his hurricane season, the forecast for South Florida is buckets of beer, plenty of cocktails, bar food, karaoke, parties and more. Forget stocking up on water and canned goods! Throw out your flashlights and candles! Don’t wait in line for hours at the gas stations! Why sit around bored in a dark house when you can grab a seat with your friends at one of your local bars or restaurants. South Florida bars, nightclubs and restaurants will be powering up the generators and ordering up food, drinks and a side of fun while you are waiting for the storm to pass!

Before a hurricane hits and after it has left, many of the beach bars located in Fort Lauderdale near Beach Place and A1A will be having pre and post-hurricane parties to get rid of their food and drinks! Look out for special hurricane events so you can enjoy a night out without breaking your bank account! There are sure to be many discounts and fun parties. Besides having blowout parties before and after the storm, many area bars and restaurants stay open during a hurricane. The Dive Bar located at 3233 N. Ocean Blvd. in Fort Lauderdale will be open for business if a hurricane hits South Florida. They will have lights, beer, liquor and karaoke! “At The Dive Bar, we are ready for Hurricane Season. I decided to become a bartender because it’s a fun way to make good money and I love people, put the two things together and you have the perfect job. What is the most ordered drink? At my bar the most ordered drink is Rum and Coke. What is your favorite drink to make? I like to make Mojitos, they are a bit time consuming, but the customer really appreciates the time I put into making it for them. What can you share with new bartenders to make the most in tips? If you are new to bartending the most important thing to remember is to always be kind and happy with customers. They appreciate that and you will be rewarded for your kindness. here’s still a month left of summer fun and South Florida has plenty of events, parties, concerts and movies before it’s Back to School time. Be sure to check out one or more of these events before heading back to the classroom or to take a break from work this summer. Enjoy some music in the park at the Starlight Musicals Concert Series. The shows take place Fridays from 7 to 10 p.m. on the football field at Holiday Park, which is located at East Sunrise Boulevard and Federal Highway. Residents and visitors are encouraged to bring lawn chairs, picnic baskets, and coolers. On August 2nd, The Weedline, a classic rock band will be performing. Another outdoor event perfect for the summer sun is the SunTrust Sunday Jazz Brunch. The ongoing event has become a popular hangout for locals and visitors to relax and enjoy Fort Lauderdale’s scenic Riverwalk. Renewable Grease and Oil:
What Restaurants Should Know About Their Exhaust Hood Systems! By Starlet Anne Contributing Writer
T
here are a lot of key factors that go into running a successful restaurantand some may be overlooked.
Besides the obvious of maintaining good quality food and cleanliness of the establishment, restaurant owners need to be aware of this important information about exhaust hood systems. Renewable Grease and Oil can help you! Exhaust hoods are found over your cooking line, prep area and dishwashing area. All parts of your exhaust hood system (filters, duct work and fans) must be professionally pressure cleaned on a regular basis to prevent a potentially devastating fire! FILTERS: Filters are the first line of defense against contaminating vapors and vary in quality, size and material (disposable mesh 28 • ITB • August 2013
filters are NOT very effective and do not meet code requirements in most cities). Their purpose is to catch some of the grease, charcoal, etc., on its way up and out of your restaurant. A common practice is to remove these filters nightly and run them through the dishwasher. This is a great practice, especially in restaurants where the kitchen is a showpiece, however it does nothing toward removing the grease inside ducts and fans. These aluminum filters need to be professionally cleaned a minimum of every three months in most restaurants to prevent a fire hazard. EXHAUST DUCT SYSTEM: Next, vapors travel up the exhaust duct system. Typically this duct work will have one, two, or more bends. Grease, charcoal, etc. becomes trapped in the bends and stuck to the sides of this system. It also needs to be professionally pressure cleaned (down to the bare metal) a minimum of every three months in
most restaurants to prevent a fire hazard. Duct systems have strategically located cleanouts around the bends and in the long vertical areas to allow access for pressure cleaning. EXHAUST FANS: Exhaust fans are usually located on the roof of your restaurant. A few are located on the side wall. They must be hinged in order to tip them over for pressure cleaning. Your electric cord to this fan should be long enough to accommodate this process. Fan blades and housing (not the motor) need to be professionally pressure cleaned (down to the bare metal) a minimum of every three months in most restaurants to prevent a fire hazard. If not cleaned regularly, grease will accumulate on the top of your restaurant, causing serious damage to your roof. Also, fan blades laden with grease turn slower. A newly cleaned fan will operate much more efficiently. www.InTheBizMagazine.com
What to ask your Exhaust Hood Cleaning Company: 1) Do they have the proper equipment to do the job? They need a pressure cleaner that is at least 3000 psi (pounds per square inch), and HOT water. Ladders to get on your roof and long hoses to get into your duct work are also essential. 2) Do they clean all three integral parts of your system: filters, ducts, and fan? 3) What chemicals (if any) do they use? Acid based chemicals will damage your system and kitchen equipment. Non-acid based cleaners is the answer you want to hear and see. 4) Do they have Workers Comp and General Liability Insurance? They should show you proof of insurance prior to working in your restaurant. If they are not insured, the restaurant owner is liable in case of an accident. 5) Do they cover your kitchen area to protect equipment during the cleaning process? They should! 6) Check the price. Prices vary depending on the size and complexity of your system. If your system hasn’t been cleaned on a regular and timely basis, expect to pay more. Generally prices range from $300 for a small restaurant $500 and up for larger restaurants. Check after cleaning and before paying: 1) Check all three areas of your exhaust system. Go on the roof to check the fans. Pull and check the filters. Open the clean outs and check the ducts. They should “walk” you
through this process. Ask them. 2) Check to make sure a NEW “Certificate of Performance” sticker is provided. NFPA codes require this Certificate to be posted on the hood, much like the tag on your fire system. The Certificate should state the date the system was cleaned and expiration date. Health and Fire Inspectors will check for this certificate. 3) Check your kitchen area and floors. They should be as clean as before they started the job. Cleaning Frequency: A) Monthly- Systems serving solid fuel cooking operations such as charcoal or wood burning.
B) Quarterly- Systems serving high-volume cooking operations such as charbroiling or wok cooking. C) Semi-Annually- Systems serving moderate-volume cooking operations. D) Annually- Systems serving low-volume cooking operations such as churches, day camps and seasonal businesses. National Fire Protection Association Standard 96 This standard covers ventilation control and fire protection of commercial cooking operations and is one of the U.S.A. food service industry’s most recognized and referenced fire safety standards. f you’re looking for a juicy burger to satisfy your taste buds, search no further! The 2nd Annual Boca Burger Battle has named its best burgers in town. Despite the rain, over 1,500 carnivores came out to taste test burgers from 18 restaurants at Sanborn Square in Downtown Boca Raton for the 2nd Annual Boca Burger Battle, A Grilling Affair! held on July 13th. “The rain sure did not disturb guests from coming out. The event has grown from last year in terms of vendors and attendees. We did not only have burger contenders but also additional food bites along with beer, wine and spirits and desserts. We would like to thank our Presenting Sponsor Big Green Egg in partnership with JM Lexus and many others whose contribution helps make our events stand out from the rest!” said Russell Spadaccini, Founder of BocaRaton.com & The Bites! Network, which produces the event each year. The winners of this year’s Boca Burger Battle include: Judge’s Pick for Best Grill Master : 1st place - Bite Gastrotruck; 2nd place - Potions In Motion, and 3rd place - Shake Shack.

Judge’s Pick for Best Alternative Grill Master went to: 4th Generation. People’s Choice for Best Boca Burger : 1st place - Morton’s Steakhouse; 2nd place - Rebel House; and 3rd place - Potions In Motion. Judges said that winner BITE Gastrotruck was a burger worth raving about. BITE Gastrotruck’s double patty with thick melted cheese topped with a perfectly caramelized sweet onion jam blew the judges away. The contenders created their grilling masterpieces and present them to a prestige table of Grill Master Judges which included a few well known “burger conneseuirs” like Sef the Burger Beast, Jamie Frankel from Burgers by the Beach, Stephanie Miskew from the Glamorous Gourmet, and well known celebrity Chef Dean Max, in hopes of winning the Golden Burger Trophy and holding the title of the Best Boca Burger. This community event with its “backyard bbq theme” not only showcased some of the best beef, turkey, fish, and vegetarian burgers that can be found, but also had an array of summer food tasting stations sampling gourmet French fries, onion rings, tropical salads, chicken wings, rum cakes, liquor infused ice cream and good
old apple pie. Boca Burger Battle’s Chief Grill Master this year was Chef Wes Bonner who is Publix Aprons Resident Chef. Wes graduated Summa Cum Laude from Johnson and Wales and has a strong passion for the culinary arts. The Chief Grill Master oversaw all of the Battle’s Contenders, created the judging criteria and fiercely led the Grill Master Judges on their path to burger nirvana. The judges decided on Best of Show and Best Alternative Burger, while the guests voted with their wooden chip where the “People’s Choice” will determine the champion and hold the title for one year as the Best Boca Burger! E
veryone knows John “JJ” Judge for his larger than life personality and welcoming demeanor.
John has many regulars that come to Lucky’s Tavern in Fort Lauderdale each week to hang out with their favorite bartender. “I try to make them laugh and keep them happy. I always have a smile on my face,” said John, who has been bartending at Lucky’s for over 2 years. Working in the hospitality business for 24 years, John knows the tricks of the trade to keep his customers satisfied and having a good time. When you walk into Lucky’s Tavern, you are immediately greeted with a warm hello and JJ pours your favorite drink without even having to ask. John is more than just a bartender, he has become a confidant to many of his regular customers. “I treat them like I’ve known them all my life. I’ve had a following for years. Most of my customers are regulars. I am a little bit of everything to them- their bartender, friend and someone to talk to,” said John. Over the years, John has bartended at various South Florida bars. He especially enjoys working at Lucky’s Tavern. “To me, it’s the staff. Everyone I work with is great. It’s a great place to hang out; and on the weekends, it’s party time,” he said. ince Colon aka Chico Vroc aka Chico V, was born December 14,1968 in Bronx, NY. At the age of 3, his family relocated to California. Growing up in L.A. and the discovery of music; more especially the different elements of Hip-Hop, that fueled his passion. Chico V always knew he was made for greatness. “Graffiti, B Boy, DJ and Emcee, I Am All Elements of Hip-Hop”, he says.” Performing has always been in my blood; my mother was a big influence. She was an entertainer in the disco era, and my father was an artist and

played over 17 different musical instruments. Growing up in a home where vinyl’s were everywhere, I loved to touch the turntables and put the needle to the groove”. His influences are Grand Master Flash and the Furious Five, Soul Sonic Force, Uncle Jams Army and the Jam Pony Express DJ’s. “I wasn’t very good in school, so I tried to do it all. From sports to lyrical battles, there really isn’t anything I can’t do. I scratched, I danced and was known for the sickest “Up Rock”, I freestyle, and I always keep a pencil and paper at hand to write to any beat that is playing. The microphone is my passion, it’s my way of expressing my emotions.
I’m a good storyteller, but I want to be known for being ingenious”. In time Chico V made his presence known and felt as he captivated his audience with his clever wit and quick comebacks. He earned a great deal of respect and acclamation in the streets. He is poised to leave his mark on the minds of true hip-hop mavens who appreciate authenticity, lyrical skills and unique vocal delivery. Chico V describes his music as having being reminiscent of the early years of Rap from back in the day, but is still relevant and modern to serious Hip-Hoppers and old school music lovers. Chico V is currently immersed in several projects. He is the former host for the internet reality show named “Chico V T.V. DALE!”. He just finished the filming of “Skeptic” a movie that was released in the summer of 2012. He played the role of Big Brother in the Colombia Fox Network Novela “El Capo 2”. Hosted the mixxtape for Hood Stock 2012 Compilation. He is the host of Miami’s hottest local late night show called “The Wicked Show”, where he show-cases South Florida’s finest artists. Chico V has released two official music videos, JAM ON IT and WICKED. He is currently working on the third official music video named LEBRONS ON. He is also working on his mix-tape with some of Miami Best Artists. Chico V is also playing as Stretch in independent film “It’s a Dirty Game”. “The game is about to be reintroduced to thought provoking lyrics that move the mind mixed with an undeniable swag and a natural flow that the game has been missing. I love music and I love what I do, it’s purely based on the amount of people who are depending on me to make something out of nothing; out of myself and I know my nephew J.T. Miami Heat Stand Pat in Offseason as They Look to Three-Peat By Allen Levin Sports Editor
A
fter back-to-back championships, the Miami Heat decided they didn’t need to do any retooling with their roster. After all, they haven’t lost a playoff series since 2011 with essentially the same core. Fresh off a second-straight celebration down Biscayne Bay, the Miami Heat had a quiet offseason. They picked up their team option on point guard Mario Chalmers, resigned Chris “Birdman” Andersen and got Ray Allen, Rashard Lewis and James Jones to pick up their player options. They also orchestrated a last second trade with the Atlanta Hawks in the draft to acquire the 50th overall pick, and used it on 6’7” forward James Ennis out of Long Beach State. All in all, the Heat chose to rely on internal improvement from the same roster that’s added two more championship banners to the
American Airlines Arena rafters. The Heat could have two roster spots open once training camp begins, and there are reports that they have interest in center Greg Oden and guard Mo Williams. Either one would be a welcome addition and make Miami deeper than they already are. Still, if they don’t make any free agent splashes, it’s safe to say the Heat’s outlook for the 2013-14 season is very bright. The Heat return their superstar trio of LeBron James, Dwyane Wade and Chris Bosh. There is no question that James could return even better after two years of championship pedigree under his belt. They will also have a fully healthy Wade. In addition, all the Heat’s role players are still very capable of performing. Miami benefits from having a rare attribute in which every single one of their rotation players has at least one championship ring to their name.
Miami will have the most experience, the best player in the world and the drive to go for the NBA’s first “three-peat” since the Los Angeles Lakers accomplished the feat from 2000-2002. Standing pat may not be the most attractive move, but the current group of guys on the Heat has worked out just fine for Miami.
Miami Marlins Recent Success Encouraging for Future
H
eading into the 2013 season, there weren’t very high expectations for the Miami Marlins after dismantling the team in the offseason. The Marlins front office traded away key free

agent additions from the prior season, such as Jose Reyes, Mark Buehrle and Heath Bell, who were supposed to make Miami one of the premier teams in baseball. However, the Marlins finished in last place in the National League East and decided to go in a different direction. The 2013 Marlins lack the firepower from last year and rely on a team full of rookies and inexperienced players in both the hitting and pitching department. That inexperience showed in the beginning of the season, as the Fish got off to a 14-41 start through the first two months of the year. Since that slow start, the Marlins have quietly put together a respectable run. They went 15-10 in the month of June and 11-12 in July as of the writing of this article. Miami actually has the best record in the NL East since early June. They have been able to hit their stride due
to outstanding pitching from young pitchers Jacob Turner and Jose Fernandez, as well as improved hitting from Giancarlo Stanton and Logan Morrison. Turner and Fernandez have combined to go 10-8 and both hold under a 3.00 ERA as of the writing of this article. Fernandez, a rookie, has been a sensation for Miami, becoming the only Marlins player to be selected as an AllStar this season. Stanton, after battling from some early health issues, has emerged to lead the team in homeruns (13) and RBIs (33) as of the writing of this article. While the Marlins are still in last place, they have made big strides in a short amount of time. If the Marlins can build off that success and continue to foster the young player, there are some encouraging signs for the future of the club. August 2013 • ITB • 43

Chilled champagne 2 oz. orange juice Pour the orange juice in the chilled champagne flute. Fill it with champagne. Stir gently to mix well.
