It was a case of devil on one shoulder and angel on the other for our food reviewers when putting this issue together. A
t just 22 years of age and only three years into a career which fairly deserves the description ‘meteoric’, silken voiced London lad Sam Smith has quietly shifted himself into position as one of the world’s most in demand young stars. At the end of 2013 his modest achievements stretched to a BRITs Critics’ Choice Award and first place in the BBC Sound of 2014 poll, clear signs that we might be hearing more of him over the following twelve months; by February 2015 he was rejoicing in being a four times Grammy winning artist, which tells us things went better than anyone had hoped for. In which case, this two night stand at Glasgow’s spacious but not exactly massive Academy venue must count as a chance to see Smith in intimate surroundings, given he could
probably quite easily handle a sold out night at the Hydro. Regardless of the quality of his music, a series of post dance ballads with a moody electronic backing and some upbeat pop anthems, it’s Smith’s crystalline falsetto vocal which sets him apart – in which case, you might want to take this chance to be as close to it as possible. Born in London and raised in suburban Bishop’s Stortford, Smith moved back to the capital in his late teens, a period he recently admitted in a Rolling Stone cover feature was characterised by “one night stands” and “dodgy friends”, and also a loneliness which translated itself into his yearning single and biggest hit so far Stay With Me. One of a generation of singers who first make their mark on others’ songs, Smith
MUSIC | 17 emerged in 2012 with a guest spot on dance duo Disclosure’s single Latch (a bigger hit in the States than it was in the UK) and followed it up the year by guesting on Naughty Boy’s La La La, his first number one hit in the UK. Suitably introduced to the world, he owned 2014. His second and third singles Money On My Mind and Stay With Me had hit number one in the UK before spring was out, as had the debut album In the Lonely Hour, while the follow-ups I’m Not the Only One and Like I Can were substantial hits in their own right. It was Stay With Me, a love song with a hint of despair which begs a one night stand not to go, which comprehensively broke him in the States, and the album followed suit, both reaching number two. The third cousin of singer Lily Allen, a big admirer of fellow divas Whitney Houston, Adele and Amy Winehouse, and a newfound friend of Taylor Swift, it’s to these pop inflected torch singers that he owes the greatest debt. While fame has had its downsides (he’s been parodied on Saturday Night Live and had to give co-writing credit of Stay With Me to Tom Petty and Jeff Lynne for its similarity to their 1989 hit I Won’t Back Down), his old-fashioned reliance on the Voice overall is what will surely keep his career burning. Red Onion chef/patron John Quigley’s culinary career started in London’s West End before he took the opportunity to travel the world as private chef to rock stars such as Bryan Adams, Tina Turner and Guns N’ Roses. Since returning to Glasgow John established numerous successful restaurants including the multi-award winning Red Onion, which he continues to run along with his wife, Gillian. What’s the signature dish at the restaurant? Not so much signature dishes but signature ingredients, like scallops with chorizo and Asian inspired duck. Off duty, which restaurant in the city would you choose to go to for dinner? Asia Style for soft shell crab, Mother India for lamb achari and Moira Jaynes for mince and tatties. The strangest thing you’ve ever had requested? When I was on tour with Guns N’ Roses Slash once requested six reindeers on spits and twelve cans of pressurised cream. What advice would you give to anyone thinking of entering the industry? It’s a vocation not an occupation so make sure your heart is in it.

It seems not a week goes by without another bar or restaurant opening to tempt customers with the promise of Glasgow’s best burger. Here, Victoria Martin takes a bite out of the city’s latest dining revolution.

W
hen Paul Newman famously quipped, “Why have a burger when you have steak at home?” he wasn’t technically talking about food. But in liking burgers to fooling around with some lower grade lady when you had a premium 28-day wagyu wife at home, he helped cement the burger’s reputation as an inferior food choice. If some of Glasgow’s newest burger enterprises are anything to go by though, Newman may have had to eat his words. Over the last couple of years, the humble hamburger has gone from fast food to dish du jour for even the city’s fussiest of foodies - hardly surprising given the pedigree of some of the names behind the burgeoning burger spots. A perfect example is West Regent Street’s Burger Meats Bun, founded by Ben Dantzic and James Forrest, both from Michelin-starred backgrounds. They have carried that excellence in everything ethos to their burgers and the compact menu proudly declares the provenance of their produce. This commitment to quality is echoed by recent burger offering additions including high quality chains like Five Guys, Gourmet Burger Kitchen, Handmade Burger Co, NY
American Grill and Ed’s Easy Diner opening in the city along with independents such as Jacker de Viande and Smoak at Tribeca joining the likes of Burger Meats Bread, Buddy’s, Cocktail and Burger and The Meat Bar. But is the increasing number of burger restaurants ever really a good thing? Restaurant critic Ron McKenna certainly doesn’t think it is a bad thing: “So many quality burger joints side by side after years of mediocrity can only be good,” says Ron. “We are in the midst of a food revolution. The deafeningly loud, brash burger bubble.” Restaurant consultant Paul Latif thinks the burger boom is down to burger, and Glasgow, restaurateurs being people rather than critic pleasers. “Very few restaurants here are chasing Michelin stars but they are chasing customers, and burgers appear to be delivering those customers much to the chagrin of fine dining establishments.” Ron agrees saying, “It's injected life into a restaurant market that has been sleepwalking for years. It has also attracted an entirely new sort of customer to sitting down and eating out, the young.”
28 | FEATURES But for any wannabe burger billionaires hoping to make a quick buck from the young bucks, think again. The Glasgow burger bunch are a demanding lot who don’t do mediocrity, with many viewing an overdressed burger with suspicion and who look for quality not quantity. “I like fairly simple but creative burgers,” says burger connoisseur and blogger James Lees of James vs Burger. “I don't want a burger bigger than my head or one that's got so many toppings on it that the overall flavour becomes nondescript. “If it's stacked so high with toppings that I need to eat it with a knife and fork, it's probably not very good.” And while the big chains have been attracting a lot of attention with their entry into the city – Byron is the next rumoured big burger name being associated with Glasgow – James reckons bigger isn’t always better. “The great thing about our local independents is that they have a kind of creative freedom that chains can't match, so they're always trying new things and staying ahead of the curve. “That's what I love about our locals - each brings something a bit different to the burger scene here.” That something ‘different’ often comes in the shape of toppings and if your last bite of burger was accompanied by

a slice of processed cheese, be prepared for the gourmet upgrade. Spanish black pudding, candied bacon and chipotle mayo are options at Smoak while toma, raschera, mojo picon and salsa verde are all found on the toppings list at Burger Meats Bun. As with everything, normally gourmet options come with gourmet prices so is a high price patty a good indicator of quality? Not necessarily thinks James. “If you gave me a £2 burger and tried to tell me that it was the best burger in Glasgow, I'd be a tad suspicious but there are chains here that are charging £10 or so for a burger on its own, yet I can walk along the same street and get a much better quality burger with a side or a drink for less.” The confirmation that cheaper can be better may not have pleased Paul Newman but the late great actor knew more about pasta sauces than beef patties and maybe, just maybe, he had never experienced a really good burger…

lasgow, as all who know the city are aware, has a spectacular array of architecture and is renowned for its design scene and unique brand of urban glamour, both cosmopolitan and gritty. Unlike other cities with a wellknown design heritage – London, Berlin and Copenhagen among them – there has been no publication to showcase the interiors of Glasgow’s built heritage. A new book Glasgow Interiors by Helen Kendrick and Neale Smith offers now a glimpse into a selection of Glasgow’s most impressive, yet largely uncelebrated, historic interiors. Featuring 33 of
the city’s most alluring buildings – both public and private – Glasgow Interiors tells the story of 150 years of interior design in the city. Here, author Helen Kendrick picks a few of her favourite buildings featured in the book. Great Western Terrace A large-scale conservation project of this Alexander ‘Greek’ Thomson-designed home back in the 1990s restored the building’s interior to its original splendor. It, unusually, is still one property rather than having been split into flats and, as

such, is a rare reminder of the family homes enjoyed by the well-heeled West End Victorians. The stairwell leading from the reception area to the first floor gallery is top-lit by the amazing cupola, which brings the dramatic red and gold colour scheme alive. Clydeport Offices ‘Clydeport’ is private offices for the trustees of the Clydeport company and is cited by many to be the most impressive of all Glasgow’s interiors. The decorative glass within the building is by Stephen Adam, the city’s most renowned stained glass artist whose work can be found across the city including in City Chambers. The Trust Hall features walnut walls, gold-leafed sculptures and stained glass representing shipbuilding, commerce and engineering.
Grand Central Hotel A seat in the first floor Champagne Bar of the Grand Central, overlooking the station concourse is a perfect spot to wait for guests to arrive from the train. The gorgeous geometric patterned tiled floor in the bar was covered with a central bar island for many years and was only uncovered during a recent phase of renovation; the space has now been reconfigured to let the floor become a key feature. One Devonshire Gardens This grand hotel used to be five townhouses; numbers 1-3 were first rejigged into a hotel in the ‘80s, followed by number 5, then in 2006 number 4 was bought as the ‘final piece of the jigsaw’, joining up the whole terrace. Number 4 used to be home to Sir William Burrell, Glasgow shipping magnate,

into the history of popular entertainment in Britain. At one point in its past, there was a basement zoo complete with a chain-smoking chimpanzee, and rooms containing weird and wonderful attractions from the world’s tallest man to the world’s ‘ugliest woman’.
City Chambers City Chambers is beyond opulent. Ceilings decorated with gold leaf, mosaic floors and the sweeping, polished white marble staircase (reputedly the biggest marble staircase in the world) are flooded with light from huge stained glass domes above. There are only two places in Western Europe with full marble staircases; Glasgow’s City Chambers and the Vatican in Rome.
Cottiers The interior of Cottiers, originally Dowanhill United Presbyterian Church, dates from 1865 and was totally ahead of its time. The designer, Glasgow-born Daniel Cottier, was an artist/creative-extraordinaire and the Victorian equivalent of modern design entrepreneurs like Terence Conran. Cottier went on to have a successful international career, opening shops in London, New York and Sydney, and is argued to have paved the way for the emergence of Glasgow as an international centre for progressive design.
The Britannia Panopticon Music Hall The Britannia Panopticon is one of the finest surviving early music halls in the world. It has been packing visitors in since the 1850s and the theatre interior gives great insight

I
nspired by last year’s Referendum, I figured it was high time I got around to exploring my homeland. The Isle of Skye has always been on my bucket list so despite the forecast for torrential rain, we decided there was no time like the present. Wellies, woollies, and waterproofs packed, Nick and I set off from Glasgow, heading for the Skye Bridge at Kyle of Lochalsh. Not wanting to stray too far from our city comforts, we’d booked into Canowindra, a luxury B&B just outside Portree. On arrival we were welcomed by owners, Rick and Georgie, served afternoon tea and shown to our fabulous room. It was more like a boutique hotel with stylish décor, a huge bed and so many thoughtful touches including a roll top bath and homemade cookies. After a five hour drive it was the perfect place to unwind. That evening we explored Portree, which didn’t take long as it’s very small considering it’s the main town, but there
was a great choice of bars and restaurants and a vibrant buzz about the place. We made our way to Scorrybreac, a pop-up restaurant run by the Munro brothers Niall, the cook, and Calum, the host, in the dining room of their family home. The menu was bursting with local produce, the food was outstanding, and it was all incredible value for money with three courses for only £35. BYOB too, an added bonus. The next morning, over a hearty breakfast, Nick and I planned a tour of the north of the island, taking in the Old Man of Storr, Kilt Rock, The Museum of Island Life, Dunvegan Castle and on to the Fairy Pools which are not to be missed. For dinner that night we indulged at Kinloch Lodge, the family home of Lord and Lady MacDonald which now runs as a hotel, restaurant and cook school. In contrast to our contemporary evening the night before, this was good old fashioned fine dining at its best. We enjoyed pre dinner
WEEKENDERS | 59 drinks and amuse bouche in the drawing room next to a roaring fire and then the exquisite five course menu, £70 per head. The following morning we took a Bella Jane boat tour from Elgol. We chose the more adventurous AquaXplore; a four hour tour of the Inner Hebrides taking in Soay, Canna and Rhum. An exhilarating experience and the skipper’s stories were entertaining and informative in equal measure. Tours start from as little as £14. A couple of days in Skye felt like a week’s holiday and without a doubt we’ll be back in the not too distant future. hen I lived in London, it was a Sunday ritual to be up and out of bed by 9am and ensconced in a favourite brunch spot no later than 10.30am. There I’d stay contentedly stuffing my face and drinking far too much coffee until noon – at least. It’s a tradition I attempted to maintain when I first moved back to Glasgow but, somewhere along the way, those long, leisurely brunches transformed into a homemade fry up while watching Saturday Kitchen Best Bites on the sofa. James Martin has a lot to answer for. Feeling deeply nostalgic, I made the suggestion of heading out for breakfast to my husband who wasn’t overly impressed by the idea. The realisation that he’d have to dress before noon stunned him but dress he did and off we headed to The Glad Café in Shawlands. The breakfast menu features a good selection of favourites with a gourmet twist. The options for eggs include Benedict served with Serrano ham, and Alba style, served with peat smoked haddock, both £5.95. For traditionalists, a filled morning roll will set you back £2.50 with the option to add bacon, a choice of sausages, haggis, black pudding or a
potato scone at 90p each, and Scott’s Porage Oats come with a variety of toppings including winter berry compote, £3.90, and maple flavoured golden syrup, £2.90. For toast fans but gluten foes, gluten-free bread is on offer too. Despite my good intentions to go for a healthier option, it was the brioche French toast with winter berry compote, £3.95, that I heard myself order while my husband choose the Italian sausage and chorizo plate, £6.95. The food arrived pronto with his nibs’ Med sausages accompanied by spicy scrambled eggs and a side of sundried tomato toast, while my French toast threatened to give way under the weight of rich, sticky berries and plump brambles. Both brekkies were devoured with gusto. A couple of flat whites later and a full going over of the papers, we were sated and good to go with my hubby reluctantly agreeing that Sunday brunch at The Glad Café is well worth getting dressed for.
