CREAMY CHICKEN & SAUSAGE PASTALAYA

INGREDIENTS:
• ½ lb. Whole Grain Penne Pasta, uncooked
• 1 tbs Canola oil
• ½ lb. Smoked Turkey Sausage, cut in half lengthwise and sliced
• 1 tsp garlic, chopped
• 1 ¼ lb. Frozen Pepper and Onion Blend
• ¼ C water
• 1 ½ C Crushed Tomato
• ½ lb. Cherry Tomatoes
• 1 lb. diced chicken, cooked
• 2 tsp Cajun Seasoning
• 3 Tbsp Greek Yogurt
• 2 Green onions, thinly sliced
INSTRUCTIONS:
1. Cook pasta according to package directions.
2. Heat skillet to high heat and add oil. Add sausage and cook until browned, about 5 minutes.
3. Add garlic and sauté until fragrant, then add frozen pepper and onion blend and cook until heated through.
4. Add water, cherry tomatoes, crushed tomato, chicken, and Cajun seasoning. Stir to combine.
5. Once cooked, remove from heat and add the cooked pasta, sliced green onions, and Greek yogurt. Mix gently until combined.
Not crazy about fresh tomatoes? Consider cooking them for a burst of flavor and nutrition! While normally cooking vegetables tends to lower the amount of nutrients in our vegetables, cooking tomatoes increases some nutrients such as lycopene which gives tomatoes their deep red color.
