Lalique was founded in Paris by René Lalique in the 19th Century. Originally focused on jewelry, Lalique became known for a unique style of crystal.

Orange Wine Passionate pursuit of the next great wine knows no limit by Mark Tarbell For the past few years orange and natural wines have taken the attention and praise from the world of wine experts and sommeliers. Be careful, however, before you dive into this latest trend. Orange wine has a long history of being produced in regions like Italy’s Friuli-Venezia-Giulia, Slovenia and France’s Jura. Orange is a wine made from white grapes that have had the skins and seeds left in during maceration and fermentation. This leaves pigments and aromatic qualities normally found in white wine, and the color is often amber or

orange toned. The aromas can range from heavy stone fruit to deep floral to tea-like characteristics. These wines are cool, but funky and can age quite well. The latest micro-trend is natural wine. Essentially, it’s a movement to make wine with no intervention at all—no added yeast, sugar, preservation methods, chemistry, technology or science. Simply put, you pick the grapes, crush them, and see what happens. There are many approaches to this style and no laws dictating one decisive method. In truth, many of the world’s top boutique winemakers make their wines
“naturally” with minimal or no intervention. In my view this requires tremendous knowledge and care to do well. Many of the hot new natural wines are fun and interesting for sure, but technically flawed—secondary fermentation in the bottle, reduced sulfur, bacterial issues and excessive oxidization. Dive a little deeper with research and trust your palate.

It’s 2021, and it’s time to break out the bubbly. We’ve rounded up a fabulous selection of the best champagne and sparkling wine to make the new year bright.

on’t think that the only bubbles worth drinking come from the Champagne region in France. There are incredible wineries in Napa Valley that craft their sparkling wines with the same traditional production method used in Champagne.
In Champagne, wine must spend a minimum of 12 months on the lees, but these California wineries take a cue from producers like Dom Pérignon—which famously ages its wines for a minimum of seven years before release—and age their sparkling wines on the lees for much longer than many popular champagnes. This means richer and more complex wine, with nutty and toasty notes.
À LA FRANÇAISE While many champagne houses have crossed the Atlantic and opened wineries in Napa Valley, Louis Roederer does it best with its Roederer Estate in Anderson Valley. In exceptional years, it produces its tête de cuvée, L’Ermitage.
LADIES’ NIGHT Frank Family, a charming grower-producer in Napa Valley, has four sparkling wines, including a rather unusual—but still delicious—sparkling red wine, but its Lady Edythe Reserve Brut is the star.
BOND, JAMES BOND Channel the world’s most famous spy with Bollinger Special Cuvée 007. In honor of the upcoming James Bond film “No Time to Die,” Bolly has released a special edition of its flagship cuvée featuring Daniel Craig.
CALIFORNIA COOL Schramsburg has produced sparkling wines since 1965 and specializes in wines made from cool-climate vineyards on the coast, defining its elegant style.

Adam Foster is a true Renaissance man, viewing the world through the lens of what is beautiful to him. While that’s the mantra of this very magazine, he’s living it out every day in St. Louis, where he lives and designs exquisite couture jewelry. He’s achieving national acclaim, having won Best of Show at the last COUTURE Show in 2019 for gemstones less than $20,000 and a coveted AIA award for his high-design studio and salon. However, what makes him and his designs even more fascinating is his commitment to his personal passions which define who he is, from culinary pursuits to automotive restoration. Foster and his wife make wine at home, getting Tetra Pak grapes from vineyards all around the world. They then barrel-age and bottle the wine themselves to their taste. “We live in the Midwest and live well. We love going to friends’ restaurants to enjoy dishes that are farm-to-table, where the food literally comes from no more than 100 miles away. We’re the people who’ll buy a share in a farm, purchase an entire cow and have it butchered at a butcher that I know, who will deliver the meat to us,” he says. Foster is even intentional about his everyday driver, the 1994 Bronco he’s been repairing. “When you open the hood, it’s pristine,” says Foster, who is also rebuilding a 1972 Rolls Royce Silver Shadow. The world of design through Foster’s eyes includes his signature collection of glasses, which he is known for wearing and gives him great joy.

TRY TO LIVE MY DAILY LIFE WITH THINGS THAT ARE INTERESTING. So, whether it’s furniture, vehicles, alcohol, food or just everyday objects that are handcrafted, they should be used. Someone made that for you, and they wanted you to enjoy it,” he says. Foster shares that he’s a self-proclaimed hands-on guy, preferring to make things himself rather than purchasing. Of course, this translates into his love of jewelry as well, which is exquisitely designed. At The Art Institute of Chicago, Foster fell in love with jewelry making. His eyes were opened to the world of design on trips to Italy as a child. He became fascinated with the intricate details of the sculptures, paintings and the ceilings of Italian churches featuring celestial artwork. From there his first collection, Constellation, was born, featuring hand-engraved elements, gemfaceting and a nod to Old World artistry. Foster is drawn to bone structures and skeletons because of their organic, but modern, feel. “That’s why I did the Plume collection, which is all feathers, because it’s still like this rigid structure that has a function, but it’s still very pretty. It’s because the function is dominating what it is versus the actual look of the object and just by default, it’s beautiful,” he says.

Foster gained great recognition for his latest creations from Canary Island lava rock. “Lava rock was something I came across shopping, and I thought this is really interesting,” he says. “I was able to narrow it down to locate Canary Island lava rock that had the tighter porosity and more stable, darker color that I wanted,” he says. When COVID showed up, Foster consciously decided to remain true to his brand. “We’re not going to redesign the company’s DNA for a trend, like smaller earrings to wear with a mask. What we do want to do is change the vocabulary of what a collector calls dress-up jewelry. If we can make yoga attire the new travel wear, why not wear statement pieces daily? You invested in it because you loved it, right?” he says.
His aesthetic is a study in contrasts: past and present, traditional and contemporary, delicate and bold. He pairs Old World jewelry-making techniques with the latest technology to create pieces that present a modern sensibility, with a nod to the past. Today, he is focusing on bringing more color to the collections and adding more pieces to both collections with the same aesthetic, but perhaps a stackable for everyday style. “Adding gold and diamonds makes the jewelry more precious, but let’s have a little bit more fun with your jewelry, right?” And fun he’s having, living a beautiful life with his family and making the world of jewelry lovelier at the same time. FRANCINE is named after Halasz’s beloved mother, the inspiration behind his notable culinary journey. This makes the French restaurant much more personal, inviting guests into his childhood with family, recipes and a sense of home. Childhood recipes from his mother were always balanced with fresh herbs and seasoning to create vibrant, clean food. This ingredient and flavor-centric approach is the magic behind the delicious flavors featured in his dishes. “What I really learned from a young age was selecting ingredients and vegetables at the market and not oversaturating them with spice, but making them shine by their natural taste,” Halasz said. For instance, he explained that there are many variations of tomatoes, and they

are all used differently, whether that be through texture or how they are cut or prepared. Valley native and classically French-trained Chef Brian Archibald will lead FRANCINE’s culinary team, bringing more than three decades of culinary leadership experience. Chef Archibald said his longstanding relationships with farms and purveyors will allow the new FRANCINE restaurant to showcase some extraordinary dishes that are sourced both locally and from around the world.

Everything you will find on the menu at FRANCINE will be similar to the flavor profiles and coastal cuisine that you might find right now in the French Riviera. Just as the seasons will change, so will our flavors,” Chef Archibald said. Dinner features Striped Bass with lemon, eggplant and Picholine olives and Bouillabaisse with a mussels and shrimp stew. Other favorites include Grilled Octopus, Zucchini Carpaccio, Ratatouille Tart, Steak Tartare, Mushroom & Taleggio Pizza, Bone Marrow and Seared Duck a la Provencal. For lunch and afternoon hours, the menu will also offer a selection of salads like our fave—Salad Niçoise—or carpaccio and pizza. In response to COVID-19, the restaurant is following strict safety protocols and implementing all the CDC guidelines, including mask wearing, table spacing and social distancing.

There are bars devoted to the Negroni cocktail— like Caffe Dante in New York, which was voted the best bar in the world in 2019 and serves 14 different types of Negronis—and it has been popularized as the only drink by an elegant set of stylish gentlemen, who document their Negronis with the hashtag #negronispotting on Instagram. With its legions of fans, it’s hard to believe the Negroni is more than 100 years old. It all began in Florence in 1919 when an Italian count, Camilo Negroni, asked the bartender at Caffé Casoni to swap the soda water for gin in his usual Americano cocktail. The count had recently been to London, where gin was all the rage. He happily obliged and garnished the new drink with a twist of orange, and the Negroni recipe was born.
“
Its enduring allure can be attributed to its simplicity. The classic Negroni recipe is so easy that you don’t even need a recipe: It’s equal parts Campari, gin and sweet vermouth topped with a twist of orange. The ingredients are found in most bars, so it’s a favorite cocktail for travelers because it tastes the same everywhere you go, and no matter how remote the bar, it’s pretty impossible to mess up a 1:1:1 ratio.
A Negroni works perfectly at the start of your night, the middle AND the end. They have never dealt me a hangover (unlike an Old Fashioned), and I order them everywhere I go, all around the world. I have had good ones and not-sogood ones, but, like pizza, even the not-so-good ones are pretty great!” Matt Hranek, the founder of WM Brown, said.
“Negronis have always had a strong, bitter flavor that might not be for everyone, but that’s what makes them so unique. Some say you need to try Campari three times before you acquire a taste for it. Though, if you are enticed to go beyond the first, or even second sip, many find they grow to adore it. The bittersweet flavor of a Negroni is captivating,” Daniel Warrilow, Italian Portfolio Ambassador for Campari America, said. Tiffanie Barriere, mixologist, educator and member of the James Beard Advisory Board, believes the combination of bitterness and sweetness to be what makes the Negroni cocktail so special, stating, “Its flavor and color keep it alluring and solid. The Negroni is compiled of sweet, bitter and botanical hints that all make for a bittersweet glass of greatness.” The beauty of the Negroni recipe is that there are endless variations, should you not care for the botanical notes of gin. “If you like bourbon, swap it in for gin for the perfect cold-weather classic cocktail, a Boulevardier. If you like tequila, you would just replace the gin with tequila and then you have a Tequila Negroni,” Warrilow said. Barriere’s favorite variation is the Agave Negroni, which uses mezcal in place of gin. “I believe the agave brings out the sweetness of the Campari, and the vermouth balances the two. Mezcal is also made from agave, so there is quality in the combination there as well,” Barriere said. And for those who can’t quite develop the taste for Campari, there’s the Sbagliato, which means “mistaken” in Italian. Legend has it, a busy bartender poured Prosecco instead of gin, which cuts the bitterness and makes a slightly sweeter Negroni.
The Negroni cocktail may have plenty of devoted fans, but the bitterness of Campari can be off-putting at first.

ICONIC LIFE spoke with “starchitect” Jeffrey Beers about designing the interiors of this $24 million New York penthouse in the tallest building on Fifth Avenue.
N
ew York City. Those iconic three words carry with them images of sky-scraping buildings, world-renowned architecture and a range of diverse cultures tucked into the nation’s largest city. At the heart of one of NYC’s most memorable streets, Fifth Avenue, proudly stands the tallest building, home to a new penthouse with one of the best views of Manhattan and the sparkling city skyline. New York’s 277 Fifth Avenue building launched its Penthouse 54; the openconcept residence, listed for $24 million, is a 4,520-square-foot dream for affluent buyers looking to elevate their title to “CEO of the Sky.” The tower is located in the NoMad district (short for North of Madison Square Park), and close to the Empire State Building, along with other quintessential architecture of the Beaux Arts and Art Deco styles. Welcome to the scene, the awardwinning Uruguayan architect Rafael Viñoly, whose international masterpieces include the Universidad de Buenos Aires, Cleveland Museum of Art and the Tokyo International Forum, to name a few. As the building architect for the project, Viñoly has articulated an exceptional vision that

combines both his refined engineering abilities with the visual finesse to erect such a masterful design that celebrates the penthouse views. Take note of the Mediterranean-inspired loggias spiraling downward from the 55th floor—perhaps the crown jewel of the building. The open-air spaces carved into the corners of the residences are an impressive addition to the sky-high tower, too. Viñoly describes the innovative loggias, normally designed closer to street level, “an interesting typology of open space and terracing that has not been seriously explored before.” Within the top two four-bedroom penthouse units, there are 75-foot private observation decks that cater to legendary vistas of NYC, including the One World Trade Center standing 1,776 feet above sea level. Master bedrooms feature gallery-style ceilings punctuated by vfloor-to-ceiling windows and open corned exposures to bring the overwhelming image of Manhattan into a singular backdrop. Walking through the tower takes you right into the creative mind of acclaimed New York “starchitect” Jeffrey Beers, who was the interior architect for the Manhattan

penthouse at 277 Fifth Avenue, along with interiors styled by Hadas Dembo off Mise en Scéne. His design studio Jeffrey Beers International is the brilliance behind such recognizable projects as the Gordon Ramsay Hell’s Kitchen in Las Vegas and the swanky riverside restaurant, Sequoia, in Washington, DC.

OUR GOAL WAS TO DESIGN A RESIDENCE THAT WAS RICH, TAILORED AND WARM, BUT THAT ALSO FELT COMFORTABLE, INVITING AND TIMELESS, gushed modernist Beers. “We took inspiration from the surrounding NoMad neighborhood, Viñoly’s architecture and the views of Manhattan’s iconic skyline, paying close attention to layout, how the public and private spaces flowed throughout the building, as well as meticulously choosing key materials.” He is referring to the integration of Silver Travertine and Absolute Black Granite from India featured in the New York penthouse lobby and communal spaces, while penthouses are laid with milky-
white Bianco Dolomoti marble flooring and walnut-crafted vanities throughout. The décor includes such celebrated names in the industry, like Brazilian designer Joaquim Tenreiro, whose chairs adorn the great room, while other rare items include seats from modernist architect Jose Zanine Caldas, whose sculptural pieces add an organic touch to the lavish interiors. Whimsy has a place here, too, as seen in the clay-like light fixtures casting a dreamy glow from NYC-based artist Rogan Gregory, inspired by nature. The influential Los Angeles icon Ed Moses, known for his abstract work, has a largescale painting hung in the sleek dining room, while a lamp, chair and a table in the great room are the work of Wendell Castle, an American sculptor whose eccentric and curvaceous furniture are some of the most coveted examples of 20th Century design. Between the iconic façade by Viñoly, inviting interiors done by Beers and the art-centric and open green spaces dotting the NoMad neighborhood, this may be one of our most desired places to call home in the Big Apple.

mpactful architecture, whether for entertainment or art, has the potential to elevate a visitor’s experience to one of inspiration.
A contemporary creator leading the way in design innovation is Sir David Adjaye, considered to be one of the most influential architects of his time. As the Ghanaian-British son of a diplomat, Adjaye has lived in Nairobi, Kampala, Beirut and London. His design education was forged in studios in London, during his Japanese Buddhism courses in Kyoto and while studying under Portuguese architect Eduardo Souto de Moura. In 2000, he debuted his architecture firm Adjaye Architects that would become a collaborative space for his global vision to be realized. Their site specific and socially driven projects include Russia’s Moscow School of Management Skolkovo and the art center Ruby City in San Antonio, Texas. Adjaye also recently made history as the first Black person to be awarded with the Royal Institute of British Architects medal in their 173-year long history. Yet his most epic undertaking to date is the Smithsonian’s National Museum of African American History and Culture (NMAAHC) in Washington, D.C. Completed in 2016, Adjaye Architects were the lead designers of the project, which served as not only a vessel to hold the history of the African American experience, but as an educational space that invites visitors to see themselves within these walls and the stories they frame.
ICONIC LIFE spoke with the Associate Principal at Adjaye Architects, Russell Crader, to gain a deeper understanding of the museum’s concept and design process. “We aim to unveil untold stories while challenging normative ideas regarding architecture,” Crader says. Steeped in references to African art and symbology, the museum has become an architectural narrative on history while speaking to present day America; a place where education and empathy visually harmonize on the National Mall. The monumental museum is a bronze-colored building clad with ornamental ironwork that references the craftsmanship of the Benin shrines of West Africa. Wrapped around the corona (crown) of the building, the latticed aluminum glitters against the white marble of the nearby landmarks. Stepping closer to the

museum’s main entrance, one can experience one of the property’s more profound design elements. Crader explained an important question the team faced during the process: “How can you put something out there that is big and bold, but also quiet enough so that everyone feels like they can come in?” Thus, the front porch was conceptualized. This space not only shades visitors from the summer heat in D.C. but references the role that porches played in throughout the African Diaspora and in the American South.
“
You are not climbing stairs or sinking into a plaza; instead it becomes a democratic space for gathering. Light was a key component throughout the space, which can be appreciated in both the everchanging golden exterior when light casts upon it and via the performative screens that harness or modulate sunlight inside. Natural light pours inwards through these narrow slits where columnfree and vast interiors are punctuated with timber and concrete. The mood of the museum quickly shifts when visitors begin their descent into the two lowest levels to understand the conditions of the slave trade through curated exhibits. After an emotional encounter with this chapter of American history, viewers will open out into a massive room with 70-foot ceilings. “You start down in a tight and compressed space, but then as you move through the exhibit, you open up to see

more and more revealed,” says Crader. “That’s all part of the unraveling of the history.” Because independent research plays a large part in Adjaye’s approach, there was a constant dialogue between artists, engineers and civilians in order to authentically honor the journey of African Americans. “As a global office, we understand this work is crucial to the local and global understanding,” Crader shares. An ascension from below then takes visitors down a circular pathway along the museum’s corona. Real-life objects, like a slave shack and a Tuskegee airplane once flown by African American pilots in WWII, are on display. The above-ground levels continue to the Civil War exhibit, paying homage to the history of African American veterans. While looking at the Purple Hearts of those who served the country, the Washington Monument peers through a sliver of a window. As you reach the Contemplative Court, an indoor waterfall gushes from above, offering a natural element to the space and enveloping the visitor in the sound and energy of the water. Windows throughout the museum serve as a modality of reflection and are placed intentionally towards the Federal Triangle buildings and Monument Grounds. Another symbolic space is The Black Box Theater, notable for its family-style seating that allows you to sit in a circle, which Crader says provides an opportunity for inclusivity. Details like this show us that it takes non-conventional thinking, design expertise and the ability to listen closely to the lived experiences of African Americans to tell stories that are deeply multi-faceted.

This mining-turned-ski town takes its winter sports seriously. The mountains are big, exceeding 13,000 and 14,000 feet. Much of the terrain is not for the faint of heart, but about half of the ski resort’s runs do cater to intermediate and beginner levels. The airport isn’t for the faint of heart either, and is often impacted by weather. But, hit the slopes hard and then kick back in this town that still holds onto some of its historical charm. Telluride has two faces—avid
local skiers and artists, and big moguls…not the ones you ski. Home to Oprah, Tom Cruise and Daryl Hannah, the luxury homes in Telluride are as spectacular as the mountains. Prepare for high altitude as this is one of the highest altitude ski resorts—only Breckenridge and Loveland are higher. on Arad, the architect, designer and sculpture artist, is one of the most influential names in the industry, recognized for his experimental lens and creating some of the most intriguing buildings with artful facades. ICONIC LIFE tapped the prolific mind of an artist who seemingly does it all—and unlike anyone else. Originally from Israel, the Tel Aviv native became known for his Rover Chair in 1981 that was crafted from discarded seats from vehicles taken from a scrapyard and fused with tubular steel Klee Klamps to make the armrests. They became a bestseller, and then Arad got bored. Exploring postmodernist design would lead him to create more furniture pieces that are far from your mother’s dining room set. Think warped metals and woven thermoplastics to make his famous chairs seen in the most prestigious museums around the world. Ron Arad Studio would become the creative firm to showcase Arad’s limitless approach to design and where he admittedly adheres to his own creative instincts. “I don’t need to follow any manifesto, any of this ‘form follows function’ or ‘good design is good business,” he says. The 70-year-old artist describes himself as rather juvenile and even a little lazy, not quite the terms of endearment you would expect from this successful of an individual. But our refreshing conversation shows us that Arad doesn’t take himself, or his fame, too seriously. Making his experiential, playful and non-prescriptive work even more enticing.

BLANK CANVAS While he sifts through his collage-like portfolio, panning across avant-garde furniture and fantastical buildings, I recognize a non-linear pattern to his work. An exploration of industrial materials to create unexpected shapes, clearly unafraid of color or volume. This unconventional style can be seen in Arad’s adaptation of Mickey Mouse, forever a childhood icon, that he adapted into a 20-piece work titled “Don’t F*** With The Mouse.” Debuting at Over the Influence gallery in Los Angeles this past summer, the work was to celebrate the 90th birthday of Mickey. Lacquered chairs don oversized mouse ears while dripping paint reads a variety of text, like “Curiosity Killed the Mouse.” During the lockdown, he completed a collaboration with the acclaimed tailor Huntsman for their London storefront on Savile Row. The result is a hand-woven car cover resembling the quality of a bespoke garment, that was placed over a re-imagined Morgan car that Ron Arad built using old vehicle parts.
ARAD’S APPROACH “I don’t need anyone’s opinion about what is design or what is architecture,” says Arad. “And I don’t need a passport to go from one discipline to another.” In Ron Arad’s world, a chair is also a sculpture, a table is also a game and unexpected materials become vessels for powerful pieces of art. His interdisciplinary approach to design is something that has led him to execute projects across genres. He talks about his refusal to work inside someone else’s framework saying, “I believe in being non-prescriptive, not telling people what to do or not do.” For Arad’s 2009 exhibit “No Discipline” that was featured at the Museum of Modern Art in New York and at the Centre Pompidou in Paris, he displayed 140 of his works. The exhibit allowed you to glean into Arad’s mind where both his iconic stainless steel rocking chair and a spiraling Swarovski chandelier displaying digital text are housed together inside of a Corten steel structure. Regarding one of his most notable buildings, Tel Aviv’s Design Museum Holon, Ron Arad wanted to create a space where the architecture would not compete with the exhibits. The space is wrapped in weaving steel sheaths and was structurally done without a single column.

“ USEFUL BEAUTIFUL LOVE “I always found ways to do things not in the way I was expected to do it and yet get applauded for it,” shares Arad. Previous works by Arad that appease art goers with an inclination to reach out and touch, include a mirrored sculpture-turned-pingpong table made from polished steel and painted bronze. His cedar and steel sculpture “Useful, Beautiful, Love” glides back and forth when sat on and features a quote from textile designer William Morris. His installation titled Vortext is a ribbon-like sculpture beaming with LED lights all protruding from the ground in Seoul, Korea. His product designs include neon-colored glass vases donning actual eyeglasses, Champagne buckets and whimsical bookshelves that break free from traditional form. When asked about where he pulls inspiration from, Arad says with a smile, “everything that happened until yesterday at four o’clock in the afternoon is a good source of influence.”

harcuterie boards are having a moment as a meal-worthy experience or an elegant grazer. During these times, boarding at home is creating the opportunity to mindfully place meats, artfully cut fruits and veggies, design contrasting cheeses, and scatter nuts, olives and even cornichons on a wooden surface in the ultimate creative food expression. Though charcuterie first rose to prominence in 15th century France, meat-and-cheese boards have spiraled into a massive trend on social media, propelling some enthusiasts to the status of "charcuterie influencer." The French word charcuterie translates to "cooked meats." Charcuterie is also the name for the specialty shops that curate all things meaty and preserved, such as dried sausages, salamis, bacon, smoked meat, pates and terrines.

And were prevalent during a time when there was a need to preserve meat when refrigeration did not exist. Charcuterie has a long shelf-life, aging the meat with smoke and salt which gives it more flavor and texture, like a jerky sliced to be very thin.

So, what goes on a charcuterie board? Prosciutto, also called Parma Ham, is my favorite and a popular option. Made of pork, Prosciutto is cured in salt for a minimum of 12 months. For a smoked, more peppery option, you can use Speck. Then there’s the whole Salami family—from Tartufo, soppressata and Salumeria Toscano salami as more luxe options. Genoa, Salame Secchi and Coppa are more affordable options but still delicious. Pepperoni is the most economical and underrated charcuterie, but it can bring a bolder flavor and some spice to your platter. While charcuterie is all about the meat, these boards get bold and beautiful when you add the cheese, olives, nuts and spreads, like fig jam, pesto and seeded mustards. Olive oil with decent balsamic vinegar makes an acidic and savory dunk for an artisan bread. Italians add preserved antipasti vegetables. Start with the hard cheeses which are more approachable, predictable and the easiest to pick up like cheddar and parmesan. Hard cheeses should be about 50 percent of the board. Go for a good cheddar, one that is nutty and aged. A nice, reddish, crumbly Leicestershire cheese can add an earthy flavor. Look next for semi-soft cheeses, like a nice, aged gouda that will have genuine age crystals that pop with flavor. A younger gouda is a semisoft cheese with a very mild, creamy flavor.

BRIE CAMEMBERT TRIPLE CRÈME Mild goat cheese is good, and drunken goat is soaked in wine. Havarti flavored with herbs is another yummy addition. Comté is a bold option, a lot like aged swiss. Next add some soft cheeses, like brie, camembert and triple crème. Some dislike the rinds, however it’s actually okay to eat the rind if you like it, adding an earthy flavor. The most decadent choice and my absolute favorite is the beloved triple crème, which is like pure “butta.”
As for blue cheese, if you want to dip your toe into the shallow end of the pool, start with a Bayley Hazen Blue or a gorgonzola. Roquefort and Stilton are the real-deal blue cheeses. Now that we’ve toured the world of meat and cheese, how do you put it all together? We talked with three top trending influencers in the world of charcuterie boards, and they shared some of their tops tips for creating beauty on the board.
CYNTHIA BAYSINGER Modern Brie | @modernbrie • Wash and dry produce at least 30 minutes prior to building your board. • Room temperature cheese has maximum flavor. Remove from the fridge 20 to 30 minutes before serving. • Select one type of cheese from each texture family—soft, semi-firm, hard.
KELSEY HEIMERL The Board Loon | @theboardloon • Vintage shops are a great place to find interesting boards and ramekins. • Make sure to not put like colors next to each other. • Use cookie cutters to cut cheese to be seasonally festive.

CHATEAU CHEVAL BLANC WINERY Saint-Émilion, France Chateau Cheval Blanc Winery is set on a pastoral vineyard in the Bordeaux wine region. The highdesign winery spans the grassy lands in the form of two woven white ribbons. Designed by renowned French architect Christian de Portzamparc, the space fuses modern technology implemented by human intelligence resulting in wines that are very much of the earth. The edited space inside is both organized and organic-feeling, welcoming guests into light-filled rooms for an experience that feels like a breath-of-fresh-air. The building, with its large-scale yet romantic design, received the International Architecture Award from the Chicago Athenaeum museum and is regarded for its distinct avant-garde approach. The winery’s architecture and design are a nod to the precious liquid being fermented inside. A visit to the property invites guests to intimate and aromatic tastings of their Cheval Blanc, where you can deepen your history lesson that dates the Saint-Émilion wine region back to the prehistoric period.

BODEGAS YSIOS WINERY La Rioja, Spain One of the most famous wineries in Spain is Bodegas Ysios Winery. Completed in 2001 by Spanish/ Swiss architect Santiago Calatrava, this masterful structure embodies both impressive scale and design innovation. Its sculptural design uses warm woods and aluminum to craft an imposing yet welcoming space that mimics the ridgeline of the Sierra de Cantabria mountain range it is set against. The winery is a dynamic property only enhanced by its boutique wines produced in the variety of microclimates and soils in the heart of Rioja Alavesa. A private tour of the winery reveals a pavilion, barrel rooms, processing rooms, a split-level display area and a ground-floor tasting room that could be the interior of a grand cathedral with ceiling-high windows sliced into the wood arches that lean over the landscape. Guests are greeted with the rich aroma of wine that leaves them marveling at this winery’s high design.

WATERKLOOF WINES Cape Town, South Africa One of the most design-forward estates we are loving right now is the one at Waterkloof Wines. The striking property won the Great Wine Capitals Best of Wine Tourism Award for Architecture and Landscapes in 2012 and was executed by Australian-based Castle Rock Design, whose focus was to enhance the natural textures and organic elements used in the structure. The tasting lounge clad with a fireplace, bronze sculptures and large-scale art leads into the “glass box” restaurant that becomes the centerpiece of the property where it sits above the fynbos and vine exterior. The glass-encased cellar and restaurant float elegantly from the land, allowing guests inside to take in the vast vineyards beyond with uncompromising views. This masculine dining space maintains a refined décor with interiors done by Cape Town’s own Frank Böhm Studio. Take note of the bespoke counters, red hardwood floors and timber beams above.

s more people embrace a healthy lifestyle, Southern California-based Nekter Juice Bar continues to expand across the country. Nekter was founded in 2010 by Alexis and Steve Schulze to offer customers fresh, clean and nutrient-rich juices, smoothies, vegan frozen treats and several varieties of its ever-popular acai bowls. Now, they have a bit of a cult following across the nation. Schulze was raised as a vegetarian, but she didn’t actually enjoy vegetables growing up. “As a child I felt I was forced to eat vegetables, but I found my way back to healthy eating as I got older,” she shares. As a young woman in her yoga teacher training, she tried juices as part of her health regimen but found them intimidating and was wary of the taste, although she did love how she felt after drinking them. She started experimenting and modifying her own recipes to create healthy juices that tasted delicious and more importantly, made her feel great. The first Nekter opened in Costa Mesa, California nearly a decade ago. “At the time, juicing was not mainstream and could be overwhelming,” says Schulze. “We wanted to show people that juicing makes vegetables taste better and makes you feel great.” Another benefit of juicing for contemporary consumers is the convenience of healthy eating while on the go. Schulze has ensured that Nekter’s products are of highquality and puts customers’ loyalty to the brand at the forefront. “We use fresh, natural and whole ingredients to make our products,” she says. “Every ingredient we use is something I would put into my own body. People trust the brand and the integrity of our ingredients. It tastes good and it’s good for you.”

orn in Germany in 1886, Ludwig Mies van der Rohe broke new ground with his architectural designs, creating the German Pavilion, a modern marvel of glass, metal and stone, for the 1929 Barcelona Exposition. In the late 1930s, Mies emigrated to the United States, settling in Chicago. He led the school of architecture at what is now the Illinois Institute of Technology. There he created such wellknown Modernist works as the Lake Shore Drive Apartments and the Seagram Building, and our favorite furniture design pieces, the Barcelona chair and the iconic Mies van der Rohe daybed designed in 1930.
