Oh, Surfers. Sometimes classy, never boring – between the beaches, the nightlife, our unofficial HQ of fun is the Gold Coast’s worst kept secret for good reason. Locals and tourists alike have long known the magic all wrapped up in this one iconic mecca that boasts everything you could ever need for a damn good time. Or, so we thought.

That is, right up until Surfers officially got it’s very own brewery, aaaand now it truly does have everything we could ever need.

Just a hops, skip and a jump from the pint-er perfect Surfers Paradise beachfront, a big ol’ brewery by the name of BOB taking

up residence in the bustling Surfers strip was ale we ever needed – putting the froth in our ‘frothy Fridays’ – and every other day ending in ‘y’, ever since.

Way more stunning than the name BOB, or the word ‘brewery’ would lead you to believe, even the most beer averse among us should add BOB’s Beer to their ‘must visit’ list because the surrounds are a 10/10 (oh and also the cocktail menu slaps). Step inside and you’re greeted with a swanky monochrome fit-out, airy high ceilings aglow with growlers-turnedpendant-lights and would ya cop a load of #thosepipes. Plumbing has never looked so good thanks to the glistening copper pipes delivering that expertly brewed amber nectar straight to our glasses.

Head chef Jerome Estoesta also works closely with the brewing team to deliver a menu that goes against the grain of your usual pub fare. An un-XPA-ctedly zesty line up of ceviche, oysters and sticky pork belly for entrees, and grilled steaks, fresh fish and creamy prawn pasta for mains are all on the menu.

And while Surfers Paradise might indeed be the GC’s worst kept secret, we’ve got the hop

BOB’s Beer is almost too good to be brew.

tip on a $17 lunch special so lit everyone needs to know about it. None of this mid-week business, BOB is dishing lunch noms up every Friday and well into our #Sundayfundays. From 12noon to 3.30pm every Friday-Sunday, have your pick of the mid-day bites and a pot of BOB’s beer from just $17. The Beef (secret sauce) or Chicken Burger (Kewpie mayo and tonkatsu sauce) with chips offer bun-believable value, but never fear if this option is not the bun for you. Why just drink your beer when you can eat it too, the – the Tim Tam Tom Beef Cheeks – slow cooked in Tim Tam Tom beer will be hard to beat, and we’re cauli’n it, the Spiced cauliflower in tofu cream dressing will keep everyone satisfied no matter their vego status.

With a name that literally means Best Of Beers, of course BOB’s Beer takes their craft v seriously. There’s no less than 16 different brews on tap –13 of which are lovingly made on site, with a focus on quality and locally sourced ingredients. Basically, for beer enthusiasts there’s about to be some ruthless decisions to be made. Now, if the deja brew starts to set in (we won’t tell) there’s also a top notch cocktail menu to take you on a sip around the world.

There’s some old faves like the Singapore Sling Gin Sherry, Benedictine, Pineapple, Lime, Bitters that you already know will go down a treat, but if you’re in the mood to mix it up try New Delhi Fashion, it certainly will #SpiceUpYourLife with Bourbon, Chai Spice and Bitters. And we dare you to order a Putins Nuts – Peanut Butter Whisky, Kahlua, Milk with a straight face.

A couple of burgs, some sneaky beachside brewski’s and BOB’s your uncle, you’ve got an ale-round good time for all. Whether you’re brand brew to the world of beer, or a long-time frothy fanatic, there’s delightfully good bits and BOB’s on offer here for everyone.

THE PERFECT PICNIC DOES EXIST

Life is a picnic thanks to the Mercure Gold Coast Resort.

Ahh, the glorious sunshine state. The chance to soak up all those rays without our pesky friend humidity ruining the vibes is too good to pass up. It’s lucky the daily SPF is a staple inclusion in the ol’ skincare regime because we cannot. get. enough.

If you also welcome any opportunity to make like a lizard and bask all. day. long. – we would argue that this is the superior time for

the underrated outing of glorious weather –the humble picnic – to make an appearance again.

Luckily for all us foodies and lovers of spectacular outdoor vibes, our friends at the Mercure Gold Coast Resort have thrown together the ultimate picnic option.

Why do we always forget how good picnics are? Maybe it has something to do with the fact that every time we embark on the chill, alfresco adventure we’re imagining – halfway through all the buying and preparing of all the delicious, one-handed fare we remember that organising picnics is a lot of work (and even though it inevitably gets eaten outside, the kitchen still ends up trashed with a capital T).

What if we told you we have a solution that eliminates that whole logistical ordeal entirely? And yes, when we say “we”, we do mean the Mercure. Picture this: round up the fam, saunter on over to the lush Mercure grounds and grab yourselves a signature Picnic Pack or two. Throw down a blanket, kick back on the MCG-

worthy manicured lawns and let the good times roll (instagrammable sun hat optional). For $53, you get to nom your way through the winning combo of a couple of gourmet sandwiches, 2 x organic juices, 2 x packs of the GOAT Red Rock Deli chippies (all top shelf here folks, it is the Mercure after all).

In fact, any of the goodies available on The Cart Takeaway menu are available down on the Lakeside Lawn, so why not treat the kiddos to an ice cream ($8) and the adults to a bottle of wine (from $35) – or perhaps some fries ($9) – for everyone, obvs #sharingiscaringkids. And would you look at that – this just became the best picnic ever.

You could bring your old trusty picnic rug rolling around in the boot (everyone has a dedicated boot-rug, right?) or leave the whole thing up to the Mercure and hire one of theirs, and a cute basket for the full picnic experience (refundable bond required). There’s also lawn games to hire, you just have to peel yourself away from lounging on that nice spongy lawn first.

So next time those clear blue skies beckon and the brain says ‘let’s do something fun’, while the motivation levels suggest a nap – throw everyone in the car and head on over to the Mercure Gold Coast Resort to luxuriate in those immaculate surrounds and indulge some in delicious alfresco treats. What more could you need? (...okay, so maybe just that nap to top it all off make it a perfect 10)

LOOKING FOR A HIATUS?

Take

Once upon a time, the words ‘alcoholfree beer’ would never, ever have been paired together. Anyone who dared to suggest such senselessness would have had more shade thrown their way than a beach snooze under a Cool Cabana. But here in 2023, things are very different with people turning to the (non-boozy beer) bottle in their droves.

Much more than a fleeting trend, sinking low or no alcohol beverages is a phenomenon sweeping the globe, and us health-conscious Gold Coasters are here for it. Thankfully, so are three iconic beer industry veterans who went all-in embracing this shift, combining their brewski brilliance to create Hiatus Beers; the ultimate zero alcohol ale.

Crafting a beer experience sans the sloppiness, drunk dials, PPIs (Pissed Person Injuries), go-go gadget pot belly, heinous hangover, and that god-awful post drinking ‘hangxiety’, what’s not to love about Hiatus? It’s perfect for those who’ve given boozing

the boot, and/or are simply taking a break coz our livers have feelings too you know. Or, maybe you just need a spacer every now and then to make sure you don’t reach David Hasselhoff-eating-a-cheeseburger drunk status, and this is surely the best drinking deterrent that ever was.

Launching in late 2022, we can confirm that Hiatus’ first release, the non-alcoholic pacific ale or ‘NAPA’, is dinky di. Choccas with classic pacific ale authenticity, aromas of passionfruit, guava and mango burst out of the can the moment it’s cracked. A wave of refreshing citrus and tropical fruit overtakes your senses, followed by a balancing bitterness which leaves you with only one option… kick back, relax, and stay on hiatus (#IfYouInsist).

Owners Jules Ryan, Nic Sandery and Nick Detmold have all been there done that in the beer/drinks industry, each boasting 15-20 years in the trade. Jules heads up sales and trade engagement, previously working with

power players Balter, Stone & Wood, Vale Ale, and Little Creatures. Nick Detmold is the operations man, with a background at Beam Suntory, Coca-Cola, and Maxxium. And finally, Nic Sandery is the Hiatus brewer, and we need to befriend this man stat coz everyone needs a brewer in their fold. He’s also the owner and brewer at Molly Rose, has worked with Stone & Wood and Holgate, and creator of the brand’s most unique selling point; the classic pacific ale aromas and flavours.

Meeting during their stint at Stone & Wood, all three had become increasingly interested in the flourishing no and low drinks movement. After some serious planning, crafting, and tastetesting coz you know, someone has to do it, the Hiatus NAPA was born. Fast becoming a zeroalcohol beer fridge staple, it’s as full flavoured as its boozy counterparts, minus the morning after misery #HungdogMillionaireNoMore.

So when you feel like taking a break from booze and bad decisions (#amen), fill your cup both figuratively and literally with Hiatus. We’ll cheers to that!

THESE CAKES ARE THE BEES KNEES

These days, sweet tooths and savvy cake enthusiasts demand delicious cakes that taste every bit as good as they look for their photo op on the ‘gram (so long, fondant, we’re not sad to see you go). Judging by the deluge of aesthetic, cakey goodness that keeps appearing on our nightly doom scrolls, our appetite for cakes that are a visual and literal feast only continues to gain momentum.

If you’re yet to encounter local cake biz Marishka’s Honey Cakes, let us tell you, you are in for an extra special treat. Hive got a feeling you need to know about her un-bee-lievably delectable and unique creations being cooked up right here on the GC. As avid dessert enthusiasts, it’s not often we have the chance to try something new amongst the usual celebratory fare, but these honey cakes are as deliciously different as they are ‘grammable’.

After moving from Russia five years ago, fellow dessert lover Marina Skelton, or Marishka as she’s more commonly known, found she was homesick for the traditional cakes of her homeland. Although cake making has long been a passion and something of

a side hustle from back home, the move to Australia inspired her to go all in on re-creating a little slice of her home cuisine.

Right around the same time we were all stocking up on hand sanitiser and being humbled by attempting the art of sourdough in iso, Marishka launched her cake business on the GC, and we (more specifically our tastebuds) are glad to see her creations going strong after a rocky start (unlike our long-forgotten sourdough starters, #rip). After gaining momentum, Marishka and her husband Paul specifically renovated their kitchen to accomodate the thriving small business – creating extra storage space, a big beautiful island and installing two ovens to keep those goodies crumbing.

Her specialty, the Honey cake, is a traditional Eastern European cake consisting of multiple individually baked layers. While there are many different recipes, Marishka uses an authentic recipe she learnt from a dear friend who also happened to be her favourite baker in her home town, but with her own little twist. Sandwiched with sour cream between all those golden layers of soft cake made from Gold Coast honey, you will also find Marishka’s signature raspberry

18 | insidegoldcoast.com.au

Hive got a feeling you’ll love Marishka’s Honey Cakes.

sauce which gives the cake an extra delicious flavour. Marishka adds, ‘when you try it, you’ll be surprised how soft and delicious it is, so many of my customers comment that they love that it is not overly sweet and has a natural taste.’

The mega Gaytime vibes we’re getting from the traditional golden crumb decoration is reason enough for us to want to dive right in, but the seasonal berries and meringues take it to the next level, no doubt helping gain the buzz Mariskha has attracted on Instagram. ‘A lot of people had no idea what a Honey cake is about but they were really eager to try something new and unique. Obviously they fell in love after trying the first bite’, she adds.

Marishka has more equally enticing traditional Russian treats such as Kartoshka Pops on the menu, as well as Mousse cakes delicately filled with Dark chocolate sponge, Chocolate crispearls, Raspberry coulis, Vanilla cremeux, Dark chocolate-raspberry mousse. Yes, to all of the above.

Understandably, Marishka’s mouth-watering treats are quite time-intensive to create and require some notice to whip up (anywhere from a few days to a week or more for the Mousse cakes), so next time a special occasion is looming, bee sure to head to her website and get your orders in. Though in this case we firmly stand by the philosophy that ‘treat ‘yo self’ or ‘need to know what all the buzz is about’ both constitute as a ‘special occasion’.

To sweeten the deal, mention this article for getting extra unique Russian treats with your first order!

LIFE IS A ZIRQUE-US, SO ENJOY THE SHOW!

The Pink Flamingo brings us two cheeky acts.

How far we’ve come since the days when our nightly entertainment options on the GC basically consisted of.. going to the movies. Now don’t get us wrong, we love over-priced popcorn as much as the next punter, but it’s good to have options.

We’ve been undergoing somewhat of a cultural revolution – nowadays we’re totally spoilt for arts and cultural events. These days, there’s more entertainment options than you can poke your theatre binoculars at.

We’ve got some brand new contenders to our thriving entertainment lineup that are so hot off the press that they’re still a little steamy. Dust off the sequins, clear the calendar and prepare to be dazzled, daaahlings – because The Pink Flamingo Spiegelclub has two brand new extravaganzas set to grace it’s stages that promise to be even more daring and boundary pushing than anything they’ve done before.

Ever since this saucy little minx of a destination shimmied its way onto Broadbeach’s nightlife scene, the only thing flowing more freely than all the LMAO’s, OMG’s – and in the case of the acrobatic stunts – the WTAF’s, is all that champas on account of the VIP bottle service. When it comes to the Pink

Flamingo Spiegelclub, it’s not just about the show; it’s the whole experience, baby.

It’s not often we’re treated with a theatre where the surrounds are every bit as showstopping as the main event, but those glam, Art Deco inspired digs are srsly worthy of a visit alone. The new show Zirque La La is more hotly anticipated than a B&E roll on a Sunday morning, replacing of the runaway success show The Glitz after its exclusive 12 month run. Bringing together a fusion of heart-stopping acrobatics, sultry burlesque, cabaret and comedy, “Zirque La La is everything you love about the circus with a special Pink Flamingo twist, packed with acrobatic and aerial abilities you must see for yourself to believe.”

With the Spiegelclub headed by a co-founder who literally ran away with the circus as a child, Sue Porrett’s lifelong dream to bring brilliant circus nostalgia to Broadbeach has finally come to fruition with the launch of Zirque La La earlier this year. Jumping though all the hoops to bring us a jaw-dropping new show, the preparations for Zirque La La began with an international casting call to source some of the rarest skills from circus acts from all around the globe.

STAY + PLAY

For anyone who has been known to throw their back out by simply *getting out of bed in the morning* (can relate), prepare to be thoroughly shocked and awed by these thrilling world-class acts. From hair-raising stunts by aerial artist extraordinaire Nini Storm, suspended from the ceiling by her hair alone – or in the case of the resident ‘Strong Man’ Desko Amat, by only his teeth during his mindblowing ‘dental jaw’ manoeuvres.

Another option, if you prefer your shows a little less risky and a little more risqué, straight from the streets of Paris’ Crazy Horse cabaret club vibe, Forbidden is the most sizzling, hottest show the city has ever seen. Featuring the best of acts from legendary cabaret, Forbidden consists of a series of highly aesthetic scenes by a cast of eleven classically trained, male and female dancers clad in costumes that leave little to the imagination, so, y’know more skin than Burleigh beach on a summer’s day.

Forbidden is teased as being ‘Provocative, daring, and scintillating adult entertainment for those ready to leave their inhibitions behind’, so the performers may not be the only ones breaking a sweat here guys #itsgettinghotinhere. Gather up the besties and one-and-only’s, because this show is the kind of mandatory viewing that is far saucier and sexier than any Bachelor season.

For the The Pink Flamingo Spiegelclub dream team, they believe the fun doesn’t have to stop when the sun goes down – and their mission to see the glitter strip sing after dark is quickly becoming a reality. Locals and visitors continue to flock to this theatrical wonderland for some must-see entertainment, a VIP experience and a night filled with flamboyance (which also happens to be the collective term for flamingos – how very #fitting), fun and frivolity.

OUR LITTLE PIZZA HEAVEN

Oh, Italia. As all-around food enthusiasts we are quite pasta-ial to alll the Italian eats, and by ‘quite partial’, we mean down 24/7 (mental note: check if breakfast pasta is a thing).

We’ve officially moved into our yearly comfort food era. Nothing compares to the soul-hugging, carb-coma inducing satisfaction of a big ol’ bowl of Italian food made with love.

If you’re yet to stumble across Bambino Ristorante, this hidden gem has created quite the name for itself among central GC locals as so much more than just your everyday neighbourhood Italian joint. For Bambino Ristorante, sumptuous authentic Italian food is just one pizza what keeps customers coming back for more. A dual-level establishment with two dedicated performance areas, a

cello playing owner and live music every night, this fun-filled musical restaurant never skips a beat when it comes to unforgettable mems and good vibes.

Like many, with the world coming to a grinding halt in 2020 owner Max Tu had time on his hands to dream and scheme. Ultimately, he was inspired to create his own Venn diagram where all three of his passions – food, hospitality and entertainment, overlap into one perfect circle that is Bambino Ristorante. After moving from Taiwan in 2014, Mr Tu spent some years studying and working within the hospitality industry in Adelaide. Of course it was only a matter of time until he saw some sense we stole him away from our Southern friends. Bambino caught Max’s attention for ‘being a venue where guests can have a great meal while enjoying live music, singing and dancing’, and with the addition of state-of-the-art audio equipment it has only continued to evolve into an establishment that is pasta-tively adored by it’s supportive community.

Bambino’s classic fit-out perfectly complements the welcoming, traditional neighbourhood restaurant and community vibe. There’s no mistaking you’re in the right place,

22 | insidegoldcoast.com.au
EAT + DRINK
Bambino Ristorante is the pesto both worlds.

and if the bold ‘Italian restaurant’ illuminated brighter than Yatala’s controversial ‘Gold Coast’ installation doesn’t tip you off, then the literal vintage red car protruding from the front façade sure will. Nostalgic interior nods are an ode to Italy: crisp white tablecloths, black leather seating, crushed velvet and moody surrounds all provide the perfect backdrop for this dinner-anda-show experience.

We’re pleased to also report the eats are just about as authentic as you can get without, y’know, a 20 hour flight, so it’s winner winner scallopini dinner as far as we’re concerned. Of course, the starters offer up all the faves you’d expect, but let’s face it – as soon as we spy Nonna’s Meatballs with veal, pork and fennel meatballs cooked in rich sauce served with parmesan croutes and grated pecorino, we need look no further (but if someone orders the Bruschetta, we won’t complain about taste testing).

The Nice Cheeks – 18 hour slow-cooked premium Angus beef cheek, chat potato and red wine jus are a must try, while the Bella Mignon Chicken and Prawn wrapped with smoked speck, seasonal vegetables in a creamy mushroom sauce offers the best of both worlds for the seafoodies among us. We’re not about to commit any culinary sins by skipping the extensive pizza and pasta selection – might we suggest the Gamberetta pizza with tomato, king prawns, red onions, roasted capsicum and capers and Penne Ragout, Braised Wagyu Ragout, penne pasta with grated pecorino respectively.

Since the calories are already a write off, you might as well go all out and finish with something from the Bambino Ristorante dessert holy trinity: Tiramisu, Cannoli or Small Dessert Pizza laden with Nutella, banana, rich Frangelico anglaise and candied walnuts served with vanilla ice-cream

No matter what you opt for, a trip to Bambino Ristorante will be a feast for the senses and a (maybe literal) serenade for the soul. It’s impossible to say for sure what’s more buttery smooth, the nightly entertainment or the Truffle Pappardelle

When it’s time to treat ourselves to the finer things in life, it’s no secret the Hilton Surfers Paradise knows what’s up (quite literally, on account the 57 levels of luxury and all).

Already our go-to destination for staycays and soirees, but we need not only reserve our visits only for special occasions.

Because if you haven’t already met the Hiltons darling ground floor destination Ms Margot’s Bar & Eats, let us introduce you (and yes, she’s every bit as sophisticated as she sounds #howdoyoudoMs).

Nestled right off the bustling Orchid Ave Surfer’s strip Ms Margot’s promises tantalising

drinks, delicious share plates and glittering coastal interiors #nowyou’rejustshowingoff

As if all that and a whole lotta it-girl energy isn’t enough, Ms Margot’s also puts on an infamous high tea spread so in-demand you can get your hands on it seven days a week.

Traditionally reserved for bridal showers, baby showers, birthdays and any special event in between, we maintain that ‘the sun is shining’ and ‘overdue goss sesh’ are perfectly valid reasons too.

Because quite frankly, who couldn’t use a bit more jam and cream in their lives #justbecause.

Since varie-tea is the spice of life, The Par-Tea High Tea menu is jam-packed with a tantalising assortment of savoury and sweet classics, perfectly paired with all the essential bevvys (#spoileralert ofc that includes a glass of bubbles which is entirely essential in our humble opinion).

It just wouldn’t be high tea without macarons and of course a berry nice fluffy scone or two with cream and berries – but since you twisted our arm we’ll manage to nibble our way through the Petit Cakes and Salted Caramel Truffles too #ifwemust.

EAT + DRINK
IT’S TIME TO PAR-TEA Don’t be chai, say hello to Ms Margot’s.

Of course there’s no sad sangas to be found here – only the finest Smoked Salmon & Cucumber Open Sandwich #thankyouverymuch. Keep it classy (this is Ms Margot’s, after all) and resist the urge to fight over the Pumpkin Arancini or the Haloumi with Honeycomb, Fig & Aioli, and you just know the S&P Soft Shell Crab Bao Bun will bring the #baofactor to the top off the whole delicious affair.

If you’re feeling thirs-tea, choose from Vittoria Barista-made Coffee or Dilmah Vivid Tea Selection and a who could forget the glass of Heidsieck & Co Monopole Champagne per person.

Now if what you and the best-tea’s are in the mood for is a little less ‘graze the day away’ and little more ‘full-blown full coma’, Ms Margot’s has just launched a delish new lunch menu every bit as #ladieswholunch worthy as their digs.

If you also have a huge soft spot for a good taco, the Soft Corn Taco with your choice of filling – Beef Cheek with truffled pepper mayo, Chilli Chicken with avocado & lime or Korean Peppered Tofu will give you something to taco ‘bout.

There’s also the fried and true crowd fave, Karaage Chicken Bites with rice, Kewpie mayo, Tamari and shallots but the Gyro’s Battered Barramundi with tzatziki, potato fries, tomato, lemon and parsley o-fish-ally has our mouths watering.

So whether it’s sophisticated sips, a leisurely lunch or a tea-riffic high tea experience, we think you’ll agree that anytime’s a good time to say hello to the ever-elegant Ms Margot’s and her enviable array of all-day delights.

INDULGE YOUR SWEET SIDE AT THIS ASIAN INSPIRED PATISSERIE

Apologies in advance to your dentist.

Were you born with a sweet tooth? Same and srsly mum and dad, could you not have tweaked our DNA to favour lettuce and carrot sticks? This makes driving past a patisserie and not stopping in for a cheeky sugar hit is a totally foreign… and downright offensive… concept.

So, when we spotted Delothor Patisserie, a glorious little gem in Southport’s Davenport Street, it made our day/week/month/you get the picture, we were ex.ci.ted. Pumping out sensational Asian inspired pastries, desserts and drinks, our enthusiasm exploded when we realised it’s a double decker scenario, with not one but TWO levels of pure pastry pleasure.

Our blood pressure may go up a few digits, but we are so DOWN with our adorable new patisserie BFF.

Founders Alexia Kang and her cousin have a backstory that will motivate many-a-budding pastry guru, and we love that sort of thing. Starting small by renting a teeny tiny side of a commercial kitchen to bake their goodies, the initial blood, sweat and tears soon paid off. Word spread like wild flour of their pastry prowess, demand soared, and the rest as they say is history. Snapping up a prime position in the GC CBD and enlisting JIC Projects to create their dream space, not only does this involve a lot of acronyms, but it culminated in the dreamy Delothor space.

With a predominantly white, sage, and moss green colour palette, #WeDie. The juxtaposition of different textures and finishes also has us fangirling, incorporating all the usual on-trend (and utterly irresistible) suspects; vertical veejay panels, 3D slat wall panels, wooden floors, textured subway tiles, and sleek marble surfaces. Extra points are awarded for the feature arches because they are our design equivalent of pastries. Translation, we are #ForeverObsessed.

EAT + DRINK

Downstairs you’ll find cabinets consistently filled to the brim with fabulously flaky goodness, which you can either grab and go, or pop upstairs to savour the moment in-house. Personally, we err on the side of the latter because it’s a way cuter setting than our disorderly desk, plus we don’t have to share.

Now the question on every Delothor-goer’s lips is “what should I order?”… and “how many should I order”? “In one sitting…”? Well, we’re singing the praises of the Buttercream Macarons and bonus, you can buy a few to take back to the office to spoil your colleagues and jokes, you’ll inhale the lot. If Fresh Cream Cake is more your jam, they don’t make ‘em much better than this and yes, Nanna soz that includes you #CiaoInheritance. Another crowd fave is the humble Strawberry Croissant, perfect

for breakfast on the run, morning tea, lunch, an afternoon snack, supper, dessert and yeah, it’s ver.sa.tile. To well and truly churn your butter, pair your choice with an expertly brewed coffee or tea, and live your best pastry-and-caffeine fuelled life.

So next time you’re Southport-bound, passing through, or actually going nowhere near the place, pastry-pining peeps take head; Delothor is Gold Coast for patisserie perfection.

THE CRÈME (BRÛLÉE) OF THE GC’S CROP

We say oui to Room81!

Bonsoir madames and monsieurs..

Aaand we’ve reached the limit of our French capabilities. Where do we head to fulfil our French food fantasies when the cravings just won’t quit? Straight to the heart of Broadbeach to the crème de la crème of the Gold Coast’s culinary crop, Room81, bien sûr.

You already know the Sofitel Gold Coast’s impeccable reputation for all things indulgent, so naturally, its very own French gem Room81 is a love letter to the world capital of gourmet cuisine. Taking all those beloved flavours and textures of classic French recipes and

putting their own contemporary twist for a magnifique gastronomic journey.

Stepping in to the space feels kind of like being invited to some kind of exclusive culinary club, it’s cosy and intimate with just the right amount of elegance that gives you the heads up to prepare for an experience that’s a little bit spesh. Rich timbers and dark accents bring the mood, with the exposed beams that line the ceiling drawing your eye out to the alfresco dining space on the deck and street beyond. Bringing the ambience to offset all those dramatic finishes is the warm glow of the various lighting features incorporated throughout the room.

At the helm is head chef YK, who brings a whole lotta experience whipping up deliciousness at the likes of other local faves like Social Eating House + Bar. We were fortunate enough to win him over during a GC holiday a few years back (take that, Sydney), and well, we’ve been reaping the benefits ever since.

Since we can’t resist a cheeky name drop, after previously notching up some rather prolific

30 | insidegoldcoast.com.au
EAT + DRINK

names such as Quay Restaurant and The Ritz Carlton Hotel in Naples, Florida, YK felt it was officially time for him to set his sights on his dream to “work at a restaurant in a 5-star hotel” here on the Coast. Keen to continue the wellrespected reputation Room81 was known for with a YK twist, giving it the “young and kute” treatment, as he calls it. He adds “Room81’s signature dishes are evolving and it will continue to change for giving our lovely guests having fun every time they visit.”

Currently, the menu showcases the signature blend of contemporary and classic Parisian flavours (and of course a painstakingly curated selection of French wines for the full authentic experience). Our tip would be to leave it in YK’s expert hands for the full experience and indulge in the Chef’s Tasting Menu, with a continuous serving of Shared Plates, and at $89pp it’s an irresistibly sweet deal. With a focus on seasonal and local produce, the Chefs offering changes accordingly – but expect to be wowed by dishes such as Tartare de boeuf – Wagyu with dijon, pickles, capers, horseradish, wagyu fat snow, milk skin and the signature Apple salad aka Salade de pommes with compressed apple, almond cream, basil oil, apple balsamic

And if you’re suddenly in the mood for a fancy French feast, #same. But before you escar-go-t, book yourself in for the full wining and dining treatment that’s a oui bit different in all the best ways.

BURLEIGH’S BRINGING A HOLA-LOT OF MEXICAN GOODNESS

Mex Cartel will guac-your-socks-off.

There are many things Mexico does best. And no, we’re not just talking about the guac-your-socks-off cuisine, or their impeccable penchant for creating iconic drinks.

Consider this our official petition to also adopt the practice of a mid-afternoon siesta and have it become as synonymous as a cheeky marg or gooey bowl of queso goodness #wewantnaps.

But until that glorious day comes and the underrated art of a cheeky mid-afternoon kip takes hold (we can dream, right?) we’ll have to settle for the former and make do with a figurative food coma – and perhaps a margarita or three for good measure.

And as the GC is known for being both avid enthusiasts and consumers of every dish Mexican cuisine has ever bestowed upon us, we know you’ll join us in giving Burleigh newcomers Mex Cartel a welcome a hola-lot warmer than a mango chilli margarita.

With extensive experience in dishing up good times and even better nosh, owner Braedan Wayne Allen admits the hospitality bug has got him good. Whenever he’d considered hanging up his restauranteur hat, the call of a fresh new challenge has always proven irresistible for Mr Allen.

His passion flows through every aspect of the business, from being a staunch advocate of work life balance for his team, right through to his mission to provide incredible food that offers great bang for your buck.

The cheery interior is every bit as bold as the flavours, with a street art style mural that spans the length of the wall providing a backdrop as vibrant as a stroll through the streets of Mexico. The visual fiesta continues with intricately

36 | insidegoldcoast.com.au
EAT + DRINK

patterned talavera style tiles transforming the bar to a work of art. Rustic timbers and brick walls complete the relaxed industrial fit-out with a couple of customary cacti and skull decorations peppered about for good measure.

Head chef Martin has an impressively varied resume, taking his prior experience from hotels and islands the world over and squeezing it all in to the kind of menu that makes us want to say ‘one of everything, pls’. In something that resembles more of a wish list of every Mexican classic you’ve ever loved, you’re guaranteed to land on something delish.

To prove just how much we are not Mex-ing around here, a moment of drool for just a few of the Small Bites suspects: Pulled Pork Taquitos, Jalapeño Poppers, Haloumi Fries, Tequila Salt + Pepper Calamari and of course the holy-grail of cheesus bites, Queso Aderezo

You’re going to have to practice some restraint on the cheese-coma, because the Hand crafted tacos are comin’ in hot – with no less than eleven filling options, including Carne Asada or Crispy Pork Belly. Yummo!

Or tackle a shared plate of Wood Fired Fajitas or Signature Birria Tacos, because what could be better than bonding with your ride-or-lime over your shared love of Mexican deliciousness? Oh, that’s right – washing it all down with a marg, of course.

Partake in a Passionfruit or Mango Chilli Margarita – but in this case we think the iconic and ever-applicable Spanish “proverb” of our youth says it best: Por qué no los dos. (That’s ‘why not both’, for those who somehow escaped that particular feat of 90’s nostalgia.)

Whatever you choose, we think we can all agree the eats and sips on offer at Mex Cartel are worth raising a glass to. Salud!

FROM FIRST CLASS TO A CLASS OF ITS OWN RACV Royal Pines Resort unveils its new look… and

Have you stayed at RACV Royal Pines Resort and even if you have, you haven’t.

If you think that sounds entirely confusing, it does, but all will make sense once we spill the tea on this local legend’s luxe new look.

Synonymous with five star feels, authentic culinary experiences, and a championship golf course, RACV Royal Pines Resort was already an A-lister. But, to keep up with changing trends and maintain its position as one of our city’s finest, a chic makeover was in order, and this just speaks to us on SO many levels #CanRelate #CanWeHaveOneToo.

Recently undergoing some seriously sophisticated sprucing that would make any discerning resort-goer’s heart go #PadamPadam, RACV Royal Pines Resort 2.0 has arrived! Yes friends, we’re talking a refined refurb so on point, we’re dropping everything and booking a bougee staycay stat!

Still paying homage to the resort’s rich heritage, it seamlessly blends legacy with on-trend colours, furnishings, and overall design. Boom!

can poke a perfectly pruned palm frond at (try saying that a few times), this was a power move from the resort’s interiors team.

The new colour palette is goals, featuring wood, brass, and stone finishes, paired with soothing earthy tones; sandy hues, cloudy greens and of course, ‘dem fresh foliage greens. Contrasted with crisp whites, the choice of hues is equal parts relaxing and Pinterest-board worthy #HomeRenoInspo.

The spacious King and Twin Rooms, Spa and Executive Rooms feel softer and more subdued, creating an ambience of tranquility. Inviting us to retreat into the sanctuary of our room while feeling a connection to the natural world, our reply is a unanimous HECK YES. This is precisely what we want from a high calibre resort in 2023, signaling a new era for this GC institution.

With no less than seven exclusive eats and sips venues to experience, a 27-hole golf course, kids’ waterpark, and award-winning event venues, it’s an eleven-outta-ten. And don’t even get us started on OneSpa, the créme de la créme of day spas and cherry on top.

Come see for yourself how the gold standard of hospitality has been redefined with this remarkable transformation.

SURFERS’ BEST ITALIAN, BAR NONE

Ordinarily, us Gold Coasters take great pride in uncovering the hidden gems, preferring to frequent the more secluded spots tucked away from the action – leaving the visitors to duke it out over the bustling tourist hotspots.

But every now and again, we have to give in to that specific, insatiable craving that makes navigating the crowds (and the parking) #ohsoworthit. And when we find out an old favourite has unveiled a brand new menu, we know we’re gonna NEED to get ourselves a pizza that action #pronto. Because when the Baritalia itch hits, it is gnoc gonna quit until

we get a slice of those mouth-watering eats –they’re always worth the truffle.

Baritalia is Surfers’ very own Italian institution. Uniting locals and tourists alike over their appetite for Italian food, owner Simon has spent the latter half of his career dedicated to a srsly impressive 15-year stint as restaurateur. Sourcing both imported products from Italy as well as supporting locally sourced Queensland produce, his knack for dishing up modern and authentic flavours just keeps us coming back forever amore.

Surfers’ little taste of Italy is perfectly placed to watch the world go by, and if you keep it to two hours it’s free parking at Chevron Renaissance too! Surrounded in cascading greenery, settle in among the alfresco style surrounds complete with classic black, white, and of course – trademark Italian red accents. With a Limoncello Spritz in hand, the vibe is enough to have you momentarily contemplating if you need to acquire a vespa.

As cute as the interiors may be, it won’t take long for your attention to start drifting to sampling Baritalia’s menu, once you catch those

42 | insidegoldcoast.com.au
EAT + DRINK
Baritalia’s new menu is pastatively irresistible.

unmistakable aromas wafting from the kitchen. While normally the afternoon is where Italian food shines, don’t skip the breakfast here because they are starting the day stronger than an Italian coffee (and that’s saying something). The coffee machine is ready to serve Allpress Espresso from 6.30am. We’re faced with with the age old breakfast conundrum: savoury or sweet? In this case, you truly can’t go wrong with either a pizza-oven toasted Croissant or breakfast Bruschetta – zucchini, Meredith goat’s cheese, garlic, mint and evoo.

Though if you’re lucky enough to find yourself in the Baritalia vicinity as lunchtime approaches, treating yourself to house made Panini is an absolute must – eggplant, mushrooms, olives, capsicum, pesto, rocket or prosciutto, rocket, artichoke, fior di latte will not disappoint.

The dinner menu features what feels like every Italian dish we’ve ever known and loved. Grab yourself some antipasti to start while you ponder a fully stacked, authentic fresh pasta, gnocchi and pizza menu.

It’s impasta-ble to narrow down a line up that’s a perfect 10 – but if the Veal Scaloppine – Northern Rivers milk fed veal, white wine, mushrooms, onions and garlic in a light creamy sauce with broccoli and potatoes doesn’t say indulgent Italian feast, we don’t know what does.

Okay, okay – so maybe just a House Made Tiramisu to finish. Aaaand now it’s officially an indulgent, Italian feast. Bellissimo!

GO ALE OUT AT MERMAID’S NEW BEER GARDEN

Their

One can never have too many favourite cafés. Because sometimes we want fancy fare, and other times we want to swan in somewhere low key where the vibes are chill and sunshine and B&E rolls can fuel our souls while we contemplate last night’s choices (or something like that…).

Ever since the Mermaid institution that was Alfred’s spread their wings, upgraded to a swanky new apartment, the Southern GC folk have been dreaming of burritos and weeping over the mems of sun-soaked beach shack hangs. Now we can all finally pack away the tissues needed for the silent tear that rolled down our cheeks every time we passed the old Alfred’s stomping ground, because everyone’s favourite beach shack site is back, baby – and dare we say it’s looking better than ever. And spoiler alert, this is one sequel that doesn’t disappoint.

In what comes as excellent news for beer lovers, pizza lovers and outdoor lovers (so basically *gestures vaguely* anyone with a pulse), two local brewers have combined forces to bring us a brand new venue to adore, café-come-beer-garden The Yard

Brewhouse #thebestkindofcollab. Like all the very best ideas, a well-timed party (and no doubt a couple of brewskis) led to a fateful meeting between two GC beer slingers. Brett McCallum of Official Beer Co. and John Green of Surfers Paradise Brewing (you might have spied their unmissable beer bus doing the rounds) already have plenty of experience with keeping local beer connoisseurs hoppy. And with the iconic Mermaid space sitting vacant, the pair agreed that it was just begging to be transformed into a good ol’ fashioned beer garden experience that the Coast has been missing.

The boys have done the beach shack proud, staying true to the local surf culture while breathing some much needed life into the space. They’ve really gone the whole nine yards on nailing ‘Aussie casual’, with funky new head to toe murals adorning the exterior walls, right through to pulling up a pew around a hills hoist centrepiece and a backyard cricket pitch bringing nostalgia by the bucket load. Of course, the surfy retro vibes continue inside, with the hallways transformed into a tribute to Reg Mombassa’s finest work – bc was

lager brings all the boys to The Yard Brewhouse.

Mambo not the peak of coolness for 90’s kids everywhere?

If your interest is officially piqued, you’re probably wondering, how’s a’stout the nosh? Well, can confirm, it’s exactly the kind of bites you want to be throwing back with your beers: think pizzas, burgs and wings.

Get a ‘pizza the classics like Margarita (obvs) and The Veg (and don’t forget Hawaiian for the groms), but also acquaint yourself with the trendiest pizza of 2023 Calabrese and Hot Honey. The menu is short and sweet, but it definitely slaps – The Wings and Fresh Chicken Burger are all we could ever need. But just quietly, you’d be grazy to miss out on a lil’ Grazing Board action, the salami calabrese, olives, prosciutto, crackers, romesco, hummus, pickles and more, makes for quite the spread.

Oh, and of course The Yard Brewhouse is the perfect spot to welcome us (back) with the comforting hug that is a B&E Roll after a big night. Or ‘avo go at the very dish that’s the culinary downfall of firsthomebuyers everywhere, Smashed Avo Toast #thebadguyofbrunch #justiceforsmashedavo.

Mermaid’s newest brew crew can finally now proclaim ‘Our lager brings all the boys – and girls, kiddos and doggos (yup, furry friends are welcome too) – to The Yard Brewhouse.

WE’VE GOT YOUR ALL DAY EATS COVE-ERED

Eat, sip, repeat at Verandah Restaurant and Bar.

Here on the GC, it’s easy to get a little caught up in the hype of chasing the all latest food trends. Sometimes they bring us good things (hey spicy margs) and sometimes our starry-eyed quest for the latest kimchi-infused-croissant-burger (pls no one actually make this) means we momentarily forget the happiness that awaits with our tried and true faves. After all, the key ingredients for a good time are pretty simple: cosy surrounds, knock out views and classic eats and sips that just make you feel good.

Just like having a best bud with a boat, perhaps one of the best perks for us locals is the ability to borrow some of those sweet, sweet resort-vibes for a few hours.

So if you’re overdue to whisk-ey yourself away for a few hours of indulgence, listen up because we’re about to spill the tea on one venue that has it all for foodies and liquor lovers alike. If you’re a whisky fan, we’ve ‘scotch a hunch you’re already well acquainted with the name Verandah Restaurant and Bar, a well known destination for connoisseurs of the finest drops nestled among InterContinental Sanctuary Cove’s lush surrounds. But even if sipping world class spirits is not normally

your cup of, er – tea, never fear – we’ve three magical words set to get the tastebuds tingling: all. day. eats.

Sitting pretty in its prime position within the tropical InterContinental Sanctuary Cove Resort grounds, Verandah Restaurant and Bar strikes that perfect balance of seamless indoor and outdoor dining. The serene sweeping views overlooking the river from the formal balcony make for a picture-perfect backdrop, while the chance to cosy up in the relaxed fireplace seating has got to be pretty hard to beat this time of year. The light-filled space is bedecked in elegant French style windows, framing the stunning views in the way only French windows can. And if you can manage to peel your eyes away from the outlook, we can’t help but to swoon over the beautiful herringbone floors and the sense of luxury and warmth they bring to the space.

Open from 11am daily for lunch, dinner and everything in between, the menu has just undergone a fresh new shake up to deliver everything from tasty shared bites through to wholesome, classic comfort food, while showcasing the freshest locally sourced ingredients we have at our fingertips on the Coast #luckyus.

No matter if it’s a leisurely late lunch or some pre-dinner bites, you’re spoilt for choice between the Mezze Plate, Charcuterie Board –or sweet tooths rejoice, even some Devonshire Tea. Or perhaps we could truffle you for some Truffle Fries because you know Tapas always go down a treat – especially when paired with some of the house Signature Cocktails

The Quinoa and Broccoli Bowl with Grilled broccoli, organic quinoa, roast kumara, wild rocket and halloumi sounds like a big ol’ bowl of superfood goodness perfect for whatever time of the day hunger strikes. Meanwhile, the Chef’s selection of pasta-tively delish options are a whole other type of (carb-a-licious) goodness: Pumpkin and Sage Ravioli – Burnt butter, zucchini, kumara and pecorino or Mooloolaba Prawn & Mussel Fettuccine Fermented chili, confit garlic and mandarin olive oil.

And excuse us while we imagine sitting fireside this Winter, tucking into the Roast Tasmanian Salmon with Charred corn, fennel puree and finger lime or Slow Braised Lamb Shank with Broccolini, pumpkin mash, poached shallot with charred capsicum and basil jus The only thing missing from that picture is a glass of, well whatever the heck you please because the drinks menu is somehow even more extensive again.

The purists will of course appreciate the array of top shelf spirits from around the world available for sampling, and the cocktail enthusiasts will be hard pressed to select between the classic Time Honoured and the Signature Cocktail selection. Just quietly, a Jacks Gin with Ink Dry Gin, Sapere lychee Liqueur, Elderflower St.Germain, lime juice or perhaps the Autumn Rush with Vanilla vodka, Chambord, Aperol, passion fruit puree, pineapple juice, lime juice would surely go down an absolute treat.

So, whether it’s a leisurely lunch, a decadent late dinner and drinks, or anything in between, whatever it is you’re craving, the everimmaculate Verandah Restaurant and Bar is ready to make it a memorable time.

TAKE A SIP AROUND THE WORLD

No passport required at The Collective Palm Beach.

Ever since The Collective burst on to the Southern GC eats scene a few years back, we keep coming back like moths to a flame. Combining all the best bits of market style eats with all the magic of laid-back alfresco restaurant dining – the genius concept of combining five restaurants under one roof is a respite for the indecisive among us.

Our go-to for getting friends and fam together, no longer do we have to heed the objections of that one friend with the palette of a toddler, or whatever whacky diet our Aunt is trying this month. The only thing we’re left to fight over in the group chat is trying to narrow down a date that suits everyone.

It’s an experience that’s a worldly culinary feast for the senses. As if we need any more reasons to get there, they’ve just treated us to a brand new menu, and since we’re ever the overachievers when it comes to all things eats and sips, we’ve taken it one step further with suggested cocktail pairings #forscience. It’s like a round-the-world-holiday for your tastebuds and we’re all invited.

The Italian Job The first stop on our itinerary that also feels like a warm hug for your soul is The Italian Job. Carby bases provide the heavenly vessels for which to build upon all the rich tomato, garlic and herb laden sauces, coupled with the savoury and salty notes of aged cheeses, mushroom, cured meats, truffle

flavours, and a *chefs kiss* for good measure because it’s always made with love. Round out all those iconic Italian flavours with something more traditional like an Aperol Spritz, or a cocktail that reads like a nostalgic love letter to Italy – The Marching Mellow

Try with: Marching Mellow – Aperol, Sweet Vermouth, Lime, Vanilla, Sugar, Foam, Charred Marshmallow

Mazi This metaphorical round the world trip just gets fetta and fetta. Next stop, Mazi for a whole lotta Greek goodness.

Flavour-packed proteins balanced with the likes of olives, halloumi and creamy fetta to pack a savoury, salty punch – coupled with tangy tzatziki, lashings of lemon and peppy herbs to add that fresh zing we crave. Continuing the zesty citrus flavours and cutting through some of salty savoury richness, we’d suggest pairing with a Peach Cobbler for a refreshing and fruity sip reminiscent of a Greek Island summer vaycay.

Try with: Peach Cobbler – Grey Goose Peach, Lemon, Peach, Coconut, Foam, Zest

Luckie’s Diner Are you feeling Luckies, punk? Our stomachs certainly will be after an American diner style feast. Think, beefed up, cheese laden American classics finished with bacon, onion and indulgent sauces like creamy ranch and maple glazes. We’re proposing you lean in to the indulgence with a cocktail that’s a nod to the ultimate adults-only choc shake.

50 | insidegoldcoast.com.au
EAT + DRINK

What could be more American than that?

Try with: The Big Lebowski – Zubrowka Vodka, Baileys, Kahlua, Vanilla, Chocolate

Umami If it’s wok-your-socks-off Asian fusion you’re in the mood for, Umami never fails to rice to the occasion. We’re so(ba) obsessed with notes like – wasabi, ginger, sesame, sticky honey, vinegar, that tug-o-war for tastebuds we can never get enough of – sweet and sour. We’re tipping the People’s Punch with the smoky-richness of dark rum, coupled with sweet (apple, tropical fruit) and sour (lemon, pineapple) notes worthy of standing on its own, while still complementing all those bold Asian flavours.

Try with: People’s Punch – Dark Rum, Goslings Black Seal, Pineapple, Apple, Lemon, Tropical Fruit

TaLA We’re not sure if this counts as a pit stop for LA, or for Mexico, but when the LA style tacos are this delicious.. who really cares? Think all the quintessential flavours synonymous with Mexican cuisine – zesty coriander and jalapeño laden salsas, smoky chipotle, and sharp tequila and lime with a Californian street style twist.

It’s only fitting to suggest another hybrid creation to wash down all that deliciousness – the Tommy Batanga, combining the OG iconic duo of Mexican cocktails – Tequila and Lime, but topped with a cola for an unexpected, yet zingy twist that just works.

Try with: Tommy Batanga – Patron Silver

Tequila, Cola, Lime

MEET NIVA POMA

CEO and Manager, Tequila Sunrise Hostels.

Meet Niva, a remarkable individual whose journey from Peru to Italy and now Australia has been filled with unexpected twists and turns. Originally a nurse, Niva’s pursuit of a nursing career in Italy took an unforeseen detour into the realm of hospitality. Spending nearly 13 years in the industry, she discovered a true passion for providing exceptional guest experiences. What began as a quest to learn English in Australia led her to the Tequila Sunrise Hostel in Surfers Paradise, where she was enchanted by the inviting ambiance as a guest. With her infectious energy and warm hospitality, Niva has carved a reputation for creating a home away from home at Tequila Sunrise. Now, Niva is the CEO and Surfers Paradise manager. We chatted to Niva about her journey, the hostel’s unrivaled atmosphere and what makes Tequila Sunrise Hostel a true haven for wanderers and adventurers.

How long have you been a Gold Coast local?

I have been a Gold Coast local for about 2 years now, and I absolutely love it here.

What do you love the most about the Coast?

The thing I love most about the Gold Coast is the weather and being able to see the beach every single day. It gives me a feeling of freedom that is hard to describe.

Tell us a bit about yourself.

I am originally from Peru but have lived in Italy for a while. I studied nursing in Italy and worked in a small hotel on Lake Como, which is where I fell in love with the hospitality industry. I moved to Australia in 2018, and after living in Sydney for almost three years, I decided to explore other parts of Australia. That’s when I discovered the Gold Coast and fell in love with it.

How did you get into managing hostels?

I got into managing hostels because of my experience working in the hospitality industry and my passion for meeting new people and providing them with a great experience. Now I have the chance to manage many as Tequila Sunrise is expanding it has hostels in Guatemala, Sydney, Adelaide and Surfers Paradise. It is really an honour to be part of the Tequila Sunrise Hostels as the CEO.

Can you provide an overview of Tequila Sunrise’s unique features and what sets it apart from other accommodations in Surfers?

Tequila Sunrise is a unique hostel in Surfers Paradise because of its welcoming and friendly atmosphere. Our guests always feel like they are part of a family, and we offer a range of amenities and services designed to make their stay comfortable and enjoyable. Some of our

most popular amenities include breakfast and dinner every day of the week which makes it easy to connect, socialize and make friends, 24-hour kitchen access, and on-site laundry facilities. Additionally, we are 100% capacity almost every day of the year, and our capsule beds are a unique feature that sets us apart from other hostels since our capsules give that extra privacy that normal bunk beds do not give. How would you describe the overall atmosphere and vibe of Tequila Sunrise?

The vibe of Tequila Sunrise is warm and welcoming. Our guests come from all over the world, and we strive to create an environment that fosters new friendships and experiences. Have you seen a return to pre-COVID visitor numbers? Where are visitors coming from? We have, and visitors are coming from all over the world, especially South America, Europe, and Asia. They come to the Gold Coast to enjoy the beautiful beaches, theme parks, and outdoor activities.

What are some lesser-known gems or hidden spots in the Gold Coast that you recommend to your guests?

Burleigh Heads National Park, Tallebudgera Creek and Currumbin Rock Pools.

What are your Gold Coast favourites… Café/coffee spot: my go-to café/coffee spot is BarItalia, really close to the hostel.

Restaurant: Rick Shores or Burleigh Pavilion. Bar or place for a drink: You can’t go wrong with Justin Lane.

How do you choose to spend your days off? I like to spend my time at the beach or hanging out with friends.

GREEK EATS DON’T GET FETA THAN THIS

Proving yet again that sometimes the best things come in small packages, one thing we can all a-greek on, is that if there’s one culinary player punching waaaay above it’s (geographical) weight, it’s Greece.

For a country that’s no-bigger than the whole state of Victoria, they sure are churning out a whole lot of iconic flavour-filled dishes that pack a mouthwatering punch.

Aaannd phew, that took far too educational of a turn there for a second, but we promise that officially concludes our momentary brush with anything resembling a geography lesson.

From here on out we’ll strictly stick to the one thing we are actually experts on: talking about our OG true love that is food, glorious food. Sometimes, when life gives you lemons – or a defunct local pub as the case may be,

you do what any worldly, semi-retired chef would do and make… a Greek eatery (better than lemonade, tbh).

Just a lazy block back from our beloved Talle Creek, Manolis ‘Manny’ Patunas was drawn to the historical site of the old pub and the village community feel of Burleigh and the Tallebudgera Valley beyond. A renowned chef of over 40 years with a specialty in Seafood and Greek cuisine, Mr Patunas is proof that sometimes the restaurant life chooses you.

In Manny’s case, not even retirement could keep him from his adoration of cooking and creating fresh, culinary experiences. And let’s be honest, our tastebuds are the real winners in this equation.

Enlisting the expertise of Victoria Millar-Wise of VMW Worldwide Designs, the duo set to work creating a vibe somewhere between ‘quaint Greek abode’ and ‘eclectic bohemian elegance’, while staying true to the GC village locale.

The interiors have unmistakably been inspired by the iconic pastel-hued facades adorning the Santorini hillside – or, judging by the delicious pink of the feature wall framing the bar and kitchen – perhaps even a good taramasalata (move over ‘Viva Magenta’, we’re calling ‘taramasalata pink’ for Pantone colour of the year

56 | insidegoldcoast.com.au
EAT + DRINK
Manny’s Wine & Fish will never Greece to amaze us.

#2024). Rustic timber surfaces bring the charm, and what can we say, some well placed fairy lights will never not elevate our alfresco eats.

To start, the Prawn, avocado, halloumi and mint just sounds like Greek summer on a plate, or for the diehard seafood connoisseurs – are you squidding us with the Pickled octopus, lemon, caper berries, mixed olives and oregano?

We’d also quickly make a mezze the Grazing Platter – with artichokes, mixed olives, cheeses, smoked capsicum, eggplant, cold meats and of course those delightful little parcels, dolmathes

Moving right along because this menu just keeps getting feta.

For mains, the BBQ Atlantic salmon, tarama, lemon, rocket, balsamic vinaigrette sounds truly grill-iant, as does the Spit Roasted Lamb, Chicken Greek Salad with tzatziki

The hero of the hour is their Whole fish and fresh seafood sourced daily from local trawlers. As well as using the freshest local produce, who can resist?

Perhaps at this point we should just go with one of Manny’s Banquets to sample a mix of his authentic specialties and call it a day.

Speaking of specialties, don’t skip on washing it all down with a Manny’s Misbehave – Cointreau, Frangelico, Lime Juice with a v. mysterious secret addition and thank us later.

We should be souvlaki to have Manny’s Wine & Fish on our doorstep, a welcoming fish house and bar with an enigmatic master of Greek eats at the helm. If you’re yet to say hello, well, it’s feta late than never!

TELL YOUR BROS IT’S

TIME TO

GLOW

Why the Gold Coast can’t stop combing back to Krownd.

For as long as we can remember, us ladies have had all the glory of the pampering and #selfcare rituals – the mani dates, spa days and hair salon D&M’s with our hairdresser that knows far too much info about our personal lives. And while our beloved men-folk have always been welcome to tag along – there’s been a distinct lack of inviting spaces tailored specifically for them.

Ever since the term metrosexual was being thrown about as liberally as hair crimpers in the 90’s, the male grooming industry has gone from strength to strength and is no longer the exception, but more like the rule. And we’ve been trying to keep the fashion savvy, man-scaping, skin-routine welding men in our lives out of our face masques and volumising shampoos ever since.

Well, never shear guys (and gals, bc hands off our skincare pls), because a genius new concept is here to shave the day, and we moustache why nobody thought of this idea sooner. Say hello to Krownd, the GC’s one stop shop (or clinic, if we’re really getting

to know each other) for all things men’s aesthetics.

From the outside, you might be forgiven at first glance for assuming that this is like any other bougie barber churning out fresh cuts on repeat. And coincidentally, owners Tema Wiguna & Karson Bagot admit that at first, the business started with a focus on men’s haircuts and shaves. However, they quickly identified the opportunity to meet the growing demand of the burgeoning men’s grooming industry by creating a unique concept for the fellas that’s been more overdue than a mullet for a trim.

The founder, who had personally struggled with societal stigmas surrounding men’s grooming, soon set their sights of expanding to offer a whole host of tailored services, including everything from teeth whitening and hydrafacials through to #brotox – they’ve legit got #theworks when it comes to helping guys get their glow on. Ultimately, the owner duo is passionate about helping men feel confident in their appearance without shame #judgementfreezone.

58 | insidegoldcoast.com.au
HEALTH + WELLBEING

While they might have set out to create a new spot to help men not only look but also feel their best, it’s clear that Krownd has also been designed to make it an indulgent experience that’s a cut above. When it came time to build the ultimate bro-beautification destination, of course, they planted it squarely in the middle of the GC’s HQ of all things uber-cool, Mermaid Beach.

Their swanky new digs have that specific type of moody modern masculine interior that oozes luxury and makes you want to kick back and unwind, knowing you can rest a-sheared you’re in good hands. Its clean lines are as sharp as the fades, all decked out in an ultra-modern black and white palette, and of course, the trademark gold accents are a royal touch #yeskings

When it comes time for the royal treatment, let’s faci-al it. Women the world over have long known the magical properties aka glow that can only be gained from a professional facial. And Krownd has pulled out all the big players for their 5 stage hydrafacial treatment – with acid peels, microdermabrasion suction, hyaluronic serum application, and LED mask therapy – you know, all the good stuff to deliver a brighter, smoother, and more youthful appearance. Which quite frankly is starting to make us a little jelly that this might be one #boysonly club we actually want to be a part of.

Or if it’s time to make those locks a little more lush, the crew are bound to have an option that suits, from SMP (scalp micro pigmentation) through to full-blown hair transplants, with bangin’ results all right here on the Coast (yup, no need for jetting halfway across the world on that #turkishhairlines trip after all). And before we beard you adieu, we can’t forget to mention the teeth whitening treatments if that million dollar smile is no longer as sparkly as it once was.

While it’s quite clear that there’s no such thing as a bad hair day at Krownd Men’s Aesthetics, their crowning achievement has been creating a welcoming self-care destination to get the men of the GC feelin’ a million bucks – no doubt they’ll be combing back time and time again.

A DATE NIGHT TO BOWL YOU

OVER!

Zone Bowling + Timezone = 10/10 fun.

If the mere thought of the phrase ‘I’m bored’ (honourable mention also to ‘I’m hungry’), is enough to involuntarily send your eyeballs rolling off their very axis, chances are you’ve probably heard it on repeat since (what feels like) the beginning of time, aka every weekend and school holiday in recent memory. It’s a time honoured tradition, children complaining that there’s nothing to do, while parents instantly blank on every fun activity option they’ve ever known.

So we’re here to tell you, #ICYMI one of the Coast’s most tried and true boredom buster destinations recently got a major upgrade

meaning more fun for well, everyone. Because if it’s been a while since you last ventured in for a nostalgia fix at the HQ of all-round fun and Surfers icon, Timezone, you might be bowled over to learn that Zone Bowling recently opened right next door #convenient. Already boasting activities galore, with laser tag, glow in the dark mini golf, bumper cars, and more arcade games than you can poke a token at (showing our age), throw in a slick bowling joint and it’s 10’s all round for the actual kids, and the big kids alike.

Which is excellent news for parents, but also for all you fun Aunty’s and Funcle’s trying to win ultimate cool-points with the niblings, through to Gigi’s, Grandads, Godparents and everyone in between. And why let the kids have all the fun, we reckon Timezone has long been underrated as the ultimate date night destination that’s guaranteed not to strike out. Bring the fun back to date nights we say!

surrounds, which quite frankly couldn’t be any further from the dungeon-chic bowling alleys of our youth #stillfuntho #corememories.

The spacious, modern dining area is way more luxe than it has any right to be, providing the perfect post or pre game pitstop for friends and fam to gather, kick back and rib each other about their bowling skills (or lack thereof). Thankfully, the fare is every bit as good as we remember, with all the family friendly classics like burgers, loaded

fries, pizzas and hot dogs set to go down a treat for all ages. Of course, after working up a thirst, a milkshake or ice-cream spider will go down a treat for the littlies – while the adults can swing by the bar to indulge in a range of delicious cocktails

And the final strike of genius – there’s a range of special passes to choose from, giving guests access to activities across both Zone Bowling and Timezone #gameon. We don’t know about you guys, but we’re suddenly in the mood to play a good old-fashioned game of crocodile whack-a-mole #ow #nowi’mangry.

Who doesn’t love the opportunity to show the young’ns how it’s done and flex our mad Daytona USA skills.

So for more fun than you can Pac-Man a joystick at, channel your inner Mario Kart and zoom on down to Surfer’s one-stopshop for games, good times, tasty treats and wholesome family fun.

Then there’s Shawn (Maftounian), the marketing guy, a business gun who knows how to connect with people, and Alenka (Tomse), one of the venue’s two chefs and the creative designer. Alenka also hails from one of Slovenia’s best hospitality

and wine producing families, this adds street cred for days. Last but not least, we have Antoni Servera, the Spanish sous chef, who was a coowner of a successful restaurant in Ses Salines, Spain. Fantástico!

After months of research and idea sharing, fast forward to present day and ta-da –D’la Rosa is born. Describing their passionate and effervescent team as the venue’s ‘mojo’, the mantra here is happy staff, happy… well, everything-else and #TrueDat.

Meaning “from a rose”, the restaurant’s name is as lovely as the staff, the nosh, and the fit out, which is a juxtaposition of all three owners’ ideas. Think breeze bricks, festoon and fairy lights, olive trees, mood lighting inside, some funky wall art, and beautiful happy roses on tables #RosesAreRed… AndYellowAndPinkAnd… It offers both indoor and outdoor dining for 40 people, making it the perfect spot for a private ‘do.

The location was chosen because of the strong sense of community, next to the beach and highway, plus it’s a ‘burb of choice for the GC-dwelling Latino contingent. And let’s not forget the obvious; the Mermaid Beach vibe is, well, a good vibe.

EAT + DRINK
This Mermaid Beach tapas house is literally a (super cute) house.

Now let’s unpack the main event – food and booze, and this little pocket rocket does not disappoint. Starting with the best meal of the day, get ready to chow down on the hearty Breakfast Burrito with house made baked potato, cheese, beans, pico de gallo, red salsa with bacon or chorizo. The equally popular Baked Eggs with chorizo will not disappoint but if you’re after something a little more bite-size, a delightful selection of fresh homemade pastries are available including a to-die-for Quiche.

The signature dish is the out-of-this-world Snapper & Mango Taco with mango salsa, pickled onion and coriander. We feel the urge to also mention the Halloumi Taco, coz Halloumi just does things to us. With red salsa, pico de gallo, white cabbage, guacamole and coriander, and the tortillas are all made in house, vegan and gluten free, oh my god bring them on, we will take two thanks! There are also Nachos, the Mallorca inspired Meatballs & Pork Mince or grab a small bite like the irresistible Corn Cobs. Or howzabout some Tapas, and our vote goes to the Chimichurri Steak, featuring a grilled sirloin topped with zesty herb sauce beside toasted bread, this is totally our kinda iron and protein fix.

Meanwhile, it’s cocktail-o-clock (isn’t it always) and the signature Cinderella Man is calling our name. Described as the underdog of all martinis, it’s available in two unexpected flavours; Watermelon and White Chocolate. Or perhaps we’ll order a Mermaid Beach, the D’la Rosa take on the lethal Long Island Iced Tea… Otherwise, grab yourself a wine, craft beer, mocktail or soft drink and soak up the fun and friendly atmosphere. Open every day (including weekends!) for breakfast and lunch. Dinner (Wednesday to Sunday) so gather your family and friends, don your rosa coloured glasses and create beautiful memories at the charming D’la Rosa.

Set in the 1890’s, this beautiful novel tells Charlotte Ross’ story as she attempts to forge a place for herself in a society determined to dictate her path. When Flora Dalton first steps foot in her father’s stationery shop, Charlotte knows she is done for. However, this is not the time for a love like theirs. After tragedy befalls her family and she is separated from the woman she loves, Charlotte’s all-consuming melancholy lands her in Kew Lunatic Asylum. Though initially cautious of the ‘lunatics’ within the centre’s walls, the realities many of these women face and their reasoning for remaining in the asylum prove to be more complicated than Charlotte first realises. These women’s lives open Charlotte’s eyes to the consequences of rejecting society’s expectations of women, she must decide which will emerge victorious in the battle: her head, or her heart?

Though Calaby’s engaging writing makes understanding the protagonist’s anguish an easy task, it is the courage carried by her fellow patients that is undeniable throughout her story and reminds us of the difficulties faced by real women at this point in history. This novel proves that while one woman’s voice can cause a stir, the rallied strength of women’s voices, united under one cause, will inspire a revolution.

Our local experts have found you the perfect trio that will have you longing for more!
Wine recommendation by Somm Wine Store’s Joe Caruso.

Chocolate has a reputation for being one of those foods that people crave. However, whether that intense desire is driven by physical or psychological cues can be hard to tease out.

It’s interesting that women appear to crave chocolate more than men. It suggests something biological might be going on.

Luxury chocolate is portrayed as a welldeserved treat and often given as a gift so any longing for the sweetness and complex flavours of fine chocolate could indeed be wrapped up in our psyche. Of course we want to be indulged, celebrated and showered with gifts!

One of the chocolates most often requested at Little Cocoa is our chocolate praline with a salted caramel filling. There is definitely something tempting and ultimately satisfying about the delicious, rich and oozy caramel enrobed in a fine crisp shell of dark chocolate.

Whether there are chemical neurotransmitters in our brain telling us our bodies desperately need the antioxidants in a good dark chocolate or whether we just succumb to a more emotional need for a ‘feel good’ moment, chocolate is there for us. .

CHOCOLATE: 12-piece box salted caramel chocolate pralines RRP $33.

Available at Little Cocoa, Southport. www.littlecocoa.com.au
