NO-BAKE OATMEAL BARS
INGREDIENTS:
• 1 C creamy peanut butter or nut butter of choice
• ½ C honey
• 1 tsp vanilla extract
• 2 C quick oats
• ¾ tsp ground cinnamon
• ½ tsp salt
• 1 ¼ C mix ins of choice (we love dried cranberries and mini chocolate chips)
INSTRUCTIONS:
1. Line an 8x8 baking dish with parchment paper and set aside.
2. In a medium bowl, mix together nut butter, honey and vanilla extract. Stir until well combined.
3. In a large bowl, combine oats, cinnamon, salt, and mix-ins of choice.
4. Pour the peanut butter mixture into the dry ingredients and mix until well combined.
5. Transfer mixture into your lined 8x8 baking dish. Use your mixing spoon to press the mixture into a flat, even layer.
6. Cover the dish with a lid or tinfoil and refrigerate for 1 hour or until oats have firmed up and are no longer sticky.
7. Cut into 16 servings (4 columns and 4 rows) and enjoy!
