For this issue we have the dynamic "Jackyard’s Burger," a visionary eatery in the heart of Goa. Known for its unique flavours and sustainable ethos, Jackyard Burger redefines the traditional burger experience, integrating innovation with community engagement. Each bite promises not just delight but also a taste of the commitment to environmental stewardship.

Following suit, we delve into the inspiring journey of Althea Viegas with "Baked and Loaded." Transitioning from a home baker to a celebrated café entrepreneur, Althea’s story is one of resilience and culinary excellence, motivating aspiring chefs to embrace their culinary passions with fervour and dedication.

"Blue Heaven," nestled in South Goa, offers more than just a meal—it provides a narrative woven with tradition and innovation. This establishment serves as a cornerstone of community engagement, where every dish tells a story and every visit feels like an event.

Diving into a cooler, healthier treat, our "Alphonso Mango & Fox Nuts Porridge" represents a fusion of traditional and modern tastes. This sugar-free, chilled porridge combines the lush sweetness of Alphonso mangoes with the crunch of fox nuts, offering a nutritious refreshment to beat the tropical heat.

Lastly, we are excited to highlight "IHCL Celebrates the Flavour of the Season in Collaboration with Cashew Fest Goa 2024." From May 10th to 12th, explore a series of curated culinary events across IHCL hotels, featuring innovative cashew-inspired delicacies and cocktails, celebrating the rich cashew culture of Goa.

Introduction

Goa, the tiniest state on the western coast of India, boasts golden pristine beaches, palmfringed avenues, flavourful food, delicious Portuguese-influenced sweets, and warm, hospitable people. Also known as the Ibiza of India for its partying. A tropical paradise of flora and fauna, from the very famous 'almi' (mushrooms) endemic to its forests, that grow only on the red mud anthills, to the solar prawns that are fished immediately after the monsoons, Goa is unique. Tourists are also attracted to Goa for its cultural heritage - from the famous old Portuguese churches like Se Cathedral in Old Goa, the 16th Century Safa Masjid in Ponda and Shree Mangesha Temple in Mardol, the legendary Arvalem or Pandava Caves where the Pandavas of the Mahabharat fame lived, to its two unique festivals - Carnival and Shigmo. Goa plays host to many festivals - the International Film Festival of India that promotes cinema, the Serendipity Art Festival, Sunburn Music Festival, The Grape Escapade to name a few. To showcase this varied heritage of culture, art, tradition, food, and people, in 2015 ItsGoa was born. The main aim was to make it the premier portal for all things Goa. We were able to showcase Goa like never before. Soon our blogbased website transcended the virtual space, with the ItsGoa magazine – a sought-after resource for visitors to Goa from countries like Norway, Germany, UK, USA, UAE, etc.

Bryden is a free thinker, non-judgmental, and an extrovert who enjoys occasional moments of introspection. He believes in maintaining good vibes and distances himself from

negative influences. With a love for learning and helping others grow, Bryden strives to make people smile, going beyond limits to ensure their happiness even during his own challenging times. Menino Fernandes, a Bcom graduate, started as a front office assistant at Dalmia Resorts Cavelossim, later becoming an income accountant at Ramada Renaissance Resorts Mobor. In 1994, he transitioned to the culinary world, eventually becoming a Senior Sous Chef, overseeing galley operations for over 6000 guests and crew. Revitalized during the COVID-19 pandemic, Blue Heaven restaurant stands as a testament to their dedication to preserving Goan heritage. In 2000, Menino Fernandes and his wife Wilfrida Fernandes embarked on a culinary journey, laying the foundation for their establishment. Inspired by his exploration of traditional Goan dishes and fueled by a desire to honor their coastal hometown, they introduced the innovative Bhatkar Thali. This special offering, named "Gorib Bhatkar Fish Thali," pays homage to the local Goan community, adding a personal touch that resonates with their patrons. Served alongside local Goan sannas, kismoor, rice and gulab jamun or bebinca, it's a symphony of flavors that transports diners to coastal bliss and showcasing our commitment to preserving Goa's culinary traditions.

Starting a restaurant business in 2000 with my wife, Wilfrida Fernandes, is quite an achievement. Once introduced, the thali likely underwent iterations based on customer feedback. Balancing flavours, adjusting portions, and refining the presentation would have been part of the process. As satisfied diners shared their experiences, the Gorib Bhatkar Fish Thali gained popularity. Word of mouth is a powerful force in the restaurant industry. Over the years, the thali became a signature dish at Blue Heaven. Its legacy now extends beyond the restaurant— a testament to our vision and dedication.

 paid homage to the ‘Cashew’, an iconic symbol of Goan Culture and Heritage. In collaboration with Cashew Fest Goa 2024, organized by Goa Forest Development Corporation Limited, IHCL hotels across the state showcased Goa’s vibrant cashew culture through an exciting blend of gastronomic delights, exotic concoctions and immersive sessions from 10th to 12th May, 2024.

Speaking on the collaboration, Mr. Ranjit Phillipose, Senior Vice President - Operations, Goa for IHCL, said “As we celebrate the ‘Cashew’ - an integral icon of Goan identity through various curated culinary experiences across our hotels, IHCL, Goa remains steadfast in its commitment to promoting sustainable tourism practices and preserving the state’s rich cultural heritage. Guided by our ESG+ framework of Paathya, we strive to enhance every holiday experience with the opportunity to give back to the community while providing a holistic, interactive and enriching journey.”

Culinary experts at IHCL’s award-wining restaurants and bars developed specially curated menus of epicurean delicacies, innovative cocktails and riveting experiences that highlighted the allure of the delightful cashew. From delectable appetizers including Cashew Rissóis and Smokey Cashew Nut Satay and aromatic mains such as Cashew-Crusted Halibut Fish, Cashew Pesto Pasta or the Sri Lankan Cashew Curry to decadent desserts like Bolo Sans Rival and Cashew Nut Payasam, a plethora of cashew inspired flavours were unveiled. Additionally, an array of invigorating Feni blends including Fenrita, a refreshing union of Feni, cointreau and lemonade and the Tambde Rosa, a vibrant infusion of Feni and Kokum among others were the highlight of the showcase.
