OKANAGAN

PUBLISHER’S LETTER Same name, new look!

So, what do you think? You must have been confused when you saw the cover. “A new magazine? No, wait...” Exactly! Same great magazine (if we may say so...), but a new look. It’s Phase 2 of our little transformation. We have already added extra pages, actually on better paper, and the perfect binding in our last edition. And this time we introduce a whole new logo! It’s been 8 years since the very first ICON Okanagan magazine hit the market, and we thought it was about time to give it a cleaner, modern look. Voila! Ok, we must admit, we had a lot of fun with our cover story. Lane and Renee are so much fun... We could have stayed at Chase Wines forever, drinking even more wine than we did (if that is possible..yes, it is!). The power siblings are really great together, we could publish a whole ‘look-book’ with all the fun pictures that our photographer Alisha took.

Olaf Robrecht

The Okanagan is quite the little supercar city, we see more and more high-end sportscars in the valley, but if our car events show us something, then it is the fact that we have many amazing vintage cars. Fully restored to specs, or customized .. it doesn’t matter. So we thought that instead of reviews of brand-new cars we should show you some of the automotive gems in this edition. And if you are lucky you may spot them this summer, either on the road or at a car show. Say hi and tell them that you saw their baby in ICON! On the cover:

There is so much more, from our big home&decor section, to fashion, to food and wine. We have so many talented chefs in the Okanagan; so this time we will introduce you to three ‘destination patios’ and the culinary masterminds behind the delicious dishes. Make sure to drive by ... as they say ‘the pictures only satisfy one of your senses!’

FAMILY TIES The story of brother-sister changemakers, gamechangers, visionaries and futurists Lane Merrifield and Renee Merrifield. Plus, there’s two more siblings.

What makes you tick? It’s a deep, thought-provoking question meant to peel back the layers of money, success and adulation enveloping the Okanagan’s most famous pair of siblings. I don’t expect easy answers and I don’t anticipate an immediate response. Maybe some umming and ahhing. Some stalling or a deflection. Or, worst of all, a non-answer that leaves none of us the wiser. However, brother and sister Lane Merrifield and Renee Merrifield Wasylyk reply almost immediately and simultaneously. “It’s the why,” they say in that way only siblings can talk over each other. Seeing my perplexed look, Renee explains. “It’s not the what, it’s the why,” she stresses. “What I do is build homes. But it’s why I do it that makes me a leader and the reason people want to follow me.” Renee is the CEO of Troika Developments, one of Kelowna’s most prolific home builders. “Me and my tribe (what she called the team at Troika) supply homes for the every person, not just high-end homes that most people can’t afford,” she said. “And we do it sustainably. No one told us to build (townhouse and condominium complex) Green Square Vert to LEED (leadership in energy and environmental design) standards. No one told us to put in green roofs, four times the amount of bike racks required or an electric car share. We did it because its the right thing to do.” Lane, one of three co-founders of Club Penguin, the online playground for kids that sold to Disney in 2007 for $350 million, has a “why” that’s also profound.

The Kelowna activity is only about 20 per cent of Troika’s portfolio. It also has projects in Edmonton, Regina and Winnipeg. The pair sit on more boards, have won more awards and have had more guest speaking gigs than we can mention. While Lane and Renee may be the most high-profile Merrifield siblings, the pair tout their sister, Karine Veldhoen, and brother, Lance Merrifield, as equally accomplished and entrepreneurial.

“Initially, Club Penguin was a safe game my kids and the kids of (fellow co-founders) Dave (Krysko) and Lance (Priebe) could play online,” he says. “That’s why we did it. It was never about money or success. That’s not what drives any of us. But usually, if you understand your why, money and success will follow.” That’s true. Although Lane retired from Club Penguin at age 28, he went on to found FreshGrade, a educational platform that tracks a student’s whole progress, not just test scores. Lane was never a good student, was always small for his age and was bullied at school. The trifecta led him to escape in computers, a skill that served him well at Club Penguin and is now changing the way students are measured at school. FreshGrade is now used by 90 per cent of school districts in B.C. Lane also founded Wheelhouse Ventures, a firm that invests in growth companies and was part of the committee that pushed for the construction of the sevenstorey Okanagan Centre for Innovation in downtown Kelowna. The showpiece building houses the offices of high-tech companies of all sizes. His business and life acumen brought the Dragons a calling. Lane is now one of the judges on the CBC-TV hit business pitch show Dragons’ Den. Besides Green Square Vert, Renee has also developed award-winning neighbourhoods such as Citybrook, Yaletown, The Gate and West Harbour, the lakefront subdivision Renee describes as Troika’s jewel in the crown. The company also built Upper Avenue, the five-storey office building on Leon Avenue that houses Troika’s headquarters and is the setting for my interview with the siblings in Renee’s sun-drenched office.

Karine is the principal at Willowstone Academy in Kelowna and CEO of Niteo Africa, a non-government agency that’s become the largest provider of books and libraries in Uganda. Lance is a partner at Epic Group in Calgary, a roofing and renovation company that was ranked one of the most profitable companies in Canada in 2012 and 2013. The common denominator for each is their parents Bruce, a retired pastor, and Norma, a retired teacher. “Dad taught us to have vision. We became a whole family of futurists,” says Renee. “He also taught us to fill a need, or fix a need, that people had. It served him well as a pastor and it serves each of his entrepreneurial kids well, too.” While the Merrifields are a tribe that supports each other, Renee and Lane, who is three-and-half years younger, have always had a special bond. “I was the Lane whisperer,” she says. “When Lane had a bad day at school or because of the bullying my mom and dad sent me to talk to him. I also talked to his teachers and the principal.” By the way, the bullying situation was solved when Renee arranged for their athlete brother Lance and a couple of his burly football teammates to talk some sense into the bully.

3

It is called the hottest, coolest and choicest place to hang out in Kelowna. It’s the new, aptly named Perch Cafe on the roof of the seven-storey Okanagan Centre for Innovation at the corner of Doyle Avenue and Ellis Street downtown, offering breathtaking views of the city. The rooftop is really divided in two by the protrusion of building in the middle that houses the elevator, stairs and washrooms.

4

The east side is Perch proper, the cafe with 30 inside seats and 60 alfresco seats at view tables with chairs and umbrellas, contemporary picnic tables and lounging couches and chairs. The west side is more open, with unobstructed views of the lake and artificial grass underfoot.

FAT Treatment: The Thick and the Thin of it Here’s the skinny on body shaping.

T

The demand for non-invasive treatments to reduce fat and cellulite has increased dramatically in the past few years. And so has the hype, which is why Google bans advertisers with claims that are too good to be true – and Facebook doesn’t permit before and after photos in ads! So what really works? Here’s a quick overview of how to separate the ’fake news’ from treatments with evidence of success.

COMMON THERAPIES: MIXED SUCCESS EXERCISE and DIET: Following a healthy diet and regular exercise is beneficial for almost every aspect of healthy living. So “Just do it.” This often doesn’t do it however… read on. CREAMS: Many creams claim to treat cellulite and fat but there’s little evidence. The best ones seem to be those with caffeine or theophylline – though the studies are not in agreement. Expensive ones don’t seem to be better. So, no. HERBAL MEDICATIONS: There is no herb or vitamin that has shown to be effective on cellulite or fat reduction. ENDERMOLOGIE: This treatment uses a device that suctions and “kneads” the skin. Some studies show a positive response. There are no dangerous side effects to this treatment, but many treatment are required (like 15 – 18) and then monthly maintenance. Each treatment session takes roughly an hour and costs >$100. MESOTHERAPY: This involves the injection of a mix of homeopathic medications that supposedly break down fat. Some do BUT some don’t. There is no Health Canada approval, no standardized solutions, and insufficient evidence regarding safety and efficacy. Down side may include swelling, bruising, pain, as yet unknown long term effects of the treatment… and treatment cost is from low to high.

NEW TYPES OF TREATMENT: Effective and No Surgery Radio Frequency (RF) itself is not new – but its use in non-invasive skin tightening, cellulite reduction and circumferential fat reduction are exciting. (A few common devices are VenusFreeze or BodyTite.) RF energy penetrates the skin and underlying fatty tissue quickly and safely – and heats it up. The super-heated fat cells are then naturally purged over the next 3 to 6 weeks. Treatments are quick (it can be done over a lunch), and patients feel a comfortableyet-hot sensation. 4 to 6 treatments are typically required, and a typical package for 6 treatments is ~$1500. Another interesting treatment/device is marketed as CoolSculpting. This targets a larger section of fat (compared to RF above), and gently cools the unwanted fat cells to induce a controlled elimination of fat cells. This reduces bulges in treated areas of the body without harming surrounding tissue. At least several treatments are required, but results are often visible after 3 to 6 weeks. A typical “bye bye belly” package (4 treatments, aka “cycles”) starts at ~$2250. Full disclosure: this is the device we have and I can gladly state that patients are usually very happy with the reduction in their “spare tire” or other unwanted bulges! Finally, Belkyra (called Kybella in the US) is the only Health Canada- and FDA-approved injectable treatment for fat, and currently only approved for the chin area (aka “double chin” or submental fullness). Belkyra is effective in our experience and requires an investment of $1100 (or more) for 2 to 4 treatments. Plan for some swelling and discomfort that subsides after several days. However, happy patients are willing to forego a few days for their jawline from 10 years ago!

Here’s The Skinny A review of scientific literature, supported by our experience, conclude that none of the treatments have been shown to be a “cure” for cellulite. And there is no fat melting ointment, sorry! However, there are several effective non-surgical fat therapies that, after several treatments, and within several weeks, show good results.

Author: Dr. Janna Bentley is a cosmetic medical doctor and owner/founder of Lakeshore Vein & Aesthetics Clinic

LIPOSUCTION: This is done on the fat in the deeper reserve layers of the skin and not in the subcutaneous layer. It can effectively contour the body, but one should not expect it to vastly improve the appearance of cellulite. Effective, but due to cost – not to mention surgery and risk – it is less popular than the non-surgical treatments. LakeshoreVeinClinic

The Lady

by Kristine Jones

Be the woman a gentleman adores....

Hello Summer Attire! … Nope, nothing fits. Do you obsess about your weight? I absolutely torture myself about being disappointed with my weight. I will literally weigh myself daily and that disappointing number will be on my mind in everything that I do. I count calories, steps, glasses of water, avoid carbs, stopped putting cream in my beloved morning coffee. Somehow I think this obsession and desperation will magically help me lose the 30 pounds I’ve gained over the last two years. I can probably eat a bit smarter. I can definitely exercise harder. I can probably drink one more glass of water. All of these things I can probably do to help me lose weight, but you know what I should do? Ditch my scale, buy clothes that fit, climb mountains, and not “diet” to the point that I can’t wait until Friday “cheat night” with my hubby. Not only am I healing from a hysterectomy six weeks ago, but I have been struggling with Adenomyosis and PCOS for upwards of eight long years. I should probably give myself a break – a break from the obsession and pressure of wanting instant gratification with my weight. I absolutely do want to lose the thirty pounds that I gained, but how about I do it in a way that is based on lifestyle choices, instead of numbers. I’m mentally exhausted from focussing on a three digit number every single day. My health has been a mess the past few years, but for some reason I didn’t fight for it. I sure talked about it, but never really fought for it. Finally, I saw an acquaintance on Facebook post about her battle with Endometriosis. In that moment, I realized that I wasn’t alone – and maybe I needed to talk to someone. On a complete whim I reached out to her. We met for coffee, shared stories, and what resonated with me was when she said, “Kristine, you need to be an advocate for your own health. You know how you feel.” Within a month of meeting Jane for coffee, I was determined to get better and was scheduled for my hysterectomy, which was step one on my journey to getting better. It’s so important to have support.

Thinking back, I should have asked for help years ago. Today, my boss - my fearless leader, even knows that I am on a path of wanting to lose weight and get healthier. He takes the time every week to ask me how I am feeling and asks what he can do to support my journey. It’s not a weakness to ask for help, it’s called having courage. Ladies, I am going to spend the next three months learning about my new self, my hormones, and putting extra effort into eating meals that I would be proud to serve my growing kids. I’m not going to kill myself at the gym, but I’ll definitely work on strengthening my core and fitting in more cardio. This is achievable, and realistic – even with two busy kids and a full-time career. Walk before you run. The cliché is so simple, and yet, so often we just want to hit the ground running without first walking – let alone even figuring out where we want to end up. If you are reading this thinking “YES, I need to stop obsessing about weight too!”…Try going all summer without stepping on the scale. Let’s measure our success by how we feel… and you never know, maybe by the fall ICON issue, we could be down a few pounds and feeling awesome. Be kind to yourselves ladies. xo

Healthpoint Laser Clinic

Raising the Standard in Laser Hair Removal Venus Velocity™, the new gold standard in laser hair removal is here and it’s available exclusively in the Okanagan at Healthpoint Laser Clinic. Laser hair removal treatment has been offered for more than 20 years, and it still ranks as one of the most popular non-surgical cosmetic procedures, even among men. Venus Velocity™ was developed and launched by Venus Concept, a leader in the global medical aesthetics market. At Healthpoint Laser Clinic, we’ve been using Venus Concept instruments for years as one of our top choices for unsurpassed quality, reliability, and long lasting results. We are pleased and excited to introduce their latest revolutionary technology to our extensive list of services. Healthpoint Laser has always been light years ahead and now, the best is even better!

Why Is Venus Velocity™ Different?

If you have done any research into hair removal, you’ve probably read statements like, “stay out of the sun for at least a month between treatments” or “your skin is too tanned for the treatment to be successful.” Not anymore! There is no need to put plans on hold, no rescheduling beach days and no worrying if your latest spray tan is a shade too dark. Venus Velocity™ can be used all year round for effective, safe and virtually pain free hair removal for the face and body.

What To Expect

• An effective and permanent reduction in unwanted hair. • More hair removal in dramatically less time than with traditional treatments and lasers; even for large areas of the body. • Zero downtime. Return to your regular routine immediately after treatment. • Safe for all skin tones, even tanned skin. • Virtually pain free.

How It Works

Venus Velocity™ uses a remarkable technology to directly target the hair follicle in the anagen (growth) phase when the hair responds best to the treatment. Energy is delivered to the hair follicle where it’s absorbed by the hair pigment, destroying the follicle by limiting its blood supply. Destroy the follicle and the hair cannot regrow. The result? 90% – 95% permanent hair reduction and 100% satisfaction.

Is It Really Pain Free?

For many years, the industry has boasted laser hair removal as being pain free. However, if you’ve ever tried hair removal you are well aware that this is not the case. Many people describe the pain as pin pricks or an elastic band snapping against the skin. The pain is “manageable” but why choose manageable when you can experience a truly pain free treatment with the experts at Healthpoint Laser Clinic? The Venus Velocity™ features a new “SLIDE” mode, in which an entire area is gently heated, making the treatment significantly faster and eliminating discomfort. Combined with the advanced real-time cooling system, which works on contact to ensure your skin is always protected, the result is an enjoyable, comfortable treatment.

KSER Scholarship Golf Fundraiser

Gallagher’s Canyon Golf & Country Club, August 24th, 2018 Kelsey Serwa’s ‘KSER Scholarship Fund’ offers a helping hand by supporting Grade 12 student-athletes graduating in Kelowna, on their pursuit of excellence in athletics and academics. Success can be measured on many levels but can only be achieved through passion, perseverance, determination and discipline. Through personal experience, Kelsey has learned that there is no singular path to greatness. Some will need to stray from thenorm to fulfil their dreams. The KSER Scholarship Fund believes in supporting those who may need to forge new trails to pursue their life’s passions, achieving excellence through unconventional measures. Their mission is to help relieve some of the financial burden associated with fully committing heart-and-soul into a career objective whether it be athletic, academic, or both! Today’s recipient of the KSER Scholarship Fund will be the future of tomorrow, living life to the fullest and embracing lessons learned through sport.

A Q&A with Kelsey Serwa

to excel in both athletics and academics.

Q: Why create the KSER Scholarship Fund? A: When I graduated from KSS in 2007, I was unable to apply for bursaries and scholarships simply because I was classified as a parttime student. Although my grades were excellent I couldn’t even receive the Passport to Education funding because I did not attend school full time. Sport required me to discover other learning methods to complete my courses. Whether it was through distance education, summer schooling, store-front schooling or self-teaching, I was able acquire the needed credits to graduate with the necessary pre-requisites for university, while remaining on the Principals List of Distinction. This scholarship rewards those who may need to utilize unconventional measures of education as they balance their commitments

Q: Are recipients able to put the funds towards school or sport A: Yes! Working with the Central Okanagan Foundation, we have made sure that each recipient is able to use the funds where they need it most. That means, recipients may use the award to offset tuition fees or to cover coaching expenses of a certified National Sport’s Committee. Q: Will I receive a tax receipt from my contribution to the KSER Scholarship Fund? A: Yes! All funds are housed with the Central Okanagan Foundation. Tax receipts can be issued for any contribution greater than $25. Please note, tax receipts cannot be issued when there has been an exchange of service. Q: Why should I support the KSER Scholarship? A: Besides associating your company with a great cause, your contribution will provide the funding needed by studentathlete graduates to continue pursuing both athletics and academics. Because of your support, these recipients will not have to sacrifice their dreams based on financial limitations. You will be giving these youth an opportunity to become their best and follow their passions!

Please contact Kelsey for any questions or suggestions for ways your company can get involved with the KSER Scholarship Fund Kelsey@kelseyserwa.com (778) 215-5842 Summer 2018

We had 3 different quotes from 3 different granite companies for granite to be installed in our home. You’d travel the world twice over to find a parallel to the Okanagan’s natural beauty, scenic lake and mountain views and glorious gardens and forests; we are so lucky to live in Mother Nature’s (ie: the ultimate designer’s) “dream home”. With our fabulous weather and active lifestyles, we are all about building homes that feature a blurred indoor - outdoor design. One of the easiest ways to bring the outdoors in is with plants- and we are certainly becoming more and more creative with how we display and utilize our “living” decor at home. No matter what style of dream home we’re building or designing, we always, always, always include living plants in the home. Not only do plants, flowers, and trees look stunning inside, they also help to clean the air of toxins, organically fragrance a room, and can provide beautiful ingredients for our meals and drinks. Here are some of my favorite designer tips for incorporating living “art” at home.

The trendy plant of today is without a doubt the cactus. Not only are these plants architecturally sculptural, they have some of the most unique colorful flowers - and require minimal maintenance- win win win! An indoor boho-chic cactus collection in artisan pottery and planters is all the rage on top of a gorgeous console table or kitchen windowsill. We like to adorn our cactus with beautiful vintage brooches, or place decorative objects inside of our cactus like crystal skulls or insect jewelry. My next go-to favorite is using a collection of orchids to glam up a mantle or island. Orchids (with some TLC) can last for several months and provide feminine, soft beautiful flowers that look exotically expensive and formal, without being fussy. Air plants are another low maintenance- extremely interesting favorite that we can get super creative with (try placing them in broken sculpture, ceiling-hung glass balls, or amethyst votives). The other “living luxury we often include in our dream homes are potted fruit trees (lemons, limes, grapefruits, oranges etc...). Nothing is more fun than telling your summer BBQ guests to grab their own lime off the tree for their beer, or to cut fresh lemons for homemade lemonade. These trees love the Okanagan sun and look stunning in the backyard, on a patio, or in a kitchen corner window.

Did you know that there is such a thing as pink lemons, yes pink lemonade is an authentic rarity. There are several greenhouses in town who will pick up your trees in the Fall and store them for the Winter so they come back even more lush and loaded with ready-to-eat fruit. With their size, we most often put these trees in large, plastic pots (so they are lighter to move) but don’t be afraid to paint or decorate your plastic pots. They can look just as dressy as ceramic with a little love (scribble words, hot glue adornments or tie ribbon around the base and be sure to have some lovely, trailing under-plantings). Bird of Paradise trees, fiddleleaf figs and dracaenas fill living room and bedroom corners brilliantly. We love getting creative with our pots- try using wicker baskets, hand-painted pottery, copper tubs or wine barrels for added interest. Ferns absolutely love humidity so they are the perfect plant to put in your ensuite beside a freestanding tub if you’re seeking some greenery in this often un-floral space. Tall tropicals like palms look amazing all Summer long down the dock. Every home needs a herb garden, whether you keep this inside or outdoors- nothing elevates home cooking like fresh herbs and edible flowers. My absolute must-haves are edible pansies, sweet basil, lemon thyme, rosemary, pineapple mint, sage and lemongrass. Displayed in their own pots (so they don’t cross-contaminate) and labeled clearly is a mustdo. We freeze lavender in our ice cubes and cut fresh cilantro for our jalapeño margaritas all Summer long. You will never reach for the dried, powder-ground herbs again. Go beyond your basic cut floral arrangement and try decorating your home with plants, trees and succulents!

FOOD BANK

OPENS NEW HOME

Last month the Central Okanagan Food Bank opened its new Kelowna Branch, located on Enterprise Way. “This is a community service project years in the making” says Lenetta Parry, Executive Director for the Central Okanagan Food Bank, at its Official Grand Opening and Ribbon Cutting Ceremony.

Parry is quick to point out that none of this would have been possible without the hard work from its Food Bank team, a dedicated group of staff, volunteers, Board of Directors, as well as a supportive community.

The Food Bank had outgrown its previous Ellis Street location. They were operating two warehouses and renting additional off-site storage locations.

The Central Okanagan Food Bank distributes nearly $4.0 million worth of food per year, serving approximately 4,000 individuals per month. 33% of those are children under the age of 15, while another 12% are seniors on a fixed income.

According to Parry “this was an ineffective and inefficient way to manage inventory. We simply could not handle the growing volume. We needed a new home.” The Food Bank’s new facility is double the size of its previous location, has higher ceilings, loading docks and parking. In addition, the Food Bank has tripled its cold storage capacity and changed its model of Food Banking to one that looks more like a grocery store. Parry is excited about their new home. “By adding reach-in coolers, freezers and display racking we have created a grocery store-style experience for food bank clients. The market features an assortment of fresh produce and bakery items, just like you would see at a typical grocery store. The space is inviting and clients feel welcome. We believe this new approach improves self-worth among our clients and reduces the stigma surrounding food banks and food insecurity.” Clients are able to come in, grab a grocery cart and take the food they need. Early feedback from clients is overwhelmingly positive. “There is

56

dignity in choice” says Parry “we want our clients to know it is ok to need a little help… we all need help sometimes.”

OKANAGAN

www.iconokanagan.com

Summer 2018

Additionally, the Food Bank provides food to over 40 local non-profit organizations, including churches, school breakfast programs, after school programs and other hunger relief organizations and they act as the Hub for the Okanagan Region serving another 25 smaller Food Banks across our Region in partnership with Food Banks British Columbia. Parry has no doubt that this new model of Food Banking is innovative, leading edge and will inspire food banks across Canada. LA STELLA 2017 VIVACE PINOT GRIGIO Ok, just because you may still wonder: Pinot Gris or Pinot Grigio is a white grape variety, a mutation of pinot noir that has a distinctive copper colour when it’s ripe. “So if it’s the same grape why are some wines called Pinot Gris while others are Pinot Grigio?” The answer is rather simple: grape variety is just one factor hinting at the ultimate style of a wine. Climate, geology, vineyard and winemaking practices all leave their mark on the final wine just like two pieces of identical steak can be cooked differently and the end results can be vastly different. Alsace is the home of Pinot Gris in France. The LaStella Vivace is made in the Italian style of a light, zesty Pinot Grigio. The 2017 Vivace greets you on the nose with a very expressive note of bergamot rind, desert vegetation (sage) and lime juice. The palate is packed with fruit a melange of citrus fruit before it finishes with tart apple and zest notes. $19.90 | 12.4% alc. | www.lastella.ca

technique is sourced from the vineyards surrounding St. Tropez ... which tells you that this wine needs to be paired with a big sunhat and stylish sunglasses! The Glow Rosé shines with flavours and aromas of red berries, mild spice and rose petals, and finishes with a distinctive streak of resin from very focused skin contact. $21.90 | 13.2% alc. | www.bench1775.com

THE CHASE WINERY 2017 ROSÉ The Chase Winery is Lake Country’s newest winery and under winemaker Adrian Baker, who strives to produce complex, bright and exciting wines, their new releases quickly got some attention: The last vintage of their Pinot Noir Rosé was sold out in just 3 months, so better hurry if you want some bottles of the 2017. The nose of the 2017 Rosé carries aromas of raspberry and strawberry with a hint of and acacia flower. It is crisp, bright and refreshing with a long clean and dry finish. $21.00 | 14.5% alc. | www.thechasewines.com

Classic Summer Mussels

One of my favourite things to cook is Mussels. We can get them extremely fresh in the Okanagan from our seafood supplier Codfathers. John Croft and his family have extremely good connections with all the fishermen and farms on the coast which enables us usually to be able to get fresher seafood than you can get in Vancouver most of the time. While in season, we use Saltspring Island mussels. This recipe calls for 3/4lb of mussels approx. 750ml. You will need the following: • • • • • • • • • •

A bottle of white wine. I recommend pinot gris from The Chase. A shallot Some garlic A lot of salted butter 1 lime Very fresh bread ( we use cabin atelier rye ) Soy Lecithin ( you can find this at choices ) Fresh Flat leaf parsley 1 tbsp Fresh Mint 1 tbsp Fresh Tarragon 1 tbsp

• 1 good pot with a lid • 1 sharp knife • 1 hand immersion blender

Finely chop your shallot and a couple cloves of garlic. Sweat in a hot pot. Add your mussels and toss in shallots, garlic and oil and add a tsp of salt. When the pan is at its most hot and right before you think the shallots and garlic will burn, add approx. 500ml white wine. Bring to a boil and add 3 tbsp salted butter and a

squeeze of lime juice. Put a lid on the pot and watch your mussels. Wait for the wine to bubble up to the top of the lid and remove the lid. When the boiling wine settles, your mussels should just be opened. If not, watch and wait for them to open. Chefs tip: watch your mussels closely and the second that the last one opens, take it off the heat. Cooked mussels are very nice, but mussels that have barely cooked and just opened are pure nectar. Taste your broth and adjust seasoning. Add fresh chopped herbs ( we like tarragon, parsley and a little mint ) Now for the fun part: In the restaurant we like to foam our broth. This makes it look like the mussels are covered in seafoam and washed up on the rocks. Its very easy: Take your mussels out of the hot broth and put them in a bowl. Reserve the broth in a deep container ( plastic tupper ware is great ). Add a tsp of soy lecitithin and add start to blend with your immersion blender. Place a spoon in front of the blade. This will protect your bubbles and let them develop. If you don’t guard the blade, it will continuously destroy and remake the bubbles through circulation. Once you have a nice collection of foam in the container, pour it over the mussels and scoop the foam over top. Add a few slices of grilled bread and if you like, grill half a lime as well. We recommend serving this with a nice glass of Pinot Gris or Riesling if you dare, from The Chase Wines. This dish suits the profile of most whites in our portfolio.

“Alex has a unique style of food and creates each unique dish as a colourful art piece.”

CHEF ALEX LAVROFF Alex’s love of food and cooking started right here in the Okanagan. As a creative youth his original dream was to go to film school, perhaps to become the next Martin Scorsese. When that didn’t work out, Alex was first introduced to the growing restaurant industry at the Hotel Eldorado under the guidance of Chef Jeremy Luypen. Alex’s natural culinary talent and hard work got noticed by Chef Luypen and he quickly moved up through the kitchen ranks. Cooking became Alex’s new creative outlet. To this day, Alex considers Jeremy a good friend and mentor to his culinary and creative expression. Alex graduated from the Pacific Institute of Culinary Arts in Vancouver. After working at some of the top restaurants in Vancouver and the Okanagan, he made his debut as Team Chef at Summerhill Pyramid Winery for two years. Alex most recently travelled abroad to Antwerp, Belgium to intern under Sergio Herman and Nick Bril at one the best restaurants in the world, the 2-Michelin Star The Jane, bringing back with him a higher sense of culinary composition. It was here that his passion for fresh local ingredients grew to a new level. Alex has a unique style of food and creates each unique dish as a colourful art piece. His passion for local food is inspired by the sourcing of the absolute highest quality of ingredients from the bounty of our local farmers in the Okanagan. Alex takes great pride in featuring their very best on his menu and even more pride in placing it on the guests’ plate. Alex has embraced the Okanagan love of enjoying food and

showcases his love of individual ingredients in every dish he creates. His creative expression shines with clean, simple flavours with bright acidity. Alex’s flavours for the Garden Bistro are designed to complement the wines, and explore seasonal flavours through the guests’ palate. These flavour combinations and ingredients pair beautifully with the unique taste of The Chase Wines’ aromatic white wines, 100% estate grown in Carrs Landing, Lake Country produced by winemaker Adrian Baker. “For the first time in my career I feel like I can really cook the way I want to cook because now, the wines and my food have a natural synergy, “ says Alex. The Chase Wines Garden Bistro features a scenic 60 seat vineyard-side patio with breathtaking views of surrounding orchards, rolling mountains and Okanagan Lake. An onsite ½ acre organic vegetable garden, only steps away from the Garden Bistro, gives Alex and his team THE most fresh veggies and herbs to incorporate into his daily menu showcasing true local flavours; the ultimate farm to table. 2290 Goldie Road Lake Country 250-766-9922 www.thechasewines.com

HERE TODAY, GONE TOMORROW?

?

?

?

... NOT SO FAST! If you have decided to sell your business, that’s the first step to a process — and it is a process… People sell their businesses for a myriad of reasons. Here are just a few of the more common reasons someone would want to sell their business. • With today’s demographics, the most common reason to sell is retirement. Essentially, baby boomers are packing it in in high numbers. • Opportunity to do something else is often cited as a reason (sell this and buy/invest elsewhere). Of course, in most cases there is still unexplored opportunity in the very business they are selling in the first place! • Location or relocation is becoming a factor in business purchases and sales. This is influenced by things like affordability, weather and family. • Sometimes things like partnerships not working and/or divorce come into play, especially with a business with high value; one may not be able to buy the other out. • Sadly health can have a dramatic effect on both the decision to sell and the value that can be placed on the business. • Many people want to “exit” their businesses just to do something different. Buyers are usually interested to know the reasons someone wants to sell their business. It’s important to understand how to properly prepare your business to sell. Timing and planning are key factors. Some people just decide to sell one day and believe their business can be on the market the next day. Technically, it could be, but if you want to get the highest value, the least amount of hassle and the shortest timeframe, then here is what you do:

76

OKANAGAN

www.iconokanagan.com

Summer 2018

Ideally you are at least two years away from the exit. Now is the time to get your financial records in order. A good accountant is paramount and if you are having your accountant prepare annual financial statements that are “Notice to reader” consider upgrading to “Review Engagement” statements. A good business broker is also vital and will guide you through the process. There are many nuances and idiosyncrasies to representing and selling your business in a confidential manner using systems and infrastructure designed for this purpose. The knowledge of a good Business Broker will make this journey less stressful and more fruitful. Put all the money through “the till.” Some business owners like a little spare non-taxable change (off the record). Relieve yourself of this thought and you will get a multiple of that money, and often that total sum can be non-taxable using a tax credit for sales of small businesses. A good lawyer can and will influence a deal. Find a lawyer who is knowledgeable in businesses and commercial real estate and one that is also a dealmaker not a deal breaker! Both are out there in the market. When you plan ahead and are ready, then YOU the owner can decide when is the right time — not outside influences. Pricing your business to sell Most people do not know what the actual value of their business is worth. This can surface as a problem if you think your business is worth a specific amount, and you plan to receive that amount then find out you are off by a huge margin. One of the most common misbeliefs is that “my business is worth the gross annual sales.” This is a fallacy. Businesses are valued a number of different ways, most of these are multiples of earnings viewed from different angles; some of these include Earnings

Before Interest Taxes and Amortization (EBITA) and Sellers Discretionary Earnings (SDE). EBITA is commonly applied on businesses that are run under management. SDE is the total amount of money accrued to an owner, including owners’ salary and any expenses the company pays for personal items that may not be required by another owner — these expenses are generally referred to as “add backs.” At Business Finders Canada, a valuation document will be produced for each and every business we are involved with, using a number of different valuation methods to produce the highest achievable valuation number.

Experience Genesis “We strive to create the finest automobiles and related products and services for connoisseurs around the globe.”

Buying a luxury sedan these days means sifting through a wide selection of enticing options. BMW, Mercedes-Benz, Audi, Jaguar, Lexus, Acura - the list goes on and on. But what about Genesis? Genesis? Well, yes. The Korean brand may be fairly new to the luxury car market, but you cannot get more driving luxury for your money. Period. On March 10 Genesis of Canada announced that the Kot Auto Group would be a distributor of this new and Upcoming Luxury Brand in the Okanagan Valley. “The experience begins at your doorstep,” says Jayson Gazloff, one of the Genesis Experience Managers. “Genesis offers a true concierge service. It’s called “Genesis at Home” and means that you schedule a personal product demonstration right at your home or office. And then, instead of going to a dealership, the customer builds his own car online, on a computer or even the phone, and places the order. The Genesis at Home program is designed to make owning a vehicle as convenient as possible.” The car will get delivered within 10 days, right to the customer’s house. “Genesis at Home” even includes complimentary pickups of your car when it needs a service or maintenance. All you have to do is to contact your Experience Manager and they will come to your location of choice to pick up your vehicle. While your vehicle is serviced, a Genesis courtesy vehicle is left at your disposal.

Speaking of maintenace: It is included, for 5 years or 100,000 km, whichever comes first. Add free yearly navigation map updates, and a 5-year free 24/7 roadside assistance to it - yes, that’s the Genesis difference. “This is true, human-centered luxury,” says Gazloff. “When you combine all these features and benefits at pricing that undercuts the German luxury marques, you have a smarter, more progressive approach to the luxury car ownership experience that the finest of automobile connoisseurs will want to champion.” Three models are currently available: The brand-new G70, available with a 2.0L turbocharged inline 4-cylinder or a 365hp V6, the G80, and the ultimate luxury flagship model, the G90. Both the G80 and G90 are available with either a twin-turbocharged V6, or a V8 engine. All-wheel drive is available for all three models. Genesis also announced a luxury SUV, expected to be available in 2019, and a sportscar, which will follow right after. If you would like to find out more about Genesis, just book an appointment online at www.genesiskelowna.ca and an Experience manager will meet you at either your residence or place of business. And if you decide to buy? Just pull out your phone and get it done. The vehicle and paperwork will get delivered directly to your doorstep. It’s that easy.

hen this car came off the assembly line, it was a stock Corvette Roadster with the 283 engine and a fully synchronized 3 speed manual transmission. It was Rob Oltmanns’first car and, when he bought it back in 1975 in Kelowna at age 18, he had to have a family member co-sign the loan of $5,000. He enjoyed it Year round and eventually parked it in 1984. It needed a lot of work and was very weather worn. Rob, being a hot rod enthusiast, always dreamed that one day he would build it into a pro street hot rod. His dream should come true, but it would take another 32 years. The car stayed in the yard under a tarp for many years until Rob built a shop in 1993 and moved it in. When he took the tarp off, his then 4-yearold son squealed with excitement. “We have a Corvette!” In 2006, the work started, and many opinions were flying around about Rob’s ultimate plan of building a pro street hot rod. “Why aren’t you re-

1958 Corvette storing it to stock? It will be worth so much more money!” was the most asked question, but he had the right answer: “I couldn’t care less, I’m never going to sell it.” With the help of a few local hot rod shops, the chassis and body began to take shape. The engine block and crank machine work was done by K&S Machine. It is a balanced big block 427 with aluminum heads, 4-bolt mains, a comp solid roller cam with roller rockers and 11-1 forged pistons with a Demon 6 pack carburetor. The engine assembly and fine tuning was done by Rob Kroker assisted by Rob, who also did the engine paint, and installed the Turbo 400 transmission, which has a 2800 stall converter. He also installed the brand new Jim Meyer front clip and rack and pinion steering, along with the disc brakes as well as the (mostly new) chrome and all the wiring. The radiator Rob uses is a Matson cross flow, and custom head-

ers were built by Jerry Demski, as was the dash. The Corvette has a Moser 9” 370 posi rear end with Four Link coil over and was tubbed to accommodate 29x15.50” tires. The custom interior was created by Dan Oleksewich of Dan’s Place in West Kelowna, using all marine grade fabrics to make sure that should some rain come down and the hardtop stayed home, nothing bad is going to happen. The immaculate paintjob was done by Pat Powers of Peachland. The car originally had about 250hp and the fastest it was ever driven was about 110 mph. It now has 600hp and Rob is yet to see just how fast it will go.

The story began in 1965 when the Chevelle was introduced with a 375-horse 396, but nothing screamed like the single-year option Chevelle SS 454 LS6. It was so exclusive, that many enthusiasts still dream of owning one today. The 1970 Chevelles stood apart even from their previous model year siblings. Thanks to sheet metal revisions that brought a more squared style to the muscle car’s body, the 1970 Chevelles stood apart even from their previous model year siblings. Performance enthusiasts went for the SS package, and could choose from two models - the RPO Z25 SS with a beefed up 402ci engine (still marketed as a 396), or the RPO Z15 SS option with Chevy’s 454ci big block. In standard form, the RPO Z15-optioned Turbo-Jet 454ci (LS5) engine was rated at 360hp. The LS6 that you see in this pictures, however, was rated at almost 100hp more (450hp) and capable of producing 500ft.lb. of torque. Gary Feeny, the owner of this beauty, purchased the car in Minnesota from a collector. He remembers his days as a teenager when he saw a brand new black and yellow LS6 in Kelowna, beating all coners at the Glenmore and the Joe Riche drag strip, and he knew one day he would own one. His Tuxedo Black LS6 is a numbers matching car, complete with Protect-O-Plate stating it is an original LS6 car with original engine, 4-speed M22 transmission, 4.10 gears, Cowl Induction, bucket seats and console. Gary‘s car has certainly checked off all of the desirable SS options. According to GM 4,475 LS6 models are said to have left the factory “America was ready for a new object of automotive lust” floor for the 1970 model year, and they remain highly sought-after collectors items.

1997.5 Lamborghini Diablo We are not sure if that adds value to it, but Donald Trump used to own one of only 200 1997.5 Lamborghini Diablo VT (”VT” stands for Viscous Traction, the name of Lamborghini’s all-wheel drive system) Roadsters. The beautiful example you see here is an original Canadian delivered car, and it has some celebrity connection as well. Merchant banker, TV personality and self-proclaimed “rock star in the world of Canadian finance,” Michael Wekerle, used to own this one. The Lamborghini Diablo was the successor to the Countach and was produced between 1990 and 2001. The all-wheel drive Diablo VT Roadster was introduced at the December 1995 Bologna Motor Show for the 1996 model year. It featured the same 5.7L V12 engine but received an an electropneumatic operated carbon fiber targa top which was stored above the engine lid when not in use. Actually, there are three ways to store it: It can

remain in place, or be removed and mounted over the engine cover. If you don’t like the look, you can remove it entirely and store it separately. From 1996 on Diablos came with the company’s innovative lifting system that hydraulically raises the front end of the car 45 mm or everyday driving convenience. Several exterior features distinguishes the Diablo Roadster VT from the coupe, including new front and rear bumpers, a new exhaust cover and redesigned fog and marker lights. The Diablo VT originally came with OZ wheels, whereas this local Okanagan car spots some very cool 2010 Murcielago LP670 SV rims.

“HUMMER vehicles were built to travel to the ends of the earth – and let you test your limits when you got there.” It all began in 1992, when AM General began selling a civilian version of their famous M998 Humvee. The High Mobility Multipurpose Wheeled Vehicle (HMMWV or Humvee), got worldwide attention when it was used in the Gulf War of 1991. AM General was awarded an initial contract in 1983, and around 300,000 have been built to present. In 1998, General Motors purchased the brand name and marketed the original Hummer H1, based on the military Humvee, as well as the H2 and H3 models that were based on smaller GM platforms. GM shut down the Hummer brand in 2010. We found the two amazing examples you see in the pictures at August Luxury Motorcars. Owner Matt August has been a longtime fan of the trucks, and as an active outdoor enthusiast they will definitely bring him (almost) wherever he wants to go. Both H1s were beautifully detailed and fully equipped. The engine is a powerful 6.6L Turbo Diesel delivering 195hp through a Elect 4-Speed Automatic with Overdrive. 20x12 Rockstars Wheels on Kumho 38x15.5R20 tires. Upgrades, depending on the model, can include an electric locking rear differential, a 4 Predator Lift, the H1 Predator Snorkle, 9’ Basket Roof Rack, a Heavy Duty Brush Gaurd and a Warn X800i Winch. They had another H1 in their showroom: Bright yellow on a brown interior with a soft top with lots of fun aftermarket features. All of these trucks may be sold at our time of publishing, but if so we are sure that the sales staff at August Luxury Motorcars can help you find the H1 you are looking for.

1942 Ford COE

W

photography by David Boyko

e first saw this COE (cab-over-engine) at the weekly Wednesday Night Cruise-In at McCurdy Corner. This two-tone beauty is owned by Bob Harasin, who purchased the 2 ton flatdeck from a farm in Lumby in 2010. “I thought it was just awful ugly,” he laughs, remembering the day he first saw it, “but there was potential.” So he cut off 9 feet of the rear chassis to transform it into a pickup, and installed some other goodies, including a front suspension from a Mustang, fitted with a custom- built airbag system which he also used in the rear, an Automatic overdrive transmission, and, most importantly, a very powerful 5 liter Ford (mid engine) that makes it a joy to drive.

The paint is a two-tone champagne and rootbeer, masterly applied by Barry McNabb. “I also installed an air conditioning system,” says Harasin, “which makes it perfect even for longer trips in the summer. This truck has been a lot of fun cruisin with and I have met a lot of nice people discussing it at events, or in a parking lot.” In the few years since the restoration was completed, the truck has garnered several Best in Show trophies and Bob is hoping his hard work pays off again when he drives it down to Reno, Nev., this summer for the Hot August Nights car show - with the matching trailer in tow.

What We Love About The Okanagan

1

Photo by Gary Nylander: Edited by Deborah Lampitt-McConnachie.

Insider information is everything! This issue, James Miller tells us about his local favourites. James is Valley Editor for Okanagan Valley Newspaper Group, which includes the Kelowna Courier, Penticton Herald and Westside Weekly. He and his wife live in Penticton. The Barking Parrot Bar: I live in Penticton, and this is one of my favourite places: the view, the service, the Lakeside hotel. Also, they support a lot of community endeavors, and I like – in turn – to support them. Usually, whatever my wife orders is what I have.

2

Oliver to Osoyoos: I really like this drive (except for one really extreme curve where I slow down to pretty much a halt) – the view is really grandiose. The view from the Richter Pass between Osoyoos and Keremeos is also to die for.

3

Local Hockey: I like the Kelowna Rockets, and the three BCHL teams in the area, the Vernon Vipers, the Penticton Vees (which is actually a kind of peach, something that not many people know!), and the Westside Warriors. I am more a fan of a good game than a specific team; I like to see a good, close, exciting game.

4

Cannery Brewing Company: Rustic atmosphere, great beer, this Penticton spot attracts a working man’s crowd. It also has very friendly local owners, with live, local music every once in a while.

56

The Train Station Pub: It’s within walking distance of my office at the Courier. I like character, so I rarely, if ever, eat at chain restaurants. I prefer places that are one-of-akind and unique, which is why I like the Train Station. I’m a nacho man (it’s my kryptonite), and I really like the way they do theirs.

The Prague Café: This is a little café on Okanagan Lake by the Penticton Marina. My wife is Austrian and very proud of her European background, and this café really has that feeling.

98

Summer 2018

9

Wild Goose Vineyards: All the local wineries are spectacular, so it would be hard to choose just one. I do like Wild Goose in Okanagan Falls though. We took a twelve-bottle case to Calgary recently as a gift for a wedding we were attending and it was really appreciated. It was a small home wedding, and I think the guests drank most of it before the bride and groom got to it.

710

Gasthaus on the Lake: My wife and I like this Peachland restaurant for the same reasons as the Prague Café above - the European atmosphere. They also do a very good schnitzel, almost as good as my late mother-in-law’s. She made the best, but they are pretty darn close.

8

The Book Shop: This used book store in Penticton is my favourite store in the Valley. It is literally Vancouver or Toronto caliber – which you could spend a day in. In addition to used books, they are one of the last places that rent DVD’s. They have Canadian and independent films, documentaries, very hard-to-find material, and staff are incredibly knowledgeable. They are like a ‘Cheers’ bar for avid readers and film connoisseurs – and they are pet friendly.

Skaha Lake Park | Kelowna Waterfront: I like to take Milo – our 11 year old, long-haired Dachshund – walking in both these locations. Milo enjoys the walking as well; not so much for the exercise, but I think he likes to hang out with me and also see what’s going on (other dogs).
