If you look up “high achiever” in the dictionary, you’ll find a simple three-word definition; The Fireplace Restaurant. In addition to its endless five-star reviews, InterContinental Sanctuary Cove Resort’s signature dining destination has two major coups to celebrate. Cue the applause, nods of approval, and the sound of people furiously dialling their posse to lock in a Fireplace dinner, because this year is shaping up to be even more impressive than the last.

2022 was undeniably a memorable year for this fine dining power player. Firstly, let’s start with the resort’s appointment of the Dom Pérignon of Executive Chefs, Mr Hamish Watt. Joining fellow culinary master, Head Chef Randy Tablan, Hamish’s extensive high-brow experience made The Fireplace truly ‘ignite’

(pun intended). With fanfare and hype galore, absolutely nobody was surprised when the prestigious accolades ensued. Speaking of new recruits, InterContinental also welcomed a new Pastry Chef, Dee Hettiarachchi, whose pastry prowess and creativity in the kitchen is secondto-none.

With the A-Team fully assembled, naturally The Fireplace took out the top gong at the Restaurant and Catering Industry Association 2022 Awards for Excellence – South East Queensland, named the Best Restaurant in a Hotel/Resort. But that’s not all because in addition to claiming the gold in our region, The Fireplace was also a finalist in the national awards #bravo.

Don’t roll up the red carpet yet though, because more congratulations are in order. Yet again, this fine dining heavyweight was awarded a Two-Glass accolade in Australia’s Wine List of the Year Awards, thanks to the carefully curated 200-strong wine library. This marks the sixth consecutive year of holding such a hotly contended title, and we’ll cheers to that. On repeat….

Looking into 2023, the culinary team are upping the ante even more to keep things exciting and enticing, just the way we like it. They’ve hit reset on the menu to align with the new season and we can already taste the wowfactor. To give your tastebuds a hint of what’s in store, let’s unpack the signature items – hot off the press.

Starting with entrées, the Charred Field Mushrooms with lentils, sauteed spinach and sherry vinegar dressing is simply unmissable. Then, who could resist a main of Barramundi with warrigal, baby corn, sugar snaps, heirloom tomato and salsa Verde and certainly not us. Or, if you’re partial to the grill, the 250g Milly Hill Lamb Rump with a selection of accompaniments and sides is a meat-eater’s dream dish.

Sweet tooths, you haven’t been forgotten with Dee Hettiarachchi’s newest dessert menu including his signature dish: Native Flavours. Featuring fresh Kakadu plum parfait, macadamia nougatine crunch, lemon myrtle sable, Bundaberg infused wild peach marmalade, dry mandarin and fresh berries, there’ll be no sharing because you won’t want to part with a single morsel.

Wine enthusiasts will be tickled pink (red and/ or white) to discover that The Fireplace is sharing the stories of their wine library with a collated series of producer profiles, including Henschke, Bouchard Pere et Fils and Barossa Valley Shiraz. Great news for non-wine drinkers too, because these stories aren’t limited purely to the wine list, with tailored choices across the entire range of beverages, particularly the incredible selection of whiskeys.

The year ahead will also see seasonal menu changes and highly curated special events come to life. Specialist wine dinners, signature dining events and Chef-led experiences are just a taste of what’s to come. Or if you have a special event on the horizon, why not host it in The Fireplace’s intimate Private Dining Room? Seating up to 18 guests, your soiree will be remembered for all the right reasons.

If you’re anything like us, our brains say salad, but our tastebuds autocorrect that to gelato. It’s the edible equivalent of shoes –there’s always room for more, plus it feels way less damaging than its bloat-inducing cousin, ice cream #truedat. So when we discover a gelato shop worthy of our coin and in this case, our KM’s (it’s on Tamborine Mountain), we feel compelled to do our bit for society and spread the good word.

Introducing Tamborine Mountain Gelato Co, gelato wonderland churning out the finest traditional Italian gelato goodness. With seasonal flavours rejigged every few days, regular visits are totally justified, dispelling the theory that you can have too much of a good thing (you can’t).

Using local growers and ingredients where possible by working with suppliers like For Real Milk, Grazing Girls Eggs, and Funny Honey (Scenic Rim), Cravve Chocolate (Burleigh Heads), Those Little Voices Coffee (roasted on Tambo), it is the ultimate #supportlocal business. And stop press, these gelato geniuses have opted for the traditional pozzetti

gelato cabinet. This uber authentic cabinet has lids (say what?!) and the contents can’t actually be seen from the cabinet (*cue crickets…*). But fear not friends because this is the traditional way, and the best means of storing a natural product. It stops circulation and maximises freshness, which means the end result is pure gelato supremacy.

Experienced Pasty Chef Bec Leitner along her partner (and home-grown Tamborine kiddo) Alick Kilsby combined their passions and voila – Tamborine Mountain Gelato Co was born. Bec, who is also the ‘Head Chef’ and was previously manager of the pastry team at Burleigh Baker, has long championed desserts that are natural, lower in sugar, with no nasty fake stuff #AmenSista. Joining forces with Alick who is passionate about supporting the growing food scene in his ‘hood’ and making Main Street a food lovers must see (or must eat), they’re a match made in heaven…both professionally and personally.

as possible and guys, if you need volunteers to source more intel…#JustSayin. This enabled them to nail the exact texture, flavour and style, demonstrating their commitment to the cause. Bec also received one-on-one training from a couple of Italian Gelato experts to perfect her skills, and ensure the recipes remained authentic and natural.

Alick and Bec designed the interiors with a clear aesthetic in mind, alongside shop fitter Sam Harder. Inspired by the Tamborine Mountain rainforest scenes with a minimalist and contemporary look and feel, you’ll find indoor seating for 18, outdoor seating for 8, or you can plonk on the grass. Located close to stunning lookouts and rainforests, if you overindulge (us), you can always clock up some steps on a nearby rainforest hike #bonus.

In addition to being delish and tradish, their gelato is all gluten free, plus they offer several vegan options as well. Right now, we’re crushing on the Mint Stracciatella which is fresh garden mint gelato with chocolate shards throughout.

Equally delectable are the Banana Custard, Lamington, and Lemon Myrtle and Honey flavoured gelatos, and we won’t judge if you order all of the above coz we did too. There is also a small selection of cakes for sale each day, which again are natural and always gluten free.

So next time you’re planning a trip up the mountain, remember a balanced diet is a gelato in one hand and a gelato in the other – especially when they’re a la natural from Tamborine Mountain Gelato Co.

Fellow Mex-heads, do we have news for you coz California Tacos, the famous taco shop born in Burleigh, has now launched an authentic modern Mexican nosh and Margarita restaurant in bustling Broadbeach. And when we say “authentic” this is a whole new level of authenticity and keep reading to find out why #clickbait #sorrynotsorry.

Residing at The Oasis, franchisee Andrew Lendrum believes it’s the perfect destination for a casual lunch for the fam (totally little Tacosauras friendly), or fun night out with

your girl gang / bro bunch. The menu is truly Mexcellent, choccas with bold flavours and fresh ingredients, just the way we like it. Designed to transport you to the vibrant streets of California, it’s more than just a taste sensation, it’s also a visual feast with dazzlingly bright, colourful décor, and a chilled ambience to boot.

California Tacos founder and California native Ty Yturralde moved to Oz in 2013, choosing Burleigh as the perfect location for his first Baja inspired restaurant. During his journey, he studied and gained access to long-standing “secret recipes,” which were never seen outside of Mexico... until now. In particular, Ty is the holder of the OG fish taco recipe. Like, legit – straight from the inventor of THE fish taco. This is not a drill, but something he learned whilst working in the kitchen at a taco joint in Ensenada, Mexico. Holy guacamole, if that doesn’t give him some serious Mexi street cred, then srsly just eat our shorts.

Our pick is the Surf & Turf Taco with chargrilled steak, chipotle and lime shrimp, melted cheese, cucumber salsa, chipotle aioli and avocado on a handmade flour tortilla

If you’re more of a sharesies nacho kinda gal or guy, grab your mate/mates and bring an epic appetite because the Nachos here are the #BiggestInAustralia (just ask Google)! There are also Burritos (go for the California Burrito served in a flour tortilla with French fries, cheese, salsa fresca, baja aioli and paired salsa), Cali plates (including bowls and the ultimate quesadilla), with many dishes allowing you to pick your protein (chicken, beef, pork or plant based).

Now if you’re thirsty (always), when in Mexico, one simply must have a margi and this is a fact. Lucky for us, the Margarita Bar menu is lit with six epic varieties. Because it’s unlike any other we’ve ever had (and believe you me – we’ve been there, done that, got the t-shirt), we’re ordering a Coconut Margarita with 1800 Coconut Tequila, coconut, lime and our special recipe Coconut Foam (which also includes tequila!). Otherwise grab one of the other usual suspects including beer, wine, cocktails, soft drinks, or another Mexican rite of passage – a sangria jug. Oh and PS – there is a special Burleigh Brewing Mexican lager on tap called Sublime. No need to add a slice of lime coz it’s already infused with just the right dash of lime #MicDrop.

Southport’s new Italian is Mozza Mozza bueno!

Located inside our beloved Southport Sharks where Carmody’s once lived (RIP), prepare for everything from tableside cheese wheels and tiramisu to woodfired mozza(rella) pizzas, fried mortadella sandos, and negroni slushies (okay hiiii)… and that’s just the digestible variety. Add a hat awarded Head Chef and a side of disco tunes and it’s official – we have discovered actual heaven.

Iconic owner Dave Galvin, the man, the myth, the legend behind Crafty’s Sports Bar, continues to redefine the northern GC eats and sips scene, and keep doing what you do good Sir. Securing Mozza Mozza’s digs in mid-2021,

the vision was to bring fun feels and classic share-style Italian food to the north side.

The 160 seater is the perfect spot for a family feed or group function, boasting an 18-seat private dining room which would you believe is the only one north of Broady (we would).

You can expect a little bit of theatre with our nosh. There’s 80s and disco bangers blaring from the boom box, and nothing says happiness like a side of Prince with our prosciutto or Abba with our arancini.

But Mozza Mozza doesn’t just bring joy through its menu and music, but also its majestic four-metre-tall olive tree. Standing loud and proud, front and centre of the space, it’s quite the show-stopper creating a warm, welcoming ambience and packing some serious wow-factor punch.

Recruiting Mitch Chesterton as the venue’s all important Head Chef was nothing short of a power move. Mitch has worked in multiple hatted restaurants including Alchemy, Michaels on Tedder Ave and Peak Dining at Iceworks in Paddington, plus was the Chef/ Owner of Iku in Burleigh where he won a Chef Hat Award. Some standouts include the Mozza Meatballs, made from pork meatballs, tomato sugo and fresh basil. Prepare for the obligatory Bug Rolls to be blown out of the water this Gold Coast summer with the arrival of the Fried Mortadella Sando. The Italian version of the Katsu sandwich, just went up a notch.

The Burrata deserves a shout out with its garden pea pesto and pine nut goodness, and the Cacio e Pepe pasta served tableside from a wheel of pecorino cheese is an icon in the making #ded.

The crowd-pleasing Rossa and Blanci Wood Fire Pizzas made from dough fermented for (drum roll please) 48-hours are next level, especially the Eggplant Parmigiana Pizza, with fried eggplant, tomato, mozzarella, parmesan and basil. Bellissima!

What’s a meal without a cocktail you say and we concur! The Spicy Southport Sour with white oat chilli and mango gin, Cointreau, lemon, simple syrup will go down a treat and holy cannoli, we just remembered the Boozy Slushies! Our vote goes to the Coconut Margarita with tequila, triple sec, agave, coconut and lime, and it’s official – we’re calling an Uber.

Or, if you’re a traditionalist who likes to pair their Italian fare with vino, you’re in good hands with a selection of Aussie and Italian wines to try #winenot.

So for your next family dinner, long lunch, corporate gathering or even just a lazy Sunday sesh, don’t be alfredo to try the pasta-tively amazing Mozza Mozza.

MEET FRANCESCA RUBI

Francesca Rubi has just been appointed as the Ambassador for Sanctuary Cove Marina. This coveted role draws together Francesca’s yachting, event and presenting talents in one unique position. We caught up with her to learn more about the superyacht lifestyle, her new role and what she loves about Sanctuary Cove. Tell us a bit about yourself.

I grew up on the Sydney beaches determined to live an adventurous life. I started working in celebrity event management. This was exciting but to gain global experience, superyachts were a natural extension. I have worked on some of the most prestigious modern superyachts including some that were over eighty metres in length.

I have also worked on television presenting inspiring destinations and promoting Australia’s leading yacht brands. A highlight of this was filming Below Deck Caribbean Season 8, what an experience! Today, I continue to work on superyachts around the world.

How did you get into the superyacht life?

I have always been around the boating industry, with my parents sailing professionally in my hometown. My friends worked in the yachting industry in Europe and when it came time to explore the world, I used my

connections to get my first job as a Purser on an 80m superyacht.

What is the best and worst thing about working on superyachts?

The best thing is working with people from all over the world, different upbringings and personalities; it is a great way to travel, and you learn a lot about yourself.

The worst thing is missing family and friends’ special moments like weddings or the births of children. You sometimes don’t have flexibility over when you are working and when you are on leave. How did you come to be the new ambassador for Sanctuary Cove Marina?

Sanctuary Cove asked me to attend the Sanctuary Cove International Boat Show last year where I hosted a number of events. The precinct is a perfect fit for me, we clicked. I love educating people about the yachting industry and love my Australian home. It is a chance to share some of my Superyacht experiences with fellow Australians. What will this new role entail?

I will be showcasing Sanctuary Cove as one of the best luxury superyacht destinations by being the face of the Marina. There will be a number of events throughout the year that I will host and attend to spread the word on why Sanctuary Cove is a must-stay

for captains, owners and crew. It’s such a fun role where I get to reconnect with industry colleagues and I get to visit Sanctuary Cove a lot more and enjoy all it has to offer!

You have visited marinas around the world. What makes Sanctuary Cove so unique?

Sanctuary Cove is a first-rate destination, it has so much more to offer than just a berth. We have crew facilities, world class guest dining and shopping, golf courses, a stunning Lagoon Pool at InterContinental Resort, fitness facility and if you want to explore Southeast Queensland, the closest activities are not far away. This makes Sanctuary Cove special. Crew live on board, at times, for long periods, so it is important that they are motivated and happy. The coastline is filled with little bays for anchoring, it is a perfect place to holiday for owners and guests.

Do you have any Sanctuary Cove favourites you keep going back to?

Café/Coffee spot: Rise Bakery – best coffee in town and I crave their Napoleons

Restaurant: I love food, and Mexican, so Pablito’s for me.

Bar or place to drink: Destinos for a cocktail, I love their Mykonos Mule, it’s a must order Shopping: Soho Girl is great, they have a lot of Australian Designers, and I love the homewares stores!

How do you choose to spend your weekends?

Personally, weekends for me are family time, I love having family dinners or going out for a quiet drink with friends. I will always be outside doing something, exercising at dawn to start my day. Being away for so long makes you really appreciate family and where you live so mostly it is spent at home. Let the fun begin…

When someone says Dracula, us Gold Coasters don’t think high-collared capes and bloody fangs. Instead, our minds wander straight to Hooker Blvd and THE Dracula’s. Sanctuary is Dracula’s most successful show in over a decade, it’s even more debaucherously delectable than its predecessors. In fact, we’re declaring it their finest, most satisfyingly sinful offering yet.

As unforgettable as it is unhinged, Sanctuary mixes up a cocktail of delightfully depraved madness straight from the maniacal minds of the condemned. From the death-defying aerial acrobatics to the groin-aching vocals, let the thrill of seduction prevail as the perversion overcomes you. I mean if that doesn’t make you yearn to find out more, then we worry about your mental state….which is ironic, isn’t it? Oh and don’t forget your stomach is also in for a treat, as the three-course feed is as ecstasy-inducing as the inmates.

the wicked. We applaud this mastermind’s commitment to delivering a truly unique spectacle, playing out across five stages, as well as mid-air above the audience. Playing to record audience numbers, the Dracula’s divas and degenerates are a bit like caged animals; desperate to unleash some pent-up energy and entertain the pants off you…and we may not even be saying that figuratively. Located under the supremely popular Cali Beach, Surfers Paradise, this epic entertainment precinct is a game-changer for fun-seekers. Occupying a whopping 3,279 sqm and holding 410 people collectively across the three venues, it’s quite the power player on our glitter strip #biggerisbetter.

Let’s get down to the nitty gritty and unpack the hot new venue; Queensland’s first (and Australia’s second) Hijinx Hotel. And not just any bar, the Caddyshack bar, an 80s and 90s themed watering hole and Chevy Chase, you defined our childhood. Tell your opponents to eat your shorts on the Simpsons Evergreen Terrace and take on the four new holes exclusive to the Surfers Paradise Holey Moley; Skate Park, I Scream, Birdie Hunter and Street Fight #KissMyPutt.

TIME TO WINE DOWN AT TUGUN’S NEWEST GRAPE JUICE BAR

Le Blancs is the wine that we want!

When you look up “happiness” in the dictionary, it says “wine bars”. They are our ten-year-old selves’ equivalent of Skater’s Paradise; a source of good times, wobbly legs, and a few nasty stacks which lucky for us, were pre smart phones #DamnThatCloud.

Well things are looking up coz there’s a new wine bar playa in town, and a very welcome addition for the Tugun folk. Introducing Le Blancs Wine Bar, a cool little joint for a chilled (and literally chilled if you’re a white drinker)

glass or (twenty)two of grape juice, charcuterie or other Euro-vibing nibbles.

Opening in December and bringing cheer (and cheers) to the Southern GC, Le Blanc’s comes from good stock. Founded by Gavin White, owner of neighbouring Tugun fave Backbone Bar and Kitchen, it fills a void in the region for a slightly more upmarket yet laid back watering hole, and adds another place to the ‘must try’ list.

Gavin and Lori White designed the luxury meets classic look and feel of the space, offering both indoor and outdoor dining for up to 50 people. The plush leather lounges, hand-made wooden tables, and an entire wall sporting a dreamy vineyard print create a warm ambience, complemented by the location’s famous easy going feels.

Head Chefs Megumi Stella and Narelle White have you covered in the kitchen, and locals will be au fait with Megumi’s gastronomic talents from Backbone, big cheese Gavin’s OG venue. And speaking of cheese, you betcha bottom dollar you’re in for more fromage that you can poke a cheese knife at. Specialising in small

dishes and srsly epic charcuterie, there’s only one thing that honks our horn more than wine and that’s charcuterie.

The signature dish here is the Classic Large Charcuterie Board, which is a mix of high-end cheeses, meats, French bread, fresh fruit, and dips. Or for a more deconstructed approach, order a serve of Woomby Truffle Triple Brie, a rich creamy cheese with a layer of black truffle paste. Coz more is more when it comes to cheese, don’t miss the Marcel Petite Compte, a type of gruyere from the French Switzerland border boasting a sweet honey flavour. Pair it with Prosciutto di Parma, a dry-cured ham thinly sliced from Parma Italy, and some Wagyu Bresaola packing a rich and smooth texture.

Maybe you’re in the market for a Paté Terrine and may we suggest the Duck with Fig Terrine, with rich free-range duck, sweetness of balsamic and black figs with a hint of spice. Or the Free Range Chicken and Truffle Terrine featuring local chicken leg and breast with blanched leak and black truffle. If Pate’s not your thing, try the Basil, Feta and Tomato Dip served with a little somethin somethin from the Extras menu like a Baguette.

In addition to the wide range of international wines, you’ll find classic cocktails with a twist. The hands-down crowd favourite is the Mexican Lost in Italy Margarita and if only we were actually lost in Italy. A concoction of tequila, amaretto, lemon and lime, it’s a universal recipe for greatness.

So if you’re like us and love a new wine bar, don’t make a pour decision and skip this one. ‘Sip’ back and relax at Le Blancs.

THE SLEEK SURFERS VENUE DISHING UP CLASSIC PUB GRUB

Gold Coast locals love The Local.

If you’ve ever ventured into Surfers Paradise (and we know you have), you will have probably sipped a brew at one of the beloved pub institutions. One particular favoured pub that is found within Chevron Renaissance, has been serving good times and great food to an overflow of revellers for many years. A sleek bar and eatery that locals have fallen in love with and if you haven’t dropped by yet, we’d like to introduce you to YOUR new local.

It’s called The Local and with a cosy, low-lit vibe, giant sport-watching screens and a menu packed with all your favourite pub grub, it’s the

perfect spot for an after work sip or a laidback weekend session with the crew.

The entrance is marked by two archways tiled with tiny black circles and looking very fancy indeed. Inside, the bar is located right in the centre of the space, where it should be and it’s all exposed brick and glass shelves stacked with goodies, fairy lights string from the ceiling and a 360 degree view of the rest of the room.

It’s definitely got the feeling of a central buzz bar you might like to bunker down in for a good session, particularly because there are frosty beers aplenty and all of the delicious pub grub to accompany.

Starting with share plates of course because a sipping session simply wouldn’t be complete without share plates.

There are dishes like Bacon & Cheese Bread, Pulled Pork or Crispy Chicken Tacos and Potato Wedges. There are also Southern Fried Chicken Wings in chilli or BBQ sauce (YUM) which sounds like perfection if you ask us.

If you’re not into sharing food (same), there are mains along the lines of a Double Stacker Beef Burger, a Wagyu Beef and Ale Pie, 250g

Scotch Fillet, Full Rack of Pork Ribs slow cooked with hickory and brown sugar and of course more burgers, schnitzels, salads and sandwiches you can poke a stick at.

It’s the traditional pub style of eats you love but made a little bit fancier by Chef Justin Wise. So may we strongly suggest the Chicken Parma with shaved ham, tomato, basil, chips and salad, regularly described as Surfers’ best Parmy, you won’t go home unsatisfied.

If you’re a beer fan, you can get all the Irish faves you love plus the usual icy cold Aussie suspects.

For a true Aussie pub experience, there’s nowhere that does it better – not to mention Surfers’ Best Parmy!

The cocktail list is impressive with all the classic faves but we encourage you to try the creative Blue Moon Coconut Margarita, Key Lime Pie or the Lamington Espresso Martini featuring Wildflower lamington vodka, Mr Black coffee liqueur, cold drop espresso and sugar. Your obligatory Friday night Espresso Martini just got Aussie-fied. So it’s all the things you love about an Aussie pub, but a little bit fancier.

Joanna Horton’s debut novel centres around the friendship between two women during their mid-twenties to their early thirties. The story begins with our main characters, Elisabeth and Mari, at Elisabeth’s graduation. The two quickly become acquainted with Jack, a seasoned history academic twenty years their senior. When his simultaneously self-assured and humble nature worms itself between the pair, their relationships become complex and act only to consume the trio. This novel expertly navigates the complex social expectations the two women hold and the narratives that consequently develop as their relationship becomes awash with a powerful interplay of shame, love, and control. Though Between You & Me is unmistakably Australian, brimming with references to Brisbane landmarks, the line our protagonist’s walk between fierce love and utter hatred is a universally understood emotional pendulum of the human experience. Reading this novel felt like trying to scratch an itch that refused to stay still, as though I was chasing the author through the pages. Between You & Me grabbed me and didn’t let go, and sometimes it felt as though it would draw blood…but in a delightful way. A fantastic debut! Bravo!
