Welcome We are finally stepping back into normal everyday life, spending time with friends and family again and heading back to some of our favourite places across the country. Whilst some people are rushing off on last minute staycations, others are still working at home in their newly decorated office. A fearsome new collection of animals have arrived in Hampshire as a world exclusive exhibition is now live at Marwell Zoo.

AMONG HIGHEST

The Hampshire zoo have a unique collection of larger than life creatures made of toy bricks in time for when they reopened their gates for the first time in three months.

The University of Winchester has excelled in the number of graduates from its undergraduate programmes who are in employment and further study, placing it in the top 10 universities in the country. Winchester is also the highest place university in the region.

SUPERSIZED! features up to 40 colourful models and is on display around the 140-acre park alongside the zoo’s hundreds of exotic and endangered species until 1 November 2020. Professional toy brick builders said it took more than 10,000 hours and two million bricks to create the giant sculptures. Guests will enter the zoo through a ‘shrinking machine’ to start their journey around an educational trail which dispels the myths around these often misunderstood creatures. The figures are revealed in a new report by the Higher Education Statistics Agency (HESA). The Graduate Outcomes Survey 2020 is the largest survey of employment and further study outcomes for UK graduates and looked for the first time at what happens to students after they leave university. Graduates who completed a higher education course in the UK between 1 August 2017 and 31 July 2018 were invited to take part in the HESA Graduate Outcomes Survey. Graduates were surveyed 15 months after they graduated.

County food group Hampshire Fare has announced that the 20th Hampshire Food Festival will be celebrated next July 2021 along with Hampshire Fare’s 30th anniversary. Tracy Nash, Commercial Manager, Hampshire Fare, said: “Every 1st July marks the first day of Hampshire Fare’s award-winning Hampshire Food Festival. This year would also have been the 20th anniversary of what is considered to be the most ambitious food festival in the country in terms of scale and reach – a month-long and countywide celebration of food and drink that encompasses a wide variety of activities, events and menus to suit all tastes. “We were very excited about this significant milestone. However, keeping the public safe takes priority. Aware of the need to support our local food and drink producers, retailers and hospitality venues, we did consider holding a virtual celebration. But we concluded that our members and many followers would prefer the razzmatazz of an actual festival! And so would we! Food and drink is one of life’s greatest pleasures, and Hampshire Fare’s Hampshire Food Festival is all about trying, tasting and socialising in a relaxed carnival atmosphere – not something that can be replicated online.” “We suggest that those interested in next year’s very special double celebration check out the Hampshire Fare website and subscribe to the Hampshire Fare newsletter to be kept informed about everything.”

The popularity of the great outdoors has led many more people to enjoy time in the countryside during the pandemic which is why certain activities are at the heart of new training courses to be delivered by a Hampshire based training company. From its base at Botley Mills, DA Training and Consultancy has been operating since 2012 and they are now launching a separate outdoor-focused arm, DA Outdoors. The main business is a national training and consultancy provider which delivers funded training covering apprenticeships, workforce skills, redundancy support, commercial training and e-learning, via an experienced team of tutors, teachers and assessors with a customer base stretching across the country. The team is currently working to create courses best suited to altering safety guidance which will comply with social distancing measures, for example land and water-based day courses covering bush craft and foraging, expedition and camping skills, aimed at both locals and visitors who may be planning a staycation break in Dorset or Hampshire. Through DA Outdoors we are initially focusing on the delivery of the following 2 Apprenticeships: Level 3 Outdoor Activity Instructor or Level 3 Event Assistant. In many ways, nature has flourished during lockdown: trees in city parks have breathed the cleanest air in decades, emboldened foxes are strutting along residential streets as if they own them, and the cast of critters in Springwatch has never seemed healthier. But that picture of an environmental Eden doesn’t ring true across the globe. In countries heavily dependent on wildlife tourism, communities have been hit hard by the pandemic with widespread job losses, posing a threat to the animals they live alongside. Across Africa, millions of people are employed in the safari industry and vital conservation projects benefit from donations driven by tourism. Even the sheer

An expert view on safaris of the future: Beks Ndlovu A professional guide who grew up in the bush, Zimbabwean Beks Ndlovu launched African Bush Camps with a vision for creating an authentic safari experience with the full involvement of local communities. Sustainable tourism is at the very heart of his ten camps in Zimbabwe, Botswana and Zambia, which have remained open during the global pandemic. “We have 25% of staff on site,” he explains, “Because there are less eyes in the field, we do really need to have some sort of surveillance.” Although he acknowledges there has been an unfortunate upsurge in poaching incidents, he remains hopeful for the long-term future of safaris. “I’d like to believe that we all take heed of this time; we’ve seen clearer skies, less carbon emissions,” he reflects, suggesting a growing trend for more sustainable travel. “We have small camps, it’s not mass market, there are no large gatherings and for the most part, it’s outdoors; it’s an attractive type of travel.” In reality, few changes are required to comply with new social distancing and hygiene guidelines. But the crisis has certainly inspired new positive ideas. “It’s validated the work and energy we put into conservation and working with communities, to the extent we are saying we need to find ways in which we can do more.”

Work starts on Winchester flood defence scheme Construction on a major new flood defence for Winchester at Durngate has started. The scheme will provide three new sluice gates

It will complete the city’s network of defences across the north of the city to help to control flooding, including the historic City Mill. The sluice gates are adjustable so they can help to manage the flow of river water – the gates will be able to hold back up to 250,000m3 of water, equivalent to around 3.2 million bathtubs of water. Work is now underway on a temporary dam to enable the installation of the first sluice gate. Two of the gates will be located either side of Durngate car park with the third between the road and pedestrian bridge at the entrance to Winnall Moors – once in place earthworks will link the defences all together from the School of Art to the main river. Areas of Winchester experienced severe flooding in 2014 prompting a review of the city’s defences. Additional measures were installed in 2016 helping to safeguard residential properties, River Park Leisure Centre, Winchester Arts College and St Bede’s School. The £1.6m scheme is funded by Winchester City Council with £548k provided by the Environment Agency, part of a six-year

In the absence of international travel, we’ve had to search farther and wider to find connections with other parts of the world. During the past three months, sales of wines have skyrocketed, hinting at the holidays we’ve enjoyed from the comfort and safety of home. A product of local soil and climate, wine encapsulates the feel and flavour of a region, reminding us of places we’ve visited and new destinations we yearn to see. Based on the bottles that have been flying off shelves, these are the destinations to visit when the world starts moving again. Provence, France Warm weather demands a refreshing drink, and a glass of silky, elegant rosé is the perfect match for the Mediterranean spring we’ve been enjoying so far. Both Waitrose and Co-op have reported huge rosé sales compared with this time last year, and bottles from Provence have been doing particularly well. Like the soft, ethereal light that attracted so many great artists to this region of southeastern France, rosé blooms with aromas of ripe berries and zings with light citrus fruits; settling into a sunset with a crisp chilled glass is like stepping into a Cezanne painting, transporting you to Provençal olive groves, pine forests and lavender fields.

Taking a walk outdoors can work wonders for your mental and physical health during lockdown, but to truly embrace the benefits, experts say we must bring our body and minds in sync. Known as ‘walking meditation’, this type of mindfulness in motion is about more than just getting from A to B. Rather, it’s an opportunity to clear your mind of any internal worries, by hyper-focusing on the rhythm of your steps and tuning in to what’s going on around you. What is walking meditation? Also know as ‘kinhin’, this type of peaceful practice is part of several forms of Buddhism that involve movement and periods of walking between long periods of sitting meditation. R O A D T E S T: F O R D F I E S TA S T Many car makers have legendary names on the rollcall of automotive history and Ford can claim more than a few. The Fiesta has been a familiar site on our roads for decades and with a myriad of body, trim and engine options it truly does offer something for everyone. The halo model has to be the ST with its hardcore sporting looks, racy interior and an engine note to match. Classic fast Fords have been in the ascendancy for some years and with new fast Fords like the Fiesta ST it’s not hard to see why.

Power comes from a 3-cylinder 1.5 litre turbocharged petrol engine that develops 200 hp and propels the car from 0 to 62 mph in 6.5 seconds, yet 40 mpg in combined driving shows just how useable the ST is in daily commuting. Standard fare includes rear privacy glass, navigation, Recaro seats, air conditioning, a plethora of ST badges so you don’t forget you’re in the sporty version and selectable drive modes of normal, sport and track. The ST-3 costs approximately £2,500 more

It shares all the practical virtues of the more sedate Fiestas with space, folding seats and sensible running costs. The bright colours, snazzy interiors and driveability is what sets the ST apart.

THE NEW MINI COUNTRYMAN The biggest and most versatile MINI, the Countryman, has received an update and new additions to its equipment. In addition to a plug-in hybrid drive, the new Countryman is also available with two petrol engines and one diesel engine ranging from 136hp to 178 hp. Turbocharging is used in the 3-cylinder petrol engines and in the 4-cylinder petrol engine of the Cooper S version. ALL4 is an option for four engine variants and a standard feature of the plug-in hybrid model. The redesign of the front section adds LED headlamps to the standard trim and adaptive LEDs as a newly added option. The range of body finishes includes newly added colours and a new Piano Black exterior dechroming option. Depending on the model variant, the Countryman is fitted as standard with light alloy wheels in either 16 or 17-inch. Inside it has a versatile interior with three fully-fledged rear seats which fold down with a 40:20:40 split. The addition of new options of Chester Indigo Blue and Chester Malt Brown have been added to the selection of seat upholstery. The new MINI Countryman is available in seven model variants and is priced from ÂŁ23,500 RRP and available to order now.

Look at some Audi, BMW and Mercedes Benz models and even a moderate amount of ticking in the option boxes can easily accelerate to a £50,000+ price tag. While any car with an Audi, BMW or Mercedes Benz moniker on the bonnet is an automotive powerhouse they are rather plentiful, especially lead-in models. So, you might be surprised to hear that one of the most stylish Italian luxury car makers, with strong links to iconic motoring name Ferrari, can be bought new for similar money.

Two petrol engines in two power outputs, and a diesel are on offer. The 350hp and 430 hp petrol units are 3.0 litre twin turbo V6 engines, the turbo diesel is also a 3.0 litre V6 and develops 275 hp. Even in entry level form the Ghibli is a head turner bestowed with generous equipment levels and a level of detail that feels very bespoke. The powerful twin turbo 3.0 litre V6 engine propels the Ghibli past the benchmark 62 mph in 5.6 seconds and on to a top speed of 163 mph. It’s a delight with lots of power and a super soundtrack from the exhaust. Although not

All of this at a price point starting at just under £55,000 makes it a surprising and little-known star of luxury performance motoring.

You can picture the scene, a Riviera quayside, cloudless blue skies, exclusive waterfront cafes and beautiful people. A sleek and sophisticated yacht attracts all the right kind of looks and a stylish sports coupe is parked waterside ready for the yacht owner to drive into the hills for a leisurely lunch. Whilst you may expect a Ferrari or Lamborghini, Rolls-Royce has a more than credible contender for those seeking something discreet yet desirable, quietly powerful and a head turner. The Rolls-Royce Wraith Black Badge was the first of a series of new models that provided an impressively sporting drive and a glorious sound track like no Rolls-Royce you have ever heard. It is a more edgy Rolls-Royce, offering a greater depth of performance in both the literal and audible sense. It has a darker hue with a distinct lack of chrome, and even the silver lady displays her darker side. Under the bonnet a 6.6 litre, V12 power unit produces 632bhp and an extraordinarily addictive growl under acceleration. On the road the Wraith Black Badge behaves with the serenity and aplomb you would expect from one of the

world’s most exclusive and best built cars. Show it a cross country road or a stretch of unlimited motorway and its character is transformed. Point-to-point it acquits itself surprisingly well across the rise and fall of a winding country B-road. On the open road its accelerative capabilities appear to know no bounds as the needle climbs the speedometer with the eagerness of a muscular drag racer. Its 642 lb ft of torque is felt to great effect should you choose to engage your right foot deeply into the rather sumptuous pile of the footwell carpeting. Under acceleration the roar from the engine is nothing short of sublime as the Wraith powers to the benchmark 62mph in just 4.5 seconds. A rainbow of colour choices exists for the Black Badge interior and as with all Rolls-Royce models the look and feel of the car is limited only by your imagination. Costing from £286,410 the Wraith Black Badge is bristling with neat and clever touches including the Spirit of Ecstasy that lowers gracefully into slumber beneath the radiator shield, only to emerge ready for another journey when the engine starts again. From its rather dark and menacing front to that discreet tail the Wraith Black Badge truly challenges the traditional vision of a Rolls-Royce.

NEW GOLF GETS LIFE The eighth-generation Golf was launched with two 1.5-litre petrol engines and two 2.0-litre diesel units. A month later the 1.5 eTSI mild-hybrid was made available. With the arrival of a 1.0 TSI 110 PS power unit the entry-price of the Golf is now £23,300 for the Golf Life. With the compact, threecylinder 1.0-litre turbocharged engine installed, the Golf is able to sprint to 62 mph from standstill in 10.2 seconds, before going on to a top speed of 126 mph (where permitted). The new engine results in the Golf being capable of returning between 49.6-53.3 mpg on the combined WLTP cycle, while emitting between 121-129 g/km of CO2 on the WLTP cycle. This new engine will be offered with a six-speed manual gearbox and only with Life trim. A mild-hybrid version of this engine with standard dual clutch gearbox (DSG) will be available at a later date. It is equipped as standard with 16-inch ‘Norfolk’ alloy wheels and automatic LED headlights, rain-sensing wipers, front and rear parking sensors, electrically heated and adjustable door mirrors with memory feature, and keyless start.

Sarah Rainey: ‘If we ever needed cake, this is the time’ Did you know it is possible to make meringue in a microwave? How about almost-instant ice cream with a freezer bag and some rock salt? Or a whole cake in the time it takes to boil an egg?

It sounds like chemistry-lab level alchemy, but these are just some of the miraculoussounding baking tips Northern Irish food writer Sarah Rainey shares in her new cookbook, 6-minute Showstoppers. “If you can make egg whites and sugar come together and puff up in the microwave,” she explains, “you’re halfway there to making an entire pavlova.” Her coconut berry pavlova genuinely takes six minutes to make, and probably even fewer to scoff. When it comes to baking, Rainey has a history of making the daunting and complicated seem suddenly achievable. Her

Frozen Nutella loaf INGREDIENTS

1 x 400g tub Nutella 50g unsalted butter 200g Hobnobs (13–14 biscuits) 400g cream cheese 80g icing sugar, sifted 50g chopped roasted hazelnuts

SERVES 8-10

1. Line a standard loaf tin (approx. 2lb or 1 litre) with cling film, completely covering the base and sides and making sure there’s plenty of excess overlapping the edges. I use three strips – one for each long side and one for the middle. Place a medium saucepan on the hob and turn the heat up high. You’ll also need a food processor (or a ziplock bag and a rolling pin) for crushing the biscuits, and a whisk. 2. Put 150g Nutella and the butter in the pan and melt, stirring often so they don’t burn. 3. Meanwhile, blitz the biscuits in the food processor until they turn to crumbs, or you can put them in a ziplock bag and bash them with a rolling pin. 4. When the mixture in the pan has melted to a smooth chocolate paste, tip the biscuit crumbs into the pan and stir until combined. Pour this into the lined loaf tin and use the back of a spoon to press it down. 5. In a separate bowl, whisk the remaining Nutella with the cream cheese and sifted icing sugar until smooth. Tip this into the loaf tin and spread on top of the biscuit base. 6. Finish with the chopped hazelnuts, covering the surface right to the edges. Wrap the excess cling film over the top of the loaf to cover it and place in the freezer for three to four hours to set. 7. Remove from the freezer around 20 minutes before serving and slice with a sharp knife dipped in boiling water. If you don’t eat it all in one go, keep the rest of the loaf, well covered, in the freezer – it should last for two to three months.

1. Preheat the oven to 250°C (fan 230°C) and line a baking sheet with greaseproof paper. 2. Mix the almonds, egg, coconut oil, maple syrup and vanilla extract together in a bowl until they come together into a loose dough. INGREDIENTS

Enjoy hot or cold, with a cup of tea. The cookies will keep for five to six days in an airtight tin.

Choca-mocha cake INGREDIENTS

30g cocoa powder

MAKES 1 CAKE, SERVES 8-10

1. Grease a 20cm-round, microwave-proof cake dish with a little butter and line the base with greaseproof paper.

3tsp (heaped) instant coffee 175g self-raising flour, sifted 175g caster sugar

2. Mix the cocoa powder and three teaspoons of coffee together in a small bowl and add approximately 100ml boiling water. Stir vigorously until dissolved.

3. In a separate bowl, mix together the flour and sugar. Add the coffee mixture, followed

4. While the cake bakes, make the icing. In a small bowl, add a splash of water to the remaining teaspoon of instant coffee and mix to make a paste. Mix in the icing sugar, a little at a time, adding more water if you need to, until you have a smooth paste, roughly the texture of thick cream. 5. When the cake is done, carefully tip it out on to a cooling rack and immediately spread the icing over the top (or drizzle, if you’re more artistic than me). You may want to put a plate or chopping board underneath the rack as this bit can get messy. 6. If you like, sprinkle chopped walnuts, pecans or coffee beans around the edge of the cake for a pretty finish – do this before the icing sets so they stick.

Beaulieu announces a revised Simply Rally calendar Beaulieu has released a revised calendar with a record number of 14 Simply rallies taking part in a star-studded line up of marque celebrations in the parkland surrounding the National Motor Museum. The COVID-19 pandemic halted the 2020 programme when the attraction had to close its doors to visitors in late March. Following Government guidance surrounding mass gatherings, a decision was made to cancel four major events, including the Spring Autojumble, the Hot Rod and Custom Show, the Beaulieu Supercar Weekend and the world-famous International Autojumble. Having reviewed the arrangements, Beaulieu has announced that the ever-popular Simply car rallies will continue to take place over the remainder of the year.

Simply Jaguar got the season underway on 19th July with all models welcomed, from the latest executive saloons to the glamorous E-Type. Simply Japanese then followed on the 26th July, before Simply Audi returns for its third year on 2nd August. The ever-popular Simply Ford has moved to 13th September, whilst the nation’s best-loved classics will be celebrated in Simply British Classics on 20th September. Beaulieu has also added two new Simply rallies to their revised 2020 calendar including Simply American and Simply Vauxhall. To ensure that Simply Electric gets off to the best possible start, this event will now launch in 2021. To ensure the safety and enjoyment of visitors is met, capacity will be strictly limited to 500 participants per Simply and tickets will only be available on a pre-booked basis to help those visiting feel safe during their day out. New procedures will be introduced and vehicles will be allocated specific bays in the parkland to ensure social distancing measures are adhered to at all times. As such, club bookings will not be accepted for any Simply rallies this year.

Entry for participants at all the Simply rallies is from 9.30am to 2pm. Non-participant visitors will need to enter through Beaulieu’s Visitor Reception building with their pre-booked attraction admission ticket from 10am. Participant and visitor tickets include entry to the whole of the Beaulieu attraction, including the National Motor Museum and Palace House, which reopened to the public on Saturday 4th July, as well as Beaulieu Abbey and its grounds and gardens. Entry to the indoor areas of the attraction will be managed on a capacity basis. Beaulieu has been awarded the Visit Britain ‘We’re Good to Go’ industry standard for its Covid-19 safety measures implemented to keep both visitors and staff safe. Participant tickets already purchased will be valid for the new rally date and will be factored into the maximum capacity.
