OUT OF THIS WORLD! ... that’s what we thought when we received the latest entry for our “ICON travels the world” column. We are used to getting pictures from readers with our magazine in the most exotic places in the world, but when we opened the 150MB .zip folder with the simple name “R2” we couldn’t believe it ... the most iconic robot of all time is a fan of the Okanagan Valley’s most iconic lifestyle magazine!! Yes, it is him! Not photoshopped - it is R2 D2 . Thanks to Edward Reed who sent us this super-cool photograph! How do you like our cover? Yes, we changed a couple of things. A “creative brainstorming session” with fellow illustrator John Delaney resulted in a more stylish look. We also made a few smaller changes to some of our other columns and have introduced some new topics. From now on you will find business advice, more beauty and health tips and we are working on some other new columns which we will introduce in the Summer issue.

ICON Okanagan on Tour Cocktail Evening
Okanagan Spirits, Kelowna February 9, 2012 After months of hard work, Okanagan Spirits Distillery, opened the doors of their new location in downtown Kelowna in December 2011. Canada’s oldest copper pot micro distillery with dozens of World Spirits Award medals for some fabulous spirit lines, all made from locally sourced fruit, berries and herbs, will not only offer their great line of spirits to residents and visitors, it will also host several events in this new fully operational facility. One of the first events was the “Okanagan Spirits Cocktail Evening” on February 9th. More than 50 guests made the sold-out event a great success. And with a selection of appetizers catered by Waterfront Wines Restaurant, live music and active distilling demonstrations by the Okanagan Spirits Distiller, sampling of the contemporary and classic cocktails was only one of the highlights of the evening. An Opulent Estate in Kelowna’s Upper Mission City life isn’t necessarily for everyone. But luckily the Okanagan Valley has a diverse range of environments and properties suitable for the wide variety of people that inhabit it. From densely populated urban centers, beautiful subdivisions and golf communities to lake front estates, phenomenal private acreages and vineyards this fabulous place we call home has it all. Whether you’re an urban Yuppie or a cowboy looking to herd some cattle - the Okanagan is uniquely accommodating to everyone who chooses to call it home. With these thoughts passing through my mind, I was ecstatic to have the opportunity to view this lovely secluded estate. Following Lakeshore Road I couldn’t help but go back to those fateful days in 2003 when the whole Valley, Canada, and the world came together to fight the most horrific natural disaster that had ever hit our area. I was reminded of the barren landscape after it had been ravaged by the firestorm, so much had been lost. 10

Today, the area is symbolic of new beginnings, expansion, and lives being rebuilt. It is beautiful and promising, having grown up in the area myself I remember what it was and am extraordinarily excited to see what it will become. This is a beautiful place to have a home. Arriving at the private Ambridgefeld Estate, one is immediately taken aback by the grandeur of the home and how well it is suited to its surroundings. Slowly climbing the private driveway, the elegant entrance comes into view amid a beautiful rock feature in the center of the space. The home sits on a wide spread, nearly 10 acre, plot of land and is bathed in sunlight all hours of the day. Adjacent to the bedrooms is a cute cubby like space which children can climb into for story time, with bookshelves adorning the walls, every day can offer a new adventure and if you climb out and look beside the ladder there is a surprise unlike anything a child has ever seen inside a home: a bright green twirling slide that disappears into the wall and leads into a large playroom on the floor beneath. One can only imagine the hours of fun that could be had here, endless hours of safe entertainment for the little ones.

Downstairs, to the left we find ourselves in what seems to be the perfect “man cave” - the fully stocked bar with granite countertops is equipped with a wine cooler, sink, microwave and even a Hefeweizen beer tap! Trends in Custom Stone Countertops Kitchen and bathroom remodeling are the two most common remodelling projects, and the trend is definitely towards the luxury and durability of high performance countertops like granite and quartz as opposed to the more ordinary looking shorter lasting laminate surfaces. The longer term benefit of the high performance countertops, is that they directly increase the value of your home. According to the National Association Home Builders, Granite and Quartz are the top choices for countertops. We met with Clark Omand, the owner of Pure Granite Rocks, in their new 2,500 square foot showroom in Vernon to find out about the newest trends in material choices and fabrication techniques. ICON Okanagan: Clark, Pure Granite Rocks has existed since 2001 but it seems that ever since you took it over in early 2006 a lot has changed here? Clark Omand: When I made the decision to buy the company in May of 2006, I had a clear goal in mind: to make it the “go to” countertop destination in the Okanagan. When I was in Business School in New York in the early 90s, they taught us that there are three primary ways of differentiating yourself from your competition: 1) best quality 2) best service 3) lowest price I was then taught to “pick any two” as it was theoretically impossible to offer all three.... well, I have spent the last six years trying to do just that! There is no question that our primary focus is on the first two: the best quality and exceptional customer service, and I think our success shows by the number of the Okanagan’s best builders using us as their primary source of high performance countertops. BUT everyone wants to know that they are getting exceptional value for their dollar... so we use our buying power to obtain the best pricing for our raw materials, and our digital efficiency to allow us to compete aggressively on price with even the lowest technology shops that are sprouting up everywhere in the Okanagan. So my new credo is: “Better, Cheaper, Faster”... and this applies to everything from a small bathroom vanity makeover, through a 50 unit Hotel bathroom reno to a recently completed $15m “ski chalet” on one of the local ski hills. ICON Okanagan: Very Impressive. So when I have decided that my kitchen or bathroom needs a new look, would you help me choose the right materials for my project? Clark Omand: Yes of course.. that’s what we do: The process starts with a little bit of question and answer as we figure out where your tastes lay, are you a granite/natural stone kind of person or are you looking for a particular shade of stone in a solid color, in which case you might be a quartz person,(we currently deal in six different brands Quartz: Caesarstone, Silestone and Cimstone being our bestsellers). We will then take you through the pros and cons (if any) of your selection, let you examine the full slabs of material you have chosen, and label them as yours! changer, forever removing some clients concerns that Granite is high maintenance or stains easily... NOT if you buy it from us! The other advantage of using us, is our commitment to sourcing the very finest quality materials. I am typically on a plane twice a month restocking the approximately 120 slabs of material that we cut each month.. I buy a minimum of 6 slabs of each block of Granite, and only the finest sequentially numbered,epoxy resined slabs are good enough for our customers. If you choose a granite that has a grain flow to it, then part of our process is to use an amazing product called “Slabsmith.” We actually photograph the slabs that you have selected, and when the digital template is completed we can drop the pieces of your kitchen onto the slabs ... so that we can line up the grain flow. We then send you a photograph of your completed kitchen, showing seam locations, grain flow etc for your approval, before we even cut your slabs...now that is 100% management of customer expectations! If for whatever reason the customer wants to help in the slabsmith process, then they can sit down with one of our three CAD/ CAM operators and help in the artistic nesting process, allowing them a true “hands-on” experience. ICON Okanagan: Well, at this point we should let our readers know that we actually had a tour of Pure Granite Rocks and that the technology used is more than impressive. A lot is done by machine and we have seen a whole kitchen countertop cut by a CNC SAW in less than 10 minutes ... Clark Omand: True, those kitchen parts are then sent to one of our two CNC routers to have the selected edge profiles shaped and the sinks digitally cut out... but while our routers produce the most consistent edge shapes, we still require skilled artisans to hand polish the edges using diamond polishing pads to bring up the shine and get you the best finish possible.

In the past few years, professional teeth whitening has exploded as one of the most asked about dental procedures. ICON Okanagan sat down with Jen Burton from Okanagan Smiles in Kelowna to have a look at the most common procedures available to uncover that beautiful smile!
It is estimated that one fifth of the population conceal their teeth in photos, generally, due to cosmetic imperfections. This is primarily the result of crooked or discoloured teeth.
Some of these gels are accompanied by high intensity light to amplify the bleaching process. Of late, multiple research studies have questioned the need and effectiveness of a light source used during inoffice whitening. One of the effects of heating the tooth with a light while keeping moisture away is tooth dehydration. The tooth starts to lighten in colour by means of dehydration and bleach infusion, essentially dehydrating tooth structure giving the illusion that the enamel has been whitened.

This time of day is the ideal opportunity to whiten as your teeth are at rest from extreme hot and cold temperature changes which helps ensure little to no sensitivity during the bleaching process. An alternative option to the whitening pen would include custom trays for at home use.
I currently use an Invisalign retainer myself and I’m sure if you asked any of my friends if I had braces they would reply with a no. This is because they are so clear and inconspicuous that you can barely tell they are there. Invisalign can correct spaced teeth, overly crowded teeth, crossbite, underbite and overbite which accounts for the most common issues patients present with when they are unhappy with their smile.

Another option to help improve your smile could include Invisalign. These clear retainers have been made popular by media icons because they are nearly invisible and can be removed to eat, drink, brush and floss. The most common complaint youth and adults alike have with regular braces is that they are unattractive and bulky which makes brushing and flossing a daunting chore and terrible to kiss with! Invisalign braces don’t have any wires you have to floss under, you can remove them for grad photos and you can take them out temporarily for a night out on the town.

It’s open and airy, visually appealing yet functional with a solid well-built feel to it. The engine starts with the push of a button and driving feels like a big luxury car should. There is also ample power and even at higher speeds the ride inside is still quiet. And with the new 8-speed transmission the engineers improved the fuel economy without compromising performance. In the end we noted a combined fuel consumption of just over 9 liters per 100 kms.

Trust Your Ears!
Arcam FMJ AVR 360 Home Theater Receiver We at Home Theater Concepts have been fortunate enough to demo this beautiful receiver in our sound room for the last few weeks, and are thoroughly impressed by this new, aggressively priced amplifier. The AVR 360 has a very simple smooth gray/black finish to it. Uniquely, Arcam bucked tradition and removed any knobs on the front. Instead they went with a series of buttons located underneath the LCD display-two of which control the volume-giving it a nice clean look. pressive. Once we plugged it into our Mission tower speakers and Angstrom sub-woofer we realized that the lower wattage meant nothing, and the smooth output and dynamic headroom was amazingly crystal clear.
When you first read the specs in regards to wattage you may be a little shocked to see a power handling of only 75 watts, which is typical of a receiver of much lower quality. Upon a closer look you will find that this includes 5 channels driven at 1 KHz and 0.2% THD. Now, those numbers make it im-
As far as connectivity goes, it has all of your standard connections including full HDMI pass thru and up converting from component and it is 3d ready. Arcam has incorporated an I-dock connection into this amp and has just introduced drDock. What makes this dock unique from the others is that it is big enough to hold a full size iPad! It includes decoding for lossless formats such as DTS-HD master audio and Dolby true HD. It is also loaded up with a variety of RS 232 and ir flasher zone 2 capabilities for use with custom installation and expansion. Overall, we are very impressed with Arcam’s newest addition to their FMJ lineup. Although the 360 is Arcam’s entry level unit, it is lacking only in 20 watts per channel of power and sporting a linear power transformer, in comparison to its bigger brother the AVR 400. That being said, it offers a lot of bang for the buck when put up against competitive models at the same price or higher. A very impressive piece at a very impressive price of $1899 with a 5 year parts and labor warranty (when purchased through a licensed Arcam Dealer).

Hockey Greats Fantasy Camp Raising the Awareness and helping those who are in Need We recently sat down with local retired ice hockey legend Bob Bourne (winner of 4 Stanley Cups) and his son Jeff to learn more about the Bourne Family & Friends Foundation and the NHL Hockey Greats Fantasy Camp. Bob’s son Jeff, who was born with Spina Bifida, Scoliosis, and Hydrocephalus, none of which have slowed him down, is a wheelchair athlete, competing in sledge hockey, basketball, events in the BC games and anything else he can throw himself into. Jeff also lives on his own which brought about a problem – there isn’t enough handicap-accessible housing here in the Okanagan. And although he was lucky to get into a great place, plenty of others still suffer through lives in un-adapted homes, and need help in the form of care aids to function. The Bob Bourne Family and Friends Foundation, created by Jeff’s father Bob, is a charity born from the success of the NHL Hockey Greats Fantasy Camp. Through the relationships Bob gained during his NHL career and beyond, he has gained the ability to bring top NHL legends to the “Hockey Greats Fantasy Camp.” Held once a year in Kelowna, the goal is to raise money for a worthwhile cause. “The unique nature of the Camp is that it brings the avid hockey fan together with some of the NHL’s past heroes in a relaxed week of on-ice competition and social events,” Bob explains. “We live in one of the most beautiful locations in all of Canada, and a favourite destination for many travellers. If we work together we can help make this a better place for the disabled and to make their lives more enjoyable.” Over the past four years, the Bourne family and their friends have been able to raise enough money to give valuable contributions to research on both cancer, and spinal cord disabilities - but it is still a long way to go. A Visit to Burrowing Owl Estate Winery “Balance is a time-honored goal in the making of premium wines, and working toward balance is a way of life at Burrowing Owl Estate Winery” Jim Wyse, Founder
Established in 1997 and built the following year, Burrowing Owl Estate Winery is situated south of Oliver in the northern tip of the Sonoran Desert. The area is one of Canada’s most unique ecosystems, laying close to or in the same latitude as the great vineyards of France, Germany, northern Italy, Spain, Washington and Oregon. It comes as no surprise that it is one of the most highly rated grape-growing locations in Canada. Jim Wyse purchased the abandoned vineyard in 1993 from an owner who feared that free trade with the United States would put an end to BC’s wine industry. Originally from Toronto, Jim had been a developer throughout the lower mainland for 25 years and found the land while working on a project in the Okanagan. Jim has personally spent countless volunteer hours working with burrowing owls, and, this past December, was glad to announce that since 2004, Burrowing Owl Estate Winery has contributed over $400,000 to the Burrowing Owl Conservation Society of BC for their captive release program for burrowing owls, and to the South Okanagan Rehabilitation Centre for Owls. These funds have been raised through the $2 donation that patrons are asked to make in the tasting room. Spring 2012

Burrowing Owl Estate Winery produces 8 varieties of premium VQA wines
Gratified to see wines made with his grapes gaining immediate recognition, Jim finally made the decision to build Burrowing Owl Estate Winery and to hire some of the most experienced people in the business to replant and run the vineyard and to market the wine. Today Burrowing Owl Estate Winery is one of the most iconic wineries in British Columbia with a facility that combines state-of-the-art technologies with proven, classic winemaking traditions. It owns 140 acres of vineyards, producing between 28,000 to 30,000 cases of wine each vintage and their nine wines consistently rank amongst the very best in North America. With more than 100,000 visitors per year Burrowing Owl Estate Winery is also one of the most visited wineries in the South Okanagan, thanks to its spectacular setting among the vineyards, a wine shop, tasting bar, restaurant and a luxurious Guest House.
The Facilities
Burrowing Owl’s vineyards lie in one of the best locations on the Black Sage Bench situated on the eastern side of the South Okanagan Valley. “We started an extensive planting of European grapes over 18 years ago, and have always been committed to environmental and ecological sustainability,” Jim explains. He went on to state that Burrowing Owl did a massive upgrade to the original irrigation system a few years ago, which has improved their water conservation significantly. Probes in the vineyard allow vineyard managers to track the true watering needs of each vine on a regular basis to ensure they only water when absolutely necessary. Plus, most of the wine production and storage facilities are underground, reducing the building footprint and leaving more surface area for farm land and other wine-related uses. This also provides for natural ground temperature cooling during the summer and natural warmth during the winter for aging the wine. All of the hot water and heating for the wine-making process, the offices, the Guest House, the pool and hot tub is primarily produced from solar panels that are placed on the roofs of both buildings, and all of the Guest House air conditioning and cooling plus a portion of the heating is supplied from their extensive ground-sourced geothermal system. Naturally, they use low energy light bulbs and low flush toilets throughout the winery, restaurant and Guest House. Without compromising the grape or wine quality, every effort has been made to ensure the sustained viability of
“Burrowing Owl Estate Winery is among the world’s most modern,” Jim Wyse explains. “We visited many existing wineries, both in the Okanagan and the US Pacific Northwest to determine what worked and what didn’t, and I must say everyone was very open,” he recalls. “We asked what mistakes they had made and they told us.” One of the features they then chose for Burrowing Owl was gravity flow, which allows for very gentle treatment of the fruit and subsequent wine, so it doesn’t get bruised or altered. Burrowing Owl is very committed to a traditionalist philosophy, in which the wine is interfered with and manipulated as little as possible. Another feature is an underground cave/cellar for fermentation and barrel aging which is one of the largest in the Okanagan Valley. 40

the natural terrain and the plants and animals that live there. If nests of birds that nest on the ground are spotted in the vineyard, the tractor drivers are instructed to rope off these rows until the new chicks have fledged; western rattlesnakes and other creatures that are ocSpring 2012
with wines from Europe, California and South America for example.” Burrowing Owl Estate Winery produced its first vintage in 1997, concentrating on four grape varieties - Cabernet Sauvignon and Merlot for red wines; Chardonnay and Pinot Gris for white. Cabernet Franc was added in 1998, Pinot Noir in 1999 and Syrah in 2000. Malbec and Petit Verdot also grow on the property, and these are used for blending into the winery’s ultra-premium Meritage blend. Overlooking the vineyard - The Sonora Room Restaurant
“Burrowing Owl is an “Estate Winery” which means that all our grapes come from vineyards that we own and control,” Chris explains. “This ensures that we know the history of each grape that goes into our wine, and we know that the fruit is handled with the utmost care throughout the entire growing, harvesting and winemaking process.”
Things have been especially busy at Burrowing Owl over the past few years, as the winery has recently introduced some new products into the market. The latest additions are the “Athene” (a-THEE-nee) blend comprised of estate grown Syrah and Cabernet Sauvignon. The blend is named after the biological genus name for a burrowcasionally found in the vineyard are relocated without ing owl (Athene Cunicularia). The Wines “Our main focus,” says Jim, “is to produce world class wines that showcase the premium terroir of Burrowing Owl vineyards.” It appears that this goal is being met judging by the numerous accolades that Burrowing Owl wine’s have been awarded over the years. “We are always pleased when our wines do well at international competitions,” states Jim’s son, Chris Wyse, President of Burrowing Owl. “It confirms that we are producing wines that not only stack up in our own region and country, but also on the international stage Spring 2012

made a commitment to showcase many of the South Okanagan’s local producers with their array of local organic produce, fresh, seasonal fruits and artisan breads and cheeses.

With every passing decade we get farther from the cultural norms that made society seem to run with a bit more refinement and class. At what point did we stop passing down the original traditions of chivalry and respect? For those brave among us willing to step up to stand out, becoming a true gentleman is really quite simple. In one sentence, being a gentleman (or a lady for that matter) is about making sure that everyone around you is as comfortable as possible. I’m pretty sure it can’t be put any more succinctly than that! Here is a series about classing it up, toning it down, and bringing out your inner “James Bond.” They should have taught you this in school... You look like a slob. It is always better to be over dressed than under dressed. Showing up to a party or an event with your pants falling off wearing the shirt that was closest to you on the floor when you woke up is a great way to lose people you may want to take you seriously. In general, it’s time for us to grow up. Start dressing like Man... not a high school “smoke doors” wanna-be gangster. Get jeans that fit, a collar whenever possible, and lose the skate shoes. A gentleman takes pride in the way he looks. (yes, being comfortable is sometimes great too, so keep your sweat pants) The noodle handshake. A gentleman will always give a firm handshake and make eye contact the whole time. When you look past someone during the shake, it shows disrespect. It is also a great idea, when meeting someone for the first time, to repeat their name immediately after hearing it. It is always impressive when you recall the name of someone you met a long time ago, and everyone likes the sound of their own name.

When walking, always walk between your date and any danger like traffic (or a cliff!). Her safety is the most important...like your mom’s! Put your napkin on your lap while you’re eating, on your chair when you stand-up, and don’t turn it into something that looks like a C.S.I. rag from a murder scene. If you initiate the dinner/ lunch then you should offer to pay. Pay and tip discretely...it isn’t polite to blab about the bill, money or the tip. You have money? We don’t care. The true mark of a gentleman his humility. Typically the guys who brag about money the most are the ones who did the least to earn it. I’m not much of a planner and I don’t like to map out my trips prior to taking them because I like surprise, I like adventure and I like the unknown. In fact, I wasn’t sure why I chose to go to Bali with my friends beRicefields in Ubud cause I didn’t know too much about it before we left; I kept hearing about it in random places and saw signs of Bali everywhere I went. I suppose the island chose me, rather than my choosing it. But regardless of how I got there, Bali met and surpassed every conscious and subconscious expectation I had of it. Because I believe that life gives us signs to watch for, clues or hints at what our inner desires yearn for, I will never share too much information about a place. I want you to find

However, I do feel that some guidance and preparation is necessary in order to be equipped and ready for anything that can come your way. Be a smart traveler! Based on a one week stay and a week’s worth of observation, experiment and experience, I prepare you with this short list (additionally, I advise you to pick up a Lonely Planet guide for far more details about currency, peak seasons, weather, accommodations and much more): Kuta: closest city to the airport, nice beach, lots of clubs but too busy and chaotic so I wouldn’t recommend staying here. Legion: good beach and great place to learn how to surf; I recommend the Quicksilver school. Seminyak: the perfect combination of swank and serene; a bit pricier than the rest of Bali but worth the extra costs; nice lounges and restaurants (check out Ku Deta, Hu’u and Potatohead).

Grilled Chicken Okanagan Style Asparagus, Feta and Prosciutto Tartlets Easy as 1 - 2 - 3! Asparagus, Feta and Prosciutto Tartlets. Always a hit and a great way to kick off an evening! Freezes well for a future treat. Step 1. The Shells:

Preheat oven to 350 degrees. 48 2� Tart Pan 6-8 sheets Phyllo Dough 1/4 cup Butter Melted
1 bunch Trimmed Asparagus, finely chopped 8 slices Prosciutto, cut into 1/6ths 1/2 cup Feta Cheese
3 Eggs 1-1/2 cups Cream Fresh Grated Nutmeg Salt & Pepper
Brush one sheet of phyllo dough lightly, with butter and lay a second on top. Use a sharp knife to cut out 3� squares and ease these into each tart shell. Continue until all shells are lined.
Divide the filling evenly into the tart shells.
Beat the eggs and stir in the cream and spices. Carefully spoon into prepared tart shells to cover the filling.
Remember - leave room for the custard (Step 3). Wine pairing: Burrowing Owl 2009 Chardonnay
Bake for 15-20 minutes until set and the phyllo dough is browned. Cool for about 5 minutes and serve.

Our favourite Grilled Chicken Our favourite Grilled Chicken. Any good spice rub will work, but this is a great combination.Perfect for springtime dinner – we have served it on a bed of lemon couscous. Delicious! Ingredients: • • • • • • •
6 bone in Chicken Breasts 1 Tbs. Fennel Seed 2 Tbs. Paprika 1 tsp. Cinnamon 1 tsp. Tumeric 1/2 tsp. Cayenne Salt & Pepper

1/2 cup Olive Oil Juice and zest of 1 Lemon 3 Garlic Cloves, finely chopped Cilantro and Lemon Wedges
Wine pairing: Burrowing Owl 2009 Pinot Noir
Method: Toast the seeds in a frying pan and grind (we use a coffee grinder). Combine with the other spices, garlic, oil, lemon juice and zest.
Put the chicken in a shallow dish, coat with the marinade and let rest in the refrigerator for at least one hour. Preheat your BBQ and grill for about 30 minutes on medium, turning chicken every few minutes. Sprinkle with cilantro and serve with lemon wedges. Enjoy! Spring 2012

Welcoming the Spring ... Snowshowers, clouds and some rain one minute, bright sunshine and the first blooming flowers the next. With spring having just arrived, we thought it fitting to find a wine to celebrate the season. Let’s leave the deep, rich wines of winter behind - it’s time for some fresh and crisp wines. We picked the following four refreshing varieties for spring and summer:
Red Rooster 2010 Pinot Noir A well-known boutique-winery on the Naramata Bench, Red Rooster consistently receives top honours at major wine competitions around the world. In 2011 they received a Lieutenant Governor’s Award of Excellence and made the Top 5 Chardonnay in the World. If you are planning to go on a winery tour this Spring and Summer (and you should!) make sure that Red Rooster makes the list! Our recommendation is the 2010 Pinot Noir. With grapes coming from several vineyards in the southern Okanagan, the grapes were cold soaked for 3 days and fermented on the skins for 7 days. The wine then spent 9 months ageing in 1 year old French oak barrels. “Go Italian!” - that’s what our food editor told us when we sampled the wine, and so we chose a nice and spicy pasta dish with lots of tomatoes roasted red peppers. Yes! This Pinot Noir has a light to medium frame, its vibrant aromas and flavours suggest black cherries, blackberries and raspberries with a hint of mushrooms in the background. Very interesting! It initially seems very soft in the mouth but expands to become powerful, remaining refined and elegant. Love it! The winemakers tip: Enjoy while young and vibrant! Retail: $21.99 Alc./Vol.: 14.5%

Black Widow 2010 Pinot Gris While Pinot Grigio is in fact the same grape as Pinot Gris, the differences of wine they create can be immense. Wine named Pinot Gris typically provides more body and rounder fruits while Pinot Grigio gives lighter-bodied, citrus fruits. Black Widow has 2 blocks of Pinot Gris covering two acres of their property. The grapes are hand picked, ensuring that only sound, mature fruit finds its way to the crusher. Following crush, the grapes were left to cold soak on the skins for a day to extract aroma and flavour. Following the pressing, the must is fermented under temperature control in stainless tanks to preserve bouquet and fruit flavours. The 2010 Pinot Gris has been harvested at a sugar level of 24 Brix (the 2008 had 22 Brix). It is well balanced and we noticed a very nice full flavour with a dominating pear and apple aroma. A great wine to be enjoyed after a hard workday or when relaxing on the porch. This Pinot Gris has nice bright acidity which leads into very long zesty finish. This wine is drinking very well now but we would expect it to mellow over the next 3-4 years. Food pairings: Ideal with seafoods and white meats, we recommend a nice crab risotto or a herb-crusted halibut and lobster with tarragon butter. Oh boy ... Silkscarf 2010 Chardonnay We still have to visit Silkscarf Winery ourselves, and we promise to do so this summer! Especially now that the “kitchenette” has opened, offering a casual al-fresco dining experience we have heard a lot about (make sure to book well in advance; it is only open on weekends for lunch and books up fast). The family owned Summerland boutique winery is growing varieties such as Gewurztraminer, Viognier, Chardonnay, Riesling, Pinot Gris, Cabarnet-Sauvignion, Merlot, Pinot-Noir Malbec and Syrah and has received numerous awards for their wines. The 2010 Chardonnay that we picked made “Best Winner” at the 2011 People Choice Awards. Described as a lively unoaked fresh and brisk Chardonnay, we decided to pair it with a risotto with spring vegetables. Very bright and full of citrus, balanced with a nice tropical flavour, of papaya and melon. Enhanced with crisp acidity and minerality, this Chardonnay is well balanced with a gentle touch of vanilla-like sweetness. An unoaked Chardonnay at its best. By the way: When barrelled in oak, Chardonnay takes on a richness with honey and butter flavours. Unoaked, barreled in stainless steel, it reveals its lighter side, coming across as fresh, bright and lean, and full of mineral flavours. Retail: $21.90 Alc./Vol.: 12%

Noble Ridge 2010 Mingle We “discovered” Noble Ridge in 2011 when visiting some other wineries between Okanagan Falls and Oliver. We immediately fell in love with their Meritage Reserve, so we were excited when our wine expert picked their 2010 Mingle. Mingle? What’s a Mingle? Well, it is a white wine blend, and it is good. So good that it recently received 2 prestigious awards, a Silver Medal at both the 2011 LA International Wine Competition and the San Francisco Wine Competition. Built around Pinot Gris and “some other varieties,” the Mingle features wonderful honey aromas complemented by peach, apple and tropical flavours. Citrus and passionfruit are also present in the long finish. “Well balanced” describes it best, and it has this refreshing and crisp finish which makes it the perfect wine for a beautiful spring day where you can almost smell the upcoming warm summer days. Leslie and Jim D’Andrea, who established Noble Ridge Vineyards in 2001 and opened it in 2005, together with their consulting winemaker Phil Soo, did a fantastic job with this wine. The reason they don’t disclose what exactly the blend consists of is quite simple - it allows them to change the blend year by year, making sure the “Mingle” benefits from the vintages available. As for a food pairing the 2010 Mingle is great with spicy dishes. In fact, when we did the tasting, we paired it with Thai Green Chicken Curry. Delicious and the perfect match! The Art of David Montpetit According to the dictionary glass is “an amorphous solid material” which is “typically brittle and optically transparent.” We look through it, drink out of it, and sometimes break it. It protects us, shields our memorable pictures and paintings, helps us to get back our 20/20 vision and will hold flowers and fruits. But there is more you can do with it, a lot more. Glass is a remarkable artistic medium. It can be decorative and functional, and produce breathtaking three-dimensional artworks which constantly change within light. It can transmit a natural light source, change with the intensity of the sun, the colour of the sky, the formation of the clouds. And at night it can be illuminated, allowing the surface to play its game with the little bit of light available. It is magical. There is no doubt, the use of glass for residential interior treatments, from unique glass doors or inserts, to counter-tops and backdrops, and especially for artistic expression is growing in popularity. Artists use this material to express their visions, and one of the most highly gifted artists who has attained worldwide recognition lives right here in the Okanagan! ICON Okanagan met David Montpetit at several events in the Valley, and not only did we become a fan of his unique sculptures, it was David’s passion for this medium and the way he describes his work, which made it an easy decision to share these exquisite works and the story behind them with you. It’s seductive, captivating, alluring. These seem to be the typical words people use to describe David Montpetit’s sculptures. Born in Edmonton, Alberta, David initiated his creative journey at an early age, apprenticing as a silversmith in his late teens and taking his designs to Vancouver’s hip and lively Gastown with its many art galleries and boutiques in the early 1970s. Devoting his time to his growing family of four daughters David Montpetit took a longer hiatus, returning to his passion in the early 62

1990s while residing on the Sunshine Coast in BC. Creating mostly metal sculptures David started to incorporate glass to lighten the composition, and spent more and more time with this new medium. He had acquired various techniques of working with glass at studio “One Glass” in Vancouver and “Bay Studio” of Tsawwassen, where he worked on commercial and residential installations, and spent countless hours to further refine his abilities, techniques and repertoire.
have definitely mastered the techniques of working with glass. We see the beautiful totems and aboriginal pieces which have attained worldwide recognition, but when we look at your most recent creations it seems that there is almost no limit for you to form and play with this very challenging material. David Montpetit: You are absolutely right, glass is definitely among one of the most challenging of materials. And you will never really master it, each and every new artwork is different and I am constantly exploring new techniques. You would think that there are limits, and there are, but I always try to push the boundaries a little further. I feel that the key to my work is innovation even more so than refinement.
A radical transformation took place when David started some collaborative work with First Nations artists. He was fascinated by their expressive art, which is among the most recognized and collected in the world, and approached them with his vision of blending the innovative “Old World” technology with timeless aboriginal images. David opened “Montpetit Studios” in Vancouver in 1993 and moved it to the BC Kootenays in 2003. A short period in Steveston from 2006 – mid 2008 was followed by the establishment of the current studio facilities in the old Hiram Walker complex in Lake Country. ver medal! Another very exciting project was my largest single corporate project. 600 presentation pieces, produced with my team for a gala event Mercedes Benz held in Vancouver –now that was a challenge.
ICON Okanagan: Your sculptures can be found in collections all over the world, but I think that 2004 marked a very special and successful year for you?
ICON Okanagan: Very cool! Now, with such an impressive list of clients from all over the world we would expect your studio to be in a hip district in Vancouver or Toronto. What brought you to the Central Okanagan?
David Montpetit: I guess you mean the Culinary Olympics? Yes, that definitely came unexpected. One day I received a call from Jud Simpson, the Executive Chef at the House of Commons in Ottawa. He was also Team Manager for Culinary Team Canada. It was in this capacity that he approached me with the intention of having me work with the Team on the upcoming Culinary Olympics in October 2004 to be held in Erfurt, Germany. The idea was to have our table display something truly Canadian, and Jud had the idea of a glass totem pole. When he came across one of my totemic works in a gallery in Whistler he contacted me and in the end I did not only supply the centerpieces but also a lighting tower/ backdrop for the totems, a large Salmon banquet platter and various other components for the table. I was both honored to be considered and challenged by the scope of the project within the time frame. Two trips to Ottawa to participate in the planning sessions and rehearsals left me in awe of the skill, dedication and discipline of the team. Oh, right – Team Canada won two Gold and one Sil64

David Montpetit: I guess we all live here for a reason, and it seems the area attracts a lot of artists. A huge advantage to this area is the pool of skilled artists and artisans that I draw upon to complete various aspects of my projects. Unfortunately I must say that I am a little bit disappointed with the lack of recognition our local artists receive, though. We have such great talent here and I wish that more would be done to promote it. There are however, notable exceptions within the community who have been generous in their support – I just hope to see more of this attitude. ICON Okanagan: We couldn’t agree more. David, we have seen many very unique pieces here in your studio. From some wonderful candy apple red glass pieces, glass that almost looks as if it is gold-leaved, to some very interesting inlay-prototypes... David Montpetit: As I told you – I love this material and the interplay of light and object. It is extremely fascinating. Often things just happen, or maybe someone mentions something and gives me an idea. Some of the things you see in my studio are extremely rare. The deep red glass you mention for example is very rare. I don’t even know where it comes from, I bought as much as I could find from someone and I have never seen it anywhere again. Once it is gone it’s gone, so I only use it for special pieces. Other samples you see here are more or less experiments where I try new techniques. I also combine material as you can see, and it is not necessarily for a new artwork per say.
Kelowna, as well as a big garden sculpture for a private residence. It’s a trio of heavy carved and kiln worked glass panels attached to stainless steel support structures which swivel within their base. The result is the ultimate interplay with both the natural as well as introduced light. The client actually sent me several photographs that show the sculptures in different lights, with colors ranging from gold to pink, it’s phenomenal.
ICON Okanagan: Well, you have some very nice prototypes for unique chandeliers here, or the concrete counter top with glass inlays, or inserts for doors. Maybe you would not really call this your typical art but in the end whatever a creative mind develops is a piece of art, right? Do clients actually approach you with special requests? David Montpetit: Yes, and it is part of my business to offer this service. People who just build their dream home, or are looking for a unique piece to match their other decoration, approach me to design something very specific for them, and as you can see I can even incorporate logos if needed. Just a short and very scenic drive from both Vernon and Kelowna, the Barn Gallery is actually a charming 80 year old horse barn, nestled within a gentle orchard landscape. Jody Lafontaine decided that the historic building on her nut grove with its sun-drenched plank floors, whitewashed walls and beamed ceilings would be the perfect
place for an art gallery. It complemented her idea of showcasing some of the finest artworks from local artists, from canvas pieces to sculptures and jewelry. The Barn Gallery opened its doors in 2000. The Award-Winning Tattoo Art of Rob Forest Let’s be honest – when the idea of introducing a tattoo artist came up most of us at ICON were well…a little intimidated. ICON is a lifestyle magazine after all, so tattoos are not really part of it, right? Wrong! We must admit that when we heard “tattoo” we thought of a dank loft studio, guarded by a drooling pitbull with a Rob Forest in his new studio spike collar, rooms clouded with cigarette smoke and empty bottles on the floor. Yes, we admit ... it seems we had a bit of a prejudice here. “Don’t worry,” Rob Forest laughs when we visit him in his new studio in Kelowna, “you are not alone. When it comes to tattoos a lot of people flinch at the idea of getting one just because of that. And that’s exactly what I want to change! I am already very busy and I am very thankful for this, but I know that there are so many people out there who would love to have a tattoo, but simply back off because they have the same prejudices or don’t want to be seen visiting a tattoo studio. That’s why I decided to
open my new studio in a residential area. I don’t smoke, I don’t drink, and having a stylish and very clean workspace is of utmost importance to me. I have always been known for that.” And not just for that. Rob Forest is a well-known award-winning tattoo artist and one of the foremost portrait specialists in Canada. Originally from a in a small city in Ontario Rob was born with a pencil in his hand. At least that’s what he tells people now when asked about his talent. At 13 he already sold his first portraits, and when he and a friend decided they should get a tattoo, it was the start of a career. “Well, let’s just say the cross that we actually wanted turned out to be an “X”. I saw how the guy did it, so I fixed it. It was the first and last time I went to a kitchen magician ...” Still Rob did not see his little hobby as a business, and so he made his income working in construction, security, and even chasing and catching chickens. “I tattooed all my friends, and I made some money out of it, especially around Christmas and for birthdays, but it was not enough to make a living. But I started to think about it, and did some more research.” Rob visited some studios and soon found out that most of the people at that time were the typical stereotyped artists and he knew he could change that and give the art of tattooing a new twist. “I worked out of Victoria for a while, before I decided to move to Vernon and open a studio in the Okanagan.”

You Won’t Believe Your Eyes! Let’s face it with Summer just around the corner we are all thinking about outdoor activities, the beach, boating, sports and all the great things that come with life in the Okanagan Valley. But the harsh reality for some is that all these activities are impeded daily by issues relating to poor vision or the corrective eyewear associated with their poor vision. Whether heading out for a day of intense wakeboarding or water skiing, or just hitting the beach for a volleyball match, corrective lenses and contacts can be a serious annoyance. And this doesn’t just apply to outdoor activities and sports; many find it almost impossible to function without their lenses. Tasks as simple as driving to the grocery store or reading a road side sign become extremely frustrating and even dangerous. Having heard consistently of all the incredible improvements in laser vision correction, we did our research and eventually chose Vivid Laser Centre in Kelowna. This is where Dr. Baldassare and Dr. Stickle work their magic, proving to so many patients that laser vision correction can be a simple, painless and extremely quick procedure.
dassare, thank you for taking the time to talk with us. Tell us a bit about how laser surgery has evolved. Dr. Baldassare: Being a cornea specialist, where I reconstruct eyes through corneal transplants and other forms of grafts, and deal with the most complex eye diseases, the last thing I thought I would be doing is operating on healthy eyes. In
Dr. Baldassare, a graduate of the Faculty of Medicine at McGill University, is a highly specialized Ophthalmologist. Subsequent subspecialty training in Cornea, External Disease, and Refractive Surgery at Atlanta’s Emory University led him to be involved in the first FDA approved LASIK studies in the United States. Having performed over 14,000 refractive procedures he is an expert in the forefront of his field. With complex reconstructive procedures of the anterior segment of the eye [cornea, iris, lens] the focus of his practice, Vivid Laser Centre was established to complement his private surgical suite, complete with industry-leading technologies such as the new Crystal Line Femto laser. We sat down with Dr. Baldassare to learn a little more about his field of medicine and to quell some of our fears. Here is what we learned: Icon: Good afternoon Dr. Bal70

1993, when we first started laser correction, the technology was still in its infancy, and I was a skeptic about refractive surgery. That is, until I saw the results. It seemed like a miracle to be able to restore clear vision for these patients even though the earliest treatments were painful, and we only did one eye at a time. Those first patients we treated were the happiest patients in the practice, and I was definitely converted. Icon: So the technology was in its infancy in 1993 where are we at now? If we were to come in for surgery today what would happen? Dr. Baldassare: Today the technology is simply amazing! The newest LASIK procedure called bladeless LASIK, or femtosecond LASIK is a quantum leap forward. Our patients often have 20/20 or better vision within 15 minutes of havSpring 2012
ing surgery, usually with just slight scratchiness or tearing for a few hours after surgery, but no pain. In fact, before you came, we just finished a day of surgery. Icon: Really? Wow! So we don’t have to wear those huge dark glasses for the next few weeks and plan to stay home from work? Dr. Baldassare: Well, people do wear sunglasses mainly to protect the eyes after surgery, but they don’t find they need them for comfort. Our biggest problem right now is getting people to realize that they’ve actually had surgery. They’re so excited and happy with the immediate results that they want to go out and do everything with their newfound vision when they should be relaxing at home. We’ve had patients go shopping, watch television, or go to work, all of which we don’t recommend the day of surgery. Icon: Wow that’s incredible, so is the patient fully awake when they are undergoing these procedures? What happens if there is a sudden accidental movement? Dr. Baldassare: Yes, the patient is awake. But, we have medications that help them relax and most people have absolutely no troubles doing so, honestly, the most common thing that we hear after the procedure is: “Was that it?” And if there is any sort of movement the laser has a tracker and moves with you, so you can’t put a shot in the wrong spot. The safety profile is very good; the laser tracks every movement of your eye. Icon: So are these procedures permanent? Do we need to come back for adjustments? Dr. Baldassare: What the laser does is reshape the cornea, which is fairly permanent. However, we can’t stop people from aging, and so things like cataracts, macular degeneration, or glaucoma can still happen once you’re older, regardless of whether or not you’ve had laser surgery. Icon: How would one find out if they are a candidate for surgery? Dr. Baldassare: It starts with a telephone interview, mainly Spring 2012
to discuss the problems you might be having, and what it is exactly you want to achieve. We then track down your records from your ophthalmologist or optometrist to ensure that your prescription is stable and that there aren’t any ocular conditions that would exclude you from being a candidate. Finally, we do a variety of diagnostic tests and a full ocular examination in order to customize your treatment. Throughout all of this, we focus mostly on providing information and education to help you make the right decision. If you’re a candidate, then you can choose your surgery day, and soon enough you’ll be free from contacts and glasses! Icon: Well, thank you for your time Dr. Baldassare. It’s Beach Body Season! Summer is right around the corner and that means it’s almost Beach Body season. Time to get serious about getting in shape! Leaning out is a simple (not to be confused with easy) process that requires a clean diet, a steady workout program and a positive attitude. Here are ten tips to help you achieve Beach Body success: 1. Eat like a caveman. Make up 90% of your diet with foods that were picked, pulled, caught, hunted or chased. 2. Have cheat meals not cheat days. An entire day of debauchery will not only impede progress but also has the potential to sabotage weeks worth of hard work. 3. Stick to one plan. There is lots of information out there but mixing and matching different theories and ‘diets’ is never a guarantee. Pick a method and stick with it. 4. Whatever you do make sure it is something that you can incorporate into your lifestyle. Strict ‘diets’ will turn even the most self-disciplined people into human yoyos. You want to make healthy and balanced habits.
Let’s summarize. Nutrition is accountable for 90% of your results so your focus should be on natural foods. Cut out sugar, eliminate crappy carbs, aim to consume less dairy products and make fresh produce and lean proteins dietary staples. Eat 5-6 small meals 2-3 hours apart throughout the day. Fill your plate with 70% vegetables, a palm sized portion of lean protein and a small serving of a complex carb. Here is a sample of a day of clean and lean eating: 8am: 2 poached eggs with steamed spinach, roasted toma toes and a slice of whole grain toast. 10am: An apple and a handful of almonds. 12pm: Brown rice with sauteed vegetables, chicken breast with a side salad. 3pm: Tuna with a sliced cucumber and balsalmic vinegar. 6pm: Salmon with mashed yams, steamed asparagus and side salad. 8pm: A cup of frozen grapes.
When it comes to clean eating keep in mind that quality is more important than quantity. If you’re hungry, eat more, just make sure you’re making healthy choices.
5. Pump it up. To re-shape your body you’ve got to weight train. Mix up your exercises and rep ranges. One day do short sets with heavy weights and another lift lighter weights for more reps. 6. Change up the cardio. If you run all the time your body is going to adapt. You’ve got to shake things up, hike, bike, play sports... Or try the ultimate fat blasting cardio - high intensity intervals.

7. To get faster results cut out all sugars and limit fruit intake to 1-2 servings per day. Try frozen grapes or berries to satisfy your sweet tooth. 8. Attitude is everything and it affects everything. Believe in yourself and your ability to be successful. 10. Make these new habits part of your yearly lifestyle.
