FUN, SUN AND SAND Summer in the Philippines is more than just a breather from the cold season. It is more than just the beach, the sun, the sand and all the extra time that we may have on our hands. Summer for Filipinos, as with most things Filipino, is also a time to celebrate the goodness of God. It is at this time, that we commemorate the death of our Savior, Jesus Christ. That is why many of the festivals on the months of March and April is focused on His death and resurrection. This is also symbolic for iNeed. In the end of last year we traversed a gigantic mountain. And although at this time we are not even halfway that mountain, we have made a lot of progress with the help of God and several good people who believed in the ideals of the magazine. We are more than grateful. This issue is a celebration of life. We have prepared a few adrenaline pumping adventures for you to experience, but first take a look at our calendar of Events and check out which one you could catch. Ok, so its loaded with festivals laced with religion and spirituality, but hey, that’s what being Filipino is all about. Then take one of the many AdvenTours that our regular contributor and good friend, Rail, has compiled for you. And then there is the most laudible tourism project of Cebu Governor, Madam Gwen Garcia, of which our dear friend, Aldo will be taking us with the magic of his lens. Katrina was kind enough to put these pictures to words in Discoverng Cebu’s Heritage. For this issue’s Picks, Paolo will introduce to us new flavors that both locals and travelers must try. And then Jeremy took a short journey to the summer capital of the country - Boracay - to see for himself if one can indeed find solace in this otherwise activity-laden island. So, why don’t you put on that sunblock, ready those sunglasses and straw hats and enjoy the sun and sand. Have fun!

inseng is known for its many medicinal properties. In the east, and especially in Korea, this root is popular for its claim to give long life to those who regularly take this wonder root. It’s medicinal properties and cool, minty flavor make’s this root an ideal ingredient for soups and other Eastern dishes. One such dish is samgyetang or the chicken ginseng soup. Considered to be a summer dish, the samgyetang is is said to be a cure for different physical ailments like flu, fever, and general body weakness. It is also known to prevent illnesses and give that who

partake of this dish, strength and endurance. The preparation in making samgyetang is very important. Only whole and uncut ingredients are used because this is believed to preserve the maximum amount of nutrients. The whole chicken is stuffed with glutinous rice and boiled in a broth of Korean ginseng, garlic, ginger, jujube or Korean dates, sesame seeds and other spices and medicinal herbs. Sometimes kochujang (hot chili paste) is added to enrich the flavor. It is served whole and boiling, the chicken only broken up when one helps himself with this exotic summer soup.

ast January, I was privileged to have a light-hearted conversation with internationallyacclaimed Canada-based Cebuano artist Paulina Constancia. The scene of our interview was so surreal as we were surrounded by wild plants beautifully growing at the back of their family-owned hotel, Mayflower Hotel just beside the Cebu Capitol Building. At that time she had an exhibit dubbed Niños, the proceeds of which was to benefit her pet foundation, Batang Mekong. Batang Mekong is a nongovernment organization that provides children of scavengers near the Inayawan Dump Site proper education, better nutrition and health support. That was why, Paulina dubbed her collection Niños. But the title is not just because of the beneficiary or the timing of her exhibit, which coincides with that of the famous Sinulog Festival, but also because the whole thing was about celebrating childhood. The works in this collection not only show kids in all stages of their childhood but also educates about children’s rights. “We are trying to project here that all children should be able to experience all

of these (rights) because these are very basic. Education is not a privilege, its a right. Play is a right,” she said. Thus, you would see children in school having fun while learning, or kids trying to discover themselves through different art mediums like painting and music. Paulina’s light-hearted social commentaries make her works palatable even to the conservatives who has no political leaning (not that Paulina subscribes to a particular ideology). So what makes Paulina’s paintings one-of-a-kind? She likes to describe her art as naïf. “I don’t follow any particular form, it just depends on the theme,” she said. She confesses that she likes to use bright colors and her works has a Baroquefeel, as she puts it, “never leaving enough alone.” Although every space on the canvass is occupied one could never feel it being crowded. There is a kind of unity that makes her works very pleasing and enjoyable to look at and admire.
