From the presentation of the dishes to the perfectly executed oriental opulence meets British colonial plantation vibes, Chevron Island’s Fu Manchu Oriental doesn’t miss a beat. This dual level Lolita combines the best of South East Asia and European cuisines to create a tantalising and flavour-rich experience for intimate date nights, celebrations, corporate and special events. Or just because… First opening in 2016, Fu Manchu has since undergone a stunning makeover to reinvent and reinvigorate the venue.

Owner, Malaysian born Melbournian-come-Gold-Coaster Zuraya Hamilton, has created a warmer and more feminine aesthetic, starting with the black London shopfront which welcomes you into a dark and cosy interior. Upstairs you’ll find a truly breathtaking a la carte dining area, a private dining space for groups of up to ten, and for those spesh soirees or work do’s, a functions space for up to 50 peeps. Here you can immerse yourself in a tropical jungle, with a spectacular wall mural that you’ll take at least four dozen selfies in front of, a lush leafy greenified ceiling, and mesmerising metallic animal print. And let’s not forget the luxury fixtures like chandeliers, which never fail to level up the luxe factor.

If you’re channelling a more casual dining experience with some delish Asian tapas, the Fu Bar has style and swagger for days. Think high tables levelled with the bar so you can see all the cocktail action in play or settle into low set tables in the cool London shop front window space. There’s another eye-catching jungle-esque statement wall with tigers and toucans (which kinda sounds like a cool band name or a cocktail), with oodles more content potential for the ‘gram. And this just in, customers usually order the luscious blue flowered Love You Long Time cocktail because it’s as FUn to say as it is pretty to post!

Shared between two with a meat option, vegetarian option and even a pescatarian option, this will totally eliminate the chance of food FOMO (the worst kind).

For larger plates, it’s gotta be the Seafood Laksa Lasagne because it marries our two all-time faves (laksa and lasagne), and we are all kinds of here for this union. We’re talking barramundi, prawns, Moreton Bay bug meat and crab in a rich coconut laksa sauce, with Aburi cheese and prawn oil. Or, if the land rather than the sea is calling your name, hook yourself up with Beef Rendang and devour slow cooked tender beef cheek in a mild coconut cream rendang curry with peanuts and sweet potato chips.

If you want to sample the best-of-the-best larger plates, why not opt for a five-course DegustASIAN set menu (and for once, that’s not us being punny coz that’s what they’re called… #amazing).

The perfect beverage to pair with any of the delicious meals here is a cocktail. Obvs. Featuring GC producers like Winchester Distillery (Arundel), Capricorn Distillery (Burleigh) Ariane Vodka (Gold Coast) and Volando Tequila (Sunshine Coast), we love it when locals support locals. Our picks are the Chilli Margarita with Volando Tequila, chilli infused liquor, fresh lime juice and rimmed with chilli flakes (Hot Hot Hot), the Drunk Monk with Capricorn spiced rum, pineapple and lime, or even the Coconut Espresso Martini with Ariane vodka, Winchester’s chocolate liqueur, coconut cream and an espresso shot. From beach days to big nights (the latter of which live on in our somewhat blurred memories – and faded prints from our disposable cameras), it’s always held a special place in our hearts. Well, our iconic glitter strip is now shimmering brighter than ever with Paradise Centre’s $40 million redevelopment! *cue jaw drop. Redefining the Gold Coast’s beachfront dining and shopping scene, Paradise Centre has unveiled a stunning new exterior with eight brand new dining experiences, complete with unparalleled ocean views. There’s also the addition of some very welcome retail hard hitters, and oh how we love this for us. Let’s talk food first because the only thing we live for more than shopping is eating, and absolutely no-one is surprised to hear this.

It goes without saying that it’s always been a non-negotiable for visitors, because a trip to the GC just isn’t a trip to the GC without a stint in our tourism capital. And let’s be real, it’s certainly housed a fair share of good times for us ‘natives’.

We don’t like to name drop (we do), but Paradise Centre 2.0 will also include the famous Wahlberg family’s first Queensland instalment of their Wahlburgers restaurant. Serving up gourmet burger goodness, suddenly all we can think about is a young Mark Wahlberg in his Calvin Kleins circa 1992 and honestly, that changed us. Back to the task at hand, the stunning revitalisation features legendary tex-mex restaurant El Camino Cantina. What’s extra exciting is that this particular El Camino is home to the chain’s very first breaky in Oz. And, the only thing better than going out for Mexican or for breakfast, is going out for a Mexican breakfast! Also on the new Paradise Centre’s star-studded restaurant roll-call will soon be American institution TGI Fridays, and our day has legit just been made.

Providing locals and tourists alike with an eclectic mix of culinary offerings, there’s revamped classics and some BIG new players.

It’s not all about American and Mexi themed nosh though, with other popular additions in the melting pot of multicultural nomming offerings. We’re talking flavoursome Italiano cooking as good as Nonna’s at Enzo’s Cucina, and Thai food so authentic that even ‘Thai-hard’ food critics will agree that all you need is ‘larb’ – and Nahm Talay Thai!

Everyone’s quick, fresh and healthy food-onthe-go hero, Hero Sushi, made the cut, as did Gelato Messina and its 40 redonkulously good varieties of gelato #IDie. Another note-worthy addition is the premium barista-made coffee and modern Aussie cuisine at La Playa, coz one can never have too much quality caffeine in their life.

Joining other recently launched Surf Dive N’ Ski and Vans, the Paradise Centre’s line-up of shopping haunts will delight any shopper. This sensational redevelopment adds to Paradise Centre’s 90+ specialty shops, alfresco dining and humdinger entertainment precinct with the world’s largest Timezone, Zone Bowling, MANIAX Axe Throwing, and more to come. In our humble opinion, this couldn’t have come at a better time with new hotels opening and action a-plenty unfolding around the heart of the GC. How long have you been a Gold Coast local? I moved here beginning of 2006 for a holiday, fell in love with a lady, the place and surrounding areas, and never left! Tell us a bit about you. I caught the bug from an early age working for my Aunt in her award winning café in Christchurch, NZ. Ever since then I’ve been on a quest to embody the art of hospitality as she did. I spent a few years working at The Star Gold Coast, learning all aspects of the industry, before moving onto smaller venues. I count myself very lucky to work with and learn from some best in the business, like Josh and Astrid and the team from La Casita/Fleet in Brunswick Heads, Adam Lane at Kiyomi (now at Yamagen), and of course Dayan Hartill-Law, before opening a small cocktail bar in Broadbeach. Owning and operating a bar gave me some invaluable lessons that I very much appreciate and has only strengthened my resolve and passion for this industry and the bartending community. After moving to the Gold Coast, I met my future wife a week afterwards, and now we have two boys together! My eldest son is hearing impaired like myself, so my family is my biggest source of drive and passion. Having a disability should not hold you back from achieving what you put your mind to. What do you consider your greatest career achievement? I consider the Diageo world-class competition one of the most prestigious bartending competitions worldwide and I love that I’ve made the top 100 bartenders in Australia 5 times, which shows all my hard work and staying in touch with what is happening internationally in the bartending world is paying off. Currently working at HOTA, and the amazing team here definitely feels like a privilege especially with the Culinary Arts team, and it feels like this is going to be an important milestone in my career. How long does it take you to come up with a new cocktail? Sometimes I can do it on the fly, some of the best drinks I’ve made have been under pressure! I like to start with a base flavour and keep it simple with a minimalist thought process. Often if I’m working with a particular spirit, I’ll pinpoint a flavour that would work well accentuated. I will write it in a notebook and work my way through, often with random drawings and indecipherable sentences. Here at HOTA, it’s been really nice to use artwork as a starting point and I will dive deep into it. Why was the artwork created? What does the artwork look like? Colours, textures, lighting, emotions? What are your Gold Coast favourites… Café: Not the GC, but Cubby’s in Chinderah. An essential coffee stop in the morning on the way to work and the team are amazing. Coffee spot: Vector, Tarte and Stable are all making quality cups of brew! Dino at Rosella’s makes the best Espresso Martinis!

Restaurant: North Room, Eddy + Wolff, Muso, and my sons reckon that Eddie’s Grub House makes the best burgers on the Coast (they do). Also get down to La Casita in Brunswick Heads for some cracking Mexican food. Bar or pub for a drink: Rosella’s for some chat and great drinks. The wine bar Paloma by the Labart legends has a very slick wine list curated by Channey. Super happy that Après Surf is back in Burleigh too.

Who remembers the Gold Coast Airport of yesteryear? Yep, it was pocket-sized with just the most basic of basics. Fast forward to 2022 however, and it’s about as far from its humble beginnings as J.Lo is from the Bronx. Just wait till we tell you what’s in store for the September unveiling of the newly revamped and expanded airport which for flying out loud, will be a destination in itself! We all know a holiday starts at the airport, and visitors would be forgiven for cancelling their itinerary and kicking around the new terminal for the duration of their stay. The Hassell-designed $500m redevelopment is a spectacular nod to the region and all it has to offer, and will impress even the most discerning traveller. There is much to unpack here, but we’re going to skip straight to our favourite part which involves, yes you guessed it –LocalF.O.O.D.providores and produce will take centre stage, providing travellers with a curated selection of the thriving GC and Northern NSW food scene. Our epic local coffee, distillers, brewers, and fresh produce will be celebrated and not to sound up ourselves, but no-one does it better.Bymid-next year, we’ll see 18 new food and bev and retail outlets, with cafes and eateries headed up by the man, the myth, the legend: the incredible Chef Matt Jefferson. Matt is of course the Executive Chef at Broadbeach’s iconic Social Eating House, and you just know that anything he puts his hand…or hat to (he has plenty of those #awardwinner), is going to be first class all the way. Those leaving the GC will be tempted to do a runner away from the runway, as they gaze out to the spectacular vista of the Gold Coast and Northern NSW hinterland and the airside operations through double-height, floor-toceiling windows in the departure lounge.

Possibly the most exciting of all, however, is the introduction of flagship new cafe and bar, Wollumbin, named after the Yugambeh First Nation name for nearby Mount Warning. It will serve up a variety of contemporary Australian and international dishes, as well as local beverages and folks, does it look the part! The ultra-modern blonde wood-infused design is just, wow, and packs a punch with its multi-dimensional effect roofing. I mean it’s screaming #InstaMe. While we’re talking looks, the entire Gold Coast Airport upgrade is aesthetically on point. Upon arrival, visitors will be greeted by a naturally lit hall with soaring 11-metre ceilings.

A timber feature wall including the locally abundant spotted gum mimics the mountain range view, and the interior design reflects the picture-perfect setting. To the east are the coastal blues and mint greens of the Pacific

SCAN ME Ocean, while to the west are the grey-greens and bronzes of the World Heritage hinterland.

We all know bigger is better when it comes to airports and the terminal expansion will double the capacity for both domestic and international flights. In line with this, travel infrastructure has been upgraded, with the addition of four glass aerobridges and new baggage claim areas, a bigger bang duty-free store, parents’ room, multifaith room and a totes boujee VIP room *dons sunglasses and pretends to be famous.

Caramel is also a joy to make – the slow bubble, sweet aroma and gradual change in colour and thickness as gentle heat and constant stirring works its magic on staples of butter, sugar and cream. As with fashion, food can follow trends; wax and wane; come and go. However I’m pretty confident the salted caramel will be a regular on my flavour card. It is somehow classic and contemporary. It’s delicious and literally oozes decadence. It’s also familiar and comforting. What’s not to love?

EVENT: Mayoress Ball LOCATION: The Star Gold Coast Corporate and social notables attended the sold-out Gold Coast Mayoress Charity Foundation Gala Ball. Guests mixed and mingled prior to the swish event kicking off in the Gala Ballroom. A three-course dinner, chilled beverages and a host of roving entertainers ensured that the ‘Neon Garden’ event was a big hit. Headline performer Tim Campbell certainly impressed as he belted out some classic songs and many very merry guests partied into the wee hours of the morning.
