HOMEMADE GRANOLA
Quinoa is not only a whole grain, but it is also a complete protein. This means it contains all 9 essential amino acids. These amino acids act as the “building blocks” for protein, helping to keep muscles strong and ready to take on the day!
INGREDIENTS:
• 2 C Old Fashioned Oats
• ¼ C quinoa, uncooked
• ¼ C pecan pieces
• ¼ C coconut flakes
• ¼ tsp cinnamon
• ¾ C honey
• ½ tsp vanilla extract
• ⅛ C canola oil
INSTRUCTIONS:
1. Preheat oven to 300 degrees.
2. In a large mixing bowl, combine oats, quinoa, pecans, coconut flakes, and cinnamon. Stir to combine.
3. In a separate bowl, mix honey, vanilla extract, and oil. Drizzle this mixture over dry ingredients in batches. Use your hands to mix and massage between each batch to ensure oats are coated evenly with the honey mixture.
4. Spread granola mixture onto a parchment lined baking sheet and press the granola firmly into an even layer.
5. Bake for 15-20 minutes or until lightly golden brown.
6. Allow to cool completely before serving.
