t’s that time of year again for ghoulish treats, spooky haunted houses and costumes unlike any other. South Florida bars, restaurants, and nightclubs will be offering the best Halloween events, costume contests and spooky parties around town. So create or pick out your best costume for a chance to impress your friends and win some cash! Halloween is the perfect time to dress up like your favorite superhero, movie star, zombie or to dress extra sexy! You can start your Halloween partying with a trip to the Ocean Manor Resort, as they turn the Hotel and Bar into the Haunted Hotel on Saturday, October 26th. Thousands of dollars in cash and prizes will be awarded for the best costumes. You can get Freaky at the Tiki or Sexy at Tokyo Blue. The Dive Bar will be having their 13th annual Halloween party on Saturday, October 26th as well. Come by in your best costume for their costume contest, food, prizes, drink specials, live music and so much more to make Halloween 2013 a memorable one. Cowboys Saloon in Davie will be offering cash prizes and lots more for everyone to enjoy on Wednesday, October 30th at their Ladies Night and Pre-Halloween Party. You can enter their

For only $20 per person, enjoy an open bar from 9 p.m.-11. Win cash prizes for best costumes starting at 11:30 p.m. and then dance the rest of the night away with their D.J. he best musical talents that South Florida has to offer will soon come together for a music festival unlike any other. Unity 88 presents The Inaugural South Florida String Festival, to be held on Sunday, November 10th from Noon to Midnight at 2801 Greene Street in Hollywood. The festival can best be described as 12 bands, 12 hours and one big party! The Inaugural South Florida String Fest features the best of SoFlo’s artists, food and entertainment in an upscale outdoor atmosphere. The music line-up includes a powerful troupe of musicians that are known for being South Florida’s hottest and hardest working bands. The South Florida String Festival is a joint effort in association with local music incubator Unity 88 in Oakland Park. Unity 88 is an organization of bands, artists, promoters, managers, marketing specialists, sound engineers, and entrepreneurs encouraging the spread of music in our South Florida communities. The group organizes events, provides access to new talent and facilitates their development through a network of industry professionals and mentors. Starting October 1, Dine Out Lauderdale will start as a six-week celebration of the area’s top restaurants, chefs and cuisine, and will last through November 7. Participants will enjoy the best of Greater “Fork” Lauderdale, when 37 restaurants offer specially-created, threecourse menus at a $35 fixed price. How Grease Traps Work special to the editor
E
very Bar/Restaurant that serves food has grease trap. • Your dishwashers, sinks, and floor drains are directed to your grease trap tank. • The drainage enters the grease trap thru a baffle. • The grease then floats to the top, the waste (stirrers, chicken bones etc.) sinks to the bottom. • The water in the middle exits thru another baffle which is 2.5 inches lower than the entrance baffle, where it joins up with the rest of your restaurant/bar drainage (toilets, etc.) before continuing thru to your cities sewage system. • The water then travels to a lift station before continuing on to your cities waste water treatment plant. WHY SHOULD YOU CLEAN YOUR GREASE TRAP REGULARLY? When the grease becomes lower than the exit baffle, or the solids build up on the bottom of the tank, the grease and solids will flow out and clog your lines which will back up every drain in your restaurant or bar. If not regularly maintained, Murphy’s Law says this will happen on Fri. or Sat. night during your busiest times, disrupting business in a very smelly way. Grease removal is required by law and varies by the city your business is located in. The restaurant/bar owner is responsible for grease removal. City inspectors regularly check for contamination levels

in your grease trap and at your closest lift station. You can and will be fined if your levels are too high, or if you have clogged up the lift station. The city can impose surcharges on your water bill or shut off your water and fine you. These fines run in the hundreds to thousands of dollars depending on the violation. What you should know. • Ask your service provider if they have ever received a violation for illegal dumping. This is a public record and available by calling the D.P.E.P. office at 954-519-1245 or the O.E.S. office at 954-831-3066. • Ask your pumping service provider to show you documentation that your waste is being dumped at an approved facility. You are responsible for your waste until it reaches the facility. Make sure to ask the service provider for proof of insurance so that you are not responsible for the grease in case of an accident or illegal dumping. • You or someone you trust should always be present when pumping is being done.
• If your traps are not maintained regularly it could take up to 4 hours to pump. If you regularly maintain your traps, the process should take from 45 minutes to 1.5 hours. • Make sure your main lines are jetted to and from the grease trap every time your grease trap is pumped. Your pumping service company will use a special hose that blows high pressure water backwards to jet out most grease which may be stuck in the lines. • Once the trap has been emptied, look down the manhole, you should be able to see clean sides and the trap should be empty. It will fill back up with water within the hour, however very little if any grease or grunge should be in it at that point. • Check your floor drains for blockage at the same time your great trap is pumped. Some services will help you check these. • Ask for a quarterly maintenance schedule. This is more cost effective than waiting until you have a major problem. • Always get a receipt or verification that shows the number of gallons pumped from your grease trap. Originally I’m from Dania Beach, I’m a Florida girl born and raised and I love it. How long have you been InTheBiz®? I have been in the industry coming up on six years, I started serving at Applebees when I was 18 and they taught me how to bartend. I’ve been at Slackers for a little over a year, and have also worked at a few places in between. What do you like best about bartending/Serving? Besides the easy money, you get to meet people from all sorts of places. Why did you choose to become a bartender/server? The hours complimented my busy school schedule, and I enjoy meeting new people. What is the most ordered drink? Lately it’s been the Hell Mary, Slackers “Wisconsin” version of a Bloody Mary. This is our own signature mix with Kettle One Vodka, bacon, Wisconsin cheddar cheese, a hardboiled egg, a pickle, a pepperoncini, cherry tomato, onion and an olive. Basically this is breakfast in a mason jar. What is your favorite drink to make? Honestly I’m an Irish girl and I love me some John Jameson. Anytime someone orders something with Jameson in it I get excited. What can you share with new bartenders/server to make the most in tips? Smile!! Everyone loves a great smile. What is the worst pick up line you ever heard? Kiss me if I’m wrong, but dinosaurs do exist right? credit card revenues had been posted to his account, causing a temporary but critical cash flow shortage. “Technically, I was broke even though I did a great weekend business,” Zavaglia explained. “I wrote out a check to the repairman for money I didn’t have and crossed my fingers hoping by the time he deposited it, my revenues would have posted.” Unfortunately, the opposite thing happened. The check for the cooler repair cleared first, causing a domino effect resulting in all 12 of his payroll checks bouncing like rubber balls. “Next thing I know, my bank informs me I owe $432 in overdraft fees,” said Zavaglia. “If they had just posted the money I put in the night drops or if my credit card revenues had cleared sooner, I would have been fine. But that’s how the banks or merchant service companies work – manipulate my money to their advantage, not mine.” Owning a sport bar taught Mike Zavaglia one thing: expect the unexpected and be ready to pay excessive bank penalties and fees as a result of Murphy’s Law happening more often than not. “It was costing me over $10,000 dollars a year,” lamented Zavaglia about the bank charges. “Instead of putting money back into my business to increase profits, I was paying it
out to financial institutions at an alarming rate. Who is making buying decisions? special to the editor

any times the owners of a bar are making all of the purchases of liquor and beer for the bar. They are basing their decisions on what they like and not really what the customer is asking for. While this may be a common practice, it may not be the best choice. Who better to make the decisions on purchases than the ones on the front lines? Don’t get me wrong, I am not saying that you should relinquish all of your power or give them the credit card, just give them an opportunity to

make recommendations on what to purchase based on what they see and hear at the bar. Your bartenders and servers are the ones who talk to your clientele. They are the individuals who see what everyone likes. If you allow them to be a part of the purchasing of the product, in most cases you will start to see a difference in your bottom line. The addition of just a few products can make all the difference. If you only carry beverages from one distributor at your bar or restaurant, you are losing the potential for those who may prefer other brands. There is nothing that says that a bar/restaurant can
only carry one particular distributors brands. Open up to offer more of an array of products to your clientele. Make a specialty drink each month using a new brand that you are featuring. Have contests to entice your bartenders to make new and interesting drinks for the bar. You will be surprised by how many new drinks you will start to sell if you try taking the advice from your lead bartender. We all know that there are only so many products you can keep at your bar, so listen to your bartenders and servers, they are “In The Know”.

oo many bar and restaurant owners hire bartenders, bar backs, servers, kitchen help, hostesses, etc., just based on the application, the potential employee submits. References are no longer enough, what about their background or legal status? A recent Investigative Reporter for NBC News did an intense segment on how so many companies never confirm, check, or carry out a comprehensive overview of exactly who you are actually going to

hire. From drug abuse, legal matters, arrests, domestic violence, personal appearance, to constant cell phone use, know who you are hiring. You should do regular background checks for hiring purposes. For just $40 you can find out the A to Z on almost anybody. Visit their Face Book Page, find out about this individual, before they are representing your bar, your restaurant, your club, your sports bar, your lounge, your catering hall, your bar and grille. Quite often, “People Profile” companies will offer significant discounts to food and beverage operators who use their services on a daily basis. For example some offer a fee of
$30 when you background check 10 or more applicants within 90 days. How much is it worth to you, to find out the “Real Resume” on those applying for positions at your food and beverage, or beverage only establishment? In these times, just having the experience is no longer enough. No owner needs employees with drug issues, possible mental health problems or ongoing legal matters. Owners need to know. This is your business, just being “GOOD LOOKING” is no longer a prerequisite for being hired. Avoid the headaches, heartaches and hassles. Be sure of who you are hiring, if you are careful, you will avoid at least a portion of the headaches associated with owning a bar or restaurant.

eep Thoughts was born in Argentina and raised in south Florida. At an early age he fell in love with music and taught himself how to put feelings into lyrics. He started to develop a unique sound with hip hop music. Deep Thoughts as an adult became a great artist and an amazing song writer. Deep, has made his name well known in south Florida with not only his music but also his live performances. He has performed in any and every club
allowing hip hop to enter their doors which led to him rocking some of South Florida’s BIGGEST night clubs. He has had the pleasure of opening for K-SOLO, M-80, and Canibus. Deep Thoughts is a natural in front of the camera, grabbing the attention of Nikko Capria resulting in his being the face and voice of NikkoNation. His ambition and love for his craft are incomparable. With his manager Nikko, they have put in an unsurpassable amount of work in less than a year. During his artist development he has made the kind of hits that
most rap artists struggle to accomplish. His ability to transform from a mean street rapper to a global hip hop artist is a rarity. SPORTS Miami Hurricanes Are Finally Back By Allen Levin Sports Editor
I
t’s been a long road, but it finally appears that the Miami Hurricanes are back. The Hurricanes have started the season 4-0 as of the writing of this article and are rolling through teams in their victories. With the unblemished start, the Hurricanes are No. 14 in the polls as of the writing of this article and look to be a prime threat to win the Atlantic Coast Conference (ACC). What’s even better is that the Hurricanes were able to beat their rivals, the Florida Gators, who were the No. 12 ranked team in the country at the time. Other than the Gators, the Canes have only beat bottom feeders FAU, Savannah State,
and USF, but they have done so in impressive fashion. Miami has won their games by an average of 32.8 points per game and still haven’t trailed in a game yet. They are averaging 45.3 points per game on offense, which is 10th best in the country and are limiting opponents to 12.5 points per game on defense, which is 7th best in the country as of the writing of this article. The Canes have simply been dominating opponents, and even scored a school-best 77 points in their win over Savannah State. The Hurricanes have had a relatively fluffy schedule up to this point, but that doesn’t’ change the fact of how strong they’ve looked on both sides of the ball. They have some challenging matchups
upcoming against Florida State and Georgia Tech, but if they can win those games, there is no reason they can’t go undefeated and win the ACC. Miami will have to keep up its current level of play, but if they can do that, we may be seeing the first ACC championship for the Canes and their first BCS bowl game in a very long time.
Miami Dolphins off to Excellent Start
A
fter an exciting offseason that included a large spending spree and lofty expectations, the Miami Dolphins are answering expectations as of now. The new-look Dolphins have began the season 3-0 as of the writing of this article, notching some convincing wins to start the 2013 campaign. Miami went on the road, taking down the Cleveland Browns and Indianapolis Colts, before coming home for an impressive comefrom-behind victory over the Atlanta Falcons to begin their slate undefeated. The Colts and Falcons were both playoff teams last season, and the Dolphins were able to escape with a win on the road over Indy and take down an Atlanta team that was one game from the Super Bowl last year. The Dolphins have been so strong due to a much-improved Ryan Tannehill, who looks like he will be undoubtedly a franchise quarterback. He is converting on third downs at a much higher clip and has been clutch in the

fourth quarter so far. The Dolphins receiving unit has been very solid as well, with Brian Hartline, Brandon Gibson and Mike Wallace all looking good in the early games. The defense, which had a total makeover, isn’t quite playing up to its potential yet, but has been making impact plays when necessary. They have made huge stops in the 4th quarter in close games against the Colts and Falcons, and generally have gotten their job done. What’s even more encouraging is how confident the Dolphins look as a squad. They are going on the road and getting wins, winning close games and keeping their composure. While there is still a lot of season left to play, the Dolphins seem in prime position to meet expectations and make a playoff push this year. They still face stark competition in the division against the undefeated New England Patriots, but there is no doubt the Dolphins look like a contender. www.InTheBizMagazine.com
