Spring Breakers Fill Up South Florida Bars BY Allen Levin Contributing Writer Spring break is the biggest funfilled and memorable time of a college student’s tenure. It’s a time when a student is free from the pressures of studying and graduating and gives them a week to let loose and party. Florida, being a spot of sunshine and beaches, experiences a huge turnout each year. Whether its Panama City, Miami or Ft. Lauderdale, spring breakers flock to Florida to enjoy all the amenities of the Sunshine State. With all of the extra 18-22 year olds in town, naturally restaurants and bars have seen an increase in business. Slackers, Lucky’s, Lulu’s Bait Shack, Art bar, Capones, Bamboo Beach, Elbo Room, Rock Bar, Platforms, TMex, Eleven, Galuppi’s, Xtreme Indoor Karting, Cheetah, Dive Bar and Hott Leggz are all bars and restaurants in South Florida that experience a significant increase in clientele during the spring break period. “We’ve been slammed basically every night; groups of spring breakers have been coming in,” Lauren Coll, GM of Ft. Lauderdale-based bar Hot Leggz, 26 • ITB • April 2014
said. Coll said last year was very busy during spring break season, but that Hot Leggz is encountering an even busier time this year around. “We’re busier than last year definitely. We’ve been busy every night; our business has been picking up more and more.” While some businesses are busy and noticing a pick up from last year, other restaurant, bars are seeing a packed house, but not quite as crazy as previous years.
“We’re doing good and seeing a lot of them come in, but it’s pretty much the same as last year,” Hector, manager of Lulu’s Bait Shack in Ft. Lauderdale, said. While some locations are doing better than in previous years and other’s are staying the same or taking a dip, one common theme is that It’s extremely busy and hectic at this time of the year as college spring breakers bring a bunch of business to these establishments.
“It’s not quite as packed and not the same impact as year’s past. I don’t know if it’s because it’s later in the year this year or the weather,” T-Mex Cantina Owner Chuck Bergwin said. “It’s (business) certainly an increase from the overall year, but not over the top like in year’s past. We welcome the spring breakers, and it has been good.” Other establishments are also seeing a rise in business as spring break presses on, but say it’s no different than prior years. www.InTheBizMagazine.com

Chef Of The Month Enrique Rodriguez Executive Chef at T-Mex Cantina
By NICOL JENKINS Editor Whether you’re hungry for nachos, tacos or a Mexican feast, T-Mex Cantina is the only restaurant where you can indulge in authentic Tex Mex favorites. For 20 years, T-Mex has been delivering delicious food and fun at its South Beach location. The restaurant and bar was such a success that owners Chuck and Lisa Bergwin also opened T-Mex Cantina, formerly San Loco, in Fort Lauderdale’s thriving downtown Himmarshee Village in 2001. With a full service bar, killer juke box, and an expanded menu, T-Mex quickly became a neighborhood favorite among locals and visitors. Homemade Tacos, burritos, Macho Nachos, Southwest salads and the famous award winning Guaco Loco are served fresh daily and made by Executive Chef Enrique Rodriguez in the Fort Lauderdale location. Regulars pack the restaurant every Tuesday for their famous Taco Tuesdays, dishing out 2-4-1 tacos. They are also known for their specialty margaritas (Cantina

only) and an extensive selection of Mexi beers. The overflowing Macho Nachos, with just the perfect mix of ingredients and spices, the Guaco Loco, a hard shell taco wrapped in a soft shell layered with guacamole, and many other specialties keep customers coming back every week. For three years, Chef Enrique Rodriguez has been cooking up this one- of-a-kind Mexican fare. With a combination of special sauces and secret ingredients, Chef Enrique knows how to make a mean chimichanga, and all that is Tex Mex. What makes T-Mex stand out from other Mexican restaurants? “We make everything fresh; pico de gallo, guacamole, refried beans, chicken, chili; everything is fresh!” said Enrique. Authenticity and variety are also on the menu. Specials change daily and anyone, even the pickiest eater, can find something on the menu. From chicken or beef nachos and tacos, to vegetarian dishes like avocado tacos, tofu tacos and, Southwest salads. And, of course, don’t forget the Margaritas. The choices are endless. “We have had our go-to staples on the menu for 15 years and customers keep coming back for that nostalgic taste. The combination of new menu items with the traditional ones really makes for a good menu. Our customers love the food. We have a dish for everybody!” said Enrique. Chef Enrique has had a passion for the culinary arts for many years. Working as a chef at various
restaurants, he knows the secret to making people happy through food. “To be a chef, you have to have the passion and care about what you do. I love cooking for people, and it makes me feel good when people like my food,” he said. Chef Enrique especially enjoys working at T-Mex. “T-Mex is a big family. The atmosphere here is great. The bartenders and servers are so friendly and have good energy,” said Chef Enrique, adding, “The regulars talk about how much fun they have with our staff and owners. ‘Walk for the Animals’ draws dog lovers to event and local restaurants By Nicol Jenkins Editor
T
he 24th Annual Walk for the Animals was a huge success for the Humane Society of Broward County and for downtown Fort Lauderdale restaurants and businesses. Thousands of dog lovers and supporters gathered at the Walk for the Animals at Huizenga Plaza in Fort Lauderdale, and after many enjoyed lunch at the restaurants on 2nd Street in downtown Fort Lauderdale. T-Mex Cantina owners Chuck and Lisa Bergwin participated in the event with their dog, and also donated a percentage of the proceeds from lunch that day to the cause. Rok Brgr Fort Lauderdale owner Mark Falsetto, also a proud dog owner, gave back to the cause by giving a portion of proceeds from lunch to the Humane Society of Broward County. All the restaurants in downtown Fort Lauderdale were packed with pet owners and their best friends. Overall, the 24th Annual Walk for the Animals, presented by VCA Animal Hospitals and sponsored by PETCO Foundation, was another amazing display of giving back. More than 2,000 registered participants helped raise a net of over $518,000 for the Humane Society of Broward County’s programs and services; an additional 3,000 people showed up just for the fun of it! And all those animal lovers leashed up and brought to downtown Fort Lauderdale’s Huizenga Plaza their more than 2,500 dogs, for a perfectly cool and www.InTheBizMagazine.com 32 • ITB • April 2014
sunny morning of socializing and entertainment. Chaired by Carey Morgan and John Glorieux and executed with the help of their hardworking committee, Walk for the Animals – their biggest fundraiser -- has a reputation for great people- and dog-watching, and this 24th Annual event did not disappoint. Dogs of all shapes, sizes, colors and personalities overran the Walk site, sniffing and wagging and occasionally jumping in the New River. Honorary Chairs for the Walk were Jacey Birch of WPLG Local 10 News and U-Turn Laverne from 99.9 Kiss Country. They commanded the stage and kicked off the 1.25-mile walk, but only after Walk participants had the opportunity to devour free IHOP pancakes, enjoy a stage performance by ARTFORMAZ, get their faces painted, bounce in the bounce house, visit myriad vendors’ booths, play games for giveaways, and applaud Achieve Agility’s wonderful performance. FASTBOATS Marine Group had incredible boats on display and Jimmy Johns treated $500-plus fundraisers and Pack members to good eats! After the Walk, the Thunderhead Band entertained the crowd until the top fundraisers were announced. The top three fundraising individuals were the amazing first place winner Tim Miller with $10,176; the fabulous Chris Rotolo in second place with $9,420; and in third place, the wonderful Christine Forman with $8,270 raised. The top three Packs were Stilish Paws in first place with a staggering $48,514 collected; in second place, PAWS, with an incredible
$38,505.50; and, in third place, Puppy Peddlers raised an impressive $20,293. Elaine Steehler was the lucky winner in a drawing for a $1000 Target gift card. Stilish Paws supporters and pack leader Jamie Stiles was ecstatic to raise as much money as her team did to help animals in the shelter. A whopping 144 volunteers came out to help on the day! Volunteers, including Nancy Westin, said the event continues to grow each year in support of this wonderful cause. The Humane Society of Broward County also thanked all of the Walk participants and supporters for making the Walk for the Animals such a wonderful success. The Humane Society of Broward County is a private, non-profit organization supported by donations from companies and people who want to help us help the homeless animals. Dan Doherty Bartender and Head Server at Bamboo Beach Club & Tiki Bar By Nicol Jenkins EDITOR For 8 years, Dan Doherty has been the one to turn to when guests at Bamboo Beach Tiki Bar in Fort Lauderdale want to have the most enjoyable experience while on vacation or staycation. Dan has been a fixture at Bamboo Beach and has held many roles, as the head server, bartender, and trainer among wearing many other hats. “I get to help people that I don’t even know just a little every day. Even if it’s with something small; helping people is rewarding and you get paid for it,” said Dan. Everyone knows Dan, as Dan the Man, the guy who always has a smile and is a people person eager to make sure his guests have a fun and memorable time at Bamboo Beach Club & Tiki Bar. “We have a lot of repeat guests and we take care of them. We see them year after year and get to see their kids grow up. I try to make it as pleasant as possible for them. They save up all year to come on vacation, and it’s important for me to make sure they have a good time while they are here,” said Dan. If anyone could make sure Bamboo Beach guests are having the time of their life, it’s Dan! He has been in the hospitality industry for 16 years working at various restaurants and bars in South Florida, including Mulligan’s, Fubar, which his family owned, and others. Dan was also among the group that started the hospitality End of Season Bash! Dan says Bamboo Beach is the perfect hideaway for locals and a paradise for vacationers.
“We are the only tiki bar right on the sand and we can serve drinks on the sand,” said Dan, adding, “I look forward to working there every day. I enjoy the variety and excitement of working at Bamboo Beach. There is something different every day. You get to see people in the day time having fun and then people dressed up at night having a moonlight dinner. Plus, there’s camaraderie among long-term employees.” There’s plenty of great food and specials for those who work In The Biz®. Hospitality employees receive 25% off their checks all the time, and 50% off the entire check Wednesday starting at 8 pm. Happy Hour is from 4 pm to 7 pm Monday through Thursday with half off domestic beer, wine, and well drinks. Friday from 4 pm to 7 pm is half off all drinks. The food is also unbeatable! On Wednesdays, it’s all you can eat lobster for only $49.95; on Mondays, it’s fresh mozzarella night. Every night, their fish and all their meals are always made fresh! Besides the delicious food and tropical drinks, Dan is a main attraction at Bamboo Beach. His trick of the trade is really no trick at all! “I really enjoy that the guests are here. It’s not a show for me; it’s real life. It helps if you are real, and I’m always there first and know before my guests need anything. It’s the little things that matter!” said Dan. Come see Dan anytime! Bamboo Beach is located in the Ocean Manor Hotel at 4040 Galt Ocean Drive, Fort Lauderdale, FL 33308. For more information, call 954-566-7500.

Miami Heat Struggling as the Playoffs Approach
By Allen Levin
Sports Editor
On last season’s road to a second straight championship, the Miami Heat went on a 27game winning streak during the second half of the season and entered the playoffs scorching hot. This season, it’s a different story for LeBron James and company. With the playoffs a mere few weeks away, the Heat are playing their worst basketball of the season, having lost eight of their past 13 games (as of the writing of this article). The Heat have struggled on the defensive end, allowing 100 or more points in seven of their last 14 games. And it’s not like their getting lit up by the elite teams in the league; Miami has been knocked off by New Orleans, Boston, Denver
and Utah recently, which are all lottery bound teams. On top of that, they all but wasted a prime opportunity to snatch the No. 1 seed in the Eastern Conference from Indiana, who has also lost eight of its past 13 games (as of the writing of this article). Miami is having issues with motivation, and appears to have problems with its normally sturdy chemistry as they have been forced to use a number of different rotations this season due to injuries and adjusting to opposing defenses. The Heat’s role players have also been subpar this year, as Ray Allen, Norris Cole and Shane Battier have all slumped throughout the season. It has resulted in Miami’s Big Three taking on extra slack, especially LeBron as he is
forced to carry a bulk of the offense. That being said, the Heat are still the No. 2 seed and sport one of the best records in the league. But, if defending champs want to hang onto their crown, they will need to right the ship before the playoffs start. History has shown us that they are fully capable of working out the kinks.
Dolphins Offseason Moves Encouraging after Turbulent Season The Miami Dolphins endured a tumultuous season that was highlighted by a bullying scandal that all but derailed a decent 2013 season on the field.
Brent Grimes and defensive tackle Randy Starks with multi-year deals. It was also announced that Miami signed former Denver runningback Knowshon Moreno to a one-year deal. The Dolphins had plenty of troubles in their run game, and Moreno could certainly help after having the best season of his career, posting 1,038 yards and 10 touchdowns.
The Dolphins were the subject of media scrutiny and the headlines were more on the team’s off-the-field manners than their on-the-field ones. But, the organization is attempting to move past that nonsense and get back to winning on the field.
With the free agent singings, the Dolphins addressed some glaring holes from last year’s 8-8 campaign and gave themselves a very competitive roster heading into the 2014 season.
And they’ve started out the offseason on the right foot. Given that they fielded one of the worst offensive lines in the NFL last season, the Dolphins made bolstering their line a top priority heading into the offseason.
year contract and offensive guard Shelley Smith to a two-year deal.
Right out the gate, Miami inked Pro Bowler left tackle Brandon Albert to a five-year deal to help with some of its line issues.
On the defensive side, the Fins signed free safety Louis Delmas to a one-year contract, while making headlines by locking up controversial cornerback Cortland Finnegan to a two-year deal.
The Dolphins finished shoring up their o-line by notching nose tackle Earl Mitchell to a four-
Miami also resigned some key free agents from last season, bringing back Pro Bowl CB

The team still has work to do on the offensive side of the ball and face questions, none bigger than third-year quarterback Ryan Tannehill, who will be expected to become a reliable starter who can lead Miami to the playoffs. Regardless, the Dolphins have had a very strong offseason that gives them a competitive team and a good opportunity to make the playoffs next year.
