From the editor Welcome to our August/September issue of House Proud Magazine. As we slowly start to emerge from winter and enter spring we begin to re-discover our outdoor living areas. Every year I want to makeover my patio ready for all the summer bbq's I plan to have but I don't want to break the bank. So I thought this issue we would show you how to transform your patio into an outdoor oasis, all for under $1000! During my days as a photographer I would constantly get asked, how can I get good photos of my kids? It's the struggle most parents have - you want to capture all those memories of your children before they grow up but family portraits can be expensive. So I thought I would share a bit of my knowledge and hopefully some helpul tips with you about how to capture great family portraits or baby photos. HOW TO MASTER THE HUMBLE GARAGE SALE? WE HELP YOU TACKLE THE GRUELLING TASK OF ORGANISING A YARD SALE WITH A FEW SIMPLE TIPS.
Preparation is everything when it comes to holding a garage sale. The first step is deciding what is worth selling. Anything that is extremely valuable is probably better sold through a different forum like Gumtree, eBay or dedicated buyers of collectibles. Anything that is irreparably damaged or dirty should probably just go straight in the bin. If you are a secret hoarder, an empty-nester or about to move house, this can be an excellent opportunity to de-clutter. Finding it hard to part with some items? Enlist the help of a trusted friend or family member to be ruthless and make the tough choices. Next, pick your date and advertise well in advance in as many forums as possible. Sure, the old piece of cardboard taped to a pole works wonders for people already out and about on a weekend morning, but if you really want to attract buyers from far and wide, make sure you advertise elsewhere. This might mean placing an ad in a local paper or the Trading Post, posting on Facebook or Twitter, or just asking friends and family to spread the word. • If you are sticking with simple signage, think about positioning signs at heavily trafficked areas, such as local shops, sporting fields and major intersections. Make sure your signs are bright, eye-catching and, most of all, legible. There is nothing worse than having to pull over to read a scrap of paper, only to find you can't tell the number 1 from a 7. It's also worth listing on your sign any items that are highly desirable.
Just remember one man's trash is another man's treasure. The things that you no longer want might be of interest to other people. Know when to hold and when to fold: haggling is all part of the fun of a garage sale but don't get too carried away with negotiations. Potential buyers might be put off if you come across as aggressive.

Another essential element of preparation is making sure you have plenty of change, bags and even paper to wrap fragile items in. It's also a good idea to be ready for that knock on the door at 6 am, even when your signs clearly states that the sale starts at 7am! The best way to sell things is to organise everything. Separate things by either function or room and keep similar things grouped together or in "bargain bins'.
DISPLAY AND LABEL One of the best things you can do at a garage sale to help things sell is label everything with a price. Secondly display things nicely. You can hang jewelry up, group things in colourful pots or containers. If you're selling furniture have a mini living room set up to really showcase the furniture.

LAMB BURGERS with mint + f et a pest o
Ingredients :
Mint feta Pesto :
2 TBSP finely chopped shallot
750 g minced lamb
1 cup fresh mint leaves
2 TBSP fresh chopped parsley
250 g minced beef
2 TBSP pine nuts
1 TBSP finely chopped fresh mint
Salt and freshly ground pepper
1/8 tsp chilli flakes
1 TBSP Dijon mustard
6 round pitas
1/2 cup (125 ml) virgin olive oil,
2 tsp dried rosemary, crushed
Shredded lettuce for serving
185 g feta cheese, crumbled
1 clove garlic, minced
Salt and ground black pepper
Method : Mint-Feta Pesto: In a blender or food processor, combine the mint, pine nuts and chilli flakes then pulse until the mint is chopped. With the machine running, slowly add the oil in a thin, steady stream, processing until a thin paste forms. Add the feta cheese and pulse 3 or 4 times to mix. Season with salt and black pepper. Use right away, or cover and refrigerate for up to 3 days. 1. Prepare a BBQ or stove top for direct grilling over high heat. Brush and oil the grill grate. In a bowl, mix together the shallot, parsley, mint, mustard, rosemary and garlic. Gently work in the lamb and beef until well blended. 2. Divide the meat mixture into 6 equal portions. Shape each portion into a patty about 1 inch (2.5 cm) thick, being careful PAGE 12

not to compact the meat too much. Season on both sides with salt and pepper. Make a depression in the center of each patty with your thumb. 3. Place the patties, indent side up, on the grill directly over the fire and cook, turning once, until nicely charred on both sides, about 5 minutes per side for medium. The patty should give slightly when pressed. During the last 2 minutes of cooking, throw the pitas onto the edge of the grill and toast lightly, turning once. 4. Transfer the burgers to a platter. Cut off and discard about one-third of each pita round and open up the pocket. Place a little of the mint-feta pesto in the bottom of each pita, add a lamb burger, and top with shredded lettuce and a little more pesto. Serve at once. Serves 6. Ingredients : 2 cloves of garlic
1/2 bunch of fresh Italian parsley
2 TBSP sun-dried tomato paste
8 ripe cherry tomatoes
160 g dried spaghetti
300 g clams, mussels or cockles
1/2 dried red chilli
Extra virgin olive oil
1 glass Pinot Grigio blush
Method : 1. To start, peel and finely slice the garlic, quarter the tomatoes, then break apart the dried chilli, shake out and remove the seeds, and finely chop or crumble it. Very finely slice the parsley stalks, then roughly chop the leaves and put them aside for later. 2. Cook the spaghetti in boiling salted water according to package instructions. Around 5 minutes before it’s ready, place a large frying pan on a high heat. After 2 minutes, add a generous swirl of olive oil, quickly followed by the garlic, tomatoes, chilli, parsley stalks and sun-dried tomato paste. 3. Shake around, then add the clams (remembering to tap any that are open; if they don’t close, throw them away) and, after Recipe inspired by Jamie Olivers Comfort Food recipe.
30 seconds, add the wine. Pop the lid on for 1 minute, then remove so you can watch the clams, mussels or cockles open and the wine evaporate. 4. If you’ve got your timing right, as most of the shellfish pop open (throw away any that remain closed) you’ll be ready to drain your pasta and throw it on top with the chopped parsley leaves and a drizzle of extra virgin olive oil. 5. Give it all a good toss together, then taste the sauce — it shouldn’t need seasoning because of the clams, but it’s always wise to check. Beetroot chips Ingredients: 3 medium - large beetroots Olive or canola oil Sea salt & black pepper 2 - 3 sprigs fresh rosemary Method: 1. Preheat oven to 190 C and place oven rack in the center of the oven. 2. Thinly slice beets with a mandolin (or a sharp knife), getting them as consistently thin as possible. They should curl a little when cut. This will ensure even baking and crispiness. 3. Divide between two baking sheets and spray or very lightly drizzle with olive oil. Add a pinch of salt and roughly chopped rosemary. Toss to coat, then arrange in a single layer, making sure the slices aren’t touching. 4. Bake for 15-20 minutes or until crispy and slightly brown. SERVES: 6-8 PREPARATION:20mins TOTAL TIME: 20 mins Ingredients: 1 sheet shortcrust pastry 1 cup ricotta 1/2 cup caster sugar 1/3 cup cream cheese, softened 1 tablespoon vanilla extract 1/2 teaspoon salt 350 grams strawberries, halved 1/2 cup strawberry jam 2 eggs Method: 1. Preheat oven to (180 C). Lightly grease a pie tin. 2. Place the shortcrust pastry in the pie tin and trim excess. Line with baking paper and weight down with uncooked rice. Cook for 10 minutes. Remove the rice and baking paper. 3. In a bowl, mix the ricotta, cream cheese, salt and sugar with electric beater. Add the eggs one at a time, beating until smooth. Stir in the vanilla. Pour into the pastry case and cook for 30 minutes or until the center is cooked. 4. Cool to room temperature. These fruit strips are a great alternative to the store bought fruit rolll ups that I’m betting your kids have begged for on one or more occasions. While these still contain sugar they are home made so you at least know what is in them. The beauty of these snacks is that although they take a while to prepare, they last up to 2 weeks so you can make a big batch. Ingredients: 1 punet strawberries ¾ cup sugar 2 tablespoons lemon juice ¼ teaspoon vanilla Method: 1. Cover a cookie sheet with butter, and cover with parchment paper. Add an extra inch of paper to seal the roll ups once cooked. Preheat oven to 200 F. 2. In a food processor, puree the strawberries, sugar and lemon mixture. In a medium saucepan, bring the strawberry mixture to a boil and keep stirring for about 20-25 minutes, or until the mixture has thickened and reduced in volume. Make sure you keep stirring to prevent burning the puree. 3. Once reduced, add a dash of vanilla extract for added flavor. Spread the reduced mixture onto the prepared cookie sheet. This will be your fruit roll up wrapper.

4. Bake the strawberry mixture for 2 hours 45 minutes, or until the texture is dry but still sticky to the touch (test with a back of a spoon). Cool on a rack. 5. Using a sharp knife, divide the fruit strips into 15 strips and roll using the parchment paper.

Preheat oven to 180°C. Line your muffin trays with paper liners, or butter and dust with flour. In a bowl, whisk the cocoa powder into the boiling water. Let cool to lukewarm, then whisk in the buttermilk. In another bowl, sift together the flour, baking soda and salt. In the bowl of an electric mixer fitted with the flat beater, beat together the butter, granulated sugar and brown sugar on medium speed until combined. Add the eggs one at a time, beating well after each addition and adding the vanilla along with the final egg. Reduce the speed to low and add the flour mixture and cocoa. Beat just until combined. Divide the batter among the prepared muffin cups, filling each almost full. Bake until the cupcakes are puffed, around 15 to 20 minutes. Meanwhile, make the dark chocolate frosting: Place the chocolate in glass or metal bowl set over but not touching barely simmering water in a pot. Heat, stirring often, until melted. Remove from over the water and let the chocolate cool to room temperature. In the bowl beat the butter, vanilla and sugar on medium speed until light and fluffy, about 3 minutes. Reduce the speed to low, add the chocolate and beat until incorporated, then increase the speed and beat until the frosting is light and fluffy, about 2 minutes. Remove the cupcakes from the pans. Spread a thick layer of frosting on each cupcake.

Process flour and sugar in a food processor until combined. Add butter and process until mixture resembles fine breadcrumbs. Add egg yolk, lemon juice and water and process until dough just comes together. 2. Turn out onto a lightly floured surface. Knead gently until smooth. Shape into a disc and wrap in plastic. Chill for 30 minutes.
3. Meanwhile, preheat oven to 180°c. Combine the apple, blueberries, caster sugar and cinnamon in a large bowl. 4. Roll out the pastry on a lightly floured surface until 3mm thick. Cut out rounds using a 13cm diameter saucer, rerolling scraps, to make 8 pastry rounds. 5. Divide apple and blueberry filling between centres of pastry rounds.

Paint pastry edge with whole egg that has been lightly beaten before folding over and pressing edges together well to seal. 6. Place turnovers onto a paper lined tray. Brush tops with egg and sprinkle with extra sugar. Pierce pastry with a fork to allow steam to escape. Bake for 12 to 15 minutes or until golden. Serve turnovers warm with thick cream.

Scrape the butter out of the bowl and place on a piece of baking paper. Set aside at room temperature. Switch your mixer to the dough hook. Using the same bowl you made the butter mixture in, combine the remaining flour/ water/yeast mixture, plus the remaining bread 2 1/2 cups bread flour, 3 teaspoons yeast, brown sugar, salt and warm milk. Knead the dough on the lowest speed to incorporate the ingredients and then turn it up to medium speed for about 3-5 minutes or until the dough pulls away from the sides of the bowl. The dough will be a little wet and sticky. *Dust your work surface generously with flour and then scrape the dough out onto your floured counter. Dust the top of the dough with more flour and then roll the dough out into a rectangle that is 13 inches long by 10 inches wide. Now keeping the width at 10 inches, continue to roll the length to about 33 inches long. Use a knife to gently smear the butter over the dough in an even layer and all the way to the edges. Lift up the side of the dough and fold over five times until you get to the end of the dough. Gently pinch the ends together to

seal the dough. You should now have a rectangle that is roughly 10 inches long and 6 inches wide. Roll that dough out one more time into a rectangle that is 33 inches long by 10 inches wide. Fold it over five times from one side to another. Place the dough on a floured pan, cover with plastic wrap and place in the fridge for 1 1/2 hours or overnight. Preheat the oven to 200c degrees. Grease 6 ramekins or 12 muffins cups. In a bowl, combine the zest of 1 lemon, vanilla essence, poppy seeds, cinnamon and sugar. Transfer the dough to a floured work surface and roll out into 18 inch long x 10 inch wide rectangle. Sprinkle the sugar mixture over the dough in an even layer. If desired you can also sprinkle in some blueberries. Tightly roll the dough lengthwise into a long log. Using a long sharp knife, cut the dough into six pieces for big buns or 12 pieces for smaller buns. Place the rolls in the prepared pan and cover with a damp kitchen towel. Let the buns sit 30 minutes or until slightly puffy. Bake in the oven for 30 mins or until golden browned and puffed. In a small sauce pan over medium high heat cook the blueberries and water until mixture resembles thick syrup. Strain the blueberries, reserving the juice/syrup mixture. Combine blueberry syrup with the powdered sugar, 2 tablespoons lemon juice and vanilla. Whisk until smooth. Add more lemon juice to thin as needed. FAMILY PHOTOS LOCATION & TIME: These go hand in hand, but don’t let the location worry you too much. Early in the morning or the hour before sunset are best for outdoor because of the versatility available while the sun is still low and not too bright. If your only choice is during the day, you may opt for something indoor near a large window or outside near the edge of an open shaded area. Plan ahead what time of day, look and location you want so you are prepared to capture the moment in your ideal lighting situation. TRIPOD OR TRUSTED HELPER: You may find it easiest to set your camera, frame your shot, and have a stand in press the shutter button for you. You can also set up a tripod with your camera set to remote control or self-timer settings. If you’re using a friend or family member, choose someone patient and good at following directions so you make sure you get the shot you’re looking for. If you use a tripod, it may still be a good idea to have another person stand near the camera to get your kids’ attention or make sure no one is making funny faces at the camera.
BABY PHOTOS Keep your newborn comfortable. Select the right time - The magic window for newborn photos is within the first 14 days of birth when they’re sleeping a majority of the time. Hang a back-drop - The backdrop of your shoot should be a large piece of fabric that hangs from the wall and down to the floor so it fills the entire camera frame. Use natural window light - You don’t need fancy flashes, just a large window with lots of natural light directly onto the baby. Basic poses: • Lying on their back • On their side • On tummy with hands under head • Small details e.g. Feet & hands The big detail that makes baby photos look magical is the post production. SUITABLE SPACES The best way to decide what type of pet is right for you is to consider your environment. Are you allowed to keep pets where you live? If you're considering a dog, do you have a yard or park nearby? Is your yard secure? Some landlords will allow renters to have a pet, but consider what you will do when you have to move from that property. You will also have to be wary of poisonous plants such as lily plants and castor oil plants that can be fatal if ingested. We bought a house a couple of years ago but have recently started to notice what looks like the ceiling sagging in places. It looks the worst in the garage where it is quite noticeable. The house is an older brick and tile lowset. What can we do to fix the problem? Claire & Jim, Runcorn I would guess the house was built in the late 80's. It is common practice to fix the plaster board sheets to the roof trusses using minimal mechanical fixings (nails) and rely on special adhesive to hold the sheet in place. Walnut sized dabs of glue was applied and evenly spaced on the Truss. The problems arise if the original plasterer was a little stingy with the glue and over time humidity causes the glue to fail. The sheet is then secured only by a few nails which will eventually pull through the sheet. Moisture in the sheet means any bend becomes semi-permanent and hard to remove. The sagging sheets needs to be pushed up hard against the Truss then secured with sufficient screws to hold. If severely warped they may break. For bad areas like this it is best to use a plywood board supported from below and slowly jack the sheet back in to position. It may take a week or more to avoid breaking the plasterboard sheet. Unless you are competent at DIY I would recommend hiring a good plasterer to avoid any costly mistakes. Repairing in this way is a much cheaper option than having to replace the affected ceiling areas.

Your Questions Answered Quite a few of the flyscreens on my windows and security door are damaged. How easy is it to replace them and can I do it myself? Tan, Sunnybank Hills The mesh is held in place with a circular profile rubber strip that runs all the way around the edge of the mesh in a groove in the window or door. The rubber strip can be re-used but is readily available as is the fly screen mesh from stores such as Bunnings or Masters. Both are bought by the metre so simply measure how much you need and allow a bit extra to make it easier when fitting. Also purchase the special tool for fitting the rubber strip. It looks like a pizza cutter and costs a few dollars. The little wheel has a groove and is designed to push the rubber retaining strip back into the slot on the window or door. A nice sharp Stanley knife is also needed to cleanly cut the mesh. Start by removing the old mesh and rubber strip. Use sticky tape to tack the new piece of mesh to the window at the top. This helps to keep the mesh in place whilst you fit it. There should be plenty of overhang of mesh all the way round the frame. Keeping the mesh pattern square to the frame of the window or door carefully begin inserting the rubber strip trapping the mesh by using the pizza cutter to push the rubber strip firmly into place. Gently tighten the mesh as you go. If it looks wrong simply pull out the rubber strip and start again. Once you are happy with the result carefully trim the excess mesh back to the outer edge of the rubber strip being careful not to scratch the frame.
I think I have a problem with my hot water tank. We seem to run out of hot water much sooner than we used too. I don't understand how this is possible or am I just imagining it. Suzan, Stretton This is actually quite a common problem. It is a very simple system that has one inherent flaw. It is a sealed system so any build-up of air in the tank has nowhere to go. Over time the amount of air in the tank can be quite considerable greatly reducing the amount of available hot water stored in the tank. This is the reason your hot water can seem to run out faster than it used too. A quarter of your tank could effectively be full of air. To solve this problem the system has a bleed valve to allow the air to escape and refill the tank fully with water. To bleed the tank you simply lift the little handle on the bleed valve. This valve will be located on the copper pipe coming out of the side of the hot water tank. Lift this valve until water, not air, comes out of the overflow pipe. Follow this procedure once every few months to ensure there is no build-up of air in your tank. This valve is also the common cause of water dripping from the tank overflow pipe. It is sensible to have the valve changed if it does start dripping constantly. It wastes valuable hot water and can attract termites if the pipe empties onto the ground near the house rather than into a proper drain.
