It’s time to grab a hot cup of tea and get inspired! I’m thrilled to unveil our winter 2021 issue of IBB at Home! #teamIBB has had a busy year getting creative to help our clients make over their homes, and they have a lot of design eye candy and tips to share with you. Our cover story this issue features a project we worked on from the ground up with long-time clients who are like family to us. The result was an ultra-chic abode that offers resort style ambiance for these empty nesters. Have you heard? Red is making a comeback in the world of interiors, and we’re showing you how you can incorporate the rich shade, Merlot, into your home. IBB designer Lauren Macnak shows off her posh pooches and her vibrant eclectic home in our Designer Dogs feature, and Will Smith teaches us how to use throw blankets to incorporate color, pattern, and texture. I’m excited to reveal my daughter Jaylie’s room refresh. We are so pleased with how it turned out. We’re seeing a resurgence of red in the interiors industry, and we’re here for it! A rich purplish red with blue undertones, merlot is a sophisticated deep hue that can instantly add drama and interest to a space. Moody and intoxicating, this warm color would be stunning in a dining room or study. Reds are naturally stimulating, so we’d advise to only use it as an accent in any bedroom. Our fur babies are the heart of our little family. Sprocket is our 16-year-old papillon, chihuahua mix. I had a friend in college who bred papillons, and she had a girl too small to breed. The pup ended up pregnant, and my little man was the only one in the litter. When he was born, he wasn’t breathing, and the vet gave up on him. After a couple of minutes, though, he started breathing on his own. We call him my little miracle puppy-- a fighter through and through! He was so small when he came home that he could fit in my palm, and he has been with me through many moves and life transitions. He still enjoys long hikes, and though his hearing isn’t what it once was, he seems to be able to hear a treat bag from across the house!

Nola is our latest rescue; our friend saved her whole litter from a neglectful owner. When she came to us, she was underweight and scared of everything. My husband wasn’t sure he wanted another dog at the time, so we decided to take her for a trial period. Before we got in the car, he couldn’t stop talking about his new dog; it was love at first sight! Once she felt comfortable with us, her huge personality came out, and she hasn’t sat still since. She plays fetch for hours at a time, and every day when I come home, she is literally screaming in anticipation of her daily hugs. Nola is named for New Orleans, a place I once called home. It’s a city full of so much vibrance, art, and eclectic design that I think my love for it shines through in my home. Clients often ask what my


SPROCKET AND NOLA personal style is, and I tell them that it is just that: my style. My job when working with them is to bring the best version of their style to their home. For my own home, I love a curated look. I have been collecting art since I was 18, and my husband jokes that since there are no walls left, I took to the back yard and had a mural commissioned. I have collected pieces from all over. My shelves are full of gifts from travels around

the world-- some of my own, some from friends and some even from clients. Many of my furniture pieces were from my parents’ home who are also in our industry. The pieces are so well-made that they have withstood decades of parties, dogs, and lounging. Everything in my home has a story. When people walk in, I want it to feel like my family, like home-- a place to lounge, laugh, and create memories.

It’s finally happening! Blustery winds have brought in cooler air. Personally, I’m full of a sense of new beginnings and candy cane dreams! Winter is my absolute favorite time of year. As someone who consistently keeps their home at 65 degrees, I’m not only thrilled about saving money on air conditioning, but also that I can step outside and experience the same temperature. I’m ready to don a sweater, a gorgeous jacket, some warm boots, and set out to make people’s homes beautiful! An easy way to bring warmth into your home during the winter is by adding some beautiful throw blankets. I like to opt for something with a pop of color. Find a hue in your palette that brings you joy and toss a blanket on the back of a chair or your sofa. Textures and patterns also add a sense of comfort and interest. Opt for a cashmere or wool textile over synthetics. They may cost a little more upfront, but the longevity and character of these materials will be comfier and warmer for years to come.

Have a neutral sofa or chair? Look for a stripe or a checked pattern. Or maybe you’re bold and have a blue or green sofa; if so, pick a nice wintery white and imagine the snowfall outside (somewhere other than Texas). Regardless of your aesthetic, every room can benefit from a beautiful throw in a bold color or pattern. Last Christmas, our daughters both asked for a room refresh as their present. I’m excited to share the results of Jaylie’s room makeover in our winter issue. For Christmas, the girls unwrapped renderings of their new designs as well as a neon sign to be used in their rooms. Originally, Jaylie’s room had a coastal beach vibe. She wanted to change it up to have a more sophisticated “Gossip Girl” look. She still loves aqua, so we decided to pair it with navy for her new color palette. Paint can dramatically change a space, so we chose to paint her built-ins Sherwin-Williams Naval SW6244. It really helped transform the look of her room and to make her built-ins stand out. We kept her sea glass chandelier. It’s a beautiful fixture and still works well with her new look. We re-covered her bed in a bright aqua velvet. We also squared

off the top of her headboard to make more room We’re thrilled with her new look! For a full room tour, to hang her neon sign above the bed. We removed check out my instagram @designershay. the nail heads and ribbon trim and opted to tuft the headboard. We found a watercolor fabric that has various shades of blue and aqua to use on her functional drapery panels and euro shams and layered her bed with a navy-patterned velvet matelassé and a white duvet and down comforter underneath. A layered bed offers versatility for the changing seasons. She really wanted a small sofa in her room, so we had one made to fit the wall opposite her bed. She loves to read and do her homework there. We had originally planned to do a small, skinny coffee table with the sofa, but she decided she wanted to keep the space more open and just do a small drink table. A new rug helps to ground her bed and sitting area. In the renderings, I had one of her cheer photos being placed above the sofa. In the end, she decided she wanted art there and to do her cheer photos on another wall.

The organic shapes, minimalist styling, and interesting mixes of materials make midcentury design a huge fan favorite. The style this American design movement stemmed largely from was post-World War II optimism and a desire for form to follow function. While we may not think of practicality when we see these showstopping pieces, that’s largely what these designers and architects had in mind when they were creating. They wanted pieces that were multi-functional and scaled back to allow for flexibility for the "modern family." While we all love these pieces, they can be a bit of a struggle to work with for today’s modern families,

largely because of the scale. Today’s homes are built with more interior volume, and between the supertall ceilings and open concept floor plans, these lowprofile pieces can easily get lost. Aesthetics aside, we are also bigger than we were a few decades back, so the ergonomics of these pieces don’t necessarily fit like they would have decades earlier. Luckily, we have many vendors that have taken so many of these classic designs, reworked them, and given them new life to work today! We can still have the clean look and sexy lines, but we can have them on pieces where we actually live our everyday lives. Back to the true roots of true MCM design, they are once again comfortable, functional, and beautiful!

What are the current trends and furniture styles that are most popular this season? I consistently answer that diversity and expression of individuality are always the trends in fashion. Of course, the industry manufacturers and brand designers will always promote a new neutral, such as Sherwin-Williams Agreeable Grey or some other “shade of grey”. Clients still love warm beige tones and past trend color palettes and should feel confident to use the colors and designs that are naturally appealing to their personal taste. Manufacturers will always promote a new color palette to

keep customers excited about their textiles, wallpapers, and paint applications. I encourage clients to surround themselves with color palettes and designs that truly appeal to them, not the mass following of what is promoted for this season’s trends. I love working with clients who want to implement traditional cultural art, patterns, and colors to their rooms. Interior design environments should be as unique as every human being and for the family members that call this environment home. For example, the dining room vignette I design was inspired by the existing wallpaper on the wall—a transitional texture colored with metallic shades of bronze and gold. This wallpaper could easily be used in several very different room décors and lifestyles. I chose to use a creative, modern expression of a Chaddock dining table in solid wood. The table is 116 inches long with a circular design on the trestle base. It is a creative use of modern design details applied to a table favored with a more traditional farmhouse or casual dining table application. The custom finishes and design possibilities by Chaddock Furniture allow you to customize this table to be uniquely fitted for your projects with very different details for interior design-styled rooms. We added a modern buffet cabinet in a Shagreen texture with a circular pattern embossed on the door fronts, which enhanced the ends of the table’s trestle base design. The beautiful Vanguard furniture dining chairs balances the table in scale and also brings out the details of a more sophisticated yet inviting formal dining room. I selected a beautiful hand-knotted area rug that frames the table and chairs while enhancing the room with a shade of dark grey that brings out

the high-quality finish on the table. The warm cream background in the rug connects the lighter tones in the buffet and art. The painting creates a wintery atmosphere with the abstract tree branches and the water-colored stream flowing through the landscape. When the dining table is not in use, it is dressed with IBB Design special accessories, like the beautiful permanent botanical from The Shay Geyer Collection that is framed with original glass blown vases and the floating lily pads on one side of the painting, in pewter antiqued finish. A well-designed, unique dining room is ready to be admired by all with hopes of a wonderful dining experience plan soon.

A well styled console or chest can be that “FIRST IMPRESSION” in your entry. BACKDROP Display a favorite piece of art or mirror in the center. If it is a mirror, you can place a piece of art on one side. Using a mirror will open up the space, and the art will give a punch of color you need.

SYMMETRY Add symmetry and height with a stunning lamp and large pieces like florals or decorative items to balance. PERSONALITY AND COLOR Then add a stack of table books and frames with your family photos. Always remember to add your personal touch and never “overcrowd your tabletop.” The old rule of “Less is More” holds true.

Rugs are so important in giving a room personality and making it feel warm, cozy, and put together. When furnishing a room, it’s best to start with the rug and work your way up from there, especially if you are choosing a rug with a lot of patterns. The size of the rug is vital, as it defines the area. The rug should complement the shape of the room and the layout of the furniture.

As we approach the holiday season, a staple for entertaining is a well-stocked and well-styled bar cart. I have a fool-100proof formula for showcasing the perfect bar cart that is guaranteed to create a well-rounded look, serving both endless style and delicious refreshments.

other accessories you might want to include are a bottle opener, ice bucket, a jigger or shot glass, and stir sticks or cocktail spoons. And of course, extra glasses for all your fabulous holiday party guests.

Call me Old Fashioned…

Whiskey Business…

First things first — Choose a bar cart that will satisfy your storage and entertaining needs. For instance, wine drinkers might desire a built-in wine rack, while those with limited cabinetry space, may want hanging options for glasses. Another important aspect in considering what bar cart is right for you is function. If you plan on using your bar cart primarily for preparation and serving, consider added countertop space for easy access. If most of the preparation takes place elsewhere, your bar cart can be used for decorative purposes, giving you a much wider selection of sizes and styles to choose from. Deciding functionally first and foremost will make the selection process Easy-Sea-Breezy!

Got mixology books? Use some of your favorite cocktail recipe books stacked on your bar cart so that a wealth of cocktail knowledge will be right at your fingertips if you happen to forget the right way to make a Manhattan. Any elements of books are a perfect addition to your bar cart, as this helps add color and interest. You can stack a few on the lowest shelf or simply put some on the top shelf next to your bar accessories. Try to use books that have colorful spines, are varying widths and heights, and really showcase your personality and home decor style.

Keep your Gin up… The top two shelves are a good spot to display beautiful stemware. Funky wine glasses, your grandmother’s collection of vintage goblets, curated glassware from trips abroad--this is their time and place to shine. Consider it a piece of art in your home, and if you’ve been looking for an excuse to stock up on cute glasses, consider this a sign! Most glassware you’ll find is devoid of color but taking the time to find a few statement pieces in brighter hues will instantly make your bar cart stand apart from the others.

A Riesling to be Cheerful… Next up are pretty bottles of booze. Arrange the most used liquor bottles to be easily accessible, either decanted or not; you choose! Varying heights help with crafting not only beverages, but also with visually pleasing levels. Levels are your design eye’s friend, and your bar cart is no exception. Again, thinking practically,

Stop and smell the Rosè… Lastly, leave space for a bouquet of flowers. A vase with greenery is always a good option. I like to add a bowl of a few lemons or limes, not only because they are actually used in cocktails, but also because they add nice color. Consider growing your own specialty herbs, such as rosemary, mint, or basil. The verdant addition will make the space smell wonderful, and you’ll have fresh ingredients for cocktails whenever you need them! The addition of living things feels intentional and will do wonders in making your cart feel like it's a part of your room's design.

Drink like there is Pinot tomorrow… In conclusion, the bar cart has proved that it is no longer just an iconic piece of mid-century Mad Men inspired décor, but that it has completely reinvented itself as a must-have item for entertaining. Using these tips can instantly add dapper vibes to any corner of your home, showing that all spaces can be maximized for both convenience and snazziness.

It’s the little details that can make or break a room. When putting a living room together, it is important to balance soft and hard elements. For example, having a balance of leg furniture and skirted furniture when creating a space gives the area a more eclectic

feel. This holds true with wood furniture and painted furniture, as it is essential to have a balance of painted woods and natural stains. These details are always important to include in your interiors and can be small like incorporating a Turkish corner on your pillows or adding a skirted table to soften the room. Rugs and mirrors are always important to keep in


mind when creating an interior, as they really are the perfect canvas for any interior. Mirrors are versatile and can be used anywhere to enhance the space and often are used to enlarge a room and maximize lighting. Adding personal touches like picture frames, crystal, or collected objects is also vital to really make your space feel like a home that reflects you as an individual. Don’t be afraid to use light colors in interiors. Nowadays, there are so many options for performance fabrics that no matter how complex your family is, you can always keep your light colors clean and looking fresh.

Homage to Nature The post-pandemic world has everyone craving connection to nature as a counterbalance to our ultra-connected, technology-driven world. We’re seeing this trend reflected in the home with the popularity of earthy hues, natural textures, and a surge in demand for outdoor living spaces. Warm- toned kitchens with natural wood-stained cabinets, shades of green, light oak wood flooring, natural stone fireplaces, wood ceiling beams and indoor-outdoor living renovations are just a few of the natureinspired trends currently infiltrating design.

2. Black accents Black accents have been popping up more and more as they provide a striking contrast against natural wood tones, which have also been a staple lately. We

are seeing this trend primarily in the form of plumbing fixtures, hardware, and window trim.

3. Curved Edges Whereas clean, sharp edges and modern lines were once the trend, we are now seeing more curved/rounded edges in various design elements throughout the home. These curves are showing up as arched hallways, modern rounded furniture pieces, pendant lighting, and other décor elements. 4. Functional Storage & Organization Home organization has been a key theme resulting from the pandemic, as people have been spending more time than ever in their homes.


Having concealed storage as a means of keeping clutter at bay can help reduce stress and allow for a more peaceful environment. Custom drawers can also be tailored to the homeowners’ specific needs and will ensure everything has its own place to streamline daily routines.

At the end of the day, living rooms work hard to make us feel cozy when required and welcoming when we are entertaining. How you arrange the living room will ultimately make or break the space you have. The best living room layout for your home will depend on what pieces of furniture you are accommodating. Consider how you and your


family will be using the space. The sofa is usually the main piece of furniture, and its placement is crucial. It is usually the largest item you have in there, and if you get it right, then your other pieces will be easy to place. Establish the focal point of your living room. Is it the fireplace or the TV? As well as being able to see these items, you also need to create a space where

conversation can flow. A sofa facing two armchairs can work well. If the fireplace is your focal point, then place the sofa in front of the fireplace for balance, add a cocktail table, a rug and flanking chairs making sure traffic can flow freely. How you arrange the living room will ultimately depend on your tastes and needs to make the space work best for you.

INTRODUCE POPS OF COLOR Energize your neutral color palette by introducing pops of color around your room. Some of our favorite ways to add color are by using decorative pillows and throws on upholstery pieces. Colorful art can liven up your walls, fireplace mantle, and bookshelves. Accessories like lamps, vases, boxes, and trays can add color on occasional tables. Our beautiful botanical florals and greenery designed by The Shay Geyer Collection for IBB will add color and a touch of the outdoors. If you would like to invest a little more, add a colorful area rug, drapery, or small accent furniture like ottomans or a small chair in a bold color. Choose one or two of your favorite colors and repeat them three or four times around the room. Purposeful pops of color move your eye throughout the room to reveal new and interesting elements.

CHIC After deciding to downsize from the home where they raised their kids, our clients reached out asking us to embark on a journey with them to design and furnish their new home. We were so honored to work with them, and the look on their faces on the big reveal day was worth everything!

Upon entering the home through the private courtyard, you are immediately greeted by the two-story paneled foyer. A wood herringbone pattern helps define the space in the open floor plan. A marble and brass chest, a large brass and acrylic light fixture, and a custom iron staircase are a few of the standout design elements.

The great room can be viewed as soon as you step through the home’s front iron double doors. Nano doors on the opposite side of the great room offer breathtaking views of the resort-style backyard. They also allow the living space to extend onto the veranda which can be screened in to keep out bugs and weather elements. Cedar beams stained to match the rich wood floors provide beautiful contrast in the room. A pair of sofas and chairs provides ample seating for entertaining family and friends. Leopard ottomans tucked underneath the sofa table offer additional seating.

K I TC H E N A custom Vent-a-hood and stunning countertops are just two of the design elements that make this a showstopping kitchen. We opted to mirror the door fronts on either side of the hood to beautifully bounce the light around the room.

With large windows flooding natural light into the room, we chose to cover the walls in metallic cork wallpaper to add warmth and texture and to cozy up the space. A large sectional and a pair of chairs in a plush cut velvet offer comfortable seating.

A palette of blue and white was selected to create an elegant and restful room. Embroidered linen functional drapery dress the windows in pattern and offer privacy. A water jet marble with brass inlay was used to create a rug design in the bathroom. Brass pencil liners frame the plumbing in the shower. Custom cabinetry is adorned with brass and acrylic hardware, and a metallic grass cloth warms the space and adds texture. The luxurious closet was designed to fit all their needs. We centered her handbag display with the doorframe to give a pretty sneak peek of the closet as you enter the bathroom. A gold-leafed chandelier acts as jewelry centered over the island.

The room is enveloped in deep gray paneling, giving an instantly cozy vibe. The beams of the coffered ceiling are also gray, but we painted the inside of the coffers white to make the beams stand out and to help bounce the natural light around the room. A brass mesh drum shade hangs centered over the black nickel, acrylic and brass writing desk. Leather swivel chairs offer a sitting area opposite the desk and a place to sit and read. A selenite starburst mirror hangs over the custom cast stone fireplace, and an original piece of art from a local artist adds texture and color behind the desk.

GR A N D S O N S ' R O O M The grandsons’ room was designed with a queen bed and a set of bunks. We designed a custom brass safety railing, and navy and brass sconces were placed with each bunk. The bunks and ceiling beam are painted in a deep navy. Navy and white plaid functional drapery panels dress the window. A cowhide rug adds cognac to the palette, which is picked back up in accent pillows.

LO FT The upstairs loft is the perfect spot for the grandkids to watch TV or play games. Four swivel chairs surround an upholstered ottoman to create a cozy sitting area.

GUEST B E D R O OM & BATH We chose a soft and serene palette of blush and silver for guests. A canopy bed takes center stage, making an elegant statement. A blush and acrylic bench rests at the foot of the bed. Tibetan lambswool pillows and a vegan fur throw add a coziness to the bedding. We lined a patterned sheer for the functional drapery design to create privacy and drape the large windows. Decorative sconces, mirrors, and gorgeous hardware dress up the guest vanity. Our Aubrey arrangement adds a pop of fuchsia to the space.

From the moment Highland Homes unveiled this brand-new plan, excitement buzzed throughout the IBB Model Design Team. The floorplan is a designer’s dream, and even better, a family’s! The openness of this two-story home makes the 4,300 square feet feel like 10,000. The exterior combines a traditional light brick and modern dimensional ledgestone. Grand and inviting, we continued this theme throughout the interior of the home in a “Classic meets Modern” motif.

Foyer & Study

The grandeur of the foyer is enhanced by 18’ ceilings and open railings that beckon you to come in and explore. As you enter, you will notice the home’s formal dining room has been transformed into a plush piano lounge for entertaining. The study boasts bold patterns and art to invigorate the mind. We grounded the design by painting the walls a soft French Gray and adding solid colors in velvet wing chairs.

Kitchen When designing a home, we always start with the kitchen. In this case, we knew we wanted to use a combination of classic Carrera marble, rich blue cabinets, and accents of gold. To give this traditional color palette a more casual and inviting feel, we set it on a hardwood floor that has multiple hues of warm honey. The modern vent hood in deep navy is a gorgeous contrast to the crisp white cabinets with gold hardware.

Great Room

Pardon the pun, but this is a “Great Room”! Opening directly from the kitchen, this family room boasts ceilings of more than 20 feet, which practically begged us to dress the windows in sky- scraping blue velvet. To add a layer of comfort, we used a plush light gray velvet sofa and a rug in multiple shades of blue. The touch of gray is added throughout the home to soften the stark contrast of deep blue and white. The fireplace is elegant and show-stopping in oversized Carrera marble tile that stretches the entire elevation of the room.

Dining Room

Our open family room expands even further into the picturesque dining room. Two beautiful chandeliers drop over each space, creating a masterful sense of cohesion. The sun-filled dining area is set on a backdrop of soaring blue velvet drapes and a piece of art that literally rolls out the “blue carpet” for your guests. The tabletop, made entirely of marble, is tastefully set with traditional blue and white China and modern gold and white accents.

Primary Bedroom

The Primary Bedroom gives a feeling of luxury and sophistication. The gorgeous ceiling detail and barn door in pure white simply leap off the deep blue walls. The room is styled in layers of traditional patterns and modern furnishings, bringing a fresh look to a time-honored color palette.

Kid clutter to be exact. Kids’ spaces can get a little crazy any time of year, but we think they're always the most out of control right after the holidays. Toy woes got you in a tizzy? No worries; we've got you covered. Here are our favorite tips to keep the playroom neat and tidy all year ‘round.

Give Old Toys A New Home

Editing is always an important step in the organizing process. Get your kids involved and discuss the importance of donating the toys they have outgrown.

Cubby Systems

Cubby bookshelves are one of our favorite ways to store toys out of sight and to display collections of books and decorative items. They transition easily with your child as they grow, are typically inexpensive, and are perfect in bedrooms and playrooms. They can even store toys discreetly in a family room when space is tight elsewhere.

All the Bins & Baskets

Open-top baskets allow your child easy access to toys. There are so many beautiful options out there, so finding baskets the right size and style for your play space is a breeze. Our Neat Method Rope Bins are my go-to fave for containing toys. For smaller toys, crayons, markers, and other crafts, we like using lidded bins, canisters, and zipper pouches. Consider whether you want your bins to be transparent so your children can easily grab what they want, or opaque, so you can hide them out of sight.

Nooks for Books

Whether your cubby system needs to hold reading books, activity books, or both, we have the answer. Place those heavier looking opaque bins and baskets at the bottom of your system and save the top shelves for color-coded books or to display toys. Separate activity books and loose paper into magazine holders and give structure to books with bookends, if necessary.

Hang In There

I know from personal experience how much kids love stuffed animals. We have found these are some of the things they have the hardest time letting go of. So, what do we do with that ever-growing collection of stuffed, furry friends? Hang them up! Stuffed animal hammocks are a great way to utilize vertical space. Not only does this allow for more real estate on the floor but will also create a fun visual element for the room.

RECIPE

ROASTED BUTTERNUT SQUASH & KALE SALAD By Shay Geyer

INGREDIENTS:

• 1 large butternut squash, cut into 1/2-inch cubes (4 cups) • 2 tablespoons garlic olive oil • 2 teaspoon truffle salt (San Francisco Salt Co. is the best!) • 1/4 teaspoon black pepper • 2 bunches baby kale chopped • 1/2 cup pistachios • 1/2 cup dried cherries • 1/2 cup red onion • 2 packages thick cut bacon • 1 cup shredded Manchego cheese

INSTRUCTIONS:

1. Preheat oven to 450. 2. Cut thick bacon into 1” pieces. Cook until crispy. Tip: Cook on sauté in an Instapot for 30 minutes for the perfect crispy bacon pieces! 3. Spread the butternut squash out on a cookie sheet. Drizzle with garlic olive, truffle salt, and pepper. Bake for 15 minutes. Remove from the oven and turn the cube pieces over. Bake for another 15 minutes or until tender. 4. Chop the kale into bite size pieces and place in a large serving bowl. 5. Add in the roasted butternut squash. Top with crispy bacon, red onion, dried cherries, and pistachios. 6. Sprinkle shredded Manchego cheese on top. 7. Dress with apple cider vinaigrette.

APPLE CIDER VINAIGRETTE INGREDIENTS:

• 1/4 cup olive oil • 3 tablespoons apple cider vinegar • 1 tablespoon lemon juice • 1/2 teaspoon salt • 1/4 teaspoon ground black pepper • 1 1/2 tablespoons honey

INSTRUCTIONS:

1. Combine all ingredients in a bowl. Whisk until incorporated. 2. Drizzle onto the salad and toss to coat.

RECIPE

PREP TIME: 10 MIN. | COOK TIME: 45 MIN. | YIELDS 8-12 SERVINGS

INGREDIENTS: • • • • • • • •

2 (2.5 pound) beef Tenderloin roasts 2 teaspoons kosher salt 2 teaspoons cracked black pepper 1/2 cup chopped fresh herbs (rosemary, sage, thyme) 4 tablespoons olive oil 1/2 cup butter 2 tablespoons flour 1/2 cup beef broth

INSTRUCTIONS:

CHEESE FONDUE BOARD

PREP TIME: 10 MIN. | COOK TIME: 10 MIN. | YIELDS 6 CUPS

INGREDIENTS: • • • • • • •

2 cups shredded Gruyère cheese (8 ounces) 2 cups shredded Swiss cheese (8 ounces) 2 cups shredded gouda cheese (8 ounces) 2 tablespoons all-purpose flour 1 tablespoon olive oil 1 garlic clove, minced 1 cup dry white wine (Sauvignon Blanc or any dry white that's high in acid) • 1 teaspoon fresh-squeezed lemon juice • 1 tablespoon brandy, optional • 1/8 teaspoon ground nutmeg

INSTRUCTIONS:

1. Put the cheeses and flour in a large bowl or baggie. Stir or shake until the cheese is coated with the flour. 2. Add the olive oil and garlic to a fondue pot or heavy saucepan and cook over medium-low heat until the garlic is fragrant, about 1 minute. Add the wine and lemon juice and when it just starts to simmer, turn the heat to low. 3. Gradually add the cheese mixture, about 1/2 cup at a time, stirring constantly with a whisk until the cheese is melted. Stir in the brandy and nutmeg. 4. Keep warm over low heat. If prepared in a saucepan, pour into a fondue pot or slow cooker to keep warm over low heat while serving.

1. Preheat oven to 425°F. Season each beef Tenderloin generously with the salt and pepper. Combine the chopped fresh herbs and olive oil in a small bowl. Press the herb mixture evenly onto all surfaces of beef roasts. 2. Heat the butter in a large cast iron or oven-proof skillet over medium-high heat until hot. Add the beef tenderloins and sear on all sides, about 3 to 5 minutes per side, creating a nice golden-brown crust. 3. Transfer the skillet directly to the preheated oven (or transfer the tenderloins to a lightly oiled roasting pan first, if your skillet is not oven safe). Roast until tenderloins are of desired internal temperature using a meat thermometer inserted into the thickest part of the meat. See the notes below for a guide on when to remove the roast from the oven based on temperatures and desired doneness (*Keep in mind that the temperatures will continue to rise about 5-10 degrees while the meat rests.). 4. Transfer the meat to a cutting board and let it rest, covered loosely with aluminum foil, for about 10 minutes. 5. Return the skillet to the stovetop so you can make a gravy with the roasting juices. Over medium heat, whisk in 2 tablespoons of flour and continue to whisk until the juices start to thicken. While whisking, slowly pour in 1/4 to 1/2 cup beef broth and bring to a boil. Let simmer over low heat until ready to serve with the meat. If the gravy is too thick, whisk in more beef broth. If the gravy is too thin, remove 2 tablespoons of the gravy and whisk in 1 tablespoon flour to thicken it even more. Whisk the roux back into the gravy and let it continue to simmer and thicken. 6. Carve the Tenderloins into 1-inch-thick slices to serve.

HOW LONG TO COOK YOUR BEEF TENDERLOIN FOR DESIRED DONENESS:

• Remove the roast at 130°F for a 145°F medium rare doneness (20-25 minutes) • Remove the roast at 140°F-145°F for a 160°F medium doneness (25-30 minutes)

CHOCOLATE CRUST: • 1/2 cup (1 stick) unsalted butter, melted • 1/2 cup granulated sugar • 1/2 teaspoon vanilla • 1 egg, beaten • 1/2 cup all-purpose flour • 1/4 cup dark cocoa powder • 1/2 teaspoon salt CHEESECAKE FILLING: • 1 (8 ounce) cream cheese, softened • 1/2 cup granulated sugar • 1 egg, beaten • 1 teaspoon vanilla • 1/2 cup heavy cream • 1 cup mini chocolate chips, divided • 1 (21 ounce) can cherry pie filling, for topping

INSTRUCTIONS:

1. Preheat oven to 350°F. Line a 12-cup muffin pan with cupcake liners and spray with non-stick cooking spray. Set aside. CHOCOLATE CRUST: 1. In a large microwavable bowl, melt the butter in the microwave until completely melted. Let cool for a few minutes before whisking in the sugar, vanilla, and egg. With a wooden spoon, stir in the flour, cocoa, and salt until well incorporated. 2. Place a few tablespoons of crust dough into each prepared muffin liner. Remove muffin liners from the pan and flatten the batter with a 1/4 cup flat measuring cup that’s been sprayed with cooking spray to prevent the batter from sticking to it. Return the muffin liner to the pan. Repeat with all 12 crusts.

CHEESECAKE FILLING: 1. In the bowl of an electric mixer, beat the cream cheese and sugar until smooth. Add the egg, vanilla, and heavy cream and beat until well combined. Fold in 1/2 cup mini chocolate chips. 2. Divide the filling evenly among the crusts, filling each muffin cup almost full. Sprinkle remaining 1/2 cup mini chocolate chips evenly over the cheesecakes. 3. Bake for 20-25 minutes or until cheesecakes are set and barely starting to crack on the tops. Remove from the oven and let cheesecakes cool in pan for about 15 minutes. Then place the pan in the refrigerator for about 1 hour to let the cheesecakes become cold. 4. To serve, remove the cheesecakes from the pan and remove the liners. Top with a spoonful of cherry pie filling just before serving.

GREEN BEAN BUNDLES

PREP TIME: 10 MIN. | COOK TIME: 30 MIN. | YIELDS 12

INGREDIENTS: • • • • • •

60 fresh green beans 1/4 cup butter 1/4 cup dark brown sugar 1/4 teaspoon garlic salt 1 tablespoon soy sauce 6 slices bacon, cut in half

INSTRUCTIONS:

1. Preheat the oven to 350°F 2. Bundle beans - Wrap a half slice of bacon around 5 green beans and secure with a toothpick. Arrange in a greased casserole dish. 3. In a small mixing bowl, melt the butter. Whisk in the brown sugar, garlic salt, and soy sauce. Pour the mixture over the green bean bundles. 4. Bake for 30 minutes or until the bacon is browned.
