such cars as the Ford Escort XR3i, the Vauxhall HS Chevette and the MG Maestro Turbo all made big gains.
The Best of British Index saw a few key cars on the list reduced in value, such as
the Austin-Healey 100, the Sunbeam Tiger, and the Jaguar XK120, while the value of other key cars, like the Aston Martin DB5, remained relatively flat. But over the past 12 months, the list was pulled up by a handful of cars that soared in value, including the Ford Sierra RS500 Cosworth that rose 41 per cent in the last year alone.
The Festival of the Unexceptional Index has struggled a little in overall terms, with the index now at about 90 per cent of its value of 2018. That said, every car in the Index rose or remained static in the last year, with some, such as the Vauxhall Viva HB, the Citroën CX S2 and the British Leyland Princess 1800, all rising over 10 per cent in the same period.

ROAD TEST: ALFA ROMEO STELVIO QUADRIFOGLIO - A SUPERBLY ACCOMPLISHED PACKAGE
So many people think that unless you have owned an Alfa Romeo you are not a true petrol head, and you can kind of see their point. While classic Alfas probably still deserve their reputation for being temperamental, newer models have in theory left that reputation behind.
The trouble is reputations can take a long time to disappear and that’s a shame because it prevents many people from enjoying some cracking cars, and they don’t come anymore cracking than the Stelvio Quadrifoglio.
The ‘standard’ Stelvio range is by no means backward in accelerating forward, with even the least athletic engine producing 190hp and the most powerful 280hp. It is the 510hp Quadrifoglio that is the real. star though, it’s like an automotive Summanus. This is an SUV very definitely designed with performance, rather than off-roading in mind, and it REALLY performs.
It doesn’t come cheap though with prices starting at £79,619, which puts the Alfa against some very stiff competition from arguably much more premium badges. Standard fare on the Quadrifoglio is suitably generous, as you would expect on car of this price, and the interior is a heady mix of leather.
On the road the Quadrifoglio has a bit of a dual personality. It is quite happy to potter through urban streets, but show it an open road and its inner darkness is revealed. Reaching 62mph in 3.8 seconds is good in anyone’s book, but when you’re
talking about a large SUV it is particularly impressive. The Quadrifoglio is light thanks to the use of aluminium and carbon fibre but it’s the all-round performance, not just speed, from the way it puts the power down, to the handling and steering. It’s a superbly accomplished package.
The power delivery is nothing short of vicious and the exhaust note delivers a much more tuneful, if equally loud, output as many a supercar. This is a well-honed, well-crafted and hugely entertaining car. It manages to combine so many positive attributes and is a delight to drive.
It’s achilles heel is price, the competition is just so much more premium in not just badge but build quality and feel. The Stelvio isn’t bad by any means, but it just isn’t £80k worth of quality. It’s for this reason that I suspect many premium badge drivers will stay loyal to their usual fare, but the few that don’t will not be disappointed.

CONCOURS OF ELEGANCE LE MANS CENTENARY CELEBRATION
The Concours of Elegance has revealed that 2023’s eagerly anticipated Le Mans Centenary celebration will feature two of the race’s most significant cars: Bentley Speed Six ‘Old Number One’ – which triumphed in both 1929 and 1930, and the Mercedes-Benz 300SL W194, which took first place in 1952.
These highly significant models and many more will line up in the grounds of Hampton Court Palace from the 1st to 3rd September, at what is set to be a most impressive display – the perfect way to celebrate the centenary of the world’s most famous race.
Bentley Speed Six ‘Old Number One’, which emerged victorious in 1929 and 1930 - the first car to win the race back-to-back - is widely considered to be among the most significant Le Mans winners of all. ‘Old Number One’ was one of five cars entered by Bentley in ’29, despite the marque being in a precarious financial position.
‘Old Number One’, with its tweaked largecapacity motor made 190bhp in race trim, enabling the substantial machine to hit 115mph flat out down the Mulsanne straight.
Piloted by Woolf Barnato – Bentley chairman and majority shareholder – and Tim Birkin at La Sarthe in 1929, ‘Old Number One’ vanquished American entrants from the likes of Stutz, Du Pont and Chrysler, as well as British entrants from Invicta, Lea-Francis and Lagonda. The Bentley took victory with relative ease after a dominant display and returned the following year to triumph again, staging a formation finish once more.
Also on show this September will be the legendary Mercedes-Benz 300SL W194, which won Le Mans in 1952 – the first victory for a German manufacturer, and the first for a closed body car. One of just 10 racing cars produced, this very machine was part of a one-two victory for the marque, with Hermann Lang and Fritz Reiss at the wheel.
2023’s Le Mans Centenary celebration will complement the display of 70 rare and spectacular Concours Cars at next September’s glamourous event. Outside the main display of vehicles, the Concours of Elegance will assemble around 1,000 further cars in a series of special features and displays.

The “Discovery HC” from HC Classics
With a resurgence in the popularity of outdoor living combined with an appetite from many would-be adventurers for a more refined outdoor experience, Richard Carp, owner and creator of the Discovery HC, shares with us how there could be no better time to be launching this hugely capable vehicle to the market.
What do you think are the key drivers behind this increasingly popular sector of the market?
The key drive behind this would be the recent popularity of independent holidays – not flying abroad and therefore being more in control of your holiday or break.
Also, being in control of your destiny! The opening up of more outdoor venues which facilitate families, appeals to a lot of people. Britain is a wonderful destination in the summer to explore, especially in Scotland and Wales, with remote areas becoming more accessible, which leads to outward bound adventures. Allowing a totally independent lifestyle.
What made you choose the Discovery as the platform for this project?
The Discovery Series 1 was a very prestigious and popular car that Landrover produced in the 90s but no one has sought to restore and refine them to the standard of a new car whilst retaining the spirit of a classic Landrover. It becomes an individual and exclusive car. Too many companies are restoring the classic Defenders to a similar standard, which is why we chose the Discovery.
Tell me about your passion for the outdoors and what this project means to you personally.
We are keen travellers and this gives the opportunity for spontaneity. The car is individual, you are your own boss! It is a comfortable car to drive with all the modern extras so you can drive off in luxury. It is reviving a model of car designed for adventure travel, which we love,
MOTORING | DISCOVER HC
JUNE 23 138
but now it has that extra advantage for creature comforts, which at our age is wonderful! Meaning we can still have adventures without discomfort!
What is it about this particular Discovery that brings something new and fresh to this competitive market? Or to put it another way, what are your key differentiators?
No one in the commercial field has taken on reproducing the Discovery, which was very prestigious in its day. It is an iconic shape and wonderful for every day use and yet you can jump in and set off on your travels at anytime in great comfort and safety. As specialists in classic car restoration and interiors it has given us the opportunity to demonstrate and improve the original specifications of the car, bringing it up to modern standards and comfort.
What is the vehicle’s accommodation capacity?
It is a comfortable five seater car with accommodation above – an electrical operated tent that sleeps two.
Who is your target market for the Discovery HC? Somebody who wants an exclusive car individually tailored to their requirements, whether it’s groups or couples keen on expeditions or a family who loves adventures in a classic but updated vehicle.
How do you feel this vehicle compares to others?
Firstly, it is far more roomy and comfortable with more creature comforts, whilst offering a smoother ride. There is plenty of space, plus the boot door is bigger which makes it more practical and the all round visibility is better as the windows are bigger.
What equipment and facilities could one expect to see fitted as standard?
The standard spec for the Discovery HC is extensive and includes a high-end bespoke interior finish with leather Alcantara seats and a uniquely designed dashboard with double din sat nav and audio system. Plus, airconditioning, luggage containers and a roof rack for plenty of storage makes this the perfect car for families.

• 300 Tdi Diesel Engine
Could you give me an overview of the level of mechanical overhaul that the Discovery HC will receive as part of the overall build?
Every part of the mechanics are renewed or restored so it is basically a new car. The cars will be offered with either Diesel, V8 petrol, LPG powered or full electric.
In terms of pricing and the overall package, where have you tried to position this vehicle in the market? Slightly lower than our competitors as an entry point but very competitive compared to a modern Landrover.

Chef Maunika Gowardhan on how to get tandoori flavours at home
Gowardhan explains why India has the best street food, and how she fell in love with food through her grandmother
Chicken tikka masala is a much-loved dish, but it’s only scratching the surface of delicious food cooked in a tandoor.
The tandoor – a clay oven used in a lot of Indian cooking – offers a world of possibilities, and that’s something chef Maunika Gowardhan is keen to uncover.
It’s not like there’s just one type of chicken tikka. From murgh malai to reshmi tikka, the options are endless – and Gowardhan, 44, had the best exposure possible growing up in Mumbai.
“I grew up on really, really good street food – India is such a vibrant, diverse space. In every region you find some sort of street eat somewhere, and every corner of the country will have some sort of kebab or tikka,” she says.
“Sometimes, books can have one or two of those recipes – you can’t have a whole book on just that” – and that’s what Gowardhan has set out to change in her latest cookbook, Tandoori Home Cooking.
She wants people to recognise the history of the tandoor: “What really sets it apart, for me, is that it’s a cooking technique that is dated back to the Indus Valley [from 3300 BCE to 1300 BCE]. It’s something that is so historic, that has so much of a rich heritage – it’s such a vital part of how we eat, not just
ABOVE & RIGHT
in the streets of India or in restaurants, but even in our own homes.”
Even though most homes in India don’t have a clay oven, there are plenty of techniques to replicate that smokey flavour.
“When you have a look at the way a clay oven works, essentially it’s heat that’s 360 [degrees],” Gowardhan explains. “In our domestic kitchens, the endeavour is to replicate that – conventional ovens provide
heat in an encapsulated space. So they are similar, but they’re not the same.”
The main difference is the coals at the bottom of a tandoor – when fat drips from any meat or anything else you put in the clay oven, it drips onto the coal and the smoke that is produced gives the food that “charred, grilled smokey flavour”, she says.
But how can you get that at home? One of Gowardhan’s genius tips is making smoked butter. “You can store it in the fridge, and when you start basting your food with that smoked butter, you’re getting the charred, smokey flavour that you’re really yearning for in tandoori dishes.”
Not that Gowardhan has been perfecting smoked butter from a young age. “I’m going to put my hand up here and say when I first came to England [25 years ago], I didn’t know how to cook Indian food,” Gowardhan, who now lives in Newcastle upon Tyne, confesses.
She came to the UK for university, during which she was “thrilled” to be away from her parents with that “sense of freedom”.
But after moving to her first house and getting a job in the city of London, Gowardhan says: “It slowly creeps up on you – when you go to an unfamiliar place, what you really miss is that familiarity.”
FOOD & DRINK | MAUNIKA GOWARDHAN
JUNE 23 144
Maunika Gowardhan | Issy Croker/PA
That’s when Gowardhan started to learn how to cook Indian food, because “I craved it and yearned it all the time”, she says.
She would ring her mother back in India and ask for simple recipes – daal, rice, green bean dishes. “I cooked not just for sustenance, I cooked because I missed home and I missed good food,” she reflects.
Since then, Gowardhan fell in love with food and made her way into the industry, and this is her third cookbook. She now deems it her “calling”, saying: “I knew food was something that was a leveler on every aspect of my life.
“When we did really well, my mother would say, ‘Can I make you something?’ If we were really upset she was like, ‘Let me cook for you’.”
Gowardhan also suspects some of it comes from her grandmother, who was an “avid cook”.
“My grandmother was the hostess with the mostess. In the 1950s in the city of Bombay, a lot of film stars and Bollywood film stars in India would actually come to my grandmother’s house to eat her food. To be a fly on the wall at my grandmother’s dinner parties…”
Gowardhan’s grandmother passed down these recipes, and her mother’s passion for food “gave us this effervescence for cooking and eating good food”, she adds.
After dedicating the past 20 or so years of her career to Indian food, there’s a major thing Gowardhan would like people to know about the cuisine.
“People tend to forget it’s actually a subcontinent. Because it’s a subcontinent, you realise there is so much more, and every community has so much more to say about the food they cook.
“Of course, it’s blurred boundaries as you go through every space, but I feel like every 20 or 30 kilometres you’re travelling, the food changes – because the crop changes, because the climate changes, because the soil changes. All of that makes a huge difference.”
So, when people ask her to sum up Indian food, Gowardhan says: “It’s like saying, ‘What is your favourite European food?’ Impossible.”

INGREDIENTS
Wooden skewers soaked in cold water for 30 minutes
640g boneless, skinless chicken thighs, cut into bite-size pieces
Butter, for basting and cooking
Juice of ½ lime
Generous pinch of chaat masala
For the marinade:
3 garlic cloves
2.5cm ginger root, peeled
6tbsp Greek yoghurt
2 heaped tsp chickpea flour
1½tsp Kashmiri chilli powder
¼tsp garam masala
2tsp ground coriander
½tsp ground cinnamon
½tsp saffron strands, crushed
1tbsp dried fenugreek leaves (kasoori methi), crushed
Pinch of sugar
Salt, to taste
BY MAUNIKA GOWARDHAN | FOOD & DRINK
Tandoori chicken tikka SERVES 4
1. To make the marinade, grind the garlic and ginger with a splash of water in a blender to a smooth paste. In a large mixing bowl, combine the yoghurt with the chickpea flour. Mix well to get rid of any lumps and form a thick paste. Add the ginger and garlic paste, chilli powder, garam masala, coriander, cinnamon, saffron, dried fenugreek, sugar and salt. Stir well, mixing everything to a smooth consistency. Put two tablespoons of the marinade in a small bowl and set aside.
2. Add the chicken to the bowl and mix well to make sure each piece is coated in the thick marinade. Cover the bowl and leave to marinate in the fridge for two to three hours, or preferably overnight.
3. Preheat the grill to a medium heat. Line a baking tray with foil and place a wire rack over the tray.
4. Thread the chicken pieces onto the soaked wooden skewers and place them on the wire rack. Place the tray under the grill and cook for 17-18 minutes. Turn the skewers halfway through the cooking time and baste with the melted butter until the chicken is lightly charred around the edges and cooked through.
5. Meanwhile, transfer the reserved marinade to a small frying pan. Place over a medium heat and cook, stirring continuously, for five minutes until the marinade reduces and thickens. Add two teaspoons of butter and turn off the heat. Transfer the cooked marinade to a bowl.
6. Take the chicken off the skewers and add it to the bowl with the marinade along with the lime juice and chaat masala. Stir well to make sure the chicken is evenly coated. Serve warm with salad and naan or roti.
No-churn rose and cardamom ice-cream
INGREDIENTS
8 green cardamom pods (seeds only)
280ml double cream
2tbsp rose water
1 x 400g can condensed milk
1tbsp dried rose petals
20g pistachios, roughly chopped
SERVES 4
1. Grind the green cardamom seeds in a pestle and mortar to a fine powder.
2. In a bowl, whisk the cream with the rose water and cardamom powder until soft peaks form. Next, lightly fold the condensed milk, dried rose petals and most of the crushed pistachios into the whipped cream.
3. Transfer the ice-cream mixture into a freezerproof, airtight container. Scatter the remaining pistachios over the top of the ice cream and place in the freezer for six to eight hours, or preferably overnight.
4. When ready to serve, let the ice cream stand at room temperature for five to 10 minutes to soften slightly, then scoop into individual bowls.

Their first two shows, Katinka and Night in Venice, were performed at the old Hippodrome Theatre in Boscombe, moving to the Pavilion Theatre in 1956, which has been their main performing venue ever since.
Their values lie in producing West Endstandard shows at prices that the local community can a ord, nurturing local talent and raising money for local causes and to date, BBLOC has raised over £70,000 for local charities.
This year BBLOC has chosen to support the local charity - Macmillan Caring Locally - a charity providing specialist end-of-life care and support to families, carers and friends. They support the Macmillan Unit in Christchurch, Dorset, which is a centre of excellence. Macmillan Caring Locally is a small independent charity in Dorset, with no connection to the national organisation, Macmillan Cancer Support, therefore the support that BBLOC can give them is much needed and appreciated.
In 2020 BBLOC was ready to open Saturday Night Fever but due to the global Covid-19 Pandemic, the show had to be cancelled at the last minute. The financial implications of this were huge but they managed to survive and have come back stronger than ever and are determined to delight audiences for many years to come.
BBLOC pride themselves on how many past members have gone on to professional careers both on and o stage, and they regularly work with the local colleges and the Arts University to support students in building their experience in a professional environment. The company is made up of dedicated members who work tirelessly to create the magic both on and o stage, whilst still managing their own full-time jobs and families. This is the true magic of the theatre - these people have the passion and love for this craft that is so often lacking in professional productions. BBLOC are not just a theatre company but more like a family with some friendships going back over 60 years.
Over the past years, BBLOC has produced many blockbusting shows including Priscilla Queen of the Desert, Kinky Boots, Chitty Chitty Bang Bang, Sister Act, Grease, The Addams Family and most recently Calendar Girls The Musical.
Looking back 60 years to Katinka, production costs were in the region of £1,500, considerably less than the current costs which are now more than £100,000. BBLOC is a completely selffunded organisation that relies on strong ticket sales and the support of the local community to allow them to continue.
Their ethos of keeping theatre a ordable remains very important to them and with this in mind, they rely heavily on the generosity of their supporters and friends which in turn allows them to continue helping local charities. You can register here to become a friend of BBLOC for just £25 per year www.bbloc.co.uk/friends
Their next production - Joseph and the Amazing Technicolor Dreamcoat - in October this year, is certain to be another hit with all age groups, and tickets are on sale now at bournemouthpavilion.co.uk.
