Bourdain’s swan song Anthony Bourdain’s stories of food and travel continue to delight with the beloved writer’s first posthumous book release. Bourdain started work on World Travel: An Irreverent Guide in 2018 and it was completed by Laurie Woolever, his co-author and longtime assistant. Released on April 20, it’s an illustrated collection of Bourdain’s favourite places to visit and dine with travel tips and restaurant recommendations, along with personal essays from those who knew him well.

No wonder Santa Claus calls it home: Finland is still the happiest country in the world, according to the United Nations’ justreleased World Happiness Report. There must be something about the Nordic countries – Finland took out first place for the fourth consecutive year, with Iceland and Denmark in second and third.

JENOLAN CAVES

Near the pretty town of Oberon, about three hours’ drive from Sydney, the exquisite Jenolan system offers numerous ways to explore its caves, including day, night and app-guided Aboriginal culture tours. You can explore the Temple of Baal Cave and its incredible 9m-high Angel’s Wing cave shawl; the humbling Cathedral Chamber in Lucas Cave; the dainty spar crystals in Chifley Cave, and the ancient underground river in Imperial Cave — ideal for the less mobile.

Take a self-guided tour of the sublime, beautifully lit Fig Tree Cave at the Wombeyan Karst Conservation Reserve in the Southern Highlands, a three-hour drive southwest of Sydney. Other tours include guided adventures through Wollondilly Cave and Junction Cave, both replete with impressive formations and imposing columns. Back on the surface, the Wombeyan Waterfall Walking Track has lyrebirds and wallabies, panoramic lookouts and a limestone-gorge swimming hole.

In northern Kosciuszko National Park, Yarrangobilly Caves is about seven hours’ drive southwest from Sydney, and worth every kilometre. South Glory, the largest of six exhilarating caves, has self-guided tours of its cavernous chambers, while Jillabenan Cave, the smallest, is the most accessible and is filled with fine, colourful formations. Above ground, it takes about an hour to complete the loop of the Yarrangobilly River Walk — or longer, depending on how much time you spend in the thermal pool.

An area painted by grevilleas and wattles, the Abercrombie Karst Conservation Reserve is in the Bathurst area of country NSW, about four hours’ drive west of Sydney. Take a selfguided tour of Archway Cave, home to enormous colourful formations, a giant natural arch and the gold miners’ dance platform, built in 1880 and still used today. Thrill-seekers might prefer the Belfry Cave guided tour, accessible only by a suspension bridge and ladders or narrow passageways. Finish your day with a refreshing swim at Grove Creek Falls on the Mount Gray Walking Track.

Five hours by road from Sydney, Wellington Caves has daily guided tours of its two show caves, the Cathedral and Gaden caves, featuring 15m-tall crystal formations and complex cave corals. Enroute to Coleraine, take in the spectacular views of Wannon Falls from the viewing platform and Nigretta Falls, perfect for swimming, fishing, picnics and barbeques. Sample handmade chocolates at Glenelg Fine Confectionery on the main street and then take a wander along the paths of the official Eucalyptus Collection of Australia, at the Peter Francis Points Arboretum, with over 12,000 native plants. Continue on to Cavendish and take a break at the Bunyip Hotel Cavendish, serving up delicious meals using locally grown produce in a true country pub setting. Following your feed, end the day with the most spectacular views of the Grampians as you pass through the Mirranatwa Gap.

Darwin to Litchfield National Park

With its refreshing swimming spots, picturesque waterfalls and leisurely walks, Litchfield National Park is a popular getaway for a day or weekend. A 90-minute drive from Darwin, check out Berry Springs, another beautiful swimming hole and Batchelor, the gateway to Litchfield, along the way. At Wangi Falls there’s spacious lawns, barbecues and a café. NT Air operates helicopter flights over the region from here. Also, splash around in Florence Falls and Buley Rockhole, and be dwarfed by the huge cathedral and magnetic termite mounds inside the park.

Dundee Beach and Crab Claw Island Further along Cox Peninsula Road, on the other side of Darwin’s expansive harbour, discover Crab Claw Island, Dundee Beach and quiet rivers, perfect for catching that prized barramundi. Darwin to Kakadu National Park World Heritage Listed Kakadu National Park is high on everyone’s list and not a place to be rushed. A straight threehour drive on the Arnhem Highway, tours offer day trips but when you’re driving it’s the ideal three or four-day getaway with much to see and do. Stop at Humpty Doo Pub, Fogg Dam, Window on the Wetlands, and take an Adelaide River Jumping Crocodile cruise or Corroboree Billabong wetland cruise on the way to Jabiru. Learn about Arnhem Land Aboriginal culture, walk on their land and eyeball many a crocodile on a Guluyambi Cultural Cruise on East Alligator River. Walk around the Ubirr rock art site, view the vast Nabad floodplain and stay overnight, either camping or in accommodation at Jabiru. Stroll through the rock shelters and extensive rock art sites at Burrungkuy (Nourlangie). Chill in the hidden waterholes at Maguk, Gunlom (where Paul and Linda frolicked in Crocodile Dundee) or Jim Jim Falls. Birdwatch at Murrill Billabong and immerse yourself in the culture of Kakadu’s traditional owners, the Bininj/Mungguy people at Warradjan Cultural Centre. Stay at Cooinda Lodge Kakadu after enjoying a sunset cruise with wine and canapes on Yellow Water Billabong. If you have more time, continue to Katherine on Nature’s Way loop. Visit Nitmiluk (Katherine) Gorge in Nitmiluk National Park. Cruise or canoe these peaceful waters between towering orange cliffs. Along the Stuart Highway back to Darwin check out the old gold mining town of Pine Creek, Adelaide River and its war cemetery and relax in refreshing waterways at Litchfield National Park or Berry Springs.

3-4 DAY ROAD TRIPS

Darwin to Katherine The NT’s fourth-largest town Katherine is an easy three-hour drive from Darwin on the Stuart Highway and another ideal three to four-day break. There’s something adventurous or relaxing around every corner. Swim at Katherine Hot Springs, Low Level Nature Park, and Leliyn (Edith Falls), venture underground at Cutta Cutta and Kintore Caves, and canoe, cruise or walk the trails at Nitmiluk (Katherine) Gorge. An hour further south, spend time at idyllic thermal springs in Elsey National Park. Cultural experiences around town include Top Didj, with hands-on Rarrk painting, fire lighting and spear throwing, or learn about station life and pat some animals at Katherine Outback Experience. The food doesn’t disappoint either. Must-tries are the massive fresh toasted sandwich at Black Russian Caravan Bar, Pop Rocket Café’s famous salmon stack, a fine dining dinner on the Nabilil Dreaming sunset cruise along Nitmiluk (Katherine) Gorge, or a traditional camp oven meal under the stars at Marksie’s Stockman’s Camp Tucker. Make time to stop at Pine Creek and Adelaide River on the way down or back and discover their respective gold mining and WWII history.

Choose this short four-day drive from Alice Springs that takes you into Australia’s spiritual and physical heart. Hidden amongst the towering red rock gorges of the MacDonnell Ranges are restorative swimming holes, striking landscapes and many mind-clearing short walking trails to share with the friendly wildlife. This area is also home to the 223km Larapinta Trail from Alice Springs to Mt Sonder. It’s divided into 12 sections; if you’re a keen walker, pick one to appreciate the picturesque surroundings. Alice Springs is making a name for itself with its hip cafes, markets and Aboriginal art centres and galleries. See the unique wildlife at the Desert Park. Overlook the town from Anzac Hill or take a hot air balloon flight overlooking the MacDonnell Ranges. See Simpson’s Gap and Standley Chasm. Splash around in Ellery Creek, Glen Helen, Ormiston and Redbank Gorges – all have walking trails and camping nearby, and your only neighbours are beautiful birds, curious lizards and marsupials. Take the loop back via Hermannsburg, home of renowned Aboriginal artist Albert Namatjira. Visit this historic settlement and sample their flavoursome apple strudel.

It’s safe to call Daydream Island the ultimate comeback island. Daydream Island reopened its doors in January 2019 after ex-tropical cyclone Debbie flattened the resort in 2017. The team set to work rebuilding a completely new resort experience. Following a $100-million renovation, it’s every bit as good as the original – bringing the best elements of the former resort (Living Reef) into the new design. On the accommodation front, there are 277 rooms to choose from, catering for everyone from loved-up couples to families needing interconnecting rooms and suites. Most guests don’t end up spending much time inside though, with a pool (complete with swim-up bar and burger cafe) that winds through the resort, The Living Reef which is a freeform coral lagoon, and Daydream’s three new restaurants on site. Getting there is easy with Cruise Whitsundays operating a 30-minute ferry transfer to Daydream from Hamilton Island and 30-minute ferry from the mainland.

Langford Island Langford Island might have been put on the map in Lara Bingle’s “Where the bloody hell are you?” tourism campaign, but day trippers prove this island in the Whitsundays passage is worth a permanent spot on the map. You’ll want to bring a tide guide with you, as parts of this island dip below the waterline in high tide. When you’re not exploring its short, 300m walk through the native vegetation, take a dip in the Whitsundays’ world-famous turquoise waters that surround this island. If you’re here during the warmer months, a stinger suit is recommended if you’re planning a dip around any of the islands.

Hook Island You’ll feel a bit like Captain Hook if you anchor your own boat at Hook Island – this island is one for the adventurers. Hook Island is the home of Nara Inlet as well as the Ngaro Aboriginal cultural site, which celebrates the original

custodians of the Whitsundays land. You’ll find interactive displays set in ancient caves, and rock wall paintings that share a 9000-year-old history of the Ngaro people. Unless you plan to stay the night on your own boat, it’s camping-only on this island. You’ll find the campsite on the eastern side of the island, accessible at mid to high tide and in a shallow watercraft. What Hook Island might lack in accessibility, it makes up for in uninterrupted views, looking out over Crayfish Beach. Did we mention a maximum of 12 people only are able to camp at any one time here? Yes, really.

This is the ideal time to embrace a crackling fire, mulled wine and heartening meals and in Australia, you’ll find stacks of idyllic cold-weather destinations to do just that. If you’d prefer to seek refuge in the tropics, the good news is that Australia is teeming with hot spots in the northern reaches of this beautiful, varied country where you can get a drenching of sun, not rain.

Baby, it’s cold outside For a city break, Melbourne shines in the winter months, whether it’s with a heaving footy crowd at the MCG or a stroll through the cosmopolitan city’s laneways. Pop into one of the many world-class museums and galleries, like the National Gallery of Victoria or the Melbourne Museum. It’s cold but it’s not that cold – the average Melbourne winter ranges from 6.5–14.2 degrees (celsius), compared to just above freezing in a Copenhagen winter. If you’d prefer to leave the hustle and bustle of the city behind, head for a nature-filled retreat in the countryside, like the Grampians National Park, a three-hour drive west of Melbourne. The Silo Art Trail, Australia’s largest outdoor gallery stretching over 200 km, is a must-do on the way. The Great Southern Touring Route is another scenic way to reach the Grampians, following the Great Ocean Road, passing by the Shipwreck Coast and into the Grampians (it then continues on to Ballarat). It’s a great time of year to hit the famed hiking tracks around here and the waterfalls are flowing, like MacKenzie Falls in the northern part of the Grampians. Head to the summit at Reeds Lookout for a stunning sunset, with enough time left in the evening to get back and enjoy staying toasty in front of a log fire at your accommodation. Already a prized cold weather destination, Tasmania boasts a rugged, unspoilt beauty that’s positively enchanting in the winter months. For a

truly secluded getaway, it’s hard to beat Satellite Island – an entire private island on the most southern state’s southern coast. Bird watch, explore the island’s walking tracks, take a kayak out and shuck your own wild oysters. Food and wine Time to sniff out a black diamond: the start of winter marks truffle season, whether it’s the thrill of a truffle hunt in Margaret River, or sampling truffle-infused creations at Canberra’s annual Truffle Festival. of the winery’s most precious drops. Make things easy for yourself and get around the region on the Barossa Valley hop on, hop off bus. Cycling is another popular form of tourist transport around here. Good wine goes hand in hand with good food, so take time for a long lunch at Seppetsfield’s FINO or Appellation at The Louise. Pay a visit to the Maggie Beer Farm Shop and hit up the Barossa Farmers Market every Saturday in Angaston for local, seasonal produce – even locally-produced gin! Where the wild things are Australians are spoilt for choice when it comes to whale watching, with more than 60 per cent of the world’s whale population found in our waters over winter. In Queensland, whale spotting in the protected waters of the Whitsunday Islands is common from June onwards. Hervey Bay and Fraser Island’s whale-watching season starts around July and finishes up by November (dolphins are around, too!). South Australia boasts several great spots each winter to see the migration of southern right whales, including Kangaroo Island and the seaside town of Victor Harbor, an hour south

of Adelaide. These distinctive whales can come close to shore as early as mid-May. At the Eyre Peninsula, a local guide will kayak with you around the bay, next to these gentle giants. In Victoria, the best viewing ops are around Warrnambool, Portland and Phillip Island. Western Australia’s whale watching season begins in about May and runs to September, as pods of humpbacks and southern right whales head north from Antarctica. You might even spot blue whales. If you’re coming from Perth, a prime viewing spot a few hours south of the city is Flinders Bay in Augusta – southern right whales come here to calve. Head up the Coral Coast to Exmouth (a 90-minute flight from Perth), at the northern end of the Ningaloo Coast World Heritage Area, to swim with humpback whales and whale sharks, the largest fish in the world. Ningaloo Reef, a fringing reef system that’s only metres from the shore in some areas, is home to a staggering number of marine wonders. Swimming with manta rays is another popular pursuit; year-round in Coral Bay, and with the highest numbers of these graceful creatures in Exmouth between May and November. It’s impossible to picture a marine paradise without mentioning the Great Barrier Reef; and in fact, two other hot spots for manta rays are Lady Elliot Island and North Stradbroke Island, on the southern end of the reef. Manta rays are particularly prevalent in winter months. The Great Barrier Reef is the only place in the world where you can also swim with dwarf minke whales each

winter, in the tropical north. Not just for the Arctic wilderness or Alaskan backwoods, there are dog sled adventure tours in various alpine settings down south. Ride through the snow-dusted countryside as gorgeous Alaskan and Siberian huskies faithfully pull sleds on Mt. Baw Baw, Mt. Buller, Hotham and Dinner Plain during snow season. For more encounters of the furry kind, pop into Mt Baw Baw’s Dingo Resource Centre to cuddle the resident dingoes or take one for a walk. At Phillip Island, you can see little penguins returning home at sunset to the largest penguin colony in the country. Powdery fresh A day on the slopes awaits! Australia’s tallest mountain, Kosciuszko (New South Wales) is home to Perisher and Thredbo. Falls Creek is Victoria’s biggest alpine resort whereas Mount Hotham, known as the country’s ‘powder capital’ and boasting the highest proportion of black runs in the country, attracts seasoned skiers. A Japanese-inspired outdoor onsen experience at nearby Dinner Plain can round out the apres-ski experience nicely. Get away somewhere warm The cold months in the southern parts of Australia actually mean it's dry season in the Top End and Red Centre – the perfect place to thaw out. At Uluru, the searing heat of summer is gone and there are fewer insects, which makes for a pleasant walk around the base. Stargaze in the outback: although nights are cold, it’s worth it for that clear desert sky. The days are still lovely to hike in Litchfield National Park and splash in Kakadu’s swimming holes, and it’s easier to get to all the famous waterfalls too, like Jim Jim Falls and Twin Falls. he glamorous beachside town of Barcelona versus the cultural capital of Madrid. Excellent architecture, culture and cuisine – not to mention weather – have made visiting these Spanish cities high on many people’s bucket lists but which one would win when it comes to a head-to-head?

The Baroque royal palaces, the neoclassical museums, strolling through the tree-lined boulevards or the quaint narrow backstreets of Madrid is a marvel for the eyes. Barcelona, however, is an architectural dream. Baroque, Gothic, and early 20th-century modernist architecture all seamlessly merge together to create a unique architectural experience hard to beat. Antoni Gaudi was responsible for many of Barcelona’s most famous landmarks including the Gothic-inspired Sagrada Familia, Casa Milà and Park Güell. His name is still synonymous with the city. Winner: As home to one of the world’s most eccentric and well-loved architects, the prize has to go to Barcelona.

ART AND MUSEUMS Madrid is jam packed with art museums where the old masters such as Goya and Titian are hung alongside more modern art icons such as Picasso and Dali. But pop into one of the city's excellent galleries such as Travesía Cuatro to discover some emerging talent, or Juana de Aizpuru for some contemporary photography. The Picasso Museum, the Joan Miro Foundation and Gaudi’s Casa Mila Museum in Barcelona combined with the Barcelona Museum of Contemporary Art will certainly keep an art lover busy for a few days, too. Boutique hotels abound in Madrid and many museums are open for free on certain nights of the week. Winner: Hands down, Madrid offers better value for money every time.

FOOD Barcelona has some fantastic fine dining restaurants. Get a seat at the bar at Cañete and sample fresh octopus and fried fish tapas while enjoying a fine Rioja. is far more local and certainly more authentic. You can graze on tapas at one of the many markets, pop into one of literally thousands of street side tapas restaurants, or for something a little fancier, get a table at one of the romantic establishments that serve a variety of home-style or classical dishes. One of our favourites is Café Comercial, where you should make sure to share the whole monkfish. Winner: When it comes to two such foodie cities it’s hard to pick a winner but Madrid’s cuisine is a touch more authentic and it’s easier to avoid the tourist traps and meal deal offers.

serving often better quality food at a fraction of the price compared to Barcelona. Madrid has some excellent day trips for those looking to venture outside of the city. Consuegra has been famous for its windmills since the 16th century. Cervantes fans will note that this is where the knight from Don Quixote battles with the windmills he mistook for giants. Winner: Barcelona – you can’t beat a downtown beach.

SHOPPING Barcelona’s Las Ramblas is one of Europe’s most famous shopping streets. At one end, street hawkers mix with small stall holders to sell tourists hats and tat and gradually it becomes more upmarket, ending with luxury retail outlets and fashion stores. Much of Madrid’s charm are its distinct neighbourhoods, often situated around a market square. Whether it’s vintage clothing, boutique stores, antique hunting or simply stocking up on essentials there really is something for everyone. Winner: The touts that flood the streets of Barcelona are no competition for the unique markets of Madrid.

Calling Barcelona’s nightlife scene vibrant is an understatement. Like most places in Spain, it doesn’t normally get going before midnight and rarely dies down before dawn. Bars off Las Ramblas are often packed with stag and hen parties and can get rowdy, El Born and the Gothic Quarter are the areas to find stylish cocktail bars like Milk Bar & Bistro, while hipsters hang out in the Raval district. Barcelona also has some of the country’s best music festivals including Primavera Sound and Sónar Festival. Winner: It's a really tough one but Madrid just pips Barcelona due to its lack of stag parties and more varied and authentic options.

NIGHTLIFE AND ACTIVITIES Although not large, Madrid is divided up into different areas, often around a square. Wandering at night through different areas is like bouncing between eras, places and cultures. Poetry reading hipsters can be found in hidden drinking dens in Lavapiés; trendy bars and nightclubs dominate the Centro district and the alternative scene is blossoming in Malasaña. Q Your blog is packed with beautiful photos of food and travel – when did your website begin? Thank you! I started my blog back in 2011 when I lived in London as a way to document my travels and reviews of my favourite restaurants. I’ve always loved writing and it was a perfect way to document my adventures instead of keeping a journal. And yes, I have always been obsessed with food, whether it be eating it, cooking it or writing about it. Q What’s been your favourite dining experience? Locally in Victoria, Brae. My partner and I celebrated our anniversary here a few years ago and it holds a special place in my heart. The restaurant is a country cottage which is set on a hillside in Birregurra. Owner Dan Hunter is an absolute genius when it comes to food INSPIRED TO VISIT and has a sense of obsession about it; he VICTORIA? is amazing to watch in the kitchen. The Check out our set menus are constantly evolving and tours here much of the food is sourced from their own organic farm. There’s also eco-friendly accommodation on site which is gorgeous and super convenient since you don’t have to think about driving home. Q What’s been your most underrated travel destination? Norway. is from there but it is truly the most beautiful country in the world. The real beauty of Norway is in its nature and wilderness so you really need to get out of the bigger cities like Oslo and explore the smaller towns off the beaten path. Although it has become increasingly popular in recent years, the Lofoten Islands is an absolute dream. Although it’s a bit difficult to get to, the archipelago is stunning and home to the most majestic mountains and white sand beaches. I visited two years ago to see the midnight sun but can’t wait to get back to see the Northern Lights. Q What’s the next big holiday you’re dreaming of? This year I would love to hire a heavy duty 4WD and do the Kimberley Trail from Broome to Darwin. Overseas, I am dreaming of Iceland, it looks out of this world. Q You’re a keen home cook. Which chefs influence and inspire your culinary efforts and why? I love cooking simple homemade food, nothing too fussy or complicated. Lately I have been cooking a lot more plant-based dishes. I discovered Yotam Ottolenghi and his restaurants while living in London. I love how he heroes the vegetable in his cooking and his flair for colour and flavour through his Middle Eastern-inspired recipes. I also love Nigella Lawson and her desserts. She doesn’t compromise for flavour in her comfort food, even if it is a bit naughty! Q Can you share some of your ‘secret’ Melbourne haunts for first time visitors? For secret bars check out Bar Americano in Presgrave Place, a tiny bar which can only fit ten people standing room only.
