SPICED CHICKEN PITA
Cinnamon is usually thought to be a spice used in baked goods but can also be used in savory dishes like soups and spice rubs for meats. Not only is this spice delicious, but it is also high in antioxidants that are important for heart health and disease prevention.
INGREDIENTS:
• 6 pieces whole wheat pita bread
• 1 lb. chicken, diced
• 1 tsp olive oil
• 1 Tbsp granulated garlic
• 3 tsp black pepper
• 1 ½ tsp cinnamon
• 3 tsp cumin
• 3 tsp oregano
• 3 tsp chili powder
INSTRUCTIONS:
1. Preheat oven to 400 degrees.
2. In a small bowl combine seasonings and stir until well combined.
3. In a medium bowl, add chicken and oil. Top with seasoning blend and mix well, ensuring all chicken pieces are coated with seasoning.
4. Spread chicken on a baking sheet and place in the oven for 10-15 minutes or until chicken reaches a minimum temperature of 165.
5. Once cooked through, evenly portion chicken into each pita pocket.
6. Top with homemade tzatziki, tomato, and lettuce and enjoy!
