Introduction

Goa, the tiniest state on the western coast of India, boasts golden pristine beaches, palmfringed avenues, flavourful food, delicious Portuguese-influenced sweets, and warm, hospitable people. Also known as the Ibiza of India for its partying. A tropical paradise of flora and fauna, from the very famous 'almi' (mushrooms) endemic to its forests, that grow only on the red mud anthills, to the solar prawns that are fished immediately after the monsoons, Goa is unique. Tourists are also attracted to Goa for its cultural heritage - from the famous old Portuguese churches like Se Cathedral in Old Goa, the 16th Century Safa Masjid in Ponda and Shree Mangesha Temple in Mardol, the legendary Arvalem or Pandava Caves where the Pandavas of the Mahabharat fame lived, to its two unique festivals - Carnival and Shigmo. Goa plays host to many festivals - the International Film Festival of India that promotes cinema, the Serendipity Art Festival, Sunburn Music Festival, The Grape Escapade to name a few. To showcase this varied heritage of culture, art, tradition, food, and people, in 2015 ItsGoa was born. The main aim was to make it the premier portal for all things Goa. We were able to showcase Goa like never before. Soon our blogbased website transcended the virtual space, with the ItsGoa magazine – a sought-after resource for visitors to Goa from countries like Norway, Germany, UK, USA, UAE, etc.

Spearheaded by an all-women team from the successful Café Goldspot, this new venture brings a refreshing twist to traditional Goan dining while offering a warm and welcoming atmosphere for all. Combining authentic local dishes with an inviting space to relax or work, Goldspot Canteen is more than just a place to eat—it’s an experience that celebrates culture, community, and culinary artistry.

A Culinary Vision Born from Passion

Head Chef Saira Khan, the heart and soul of Goldspot Canteen, has crafted a menu that beautifully reflects Goa’s multicultural influences. Having embraced her culinary passion from an early age, she recalls childhood memories of helping her elderly neighbor make mango pickles during summer vacations.

While growing up across different parts of Goa, Saira immersed herself in diverse culinary traditions, from crafting Christmas sweets with Catholic neighbors to preparing festive delicacies with Hindu families during Ganesh and Diwali celebrations. Her own Muslim upbringing further enriched her repertoire, blending these distinct cultural influences into a unique culinary style.

Their story

Iram and Sameera, childhood best friends, decided to bring their teenage dreams to life during the COVID lockdown. In November 2022, they launched Cafe Goldspot, a cozy spot serving all-day breakfast, fresh juice blends, shakes, coffee, and bowls. Iram, a former Qatar Airways cabin crew and now a design lead at Smallcase, shaped the cafe’s menu and aesthetics.

Sameera, with a background in psychology and over a decade in tech start-ups, manages the business while also serving as Head HR at inFeedo. After two years of running the cafe with Chef Saira, they expanded to Goldspot Canteen, offering local thalis, special paos, and snacks, with Chef Saira leading the kitchen.

Though she spent over four decades sharing her creations exclusively with friends and family, Chef Saira’s dream of sharing her food with the world took shape when she pursued a culinary arts diploma at the age of 55. Now, through Goldspot Canteen, she channels her lifelong passion into a menu that not only celebrates her journey but also tells the stories of Goa’s diverse communities.

Goldspot Canteen’s menu offers a thoughtfully curated selection of Goan classics, capturing the essence of the region’s culinary heritage. For breakfast enthusiasts, the eatery serves a delightful array of local specialties, including Xacuti, Ross Omelettes, Polle (traditional rice pancakes), and the ever-popular Cutlet Paos. Each dish is crafted with care, using locally sourced ingredients to ensure authenticity and flavor. As the day transitions into lunchtime, the menu expands to include hearty Goan rice plates, also known as thalis. These plates bring together a harmonious blend of flavors, textures, and spices, reflecting the culinary traditions of the region. From the tangy flavors of a traditional prawn curry to the comforting aroma of freshly steamed rice, every bite offers a taste of Goa’s vibrant food culture.

A Journey from Passion to Reality

In the vibrant culinary landscape of Goa, Chakos stands as a beacon of Kerala cuisine, offering a delightful blend of tradition and innovation. Founded by Chef Karan Manavalan, Chakos is more than just a restaurant; it is a heartfelt tribute to his childhood memories and his deep-rooted love for food. Karan’s culinary journey began at The Oberoi Bangalore, where he started as a Commis, and later, he honed his skills at Brunettis Dubai, WTF Mumbai and Writers Café in Chennai

However, his passion for food goes beyond professional training. Growing up as a Mallu-Tamilian boy in Chennai, Karan spent many summers in Kochi, Kerala, where his grandmother’s elaborate feasts became the foundation of his culinary dreams. From the age of 15, he explored the world of food, interning at Rangis, a popular Chinese restaurant in Chennai, which solidified his aspiration to become a chef.

While he gained experience in renowned restaurants, the idea of opening his own place  lingered in the background,  waiting for the right moment to take shape. Yet, when Karan and his wife moved to Goa temporarily, fate had other plans. During the lockdown, they started experimenting with his grandmother’s beef pickle recipe, which soon became a hit at pop-up events. The

The Story Behind the Name and Location

Naming a restaurant is never an easy task, but Karan wanted something that felt authentically Malayali without being too obvious. Chakos is derived from the name "Chacko," which is a common Kerala version of "Jacob." While using his own last name, Manavalan, was an option, he found it too complex and also humorously pointed out that his cousin had already used it for a fashion label.

Choosing the location, however, was more intuitive. As self-proclaimed "Panjim people," Karan and his wife were drawn to the area’s vibrant food culture. Every time they sought good food, they found themselves in Panjim, making it the natural choice for their restaurant. They believed the city would provide the perfect audience—people who genuinely appreciate quality food and unique flavors.

A Menu That Balances Tradition and Modernity

Curating a menu that honors Kerala’s traditional flavors while appealing to contemporary tastes requires a deep understanding of food. At Chakos,

Karan’s childhood memories, particularly his Ammama’s cooking. Classic dishes like Fish Moilee, Raw Mango Curry, and Pazham Puri find their place on the menu alongside Kerala’s modern favorites like Beef Dry Fry (BDF) and Malabar-style Biryanis.

Furthermore, innovation plays a significant role in the beverage selection. Instead of relying on conventional cocktails, Chakos incorporates traditional Kerala ingredients into their drinks. Guests can indulge in signature creations like the Kanthari Passion and Raw Mango Sour, each drink offering a unique blend of flavors that transport patrons straight to Kerala.

The Beef Ularthiyathu and Beef Roast have become absolute favorites, with their rich, well-balanced flavors leaving a lasting impression. To maintain high food safety standards, Chakos follows rigorous kitchen protocols, including daily inventory checks, strict food dating and labbeling, and regular water quality testing.

Paneer Pista Roll

Valentine is a season of reds and pinks.

This Paneer Pista Roll is so apt for the season. The mild sweetness and the softness of the paneer wrapped around crunchy delicious finely chopped pistachios and cashewnuts are a real treat.

The nuts not only give this beautifully pink dessert a crunch but also lifts the nutritional value of the sweet.  A delicate looking treat specially for your loved ones this season, which is both effortless and time saving.  It gets ready in a jiffy.

The gorgeous looking pink colour comes from the beetroot juice, which we all know is so healthy.  And you don’t need much just a few drops will do the magic.

Paneer, is popular for its protein content and the nuts give us the boost of minerals like magnesium, iron, calcium etc.

Although, it looks fancy I assure you it can be easily made with all ingredients commonly found in your homes. So, celebrate this month of love with this stunning pink rolls with tiny specs of pistachios.

This valentine go ahead and pour your love into making these delightful paneer rolls instead of the regular store bought gifts.  It will make the gifting experience so much more special.

Paneer Pista Rolls

Ingredients :

300 gms malai paneer (grated)
 2 tbsp condensed milk

½ cup milk powder (150 g)

¼  tsp green cardamom Powder

2 tsp desi ghee

3 – 4 drops of beetroot juice extract

For stuffing

3 tbsp finely chopped pistachios and cashwenuts

Method

In a pan melt desi ghee and the malai paneer

ash the paneer with the spatula and cook for 2-3 minutes. Keep the flame low to medium

The paneer will release some fat

Add 2 tbsp  condensed milk and half quanity of milk powder to the panee ix well and cook it further for a couple of minutes

Once the mixture releases the pan and comes together remove from hea hen the mixture is still hot, add the remaining milk powder and the beetroot juice for colour ix till well incorporated.  (but do not overmix, else the paneer will release its fats

The mixture will turn soft dough like Thinly spread the mixture on a silver foil and place the chopped pistachios and cashewnuts in the center of the fla ened paneer in a straight line

Roll the foil tightly into a log

Keep the log in the refrigerator for 30 minutes or so

Once chilled cut the paneer roll into discs

Arrange onto a plate and serve
