I
n The Biz® Magazine is already the premier source for the hospitality industry and beyond. Now its website, www.itbnation. com, will have more features and become the one-stop site for all you need to know about ITB specials, finding a job in the industry, more pictures of you with friends and of your favorite bartenders, entertainment articles, videos, a culinary and music section, classifieds and much more. In The Biz® will offer the best of both worldsa long-running print source that publishes once a month informing readers about those who work in the industry, upcoming events, hospitality tricks of the trade, parties and concerts not to miss and much more; and a new cutting edge website will offer much more for South Florida industry employees and party goers so they will get instant and up to date photos, blogs and videos on what?s going on in nightlife and beyond. In The Biz® publisher Carey Suissa wanted to take the website and social media to another level to give her readers and customers much more content, videos and photos. “We are still going to print the same amount of magazines as always; however, we want to be able to offer you, our readers, more content and more information. We can only fit so much into the magazine each month. If someone has a drink recipe that they would like to share or a story about something that is going on in our community, they need an avenue to do that. With this new interactive website, we are able to offer this type of content on a daily basis,” said Suissa. Another great feature is that the site will be interactive. You will be able to log on and vote for your favorite bartender of the month, see a video of an up and coming local band, finally uncover the ingredients in your cocktail of choice, find a job in the hospitality industry, post to the classifieds section, read about a chef of the month. The site will also be home to guest bloggers who will write about the business and topics related to the industry. Ads will be interactive as well, and advertisers can choose the design they prefer. nown as the biggest parade on water, the Seminole Hard Rock Winterfest Boat Parade truly lived up to its name in its 42nd year. From dazzling lighted and decorative holiday boats and breathtaking yachts to lavish and enchanting balls, and fun drink contests for the hospitality industry, Winterfest was surrounded by events that you’ll never forget.
An enchanting ball The Seminole Hard Rock Winterfest Black Tie Ball, presented by Moët & Chandon, was a first class event from start to finish. The enchanted evening has been named the largest holiday gala in Fort Lauderdale. That title was fitting as attendees were decked to the nines in flowing gowns, sparkling jewels and tuxedos and ties when they arrived and strutted the red carpet. Once inside the Hard Rock Live, ice sculptures, a life size martini glass,

entertainers on stilts and burlesque performers, buffets of delicious appetizers and champagne, and over 250 silent auction prizes wowed guests. The main attraction was a surrealistic grand ballroom complete with a burlesque show, talented musicians, a lavish dinner and dancing the night away. And the night would not be complete without the crowing of the 2013 Belle of the Ball- Stacy Copeland, Director of International Convention Sales at the Greater Fort Lauderdale Convention & Visitors Bureau. Everyone in attendance had a time to remember. “I feel at home here. I get to see a lot of the same people each year and they are like family. And it gets better and better every year,” said Annette Watkins. Lisa Scott-Founds, Winterfest Founder, thanked the Committee, staff and volunteers for all their dedication. “I have been with Winterfest for over 20 years and it has really grown to an incredible event. We have made a $48 million dol-
lar impact to our local economy,” added Ken Ortner, Chairman of the Board for Winterfest. Stacy Copeland was ecstatic to be crowned at the Winterfest Black Tie Ball, “It takes a village to put together Winterfest. If you are going to be the Belle of the Ball, this is the ball you want to be the belle of.”
And the winner of the Official Winterfest Cocktail is… The Winterfest Absolut Drink Contest, hosted by Winterfest and In The Biz® Magazine, was held for the second year to name the best cocktail for Winterfest. Three South Florida bartenders- Angela Vieux-Dugan of Kapow! Noodle Bar in Boca Raton, Will Moscaritolo of the Melting Pot in Coral Springs, and Lisa LaFay of the Downtowner Saloon in Fort Lauderdale- competed for bragging rights and for their drink being named the signature cocktail for the 2013 Winterfest Boat Parade. All three bartenders mixed up their drinks at the Dubliner in downtown Fort Lauderdale to be judged by Laine Doss,

Angela Vieux-Dugan won for her concoction, the Winterfest Anchor Clanker, with the unique ingredients of Absolut Vodka, Thai basil, Fresno pepper, lime, agave, and smoked black pepper. “I’m so excited to win!” exclaimed Angela. Her inspiration for the holiday drink was, “I wanted to use Absolut Vodka and to showcase our organic signature garden at Kapow!” The runner ups, Lisa LaFay for Absolut Paradise, and Will Moscaritolo for Winterfest Blue Ice. About his unique blue drink, “I wanted to make something new and I know what mixes well together,” said Will. Lisa was inspired to make her tropical drink based on the Winterfest Boat Parade’s theme, ‘A Passport to Paradise’, “The theme is tropical, and I wanted to make something you would want to drink in paradise.”

Chef of the Month Chef John Jennett The Floridian

oming from a long line of chefs in his family, John Jennett grew up in restaurants and kitchens admiring the aromas of fresh sauces and techniques of top chefs. John Jennett has taken that passion for cooking and has dedicated his culinary expertise to his many regular customers at The Floridian. Since 1937, The Floridian has been a landmark upscale diner on Las Olas Boulevard in Fort Lauderdale. Chef John has been serving up breakfast, lunch, dinner and late night treats to patrons for over 31 years. Open 24 hours a day, seven days a week, you are guaranteed to be treated to a delicious meal created by this well-known chef. Everyone that comes in knows Chef John for his friendly demeanor and jovial personality. Working at the Floridian for 31 years, he is a staple at the restaurant as much as the eggs and pancakes. He started as a busboy, worked his way up to the dish room cleaning pots and pans, and then got his big break working in the kitchen alongside his father, brother and with long-time chef Butch, who was his mentor and is now the owner of the Floridian. “I was inspired to become a chef because I grew up around restaurants all my life. I have watched my family cooking in the kitchen for as long as I can remember,” said Chef John. Chef John especially enjoys cooking up unique meals and traditional favorites at the Floridian. He also has helped open many local restaurants, including Ernie’s BBQ. “The Floridian is known as a breakfast place. It is very fast paced and I like that. It has been there since 1937; it used to be a drug store with a soda counter and it has evolved over the years,” he said. The Floridian is known as an upscale diner in www.InTheBizMagazine.com
the heart of Fort Lauderdale. There are three menus- breakfast, lunch and dinner and the graveyard menu for late nights, with many options to choose from. Each day, Chef John and his team of experienced cooks mix up the best meals in town, including homemade soups, fresh chili, marinara sauce, their famous crab meat omelet which was featured on the Rachael Ray show, meatloaf, country ham which is flown in from West Virginia, a plethora of desserts such as cakes and brownies and much more. “We have a very traditional menu, with all the same original recipes from 30 years ago,” he said. The warm and welcoming atmosphere has been home to many visitors from around the world and locals who sit at the same seat and eat the same meal each week. “We have many regulars that come to the window and say hi to us. Some have been coming here for over 20 years; and we have many employees that have worked here for countless years,” said Chef John.

he Museum of Discovery and Science presents the new traveling exhibit Goose Bumps! The Science of Fear, opening January 31 through September 2, 2014. Why do our hearts race, our knees shake, and our bodies sweat when we are scared? This exciting exhibit, exploring the universal emotion of fear, is sponsored locally through a generous grant from the Leo Goodwin Foundation. Through fun, interactive challenges, guests can experience fear in a safe environment and discover the science behind their physical and emotional responses. The 6,000 squarefoot exhibit includes immersive environments and full-body, interactive experiences that allow guests to test their own fears and rate their physiological responses. Leading scientists and their current research on the 28 • ITB • January 2014
neurobiology, physiology and psychology of fear are also featured throughout the exhibit. Goose Bumps! begins with the Fear Challenge Course, where visitors can face four common fears in a safe environment. The first challenge, Fear of Animals, dares guests to reach into concealed terrariums that might be the home of creepy-crawly creatures. In the next room, Fear of Electric Shock, visitors may feel their heart pounding as they anticipate getting zapped by a jolt of electricity. In Fear of Loud Noises visitors test this innate fear that helps keep us out of harm’s way. Finally, the Fear of Falling challenge allows guests to experience a sudden loss of support and then watch a video recording of their reaction to the backwards drop. Another exhibit highlight is the Fear Lab, a section which explores the brain’s structures and pathways that drive the fear response. Visitors will meet Mr. Goose Bumps, a larger-than-life figure that illustrates, through
animation, how the brain and body work together in response to danger. Real brains and brain slices preserved through the process of plastination are on display showing similarities in a key fear structure in the brains of humans and animals. The Museum is open seven days a week, 365 days a year; Monday through Saturday from 10 a.m. to 5 p.m., and Sunday from noon to 6 p.m. with extended IMAX® hours on most evenings. 1 1/2 parts Cruzan 9 Spiced Rum 3/4 part DeKuyper Orange Curacao 3/4 part Fresh Orange Juice 2 parts Fresh Lemon Sour Shake ingredients together with ice and strain into a cinnamon and sugar-rimmed cocktail glass. Garnish with a flamed orange peel.
Grapefruit Basil Champagne Cocktail 2 parts Pucker Sour Apple Sass Vodka 5 chunks of Honeydew Melon 1 part Lemon Juice 1 part Agave Nectar Prosecco
Add honeydew melon to a cocktail shaker and muddle. Add vodka, lemon juice and agave nectar to the cocktail shaker. Shake vigorously, double strain over ice and pour into chilled wine glass. Top with Prosecco.
Maple Sour
1¾ oz. Partida Reposado ¾ oz. lemon juice ½ oz. maple syrup ¼ oz. simple syrup Dashes of Angostura Bitters Shake all ingredients with ice and strain over fresh ice into an Old-Fashioned glass. Garnish with lemon twist. Note: Tasty winter Sour. You can also add egg white for a great finish to the cocktail and this drink can also be served up.

L
indsey Ann knows the trick to keeping her customers smiling and coming back each week at Capones in Fort Lauderdale.
“My customers are there to have a good time, and I am always having a good time when I am working. I’m always dancing around and having fun and keeping them happy,” said Lindsey, adding, “I have always been the girl who has a lot of regulars, and I work during Happy Hour when Capones offers 3-4-1 drinks!” Being a bartender at Capones since February, Lindsey has many regular clients who come in just to see her. Capones offers a one-of-a-kind bar and nightclub experience in the downtown area, complete with multiple bars, VIP areas, the best in dance and party music and the best Happy Hour in town, with 3-4-1 drinks. Lindsey has been in the hospitality industry for many years, working as a bartender at various restaurants, bars and nightclubs in South Beach, Los Angeles, California, and in downtown Fort Lauderdale. She loves working In The Biz® because she gets to meet new people every day. Another Trick of the Trade is being attentive and listening to her customers. “I have worked in the hospitality industry for many years, and then I left but I came back. I like being a bartender. Growing up in South Florida and partying in downtown Fort Lauderdale, Lindsey also knows what kind of service customers like to see on the other side of the bar. “I used to partake in the downtown Fort Lauderdale festivities, and now I am happy to be on the other side of the bar taking care of my customers,” said Lindsey, adding, “ I like the people I work with and I love working downtown, especially at Capones. alseta is a five-piece rock music group from South Florida.

The band first originated with drummer Romulo Bernal in 2009. Once he had written the bulk of the album in its raw premature form, he took on board his long time friend, guitarist and co-songwriter, Vishnu Saiz. Vishnu’s unique style complemented Romulo’s, and together they were easily able to finalize songs and ideas. Shortly after they then added to the mix another longtime friend, front man Marcus Fernandes, whose vocals and musical taste brought a new dynamic to the Falseta blend. Finally with the addition of Kitova McCarthy on guitar and Trevor Talbot on bass the line up was set. It is this winning combination friends and musicians that has sparked interest in not only musicians and local rock fans, but also in places one might not expect. If you happened to catch Pablo Malco’s Hip Hop Symphony at the Broward Center for the Performing Arts, you would have seen the band perfectly at home on the large theater’s stage. “Falseta has a certain drive behind their music that draws in several different genres of music lovers. When I first heard them rehearsing it sounded like a concert – the melodies, the hard knocking and funky drum patterns, and the clean yet grungy guitars,” says Malco, director of the non-profit Pablo Malco Foundation, which oversees the international performance troupe Pfuzion and The Hip Hop Dance Academy. “After speaking to the guys, it was apparent to me that they were the real deal – true artists. They are simply the best.”

Miami Dolphins Resolve After Near Downfall is Impressive By Allen Levin Sports Editor
T
he Miami Dolphins were on the brink of disaster. The team was ravished by a bullying scandal and had just lost to previously winless Tampa Bay, dropping their fifth game in six contests. A once promising season that was full of hope was unraveling at a rapid pace. Then, the Dolphins were able to beat a primary playoff competitor in San Diego to stop the bleeding. From there, Miami would win four out of its next five games to turn the season around and get to the team’s current state: In control of their own destiny for a playoff spot. It wasn’t a pretty road, but the Dolphins are in prime position to reach the postseason for the first time since 2008 and have looked pretty good recently.
As of the writing of this article, the Dolphins have won three consecutive games, including a huge win over division rival New England. They sit at 8-6, and can clinch a playoff spot if they win out their final two games against lowly Buffalo and New York (Jets). What’s been lost in this whole storyline is just how impressive the Dolphins resolve has been through all this. They could have easily folded and crumpled under all the media scrutiny and drama that surrounded their locker room. However, the Dolphins have put together some of their finest ball of the season, all starting with QB Ryan Tannehill’s play. The sophomore has thrown for 843 yards and eight touchdown passes in the last three games, including 312 yards, three touchdowns and the game winning drive in the victory over the Patriots. Moreover, the running game and offensive
line has been much stronger as of late. The team is clicking on most cylinders at just the right time of the season. If Miami keeps this up, they will end their playoff drought and enter the playoffs as one of the hottest teams. This is quite a cry from team that was nearly on the brink of disaster.
Florida State to Play for National Championship, UCF in Fiesta Bowl

wo excellent seasons for two Florida college programs is culminating in the ultimate prize. Florida State University, after a perfect 12-0 regular season and ACC championship, will play for the BCS National Championship on January 6 against SEC champion Auburn.

The Seminoles have utterly dominated their opponents this year, with not one opponent coming even close to touching them. They have been electrifying on offense, led by their sensational Heisman-winning freshman quarterback, Jameis Winston, and suffocating on defense. FSU has by a large margin been the best team in college football this year, and they will look to win their first national championship since 1999. Winston became just the second true freshman QB to win the Heisman trophy after throwing for 3,280 passing yards and 38 touchdowns. The Noles averaged 53 points per game while allowing a nation-best 10.7 points per game on defense. Their game against Auburn will be one for the ages. As for the second best team in Florida-UCFthey will be in an exciting matchup against
high-powered Baylor, who owns the nation’s best offense. UCF finished with a program-best 11-1 record en route to the AAC championship and automatic BCS berth to the Fiesta Bowl. It was a year of firsts for the relatively young program, achieving their first win over a Big 10 opponent (Penn State), first win over a top 10 ranked team (Louisville) and first BCS appearance. The Knights had a dominant offense, led by standout QB Blake Bortles and runningback Storm Johnson. They will face a tough Baylor team, who lights up the scoreboard with one of the best offenses in college football history. Regardless of the outcomes of both games, there is no doubt that FSU and UCF have made the state of Florida college football very proud this year. www.InTheBizMagazine.com
