Cool for kids Hot in the kitchen 4 islandtime January/February 2014

Family travel is without question one of the biggest sectors of the South PaciďŹ c market, and if there's one destination set up to meet the needs of Mum, Dad and the kids, it's Fiji. We also take a look at the thriving food scene in Fiji and cover some of the eateries taking dining to an entirely new level.

When you're travelling with children, one thing you want above everything else is ease! To be more specific, ease to travel to your destination, transfer from the airport to your accommodation, room layouts that make fitting everyone in easy, resorts that make entertaining the kids easy, and so on. In other words, the best family holidays are the ones where the children have the time of their lives, and their parents enjoy some much-needed downtime..

A fine family tradition Fiji has been a tourist destination longer than any other South Pacific nation, and over the years the tourism industry has fine-tuned everything needed to make a memorable family holiday happen. In fact, they've been catering to the family market for so long there are now three generations of the same family coming to Fiji. The grandparents started it by going to the islands, then they brought their kids, and now those kids have their own children and are bringing them, too!

The naturals A crucial ingredient in Fiji's recipe for success is its people, in particular the resort staff who keep visiting kids entertained and safe during their stay. It doesn't take long to work out that Fijians genuinely love children. Parents with babies or toddlers can leave their little ones with the wonderful Fijian nannies and have peace of mind they're in safe hands. The older children aren't left out either. Most resorts have an activities team who are experts at turning even the most basic event into a riot - like an egg and spoon race that ends up with everyone rolling around on the ground in fits of laughter!

Family friendly. Price friendly

a fun family holiday. The pools are also fantastic, but the star of the show is definitely the white water tunnel that provides hours of slip-sliding entertainment. Sheraton Villas is another Denarau resort that's been recognised by Holidays With Kids. The two-bedroom villa suites and three-bedroom seafront villas are ideal for accommodating kids, and the kitchens provide the flexibility to feed the troops “at home”.

For many, taking the kids to Fiji sounds like a costly operation. However, there are a huge variety of choices to cater for most budgets. In fact many operators offer discounts and special deals for families. That might be free meals for children under a certain age, or children eat free with their parents, or the children stay for free when they share a room with Mum and Dad.

Sitting at the northern tip of Denarau is the Fiji Beach Resort & Spa managed by Hilton. Over the years the resort was has been recognised as one of top family resorts in Fiji. They have a host of family-focused facilities, such as the complimentary Kids Club and family friendly accommodation - particularly their two and three bedroom rooms which are ideal for family stays. Plus kids up to age 11 dine for free off the kids menu in Nuku and Maravu restaurants when accompanied by a paying adult and visiting between 12-2pm and 5:30-7:30pm.

Making it easy in Denarau

A short drive south of Denarau and a three-minute boat ride from the mainland is the Sonaisali Island Resort. Sonaisali is a picture-perfect escape that prides itself on being a property where family values are held dear, and where children are looked after by companions, and not just minders.

The first stop for many Fijian-bound families is Denarau Island and its fine selection of resorts. It’s a short drive from Nadi Airport and once you've checked in, you don't have to move if you don't want to. It's that easy.

It's a common theme throughout Fiji, but it always rings true. The super-friendly staff are fantastic with children of all ages and the kids are spoilt for choice when it comes to activities.

One of the most popular family resorts is the Radisson Blu. In 2013 it was named in Fiji’s Top 10 Resorts for Families by Holidays With Kids magazine, one of the leading family travel magazine and websites in Australasia. The kids' club caters for four to 12-year-olds and is all set up for

The kids’ club has a huge variety of activities, including pirate night, learning to speak Fijian, mini-aerobics and a spoon-diving competition. On top of that, they have Fiji's only Paintball field, which older children just love. Sonaisali has imported all the protective gear and equipment, so parents can relax, knowing their children will come back in one piece!

RECONNECT WITH YOUR FAMILY AT OUTRIGGER ON THE LAGOON • FIJI Rediscover peace of mind at Outrigger on the Lagoon Fiji, where you can relax certain in the knowledge that your children are safe in the gentle care of their Fijian Meimei nannies or at the Kids Club. This allows you to enjoy the delights of the newly opened adults-only lap pool, lagoon pool and swim up bar; indulge in the Bebe Spa Sanctuary; enjoy a cocktail and Pacific views at hilltop Kalokalo Bar; and experience fine dining at the resort’s award-winning Ivi restaurant. With year-round deals and Outrigger’s famous ‘Kids Eat Free’ program, now is the time to reconnect at the multi-award-winning Outrigger on the Lagoon Fiji.

Malolo Island Resort

Fire lighting on Denarau Island

Coral Coast family time Down on the Coral Coast, The Outrigger on the Lagoon has also earned a reputation as a great place to take children. The resort recently won the TripAdvisor Travellers' Choice Award for the Top 3 Best Resorts for Families in the South Pacific. The Outrigger has two children’s clubs. Little Riggers is for those aged between three and seven, and Beach Riggers is for the eight to 12-year-olds, so children don't get stuck doing anything they're too “old” or “young” for. Once again there's a huge variety of activities. Little Riggers has Groovy Movie Time, colouringin competitions, Riggers Disco, pass the parcel and even visits to Kula Eco Park to meet Gweenie the Iguana at the. The older ones can make airplanes, go on scavenger hunts and put on a meke performance. There are also some great activities for the 13+ group. These include making spears, an adventure on the Sigatoka Sand Dunes, a tour of the Tavuni Hill Fort, or hikes to Bebe Hill or the Enchanted Pool. Plus there's a student exchange trip to a local Fijian high school designed to be culturally enriching, educational, interactive and fun!

Going further afield Just an hour or so on the ferry from Denarau is Malolo Island Resort, which is well-recognised as being one of the best family resorts in Fiji. Without a doubt, Malolo's appeal comes from its ability to cater for families, with a separate pool, an innovative children’s club programme, an entertainment lounge and a dining area for children 13 years and older. The Kids’ Club in Tia's Treehouse, set on the hillside under an enormous mango tree, is definitely their centre of activity. It’s home to a host of equipment and games and has a fully fenced playground. Malolo's Yanu Yanu programme is also a real feature and gives children the opportunity to live like an islander for one or two days, or a whole week! Free for children between four and 12 years old, the programme mixes a lot of fun with education about environmental issues, the culture and the history of Malolo and Fiji in general. (Who says kids can't learn anything if they're out of school?!)

The Radisson Fiji Kids Club Each day has a different theme such as natural environments, Fijian culture and arts and crafts, and lots of different activities like endangered species tours, herbal medicines, language lessons and visits to the local primary school and neighbouring islands. Malolo even consulted with the Mamanuca Environmental Society to make sure the educational content of the programme was accurate, which shows how much this means to them. Just south of Malolo is Plantation Island, without question one of Fiji's most popular family-friendly resorts. A major drawcard is that Plantation offers a five-star location at an affordable price, so it's no wonder families love it. The island has loads to keep teenagers busy, with mini-golf, volleyball, tennis, banana boats and safe swimming in the lagoon. The younger ones have more activities than you can throw a coconut at - a jumping castle, fish feeding and t-shirt painting are just a few. The resort can also arrange customised activities for family groups, such as private beach barbecues at the end of the beach or private dining elsewhere. When it's time for Mum and Dad to get some time on their own, they can simply call in one of Plantation's babysitters. Perfect!

Happy families For ease, options and a holiday everyone will remember, it's very hard to go past Fiji. The islands' properties and operators are experts at meeting the needs of Kiwi families, and doing it with a ton of enthusiasm and genuine care. It's true, Fijians have a natural affinity with children, which makes the holiday so much easier and more enjoyable for Mum and Dad. And at the end of the day, that's what this is all about - a holiday everyone can enjoy.

Your very own touch of paradise... Plantation Island Resort is located just 15km from the mainland on beautiful Malolo Lailai Island. Plantation is a true Fijian paradise and has all the ingredients for a great family holiday.

Fiji is HOT in the kitchen

ŠCastaway Island

8 islandtime January/February 2014

Good food has always been one of the essential ingredients for a great holiday. In recent years a culinary revolution has taken place with Fiji’s resorts and restaurants putting a fresh focus on what they're serving guests.

1808 – the perfect number Castaway Island in the Mamanuca Group is one property that's setting a new standard of Fijian cuisine. The kitchen creates its magic under the guidance of the international award-winning chef, author and travel writer Lance Seeto. Lance has been at the resort for just over four years, although it wasn't quite planned that way! "I had only intended to stay for one year but like a lot of expatriates who come to work in Fiji, I fell in love with the people, the culture and the lifestyle," said Lance. Being of Australian-Cantonese heritage, Lance draws a lot of his culinary influences from Chinese and South East Asian cuisine. "The fresh, tropical produce in Fiji lends itself to a lot of Thai, Vietnamese and Chinese fusion," he says. This sensational fusion of cultural cuisine is best experienced at 1808, Castaway's “feet in the sand” al fresco dining which takes its name from the year the first Chinese immigrants landed in Fiji. Rather than a fine dining experience, 1808 is best described as a cultural journey that goes beyond the normal resort experience. The menu incorporates ancient Fijian techniques, including wood-fire cooking, seawater infusions and freshly squeezed coconut milk, and is based on the traditional gluten and dairy-free South Pacific diet. They also source more than 80 percent of their produce locally from farmers across the main island from Suva, Nadi, Sigatoka and Lautoka. We work closely with local farmers to ensure a consistent supply of mainly organic produce from the land and the sea,” says Lance.

Most of our chefs hold the same culinary certificate as I do, with Australian TAFE (their vocational educational provider), assisting us to train on the island.' Needless to say, the hard work and culinary expertise is paying off for Castaway, with 1808 being shortlisted as the Best Restaurant in Fiji at the coming AON Fiji Excellence in Tourism Awards. Lance's favourite dish at Castaway is steamed whole coral trout (caught just off the beach), with finely sliced Fijian ginger, spring onions and a sweetened soy sauce with seared sesame oil - obviously a must-have for any visitor.

You could also say the kitchen staff are locally grown! 'We employ more than 30 staff, including cooks, chefs and stewards. All of them are Fijians, trained to Australian standards.

Likuliku - the love of good food Just across the way from Castaway is the exclusive, couples-only resort of Likuliku, where Executive Chef Ihaka Peri and his team deliver an exquisite culinary experience. Diners at Fijiana Restaurant, the food hub at the resort, enjoy magnificent views over the lagoon, gardens and pool, and there are private spaces which are perfect for a romantic meal. The clean, fresh and creative cuisine showcases the finest local produce, with a real emphasis on the local seafood, lush tropical fruit and the different cultures that have shaped Fiji and the South Pacific. The dining concept changes daily in a mini-degustation style for lunch and dinner, combined with a variety of themed evenings showcasing local and cultural elements. They also cater to most dietary requirements and with notice, the staff can provide specialty elements of certain cuisines, particularly Indian and Chinese dishes.

Outstanding at The Outrigger

Outrigger on the Lagoon

Down on the Coral Coast, Outrigger on the Lagoon is another place to find exceptional dining options. A Nadi local, Shailesh Naidu, who runs the kitchens, started at the resort 13 years ago and worked his way up the ranks to become Executive Chef. Shailesh directs around 100 staff, including kitchen managers, student chefs and stewards, who work across the resort’s six different dining options. They include some of Fiji’s most highly awarded chefs, such as the 2012 Fiji Chef of the Year and 2013 Fiji Junior Chef of the Year. Not to mention Shailesh himself, who won the prestigious Frontliner of the Year Award in 2009. 'There’s a great deal of discipline and pride among the team. They all try their best and strive for positive results. I have a very young team and most of them came out of school and started as trainees here. I’m lucky to have the ‘A’ team in Fiji,” says Shailesh. Needless to say, the food at the Outrigger on the Lagoon is outstanding. The Ivi Restaurant, in particular, has consistently been recognised as one of Fiji's top fine dining experiences.

Bravo for the Navo Another Coral Coast eatery making a name for itself is Navo Restaurant, the signature dining experience of the InterContinental Fiji Golf Resort & Spa. Superbly designed with impressive wooden doors and a cool combination of modern and Pacific styles, Navo sets the scene perfectly. This restaurant opened in June 2009 and has built a reputation as being one Fiji's best. In fact, Ritesh Kumar, the Chef de Partie in Navo, was named Chef of the Year 2013 at the annual Moffat National Salon Culinaire awards, with a total of two gold and two silver medals. With a total of 360 chefs from around the country competing competition was fierce and this win was a great reflection of the quality staff in the Navo kitchen. Like many of its contemporaries, Navo is committed to using top quality local produce and only a small percentage comes in from overseas. Executive Sous Chef Takahisa Erikawa challenges and empowers his team of dedicated and professional chefs to design and deliver exquisite food, with an emphasis on local flavours.

First Landing

Crusoes – made for cruising

Beach comes with swaying palms, tropical gardens, thatched timber decks and coral sand platforms. And this beautiful setting has great food to match.

If you're after a beautiful location at a budget friendly price, Crusoe's Retreat on the Coral Coast is a great place to kick back and enjoy some fantastic Fijian fare. Their delicious tropical buffet breakfast are included in the room rates and they're the perfect way to kickstart the day. Tuck into some fresh tropical fruit, coffee or tea, juice, fresh baking, cereals and toast and you're ready for another day in paradise! Fresh fish cooked in various delicious ways is always on the menu, plus they cook a traditional Lovo Buffet several times a week.

Under the eye of Executive Chef Darren Braddock, who is known as “Chef Daz”, the team creates an array of local and international delights to suit any palate. The menu has dishes from Fiji’s diverse ethnic origins, including native Fijian, Indian, Chinese and European. However, the star of the show is definitely the seafood, which is cooked fresh as can be.

Raffles – a rich history Raffles Gateway Hotel is Nadi’s flagship hotel and has been hosting families, couples and business travellers since 1969. It’s also a great place to dine. Conveniently located within walking distance to Nadi International Airport, Raffles has two eateries - Palm Court Al Fresco Café which serves local and european cuisine and their Bure Restaurant which provides ala carte fine dining. They have an extensive menu, with delicious specials such Grilled Walu Steak.

Make First Landing a first stop Turn left as you leave Nadi International Airport (instead of right for Denarau Island), drive for 20 minutes and you'll come to First Landing. This property started life as a popular beachside restaurant before it became a resort, so needless to say, they know a thing or two about great food. Their lovely Mai Kana Restaurant overlooking the glorious white sand of Nalamu

The highlight is First Landings’ famous lobster dish, or, to be more specific, a succulent half lobster (600gm) finished with mornay, thermidor or garlic parsley butter sauce, plus a side of fries and a green salad - a fine feast indeed, and well worth the effort of making your way to Mai Kana.

Dining on Denarau One of the best things about staying on Denarau is the side-by-side set-up of each resort, because you're never more than a short walk away from a smorgasbord of eating options. At the Fiji Beach Resort, managed by Hilton, you'll find upmarket Nuku and the Asian-inspired cuisine at Maravu. The next resort along is the Westin, where you'll find Steakhouse, by the celebrity chef Peter Kuruvita. As you can probably guess, it’s well known for its succulent steaks. Stroll along to The Sheraton and you'll discover Ports of Call, which is considered to be one of Fiji's fine dining institutions. And for first-class seafood, stop in at the Flying Fish. A few more steps along is the Radisson Blu and its premier dining experience at Cross, which has earned a reputation as a standout along the Denarau strip. The cuisine is modern but with a Fijian twist, and it’s served against a stunning ocean backdrop.

Port Denarau dining options While the Denarau Island resorts have an amazing variety of dining options available, sometimes it's nice to get out and about. Just a minute or two away by taxi or the open air Bula Bus is the busy Port Denarau centre which is home to numerous eateries. Here's a brief summary of what's on offer: Cardos: This is an institution at Port Denarau, and is the place to go if you're after great food and great views. Cardo's is well known for its prime beef steaks, which they bring in from New Zealand. Steak specials are on the menu every night. Try the delicious Surf ‘n Turf prime sirloin with garlic butter lobster tail or prawns with creamy mash potato, it's a classic dish. Another favourite is the giant seafood platter, which includes an entire lobster, squid rings, prawns, mussels and fish cooked in traditional flavours, served with salad and fries. Make sure you bring your appetite for this one. Apart from The Original Grill, Cardo's serve breakfast, lunch and dinner which includes, burgers, salads, Chinese, seafood, coffee, fresh juice, imported beer, pizza, a children’s menu and everything in between. They even fillet, cook and serve fish that tourists catch on their fishing charters. On top of that, they often have a band playing, which adds to the festive atmosphere.

Cardos Bar & Restaurant

Hard Rock Cafe: These rocking restaurant/bars have made their mark the world over and the Fijian version is no different. Tasty favourites like nachos, blackened chicken pasta, huge burgers, grilled steaks and fish take pride of place on the menu. Every night is dance night and live bands do their thing on Friday, Saturday and Sunday. Indigo: Indian culture has had a significant influence on Fijian cuisine, so if you're after a bit of spice, this is a great spot to dine. You'll find all your favourite Indian dishes - Butter Chicken, Rogan Josh and Lamb Korma, plus a selection of Chinese, Thai and Malaysian dishes to choose from. Bonefish: This haven for seafood lovers prides itself on dishing up some of Denarau's freshest, most creative seafood dishes. With a menu that comprises Flame Grilled Marlin, and Seared Sesame and Soy Tuna, even the fussiest seafood fan should walk away satisfied. Nadina: Nadina is the place to go for some authentic Fijian fare. It serves up a selection of tasty Fijian cuisine, along with its signature dish, The Kovu. This special meal is created using the traditional cooking method in which your selection of meat or fish is slow-cooked in banana leaves simmering in freshly squeezed coconut cream flavoured with freshly grated tumeric. It is served with local root crops such as cassava or taro. "Dining here and enjoying a real Fijian meal reflects our culture, which allows you to feel, taste and experience island-style cuisine," says Amy Subam from Nadina's. Regardless of your taste, Fiji can provide a culinary experience to match a wonderful holiday. While we’ve covered some of the Fiji’s food highlights, (and they are a fantastic place to start), visitors should take the opportunity to explore Fiji’s multitude of dining delights for themselves.

Cook Islands

KOCI 2013 The Cook Islands host the world In early December over 60 travel wholesalers from around the world converged on the Cook Islands for the fourth annual Kia Orana Cook Islands forum. The busy forum provided a fantastic opportunity for local hotels, resorts and other tourist operators to meet, impress and negotiate contracts with key contacts from New Zealand, Australia, USA, Canada, China, UK, Italy, Spain, Sweden, Finland, Germany, Switzerland, the Netherlands and Austria. It also gave the local travel industry the chance to update wholesalers on recent developments, and more importantly, give them a first hand experience, so they could go back home with a lasting impression! A packed National Auditorium on Rarotonga was headquarters for the face-to-face business meetings which tied in with the numerous site visits around Rarotonga and a visit to the heavenly Aitutaki. As well as that, optional excursions to the smaller islands of Atiu and Mangaia were available. The general feedback from the event was extremely positive and as marketing tool for the Cook Islands it was judged to be a huge success. Well done the Cook Islands and we hope you have a prosperous 2014.

Aviation company flies to sunny skies Aviana Airways Corporation has purchased one of the pioneers of aviation in Fiji in the 1980s, Sunflower Aviation, which developed new airstrips and routes to support the growing tourism industry. Aviana is the parent company of Inter Island Airways (Fiji) Limited, which already has a licence to provide domestic air services.

The purchase includes the Pacific Flying School, an ANR 145C Exposition Aircraft Engineering and Maintenance station, charter services and ground handling operations. Barney Sene, the Chief Executive Officer and President of Aviana Airways and Inter Island Airways, said there were immediate plans to introduce United States’ Federal Aviation Administration pilot training and a US aircraft repair station in Nadi. Discussions on the sale began with the founder of Sunflower Aviation, the late Don Collingwood. "Don sought out a partner who shared a common vision to expand and grow the Fiji aviation and travel market,” Sene said. Sunflower Aviation, operating as Sun Air, was sold to Air Pacific (now Fiji Airways) in 2007 and rebranded as Pacific Sun. "We intend to expand the Sunflower brand and its operations to support Inter Island Airways and other air operators in Fiji and the South Pacific.”

Tourism training will boost business Seven local tourism operations are learning how to promote and market their companies internationally in partnership with travel wholesalers and airlines in the Tourism Export Ready Training Programme. Andrew Dineen and Angela Stewart, from Parker Travel Collection in Australia, again directed the training programme, which they first conducted for the American Samoa Visitors’ Bureau in 2011. The seven participants are Two Dollar Beach, Tisa’s Barefoot Bar, Pago Airport Inn, Moana O Sina Resort, Inter Island Airways, Pago Pago Tradewinds Tours and Turtle & Shark Legend Site. “Capacity building is the key to growing our tourism industry,” said the Director of the bureau, David Vaeafe. “If our members have those necessary skills to do business at a regional and global level, then their businesses and our economy will thrive and grow,” Vaeafe said. “Parker Travel Collection developed a specific training programme for us two years ago which has been very successful for the initial participants.” ©Moana O Sina Resort

The implementation of this year’s programme was made possible by a grant from the US Small Business Administration in Washington DC.

Tiotala features in top travel trade mag “For two Samoas, a Singular Beauty” is the title of a feature article that appeared recently in Travel Weekly, the largest travel trade magazine in the United States. The Editor, Shane Nelson, who is based in Honolulu, visited American Samoa and Samoa last year on a week-long familiarisation visit with a group of travel agents from California and Hawaii. In his introduction, Nelson writes about stopping for water along a mountain trail on Tutuila and hearing a cheerful bird call pierce the rainforest. “That’s the tiotala,” Nelson quoted Pua Tuaua, a ranger working for the American Samoa National Park as saying. “When a group of them come together and give a certain cry, rain is coming. Even today, we still listen for the tiotala to tell us what kind of a day it’s going to be,” Tuaua said. Nelson’s visit was organised by the American Samoa Visitors Bureau in conjunction with Hawaiian Airlines, and supported by a grant from the US Department of Interior Office of Insular Affairs. ©American Samoa Tourism

New Caledonia

Pool reopens in time for summer After four months of renovations, the new pool and pool area at the Nouvata Parc Hotel has reopened in time for the summer. The pool is located in the middle of the 300-room hotel complex surrounded by three hotels - Le Pacifique, Le Nouvata and Le Parc. It borders the lobby and reception area on one side and Le Parc restaurant on the other. The area features an adult pool, a separate childrens’ pool, a large wooden deck for sunbathing and relaxing and extensive tropical gardens. The new pool area will provide a backdrop for the Nouvata Nui Seafood Buffet and Tahitian Dance Show on Friday evenings, as well as other functions.

Sculptors air their skills The paths and open areas of Duck Island, 10 minutes by water taxi from Noumea, will be filled with unexpected surprises during the summer as about 24 local New Caledonian artists show their sculptures during the 3rd Open Air Sculpture Festival, which runs until February 2.

Something old, something new, something borrowed... Melanesian tradition will blend with French influences in the new Sheraton New Caledonia Deva Resort & Spa, which opens on July 1, 2014. Set in Bourail on the central western coast of Grande Terre, a two-hour drive from Noumea, the resort has been designed for maximum comfort, with 180 rooms, 60 bungalows, an 18-hole golf club, a health club and spa.

Visitors will be able to meet the artists and learn about their works through guided visits, workshops, educational presentations and a photographic competition, or reflect on the hundreds of works already on permanent display on the islet.

Its location will make it an ideal base for exploring the spectacular marine life on the reef that lies just off the beach and forms part of the World Heritage coral reef system.

Works from artists including Adjé, Mathieu Venon and Nenad Todorovic will be a highlight of the festival. Originally from Morocco, Adjé explores metal element in all its forms, including bronze, copper and steel, sometimes combined with wood and glass.

Guests will be able to enjoy a wide range of aquatic activities, play beach volleyball, go fishing and kayaking. Hikers can walk on jungle trails and explore old mining sites, cyclists have plenty of stress-free options, and horse riders can ascend into the mountains. Meanwhile, the stay-athomes can soak up some sun on the beach or by the pool.

Mathieu Venon connects his Western influence with Oceanian art forms through paintings, sculptures and installations, while Nenad Todorovic’s harmonious sculptures in metal, glass and stone appear to stretch to the sky

Suzanne Kenyon of NewCal Events Ltd says she can provide a onestop-shop for organising anything from a Fantasy Island dinner on an exclusive island with fireworks to a Parisien Versaille theme at the Tjibaou Cultural Centre or a decadent French gourmet tour. Kenyon, who is the Owner/Operator, says she changed the branding from Transat Tours to reflect her decision to concentrate on inbound destination management services within the MICE market. She was previously also involved in the freeand-independent traveller market. "By changing our focus slightly and targeting what we do best, a rebrand was inevitable to grow business further." Kenyon says every programme is created especially for each individual client and their specific requirements, and she has developed strong relationships with local suppliers.

It’s a huge honour,” says the Owner of Poppys on the Lagoon resort, Joanne Wade. “We took the decision to bring our own family here in Vanuatu some 10 years ago with the intention to operate the resort as a place families, groups and couples could enjoy from all over the world.” The resort now has several villas and apartments, three swimming pools, an outdoor restaurant, outrigger canoeing on the lagoon and workshops by a resident artist. “Our staff at Poppys are the reason I’m sure our guests return many times for their annual holiday here in Vanuatu,” she said.

Island dish wins culinary comp A dish of pan-fried poulet turned to gold for pastry chef Lina Singo of the Holiday Inn Resort at the Origin Culinary Arts & Hospitality Show. The judges, international chef Terina Ward, of New Zealand, and chef and cookbook author Robert Oliver, who was in Vanuatu for the premier screening of the Real Pasifik Vanuatu television series, said they could not fault Singo’s dish, which she entered in the island kakae class at the show, which ran from October 21 to 25. They said her cooking, presentation and interpretation were first class. When the resort’s executive chef, James Robinson, told the 28-year old she had won with 100 points, Singo didn’t believe him. The kakae competition is where ni-Vanuatu chefs have the opportunity to turn a dish that would normally be cooked at home into a top restaurant dish. Singo, who is from West Ambae, said her inspiration for her dishes comes from just looking around her. Her dish of pan-fried poulet topped with mele nangai nut and rolled prawns, demonstrated her passion for using local produce. The Holiday Inn Resort won numerous other awards at the salon culinaire, including three gold medals, 10 silver and four bronze medals, and was only one point off winning the Restaurant Challenge, a very, very close competition in the end. Maylin Dan, who is the Head Chef at Chantillys, won the Moffat Senior Chef of the Year for the second time. Dickson Enoch, who is a Commis Chef at La Tentation, was awarded the Victorinox Junior Chef of the Year The Senior National Culinary Team for 2014 is Maylin Dan, Bill Leonardo, (Holiday Inn) and Alick Niavi (Iririki Island Resort). The Junior Chefs team is Dickson Enoch, Roselyn George (Iririki Island Resort) and Christopher Bulememe (Coconut Palms Resort.

Summer changes Chef creates a stir at Warwick Hotels December 12 was an exciting time for staff at the Warwick Hotels in Vanuatu when they were able to return to the new Lagoon Terrace kitchen following an early handing over from the builders. New menus followed after an initial period of relocation and settling in. The culinary team says it has also created a delicious menu for Christmas Lunch and New Year’s Eve Dinner. The new Rooms Division Manager at the Warwick Hotel is Travis Moriarity, who succeeds Rohit Kant, the new General Manager at Warwick Tokatoka.

Tamanu on the Beach’s new Executive Chef, Cameron Morrison, is creating a stir in Port Vila with the introduction of his new a la carte and function menus based on edgy fusion food of international quality. He is delivering a modern dining experience in taste and presentation for guests at the resort. The signature dishes of coconut prawns, lobster mornay and Grand Marnier souffle are still available, but the menu prices have been adjusted to ensure the quality dining experience is more affordable. In a recent restaurant review for The Independent, restaurant critics Tony and Elaine Wilson said: “We were impressed by (Morrison’s) enthusiasm and excitement. We’ve always had a soft spot for this restaurant since we first visited many years ago, but this latest experience arguably topped them all.”

The a la carte Wild Ginger Breakfast, with local fresh fruit and pastries hot breakfast cooked to order, is now a child-free zone at the hotel. Guests can enjoy the ambience of the wild ginger deck. Champagne is optional.
