exico started with viticulture in 1521, however, the boom and excellence of our products began just a decade ago. Today, our Mexican wines are recognized worldwide.

Especially, these three which are our favorites, because, in addition to having received international awards and captivating the palates of the whole world, they have won ours as well. Enjoy them!

Nose It reminds us of fruits like apricot, yellow apple, almonds, raisins, pineapple, in addition to presenting the subtlety of wood evoking honey and vanilla. Palate Enveloping presence due to its acidity, offering a broad finish in dried fruits and spices thanks to its been aged in barrels. A PLEASANT RITE IS NOW FASHIONABLE IN MEXICO Letting themselves be carried away by their senses, hundreds of men and women practice wine tasting with the guidance of a specialist who indicates, step by step, how to follow this ceremony.

L

earning to taste wine has aroused a furor in Mexicans, who pay to be a part of a world of colors, flavors, and aromas that is increasingly having more and more followers. The tasting classes have been a success in previous years and are still continuing strong this 2018. Like the wines, the reasons that explain this fashion are extremely varied. But there is something we can

all agree on: wine tasting is an activity that gives pleasure. It is a moment of de-stressing, in which good customs are worshipped. People also seek to expand their knowledge because the pleasure of drinking wine increases when you start knowing more about it. its nuances and its notes of fresh red fruits with dried plums and chocolate. By learning more, it is easier to detect their soft tannins that feel delicate in the mouth, along with an interesting bouquet. And even with practice it becomes easy to identify why a particular wine is paired with different kinds of red meats and delicate cheeses.

The Valley is surrounded by a copper-colored mountain range, which protects the varieties of grapes that produce wines such as Gran Ricardo, the first ultra-premium Mexican vintage, Calixa Syrah, and an exquisite Cabernet Sauvignon. Those who do not approach this hedonistic world for the pleasure of wine or tourism, do so for their own health: scientists say that drinking wine, in a moderate way, is good for your health. It is proven that wine has antioxidant substances that reduce the risk of cardiovascular diseases. Therefore, if we face the dilemma

of taking daily a capsule of resveratrol or having a good glass of red wine, the scale will be leaning towards wine, especially when it comes to Ensemble de La SantĂ­sima Trinidad, a tribute to the wine tradition of Dolores Hidalgo, in Guanajuato. The Tempranillo, Merlot, and Cabernet Sauvignon grapes that are sown in some parts of their 40 hectares remind us of the violet tones of the lavender fields that flood the atmosphere with their aromas. In addition to its benefits, this wine tastes delicious and invites you to share a conversation with close friends. The best way to start is with a good glass of wine: the rite of tasting is only the prelude to an exciting new world. CELEBRITY CHEFS Learn why the chef and restaurateur Enrique Silva is still a mainstay in the Baja culinary world.

H

is authentic and creative menus with only high-quality ingredients have helped chef Enrique Silva to stand out from his many competitors in Los Cabos, Baja California.

devotees of fresh, locally sourced foods. It is not only a restaurant but also a cooking school, and it provides organic products to some of the upscale resort properties in the area.

Born in the Mexican town of Navojoa, Sonora, he began working in the hospitality industry after graduating from Agricultural Engineering and upon realizing his love affair with fresh herbs and produce. Silva was a pioneer who traveled to the Los Cabos region of Baja more than 20 years ago in search of new opportunities. There, he was mentored by master chef Larry Nicola at Hotel Palmilla (now OneandOnly Palmilla).

Since 2013, Silva has been a consultant for the luxury resort Diamante Cabo San Lucas, where he is helping develop their own crops of organic herbs, vegetables, and 40 different varieties of fruit.

Today, he is the co-owner of Tequila restaurant and owner of Los Tamarindos, one of only two USDAcertified organic farms in the area where he has welcomed a stream of

Silva’s expertise and flair has been noted in several major media outlets, including the San Francisco Chronicle, Conde Nast Traveler, Chicago Tribune, The Los Angeles Times, Bon Appetit, and famed chef Rick Bayless’ television show “Mexico One Plate at a Time”. With a career like this, we couldn’t help but ask him to tell us more about his greatest passion.

What personality traits do you need to be a chef? One of the most important things is to act as and be a leader. . What is the basis of all-good cooking? That one is simple: common sense. Which is the gastronomic concept of Los Tamarindos? 100% organic farm-to-table concept. The imagination of our chefs will never bore you. In Los Tamarindos you will always find different and delicious dishes, local and organic ingredients, and a friendly staff..

Which dishes would be the most representative of your restaurant? Everything is delicious, but I am sure you will definitely enjoy our baked tomato soup; the creole tomato salad with curd cheese; our tender octopus grilled over burning wood and served on a bed of arugula; or chicken with fine herbs, roasted in a wood-fire oven accompanied by barley and yellow beets.

What is your touch? What have you contributed to Los Cabos? The use of fresh and innovative products using ancestral cooking techniques such as the wood oven. Certainly, I introduced to Los Cabos the concept of farm to table and gastronomic innovation.

What is your vision of the current Mexican gastronomy and which trends do you consider will be the future? I believe Mexican cuisine will continue discovering those native ingredients that will create innovative dishes with regional roots. Which are your favorite restaurants? Kuuk in MĂŠrida, Seared by Jean George in Los Cabos, and La Docena in Guadalajara. What ingredient is never missing in your home kitchen? Olive oil with aromatic herbs. Do you consider cooking to be an art, science, both, or none? I believe it is an art which is fused with common sense, if you can connect your nose with your mouth and memory, this is the key.

THE MOST PECULIAR MEXICAN FOOD & DRINKS There is much more to taste in Mexico than tequila and tacos al pastor, get to know the incredible variety we have to offer.

T

o talk about Mexico is to talk about tequila, however, there are so many more beverages to discover in the country, that if we were to talk about all of them we wouldn’t be able to finish.

Additionally, if you have tried Mexican food you wouldn’t be surprised to know that UNESCO has named our cuisine an Intangible Cultural Heritage of Humanity. Respect for our traditions has made it stand out in the


gastronomy world, besides telling our story with spectacular flavors and aromas. Before the arrival of the Spaniards, the pre-Hispanic diet was based on corn, chili, herbs, beans, tomatoes and cactus. With the arrival of the conquerors, many grains and spices merged with the culture becoming

part of the indigenous cuisine, emerging dishes and recipes that today continue to delight palates worldwide. Here are the most exotic Mexican foods and drinks that, according to our editorial team, you can’t miss and must try!

Huitlacoche (corn smut) If you’re a vegetarian, this corn fungus will be a delicacy for you. Considered ambrosia, this distant relative of mushrooms is known as the “Mexican truffle” in France, the United States, and in Germany. We can find it made into soups or sauces, although its most common presentation is in quesadillas, ask for them served in a blue tortilla!

Escamoles (larvae of ants) Colloquially called “the Mexican caviar”, these black ant larvae have been highly appreciated since pre-Hispanic times, when they were part of the inhabitant food of Mesoamerica. Today, the process of obtaining escamoles is so complicated that few restaurants offer this gourmet product, and those that do have exorbitant prices. Its flavor is so subtle that it does not need more than a little butter, onion and epazote plant to achieve a dish with great flavor. Its season starts between March and April.

Grasshoppers Nowadays they are considered a type of exotic snack that usually accompanies mezcal, however, the FAO foresees that by the year 2050 this gourmet insect will be able to fight world hunger, since its great nutritional importance contributes a protein value superior to that of animal meat. This food of the future has a crunchy texture and many assure that it is a delicacy of incomparable flavor. We recommend you to try them in a taco accompanied by cheese and a touch of guacamole.

gastronomy Maguey worms The dish fit for a king par excellence. It is the most prestigious bug that has reached the world gastronomic level. Even when its consumption seems to be reserved only for kings, because of its high price. This butterfly larva feeds on the maguey leaves, main rib, and its roots, so it is very common to find it inside mezcal bottles. In various restaurants we can find them as a snack or as a main dish. They are usually roasted or fried. Try them in a taco with a lot of guacamole!

Pulque A drink whose origin also dates from the pre-Hispanic era, used to be drunk only by people over 52 and on special occasions. It is a white drink with a thick and slimy texture made by extracting the mead, done by scraping the sweet juice that is concentrated in the heart of the maguey with a kind of spoon called acocote. Afterwards, it must go through a fermentation process. Try it in its “cured� version, which is the mixture of pulque with some fruit, nuts or chocolate and sweetened with sugar or honey.

Tepache Made with fermented pineapple and cane sugar, this is one of the coolest and most popular drinks in Mexico, perfect for summer nights. Its preparation requires four days in which pieces of pineapple, pulp and peel are left to rest in a clay container. It is spiced with cloves and cinnamon and sweetened with unrefined brown sugar cone (piloncillo). Let yourself be surprised by its refreshing and penetrating flavor.

gastronomy Horchata It is very unlikely that you have visited Mexico and that you haven’t tried this sweet and milky drink made from rice, cinnamon and vanilla. You can find it in any restaurant and even in the main squares. Horchata is absolutely essential in the daily life of a Mexican. Try other flavors of popular fresh waters such as Jamaica (hibiscus) or tamarind.

Atole Hot, creamy and perfect for an icy morning. It is the soulmate of the tamale and it dates from pre-Hispanic times. It is another alternative to coffee or tea because, although it provides many calories, it also fills you with energy. In pre-Hispanic times, it was made only with corn dough, but today we prepare it with a special type of corn flour or even in ready-to-drink satchels. The real atole is sweetened with unrefined brown sugar in a cone (piloncillo), but you can also find it with sugar or honey.

Rompope Just by mentioning it, memories of my childhood come back to mind. It is true that it has a touch of alcohol, but in Mexico, when you are a child, it is the only thing your parents let you drink that made you feel like an adult. It is made with egg yolks, vanilla, cinnamon, moonshine, milk and sugar, and is exactly as you imagine it: delicious, creamy and with a slight touch of alcohol. Nuns in the convents have been the experts of the preparation of this drink since the year 1600.

SAFETY TRAVELING Insurance tips that you should not forget before traveling

hen you decide to go on a trip, you try to take care of each and every one of the aspects necessary to enjoy a wonderful vacation, you consider itineraries, time and budgets; within these, you must always remember the health factor, because an unforeseen event can change the course of your stay away from home. To be forewarned, we often resort to insurance policies.

Sometimes your vacation does not go as planned and the insurance that you have purchased is your only way out. The matter itself is that given the nature of the service referred to, it often happens that it is acquired almost without knowing its characteristics, until the moment when it is definitely required, so Hospiten Puerto Vallarta gives you some tips that are very important when purchasing this type of service:

hanks to our very talented professionals, Mexico City was announced as the World Design Capital 2018. It is the first city in Latin America to receive this distinction from the World Design Organization, and we couldn’t be prouder.

Mexico City has demonstrated a passion and enthusiasm for design. It is blending old and new in innovative health, communications, and security programs, a bike sharing program, urban gardens, as well as, parks and playgrounds. And it’s thanks to our talented and awarded designers, such as Joel Escalona, that this year we will serve as a model for other megacities around the world. Born in Mexico City, Joel Escalona is a young entrepreneur who has captivated the international scene with his contemporary designs made of clean and simple lines. After graduating as an Industrial Designer he has created original furniture, home décor,

and accent pieces. He is a founding member of Cooperativa Panorámica and creative director of the contemporary furniture brand Nono. His cutting-edge creations with unusual structures are a clear projection of his playful and humorous personality. His work has been exhibited in major design capitals of the world such as New York, Paris, Milan, and of course Mexico City. Among many awards, he recently won First Place in the IX National Design Biennial 2017 -one of the most prestigious awards in Mexico- with the piece Dalia for BD Barcelona. As if this were not enough, his designs have been included in several exhibitions as well as retrospectives of Mexican design in locations such as the Museum of Modern Art in Mexico, the Franz Mayer Museum, and the National Palace of Fine Arts. Escalona’s work has also appeared in the most prestigious design publications and books worldwide, generating significant editorial value for his clients, projects, and collaborators. He was introduced as one of “the new wave of young designers to watch for in the world” by Wallpaper magazine, selected as one of the “50 Emergent Talents of the Americas” by Arquine magazine, and published in GQ’s extraordinary young people feature. THE WORLD’S LARGEST UNDERWATER CAVE The underwater exploration team of the Great Maya Aquifer, finally connected two of the largest flooded cave systems in the world, and documented a 220-mile portentous cave located near Tulum.

O

ne of the most amazing natural attractions that the Riviera Maya has to offer is its pristine “cenotes”, natural swimming holes formed by the collapse of porous limestone bedrock, which has revealed a secret subterranean world of flooded caves. Robert Schmittner, the exploration director of the Great Maya Aquifer project has been looking for this connection for 14 years. Year after year, his hard work has added new tunnels and galleries to this underwater labyrinth. After 10 months of intense work, his team of cave divers managed to achieve the connection of two of the world’s largest flooded cave systems known as Sac Actun and Dos Ojos, both located in Tulum, Quintana Roo. “Traveling hundreds of kilometers among caves mainly submerged in Quintana Roo, it has been an effort of more than 20 years, of which I have dedicated 14 of these to explore this monstrous Sac Actun system; now, everyone’s job is to conserve it,” said Schmittner.

These hundreds of kilometers of underground passages have become true tunnels from time and, among other things, they protect the remote and recent history of the state of Quintana Roo. Guillermo de Anda, a researcher at the National Institute of Anthropology and History (INAH) and Director of the Great Maya Aquifer Project believes that this immense cave represents the most important submerged archaeological site in the world, as it has more than a hundred archaeological contexts. “Along this system, we have documented evidence of the first settlers of America, as well as extinct fauna and, of course, the Mayan culture.” says de Anda. This finding is also very valuable because this system supports a great biodiversity that lives thanks to this huge reservoir of fresh water.

Champions Tour 2018 For three years in a row, Mexico has had the honor of opening this competition.

O

nce again, Mexico, the only venue in Latin America, had the privilege of being the host city of the 2018 season first round. Campo Marte served as the Longines Champions Tour venue in Mexico City. This place hosted Olympic Games dressage and individual jumping events in 1968. 50 years later, the top riders and horses in the world competed on the same stage to lay down an early gauntlet for the 2018 Champion of Champions title. The attendees enjoyed a wide area of entertainment where adults and children lived an unforgettable experience while enjoying the equestrian contest. Equestrian products, fashion, jewelry, handmade hats, sunglasses, riding accessories, Mexican handicrafts, and much more, were offered by several display stands.
